Meadowsweet Spirits
This organic and artisanal meadowsweet liqueur is made by the Granier liqueur factory, near Annecy (Haute-Savoie). It's a true discovery, a very original liqueur with a variety of uses.
The Plant
Meadowsweet (Filipendula ulmaria) is the wild version of a garden plant called astilbe. Found in marshy areas and damp meadows, this plant from the Rosaceae family bears a pretty tuft of small white flowers. Fragrant, loved by bees and melliferous, it is above all very beneficial: rich in salicylic acid, it is at the origin of the manufacture of aspirin and has many medicinal virtues: analgesic, anti-inflammatory, healing, diuretic, vulnerary, digestive, etc., it fights against water retention, rheumatism and fever.
Manufacture
The meadowsweet and mallow flowers are picked in the Alps and macerated in water from the Boubioz spring, near Lake Annecy. The blend is made with organic wheat alcohol and organic sugar produced in the Vosges and the Palatine Forest. The other ingredients are Menton lemon zest and Timut pepper.
Tasting
A revelation with its exceptional aroma, its slightly vinous and fruity taste reminiscent of caramelized apple and black tea, with nuances of red port. This very fragrant liqueur surprises and seduces the palate, while communicating the medicinal virtues of meadowsweet. During the tasting, we were amazed by the Granier liqueurs, one after the other. Never before have we been given such fresh plant flavors by liqueurs. We have the sensation of tasting the plant itself, infused in all its singularity, supported by just the right amount of organic sugar (that is to say, little) produced in the Palatine Forest and just the right amount of alcohol. An organic beer alcohol that allows the plant to convey its message without interference. Not only is it delicious, but it is also an excellent digestif. Chateau Roulant Red 20/21
Benoit Camus
Château Roulant is a Beaujolais red wine, organic and natural (Ecocert certified), made from Gamay. Classified as a Vin de France, it is produced by Benoît Camus at his Pierre Dorées estate, in the south of the appellation. Its name evokes the itinerant life once led by the winemaker, a former seasonal agricultural worker.
Vinification
The Gamay vines of Beaujolais grow on clay-limestone soils. The very steep plots prohibit any mechanized work. The harvest, carried out by hand, undergoes a three-week semi-carbonic maceration. The wine is aged in concrete vats for fifteen months.
Tasting
The Beaujolais wines from Pierre Dorées are structured, long-lasting, and beautifully fruity. Here, after admiring a bright garnet color, we find strawberry, raspberry, red cherry, and cranberry, with a beautiful acidity in the mid-palate giving way to a rich and voluptuous finish. Freshness and acidity, leather, earth, and some animal notes. Wonderful richness in the mouth that we will enjoy accompanying with cold meats and cured meats, poultry such as pigeon or duck. You might think he's itinerant, with his vintages called "Château roulant" or "Vagabond", but for Benoît Camus, it's a memory of his previous life, when he was a seasonal farmer in the Rhône Valley and as far as Roussillon. Since 2003, he has settled in Southern Beaujolais, in the Pierres Dorées terroir, to make organic (Ecocert) and natural wines.
Nature before, nature always
Before purchasing his seven-hectare estate from an old winemaker, the vines had not yet seen pesticides or chemical additives. Many in Beaujolais worked this way. He made his first vintage in 2006, "natural without knowing it," he says. A brief attempt at chemical spraying to treat grape worm definitively dissuaded him from adding anything to the vineyard or the cellar. He acquired Ecocert organic certification and continues to make natural wines.
The Pierre Dorées terroir
The southern Beaujolais, with its clay-limestone soils, produces wines that are more structured and powerful than those from the granite soils of the North. This is the profile presented by the reds of Benoît Camus, natural wines that are straight, dense and long-aging, with good acidity and well-integrated tannins, not forgetting abundant, rich and seductive fruit.

Marie and Vincent Tricot
Marie and Vincent Tricot's Vin de paille is undoubtedly a curiosity: it's a sweet wine made from 100% Auvergne Gamay, entirely organic and natural, made like a Vin de paille from the Jura. The harvest is dried on straw in an attic before pressing. We're not used to Gamay vinified this way, or even red wine vinified this way.
It's an experiment, but the result more than justifies the boldness. Drying on straw concentrates the sugar in the grape berries and accentuates the flavors. Only a drop remains in each berry, but what a drop! Sweet, caressing, syrupy, complex, this Vin de paille is a delight. Its color is not a pure red but an amber, and the nose is a veritable basket of slightly jammy fruits: plum, prune, raisins, strawberry. It is possible that a refermentation takes place in the bottle, which can give a sparkling attack to this wine, but it disappears quickly. On the palate, a delicious sweetness, lots of strawberry and pleasantness. Very easy to drink.

Among the generation of Auvergne winemakers who, at the dawn of the 21st century, are resurrecting the vineyards of this beautiful volcanic province of the Massif Central in organic and natural ways, Marie and Vincent Tricot are pioneers, and their name is well known to those who have long loved natural wine. After a varied winegrowing journey that took them from Beaujolais to Chile and from Chile to Costières-de-Nîmes, they landed in Auvergne, at the foot of the Puy de Dôme, in the commune of Orcet where they took over Claude Prugnard's vineyard, a land that had not seen the slightest chemical input for around thirty years. The estate is located on a hillside, on the left bank of the Allier, in a volcanic clay-limestone area neighboring the vineyards of Châteaugay, Chanturgue and Corent. They acquired it in 2003 and, since then, have been making wines from Auvergne Gamay, Chardonnay and Pinot Noir, with a little Sauvignon Blanc and Muscat. These rare and sought-after wines are mainly sold directly. They have a straight and flamboyant profile, and express themselves with as much character as simplicity.
Munjebel MC Red 2020
Cornelissen
Munjebel MC, an organic (Eurofeuille), biodynamic, and natural red wine from Sicily, is produced by Frank Cornelissen. It is classified DOP (PDO) Etna Rosso/IGP Terre Siciliane Nerello Mascalese. It comes from the Contrada Monte Colla, a very steep terraced plot, beautifully exposed to the sun and wind, directly opposite Mount Etna. The Nerello Mascalese vines, planted in 1946, grow on sandy-clay soil.
Vinification
The harvest is destemmed and lightly crushed, then macerated for sixty days on the skins. The wine is aged for 18 months in vats and 18 months in bottles. No fining, light filtration.
Tasting
Rich and powerful, with elegance, Munjebel MC is a bit like the hermitage of Etna. Intense color of a deep and saturated red, notes of red rose and wild red fruits. Body, richness and thickness, aromatic palate supported by a fresh acidity. You will pair it with red meats and Mediterranean dishes. Try a Bigorre black ham or a grilled or roasted wagyu from Maison Aitana.

In Passopisciaro, Sicily, in the north of the Etna valley, the 19 plots cover 24 hectares of basalt soils spread over numerous localities (contrade) between 600 and 900 meters above sea level on the side of the volcano. It is, says Frank Cornelissen, the "Night Coast of Sicily". Distillerie Cazottes
This organic and natural elderflower liqueur from the Cazottes distillery, located in the Gaillac region (Tarn), has the Eurofeuille label. It is a wine-based aperitif, made from black elderberries grown in Laurent Cazottes' garden without pesticides or any chemical treatment.
Production
The elderflowers are harvested in the spring and only the petals are used, macerated in a homemade natural wine that can be made from Jurançon Noir or Prunelart grapes, depending on the vintage, and organic eau-de-vie from the estate. Thus, a frank and powerful aroma can be obtained. A little sugar (just enough to reduce the bitterness). A long resting time follows to harmonize the flavors of this Cazottes elderflower liqueur, which is 17% ABV.
Tasting
We close our eyes, we are in a Tarn garden in spring: the heavenly, frothy, creamy and fresh scent of elderflower in bloom is fully present. The color is light ruby, coral, cinnamon; the nose is spicy, woody, evoking blond tobacco and dried fruits. The overall note is that of both fruit and black elderflower. This Cazottes elderflower liqueur can be paired as an aperitif with a good cured ham, a dry sausage without nitrites or a delicious Spanish beef ham from maison Aitana.

"Liqueur does not mean sweet," Laurent likes to say. The unique feature of Cazottes liqueurs and eaux-de-vie is their faithfulness to the raw material: it is the whole fruit that is on the palate, with all its nuances and deliciousness. They are low in alcohol and low in sugar: they are exceptional nectars.

This Languedoc estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character, attached to our soils, with freshness and refined tannins." They want to obtain entirely natural wines, concentrates of terroir. In the old Corbières massif, they took over an old heart of an estate already planted with abandoned Carignan and Grenache vines, which had seen neither fertilizer nor pesticides for years: these clean and vibrant soils are ideal conditions for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. Vinification is carried out without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first evaluated by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. Riesling Origin Blanc 2021

Green fruits, balanced acidity, elegance, complexity: plenty of structure and depth; Jean-Marc Dreyer's Riesling Origin is what we call a wine for meditation. Jean-Marc Dreyer's Origin range is dedicated to single-varietal cuvées based on Alsatian varieties. Here, whole-bunch maceration exposes Riesling in a completely new light: ignoring the petrol notes (which are present, but politely wait until the finish to reveal themselves), the wine expresses a structured verticality balanced by a gentle roundness. Very mineral, but this time it's the soil you feel, not the diesel can. This wine was aged for eleven months in the Alsatian style, that is, in foudres and demi-muids. Taste pairings? Don't look, it goes with everything. Biodynamic method, fermentation with indigenous yeasts, unfiltered, unclarified, no sulfites added in the vineyard or cellar.

"Maceration in Alsace is a tradition!" says Jean-Marc Dreyer, adding that direct pressing in this region is a modern invention, linked to the advent of electricity. In the past, people worked by hand and let the grapes macerate before sending the marc to the press. » Whole-bunch maceration is Jean-Marc Dreyer's signature and represents 85% of the estate's production, the remainder consisting of direct-pressed whites, often aged using controlled oxidation. Jean-Marc succeeds several generations of his family at the Dreyer & Fils estate, established in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics, but he hesitated for a while between several methods: at first, his wines were more oaky, aged in new barrels with stirring. Then came the sweet period: all his wines contained residual sugar. In 2008, he tried vinifying without any sulfur and found his direction: the following winter, upon returning from the pilgrimage to Compostela, he swore never to add sulfur to any wine again. Having made this decision, he asserts his style around skin maceration, quite advanced, chiseled, always surprising on Alsatian grape varieties, of which it brings out the structure without sacrificing the delicacy. Jean-Marc works in single-varietal or blended vintages and also produces Pinot Noir reds of surprising depth.

Blessed with superb maturity and great minerality, Les Grandes Orgues by Frédéric Gounan is a single-varietal Pinot Noir from Auvergne grown on basalt soils. Its generous, concentrated body, great liveliness, and freshness make it a sumptuous, lively, energetic wine capable of being enjoyed on its own. Beautiful notes of red fruits mineralized by basalt and lava, a true wine born of the earth. The distinction between Grandes Orgues and Petites Orgues is in no way linked to the plot but to the vintage and the blend. It is made during tasting, at the very end of aging. It is the first wine to be racked, the quintessence of the vintage. What seems the greatest, the most obvious, is the subject of the first blend. Then, the rest is blended to create the Les Petites Orgues cuvée. These Grandes Orgues are a pleasure to enjoy with local cuisine.

Coming from a family of farmers established in the commune of Saint-Sandoux (Puy-de-Dôme) for at least two centuries, Frédéric Gounan was in his first life a mechanic and prototype creator for the French motorcycle brand Voxan, whose headquarters were in Issoire. He turned away from the industrial world to devote himself to wine with his partner Caroline. He intends to take advantage of the magnificent terroirs of his native village, far from "pissing the vines", as was done in the past: he notes that everything that comes from this land has exceptional taste qualities. He takes over plots of Gamay d'Auvergne, plants other grape varieties, and ends up producing vintages that are among the tastiest and most sought-after in Auvergne. On this land of the Chaîne des Puys, Pinot Noirs grow on black basalt soils, while Sauvignons and Pinot Gris grow on white clay-limestone soils with basalt pebbles. A follower of organic and biodynamic farming, Frédéric also applies methods he deems appropriate to the climate and terroir: to facilitate photosynthesis in this harsh and contrasting climate, he practices lyre trellising, which allows the vines' foliage to be aerated and exposed to the sun, guaranteeing ripe fruit at harvest. Always a mechanic at heart, he makes his tools and tinkers with his tractors according to his needs. Nice acidity, lovely minerality, plenty of aroma, and a suppleness that asserts itself in the glass. Whichever way you look at it, this Gamay is very Gamay: fruity, juicy, with pleasant notes of raspberry, blackberry, licorice, and cherry. Mayga Gamay also offers a slight sparkle that awakens the dead. The grapes come from Pierre Boyat's estate in Leynes, Beaujolais, and macerate for twenty days in whole bunches.

Ganache Red 2021,
A complex, innovative, and delicious wine, obtained after eight weeks of whole-bunch maceration. Bottling was done in June 2022. Ganache is not far from Grenache, that's it, you get the idea, and Gamay joins the fray. The famous southern grape variety, cultivated biodynamically and harvested in Carpentras (SCEA L’Authentique by Claude Ughetto), vinified in the Jura, doesn’t feel out of place at all: nothing prevents it from unleashing its brazenly fruity notes – cherry, fresh and candied strawberry, raspberry, blackberry, plum, dried fruit – enhanced with plum, black pepper, spices and chocolate. All that? Yes. Don’t be surprised by a slight reduction upon opening: aerate the wine, decant, or let it wait a little in the glass, it will disappear.

Grenabar Rouge 2021,
Domaine de l'Octavin
Grenabar 2021 is a joyful, fruity, and borderline rosé wine, with decidedly maraschino cherry, blood orange, and watermelon notes, with well-ripened tannins and moderate acidity that makes it very adaptable. Originally, it was made from Grenache and Colombard. For this vintage, it is made from Carignan and Vermentino (Rolle) produced biodynamically on granite and quartz soils (SCEA L’Authentique by Claude Ughetto in Carpentras). It is made by steeping whole-bunch Vermentino in Carignan must obtained by direct pressing. This maceration takes place for three weeks. Bottling was done in June 2022. This red wine also extends to the pairings traditionally associated with white wines. Very versatile and fresh on the palate.

Here is Vino Rosato, a beautiful Italian wine from the Lazio region whose pretty light pink color heralds pleasant floral notes on the nose and palate: rose, red fruits, citrus, acidity, and a touch of bitterness on the finish, reminiscent of grapefruit peel, which gives it a lot of charm. It is a blend of Montepulciano and Sangiovese grapes. The Montepulciano harvest macerates for 48 hours on the skins before being pressed, while the Sangiovese is pressed directly at the entrance to the winery. The musts are then fermented together in fiberglass vats where they are further refined until bottling in March. Vino Rosato will suit everything you want from a rosé, and more: its purity and balance raise it above the standard image of summer rosés. We recommend it in any season and particularly with food.

The Azienda Corva Gialla ("yellow crow") is a winery in Lazio, Italy, located on the edge of Umbria in the Alta Tuscia Viterbese. A volcanic region considered one of the most beautiful in Italy and characterized by its calanches, high tuff rock formations delimiting deep valleys carved by numerous rivers and torrents. Corva Gialla is located in Lubriano, opposite Cività di Bagnoregio. Alta Tuscia is proving to be a breeding ground for young winemaking talents dedicated to nature, who are reclaiming these historically neglected lands. Founded in 2017, the estate comprises four hectares cultivated by Beatrice Arweiler, originally from another wine-growing region, between the Rhine and the Moselle. The new owner has also planted an olive grove (Frantoio and Leccino varieties) and converted the estate into a mixed crop-livestock system. The vines were planted with the help of Gian Marco Antonuzzi of the Le Coste estate. The friable volcanic soil lends itself beautifully to viticulture and the planting of grape varieties such as Grechetto d'Umbria, Trebbiano, Vermentino, Sangiovese, and Ciliegiolo. The estate's wines are quintessentially Italian, meaning they are crafted primarily for enjoyment. They are straightforward, deep, and easy to drink, expressing the strong minerality of their soils.

This Corbières estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character attached to our soils, with freshness and refined tannins." They want to obtain entirely natural wines, concentrates of terroir. In the heart of the old Corbières massif, they took over an old estate already planted with abandoned Carignan and Grenache vines, which had not seen any fertilizer or pesticides for years: these clean and vibrant soils were ideal conditions for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. Vinification is carried out without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. Fond Cyprès wines poetically evoke the estate's ecosystem and the vegetation that protects the plots: pine forests, shaded springs, the beauty of the natural environment that brings freshness to the wines and leaves the signature of the soil. Deliciously balanced between mineral imprint, plant environment and fruit expression, Fond Cyprès wines reflect the South: the caress of its sun, but also the freshness of its shadows.
Pauvre Diable Red 2020,
Gourmet, deep, and velvety, this wine offers lovely, well-integrated tannins. The notes of black cherry and blackberry are assertive, while the mid-palate is characterized by touches of spice and rose. A beautiful natural red from the Vinsobres terroir, with a bright, clear ruby color. Don't be swayed by what you read on the label: Pauvre Diable, endowed with all the graces mentioned above, is nothing to be pitied. The name alludes to the state in which Victor Taylor, the current owner of the Serre Besson estate, found the estate when he bought it in 2011. A restoration of the vineyard followed, as well as a conversion to organic farming which is now bearing fruit: in this case this natural cuvée, without adding any inputs to the vineyard or the cellar, a pure expression of the estate's varied soils (sand, limestone, clay) and the oldest Grenache vines planted there. You can drink it now, in its youth and freshness, or let it age for three to five years.

In 2011, Victor, a Californian sommelier who had settled in Nyons after leaving his position as restaurant director at the Carlyle Hotel in New York, became passionate about the Serre Besson estate, then a small, abandoned wine estate nestled around an old stone building. He bought the whole property, renovated it, and revitalized the vineyard. A few years later, the red wines from the Serre Besson estate, in the Vinsobres appellation, were making waves, were noticed in competitions, and won several medals. Victor, upon taking over the estate, began his conversion to organic farming, which now allows him to produce an entirely natural cuvée based on Grenache: this is the Pauvre Diable that we offer you. In addition, it produces a Vinsobres appellation of origin whose grape varieties bring together Syrah, Cinsault, Mourvèdre, Carignan and Grenache. As well as a rosé macerated with Grenache Noir, Syrah and Viognier. The owner's ambition is not to impose a new style but to respect the terroir and nature in an environment that offers all the possibilities to make exceptional wines.

Domaine Einhart
Riesling, the lord of Eastern grape varieties, finds here an expression worthy of its nobility. The color is a beautiful orange-yellow. The initial nose is very refined, slightly musky, with notes of grapefruit and dandelion. The second nose is fresher and mineral, with aromas of thyme, aromatic herbs, and flint. The palate begins with liveliness and beautiful verticality; the minerality is typical of limestone. Dried herbs return before a persistent finish with a remarkable salinity. Light skin maceration is successful in Riesling, and this one is no exception. The twenty-five-year-old vines grow on the muschelkalk (oolitic limestone) terroirs of Westerberg, Molsheimgass, and Fleckstein. The grapes are harvested by hand and then destemmed. Maceration, using indigenous yeasts, takes between four and eight days. Aging on fine lees is ten months in tuns, followed by bottling without filtration. From the vine to the cellar, this wine was made without any additives. Decanting is recommended so that it can spread its wings and express its mineral notes.

Located in the northern part of the Alsatian vineyard, horizontally above Strasbourg, the Einhart estate is a ten-hectare family estate whose vines are located on the hillsides that rise between the Alsace plain and the Vosges mountains. The soil is clay-limestone and rich in fossils (muschelkalk, i.e. shell limestone and oolite limestone, and lettenkohle or dolomitic limestone). Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is co-founder, Nicolas devotes his winemaking work to the protection of the land and biodiversity, winemaking without inputs, the refusal of harmful phytosanitary products and the maintenance of ecological refuge zones. His estate has been certified organic since 2011. Like Jean-Marc Dreyer, he is resolutely moving towards skin maceration and produces white maceration wines (orange wines) in addition to a Pinot Noir red. Entirely manual harvesting, destemming of the bunches, light punching down and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees and the absence of filtration before bottling. The wines are pure grape, lively, powerful, invigorating, and transcribe the minerality of the very beautiful terroirs of the Vosges foothills.

Les Vignes du Domaine du Temps
This estate is located in Cabardès, a small region of Languedoc that was once a subdivision of Cathar Country. Stretching from the southern slope of the Montagne Noire to the city of Carcassonne, it is bordered to the west by the Lauragais and to the east by the Minervois. Hilly, wild, and rich in Mediterranean flora, it is a preserved ecosystem, especially since the Domaine du Temps, in the Font Juvénal area, is a magical place: around a former 18th-century priory, sixty hectares of forests and scrubland protect thirteen hectares of vineyards on stony clay-limestone soils. The balance between dryness and coolness is a boon for viticulture, with a wide range of grape varieties. In addition to the Languedoc grape varieties (Syrah, Grenache, Roussanne, Viognier, Muscat), Cabernet Sauvignon, Cabernet Franc, Merlot, Sémillon, and Chenin are grown. The estate has been Ecocert certified since 1998, is entirely managed biodynamically, and has been dedicated to natural wine since 2015. The work in the vineyard and cellar is methodical, rigorous, and attentive: only the best grapes are kept, resulting in small yields, and destemming is decided based on the ripeness of the bunch. The reds are vinified using carbonic maceration of individual grape varieties, with the blending taking place before the year's aging. The whites are slowly and gently pressed to extract only the best from the grapes. These precautions produce smooth, controlled wines of great integrity, with very supple tannins. They are fresh, delicious, and expressive.
Made of equal parts Cabernet Sauvignon and Merlot, it evokes a Bordeaux blend. Yes, but... both varieties grew under the Cathar sun and, in addition to the freshness and seriousness of the Gironde model, offer very different, sunny, and generous notes. Vinification is done in concrete vats after destemming, before aging for twelve months in old barrels. This wine confirms the straightforwardness that is the style of the estate, and the melting tannins are remarkable: no astringency, but fruit, maturity, minerality, a note of plum and salinity on the finish. Fresh, ripe, and balanced, it is a solid barrel that will lend itself to all occasions and all meals.

This single malt with its beautiful amber color is the pride of the Ergaster team. It is first aged in new barrels, then completes its maturation in reused barrels (25% vin jaune, 75% cognac). The nose is subtly fruity (guava, almond, white grape), unfolding into leather, walnuts, and fresh tobacco in the glass. On the palate, the attack is powerful with floral, woody, and vanilla notes, evolving into dried fruits. The finish is long and more herbaceous: green barley, spring onions, and hazelnut.
