Where?
In the Albères massif, in Roussillon, the foothills Pyrenean side of French Catalonia. Originally from Chinon, Michaël Georget is an artisan winemaker and a lover of the terroir. For him, protecting the soil matters above all else. Since childhood, he has dreamed of working as close as possible to nature, and this is what he has been doing since the age of fifteen. The vine seemed to him to be the most appropriate occupation to fulfill his vocation, necessarily in organic and biodynamic: he began his journey in the Loire region, then continued in Alsace, with Jean Schaetzel. It was at the beginning of the 2010s that he landed in the Albères, where he first worked at the Moulin du Breuil before settling in 2012 in Laroque-des-Albères, where he took over eleven hectares of abandoned vines which he immediately cultivated using organic farming and draft horses. Organic certification was obtained in 2015. The choice of the name "Le Temps retrouvé" reflects his awareness of time, an essential tool for creating a vibrant wine. Michaël's wines are macerated and aged for a very long time.
Terroir, plots and grape varieties
The soils of this part of the Albères are rich in minerals — clays, silicas, mica schists, quartz and gneiss — which helps explain the depth and complexity of the Temps retrouvé wines. The estate includes three hectares of 130-year-old Carignan, a plot of 40-year-old Macabeu, another of 90-year-old Grenache Blanc and Grenache Noir, and several small plots of Syrah, Grenache Gris, and Mourvèdre. Eleven hectares in all.
Methods Cultivation
The vines are managed completely naturally, biodynamically and without sulfur, with the help of animal traction. (two draft horses) at each stage of the plant's cycle. Michaël claws under the feet and leaves the rows grassy, ​​favoring native plants that promote soil microbiology and the expression of the terroir in the wines. He practices gentle pruning, which respects the sap circuits, prolongs the life of the vines and prevents disease. He also lets sheep graze between the vines and helps with pollination by introducing bees. To care for and fertilize the vines, he uses herbal infusions (chamomile, nettle) and manages the estate in mixed farming methods. (cereals, vegetables, herbs, flowers).
Winemaking
Entirely natural, without the slightest oenological input or added sulfites — both in the cellar and at bottling —, The vinifications of Domaine du Temps retrouvé are done in vats, formerly followed by aging in barrels or demi-muids (600 liters). Michaël has recently adopted additional methods and some changes: he replaced the wood in the oldest barrels and casks with fiberglass tanks and added a stoneware egg to them, which encourages the purity and minerality of the wines. Michaël has a predilection for long macerations and extended élevage: until he decides his wines are ready, he does not bottle them. The process can take two or three years; It is therefore not surprising that there is sometimes a significant delay between harvest and marketing.
The Wines
The wines of Temps retrouvé are true terroir wines, highly original, juicy, full of life, and bursting with personality. They never leave anyone indifferent. We praise their energy, their liveliness, their minerality. They have the talent to be drinkable young while presenting beautiful aging qualities. Their complexity increases with age.
