Organic Corsican Clementine Eau de Vie, Brana
The clementines come from small organic plantations located in Corsica. Once picked, they are transported by refrigerated truck. Upon arrival at the distillery, they are hand-cut and macerated in eau-de-vie. The precise choice of alcohol and the optimal maceration point are the secrets of the production. The clementine eau-de-vie is then aged in stainless steel vats to preserve the fruit's fresh, intense, and aromatic flavor. The finish is long and elegant. Drink at 5-6°C as an aperitif or digestif. Pour a few drops over dessert or fruit.
Armagnac Laballe "Résistance"
The Laudet family, in Capbreton (Landes), has been making wine and distilling eaux-de-vie for eight generations. The old still is called Marie-Jeanne. The current generation, Cyril and Julie, are nevertheless not afraid to challenge the codes of Armagnac. Made from 100% of the late-ripening, phylloxera-resistant Baco hybrid grape variety (hence the name of the vintage), this is the result of a blend of six Armagnacs aged at least six years: here 2009, 2010 and 2012. The color is brilliant; the nose is intense, fresh and complex, developing aromas of apple, citrus and roasted coffee. The palate is round and delicious, ending with liquorice and sweet spices.

Les Cristallines William Pear Brandy
The Brana house, in the Basque country, is a staple of fruit brandies. Throughout the great Southwest of France and beyond, as far away as Paris and beyond, its name is immediately recognized as a classic of quality brandy. Established in Saint-Jean-Pied-de-Port for over a century, the house was originally dedicated to the wine and spirits trade. In 1974, Étienne and Adrienne Brana founded the distillery and planted a William pear orchard: the famous "Poire Brana" would soon be born. Later, their children, Martine and Jean, took over the business and developed the precious family know-how. While Martine, at the distillery, continued to innovate with fruits, spices, and plants, her brother Jean took care of the vines planted in 1984, in AOP Irouléguy. In addition to the wines, these terraced vines on the hillside are the source of the marc that makes the house brandy. "A Brana pear, please!" Many of us have heard this phrase on the terraces of our cafés or in the best bars. For many, the name Brana has become synonymous with pear brandy. To make it, pears from the Brana orchard, picked at the peak of ripeness, are fermented in temperature-controlled stainless steel vats. The resulting pear wine is then kept away from air so as not to undergo any alteration before its distillation, carried out in red copper pot stills. This traditional slow process allows for strict control of the process to ensure the quality and finesse of the eau-de-vie. Similarly, aging is carried out in stainless steel vats to preserve the freshness of the fruit and to avoid any woody notes. Bottling takes place when the eau-de-vie reaches its optimal point of maturity. It is a nectar that is immediately recognizable on the nose by its crystalline finesse, its elegance, its aromatic power expressing the quintessence of the pear. One has the impression, from the attack, of biting into the fruit. The finish, smooth, fine and long, continues to send the pear signal with force. Perfect conclusion to a good meal. Consume well chilled, between 5 and 6 °C.

The Granier liqueur house offers its first Vervain liqueur, the one that launched the house's beginnings. Entirely organic, artisanal, and sourced locally, it is Vincent's Vervain, Vincent Granier's, who lovingly created its recipe.
The Plant
Lemon verbena (Aloysia citriodora) is a favorite in cottage gardens. A member of the Verbenaceae family, it is cultivated for its fragrant leaves, with a slight hint of lemon peel. It is tonic, calming, fever-reducing, antispasmodic, and digestive. The one infused for this liqueur was grown organically and harvested by hand in the Alps.
Production
To the Vervain are added organic lemon zest (from Menton), organic coriander seeds and lemongrass grown biodynamically in Egypt (the closest and most eco-friendly place to find 100% natural lemongrass). The plants and spices are infused in the natural water of the Boubioz spring, near Lake Annecy, and the alcohol is made from 100% organic wheat. The organic sugar is produced in the Palatine Forest.
Tasting
This organic and artisanal Vervain is sweet and caressing, very fresh, and is not heavy in alcohol or sugar. Easy to drink, it can be enjoyed as an aperitif, in a shot, in mixology and as a digestif. We love pairing it with fine charcuterie, for example terrines or hams from the Ferme de Mayrinhac.

VS-Fine Calvados, Domaine de la Flaguerie
The Domaine de La Flaguerie and the Ducy orchards are located between Caen and Bayeux, in the Bessin region. The Calvados produced there has an aromatic profile linked to this rolling plain region, more lively, more dynamic, and less well-known to the general public than the rounded, sweet style of the Pays d'Auge. Made from the estate's apples, this organic Calvados (40% alcohol) is a perfect example of the local style: the color is amber, with a nose reminiscent of tobacco, pepper, and cinnamon. On the palate, this spicy liveliness is confirmed before rounding out into vanilla apple. A complex Calvados, long in the mouth, full of elegance.
Armagnac by Maurice 2009 Spirits
Take advantage of it, not everyone has access to Armagnac by Maurice: organic (Demeter, AB, and Eurofeuille labels), artisanal, it is made by Maurice de Mandelaëre (Domaine de Saoubis), the only biodynamic Armagnac producer. Hootch is responsible for packaging and distributing this small-producer Armagnac with an alcohol content of 49.3%.
Production
100% Baco grape variety grown biodynamically in the Bas-Armagnac region, Armagnac de Maurice XO (Extra-Old) comes from a single barrel where it has been aged for 14 years. It is neither reduced nor filtered, and without coloring. No fertilizers or pesticides in the vineyards, no additives in the cellar. Neither reduced nor filtered, without coloring. Cuvée limited to 494 bottles.
Tasting
The Baco grape variety gives a beautiful complexity to the nose with aromas of vine flowers, bay leaf, spices, and exotic fruits. On the palate, there is great finesse and length with notes of vanilla, flan, tobacco, and flowers. Serve it as a digestif or a light pick-me-up, and you can even eat it with: pastries, desserts, fruits, or charcuterie such as peasant terrines. It will be served alongside beautiful poultry or roasted black Gascon pork.

The Plant
Meadowsweet (Filipendula ulmaria) is the wild version of a garden plant called astilbe. Found in marshy areas and damp meadows, this plant from the Rosaceae family bears a pretty tuft of small white flowers. Fragrant, loved by bees and melliferous, it is above all very beneficial: rich in salicylic acid, it is at the origin of the manufacture of aspirin and has many medicinal virtues: analgesic, anti-inflammatory, healing, diuretic, vulnerary, digestive, etc., it fights against water retention, rheumatism and fever.
Manufacture
The meadowsweet and mallow flowers are picked in the Alps and macerated in water from the Boubioz spring, near Lake Annecy. The blend is made with organic wheat alcohol and organic sugar produced in the Vosges and the Palatine Forest. The other ingredients are Menton lemon zest and Timut pepper.
Tasting

White Absinthe 60° - 70cl
Awen Nature Distillery
This certified organic white absinthe is the result of a special recipe that was the subject of many years of research by the founder of the Awen Nature distillery. Entirely organic and natural, it derives its flavor from a combination of seven distilled botanicals, a bouquet that expresses very refreshing notes, always with a dominant anise and complex notes of plants such as wormwood, coriander, hyssop, and lemongrass. This absinthe is created and distilled exactly as this liqueur was before the 1915 ban. To fully appreciate it, we recommend the traditional method: in a glass containing a measure of absinthe, place a sugar cube on an absinthe spoon and pour fresh water drop by drop over the sugar cube. Upon contact with water, white absinthe becomes slightly cloudy to reveal iridescent and brilliant reflections.

This Breton distillery, located in Ille-et-Vilaine and run by Julien Fanny, initially dedicated itself to absinthe, a liqueur that Julien helped to rehabilitate. It’s not “the liqueur that makes you crazy,” he says: “we were already crazy before.” He strives—successfully—to reproduce the taste of yesteryear, that of the absinthes that were once given to children on a piece of sugar as a dewormer. “You need a touch of madness to be a distiller today,” says Julien. In addition to absinthe, Julien distills a wide range of spirits and liqueurs: gins, vodkas, botanical rums, Swedish elixir, concoctions inspired by role-playing games... The Longueteau distillery, located in Capesterre-Belle-Eau (Guadeloupe), is the oldest distillery on the island still in operation. It has the distinction of being entirely self-sufficient in sugarcane production, which it uses to create its magnificent terroir-based agricultural rums. Agricultural rum, we should point out, is made from pure sugarcane juice, unlike many other Caribbean rums, which are produced from cane molasses. It is a specialty of the French Antilles. The estate is currently in the hands of François Longueteau, a distiller since 1979. Production is, as it was originally, artisanal and traditional, but the sugarcane terroirs are cultivated using plot-by-plot methods—this is Longueteau's great originality, the first distillery on the island to have adopted this approach. Two varieties of sugarcane, blue cane and red cane, are cultivated, as well as fruits from the Guadeloupe region. Longueteau rums and the resulting preparations (punches, shrubberies, etc.) are refined, aromatic, deep, and fragrant.
Génépi Spirits
Liqueurs Granier
Génépi is "the" Savoyard liqueur; it doesn't get more regional than this. It's entirely organic and artisanal, made by the Granier brothers in the Annecy region and sourced locally.
The Plant
The name "génépi" refers to a family of small alpine wormwoods of the genus Artemisia that are harvested between 2,500 and 3,500 meters above sea level. These highly aromatic and medicinal plants (fighting colds, viral illnesses and digestive disorders) are the main ingredient of the most emblematic liqueur of Haute-Savoie.
Production
Génépi is harvested in the Alps and dried before infusion in 96% organic wheat alcohol, before blending with an organic sugar syrup made by a landowner harvesting in the Palatine Forest. The water comes from the Boubioz spring, near Lake Annecy. No additives are added during production. The liqueur, aged in rum barrels, includes coriander seeds and lemon zest. Unlimited aging potential.
Tasting
Floral, aromatic and of great purity, this liqueur flies the flag of Alpine génépi high. The balsamic note of génépi initially manifests itself with great amplitude and persists in the mouth, supported by light spices (coriander and lemon). A success, to be associated with raw fish or smoked fish of all kinds and of course smoked salmon. The best pairing will be with a raclette.

Organic Copalli Barrel Rested Rum
Certified organic from soil to bottle (Eurofeuille label), Copalli Barrel-Rested Rum Organic is an organic amber rum from the tropical forests of Belize, a green and preserved environment. It is the same rum as Copalli White Rum Organic after a few months of aging in oak barrels. Copalli Distillery, founded by Will Maheia and Todd Robinson, supports local communities by being the largest employer in southern Belize through its Copal Tree sugarcane plantation, distillery, and lodge. The cane varieties are traditional (noble cane and black cane), and all cultivation and manufacturing waste is recycled on the plantation. Copalli, in addition to protecting the environment, subsidizes the education of its employees' children.
Production
After double distillation in a pot still (a Charentais-style copper still), this pure cane juice rum (as opposed to the less rare molasses rums), entirely organic, is aged for eight months in bourbon barrels. Copalli Barrel-Rested Rum is made from only four ingredients: organic sugarcane, pure canopy water, local yeasts, and barrel wood with its bourbon aromas.
Tasting
Incredibly aromatic. Deep, clear amber color, with a nose of Chinese oolong tea and precious wood. This Copalli Barrel-Rested Rum opens with woody notes on the nose and palate: green, cocoa bean, leather, cinnamon, nutmeg, vanilla, tobacco, hot powder, sandalwood, and oud wood. The finish is long, rich, and complex. A rum to drink on its own or in a cocktail. It can also accompany a spicy meal. If you use it in cooking, be careful: consider it as a spice and not as an alcohol for pancakes.

Distillerie du Viaduc, a young artisan house from the Paris region, offers us a bold and festive interpretation of wine brandy with Disco. Made from the Muscat Petit Grain grape variety, this unique cuvée reinvents the traditional Peruvian Pisco with a decidedly funky and floral approach.
A vibrant and aromatic eau-de-vie
Produced from Muscat Petit Grain grapes from the island of Samos, vinified by the talented Patrick Bouju, this eau-de-vie benefits from a careful double distillation.
