Falgueyras Red 2018,
Vigne Vieille du Falgueyras is a fruity and indulgent red wine, rich in notes of red fruits (blackcurrant, blackberry, morello cherry) and beautifully peppery. Its profile is enhanced by sweet spices, prune on the nose, black olive, as well as more mineral accents (smoke, natural incense). It has character, oak without exaggeration, and a very beautiful body. Typical of the Gaillac terroirs, this is a red wine made 100% from old Syrah vines aged thirty and forty years, planted on boulbènes (gravelly, loamy sand) on the second terrace of the Tarn. The destemmed harvest macerates in cement vats with two punching down of the marc. The fermentation temperature did not exceed 21°C. Aging continues for nine months before bottling without filtration and, of course, without the addition of sulfites.

The name Gaillac, the region where the Bois-Moisset estate is located, owned by Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; it is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine luminosity. Many estates, including that of Bois-Moisset, showcase this uniquely rich winemaking heritage. Along with an estate planted with vines, it is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours, and grape juice. A herd of old local breed cows also thrives there, and guest rooms are available in the summer. It is in this small rural paradise that natural wines typical of their origin and terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of Gaillacois (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the vintages of the Bois-Moisset estate, which consist particularly of red wines with crisp fruitiness, concentrated but with smooth and delicate tannins.

The vines for this single-variety Sangiovese are planted at an altitude of 450 meters on a west-facing plot with volcanic soils. The harvest is destemmed and macerated for approximately three weeks, with daily pumping over or punching down as needed. Aging is twenty-four months in chestnut barrels. The wine is bottled for six months before being released.

Avec cette cuvée Fleurie Grand-Pré, le Domaine Bélicard explore la richesse du Gamay dans sa version la plus aboutie. Ce cru du Beaujolais, millésime 2018, allie l’élégance florale typique de Fleurie à une structure sérieuse et gourmande, issue d’une longue macération et d’un élevage en barriques maîtrisé. Un vin certifié AOC, sans concession, à la fois naturel, raffiné et généreux.
Un élevage patient pour une matière mûre
Les raisins, récoltés à pleine maturité sur des sols granitiques, ont bénéficié d’une macération longue de deux semaines, puis d’un élevage de huit mois en barriques de plusieurs vins. Ce procédé, loin d’alourdir le vin, lui apporte un supplément de complexité et une belle patine boisée, sans dénaturer le fruit.
Un nez profond, une bouche racée
Le bouquet s’ouvre sur des notes de cassis, mûre, grenade, enrichies par des touches florales de pivoine et violette, et un boisé fin. En bouche, le vin est croquant et structuré, avec une belle allonge, un toucher soyeux et une intensité aromatique remarquable. L’équilibre entre tension, fruit noir et délicatesse florale donne à cette cuvée un charme rare.
À savourer sur des accords subtils
Servi entre 14 et 16 °C, Fleurie Grand-Pré accompagnera des poissons grillés, des volailles rôties ou une cuisine végétale élégante. Il est prêt à boire mais peut encore vieillir 2 à 3 ans pour révéler d’autres nuances.

Une cuvée monumentale, entre verticalité et finesse
Avec Cathédral 2020, le domaine Danis dans la vigne signe un vin puissant, complexe et méditatif, à l’image de son nom évocateur. Cette cuvée d’exception associe Malbec et Cabernet Franc, deux cépages nobles du Sud-Ouest, sur un terroir argilo-calcaire travaillé en agriculture biologique. Un vin naturel, vivant, sans intrants œnologiques, qui fait le pari du temps long : 3 ans d’élevage en barriques, ouillées une seule fois par an, dans une approche oxydative volontaire, suivis d’un an de repos en cuve inox, puis d’un affinage d’un an en bouteille.
Un processus rare et exigeant, qui donne naissance à un vin au profil aromatique profond, à la texture soyeuse, et à la complexité remarquable, capable de traverser les années avec grâce.
Un vin noble, ample, patiné
Dès le premier regard, la robe sombre aux reflets grenat annonce la richesse du vin. Le nez s’ouvre sur des fruits noirs et rouges compotés, évoluant vers des notes d’amande grillée, de cacao, d’épices douces et de sous-bois. En bouche, la matière est dense, veloutée, mais jamais lourde. Le Cabernet Franc apporte une fraîcheur bienvenue, qui équilibre la puissance du Malbec. La finale, longue et harmonieuse, laisse apparaître une touche saline et légèrement fumée.
Cathédral 2020 est une cuvée de gastronomie par excellence, taillée pour des accords ambitieux : viandes rouges, gibiers à plume, plats à la truffe, ou même certains fromages affinés. À servir entre 16 et 18°C, sans besoin de carafage. Ce vin peut être bu dès maintenant ou conservé 10 ans et plus.
Les Oeillets White 2021
Les Œillets is a dry white maceration wine harvested and vinified in Savoie by Jean-Yves Péron. Organic, biodynamic and natural, this is a 100% Jacquère white wine whose vines grow on clay-limestone soil, in the place called Les Marches, at the foot of Mont Granier.
Vinification
It is roughly the same terroir as that of La Petite Robe, harvested later to obtain greater phenolic maturity and a higher tannic concentration. Carbonic maceration for four or five days is followed by ten days of punching down in vats. At least one year of aging in 225-liter barrels. Neither fined, nor filtered, nor sulfited.
Tasting
Superbly structured, Les Œillets has chew, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. Woody, with explosive minerality and beautiful tension, it is an atypical white, with powerful aromatic notes. Lots of fruit and candied citrus. With this, you can enjoy a good Bigorre black ham, unless a smoked salmon presents itself. Or, the best of the best, treat yourself: an exceptional beef ham from Maison Aitana, made from wagyu or black angus.

Jean-Yves Péron is a talented embodiment of the organic, biodynamic and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (jacquère, altesse, mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The grapes are vatted in whole bunches and undergo semi-carbonic maceration. Shortly before pressing, they are foot-trodden in the vat, then transferred to two- or three-wine barrels for twelve months of aging on lees, before blending and resting in the vat. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.

Une pépite de cave, entre héritage familial et profondeur du temps
Voici un vin rare, presque confidentiel, qui raconte une histoire avant même d’être ouvert. Antenet 1998 est une cuvée unique, vinifiée il y a plus de vingt-cinq ans par le père de Danis, l’actuel vigneron du domaine Danis dans la vigne. Ce Cahors d’un autre temps, issu à 100 % de Malbec, a été élaboré dans le respect des traditions et avec une philosophie déjà très proche du naturel : courte macération, élevage en cuve béton pendant deux ans, aucun maquillage œnologique.
Le sol argilo-calcaire typique du vignoble de Cahors donne ici un vin de garde par excellence, aux tanins polis par le temps et à l’aromatique d’une grande richesse. À 12 % d’alcool seulement, il défie les standards modernes par son équilibre, sa fraîcheur et sa longévité exceptionnelle.
Un vin profond, patiné, chargé de mémoire
Après plus de deux décennies de repos, Antenet 1998 révèle une robe grenat tuilée, aux reflets bruns. Le nez, complexe et envoûtant, dévoile des arômes de fruits noirs compotés, de pruneau, de tabac blond, avec une pointe de sous-bois. En bouche, la matière est fondue, ample, d’une suavité rare. Ce vin évoque une époque révolue, mais reste d’une gourmandise saisissante, parfait sur des viandes rôties, du gibier ou un plat riche en umami.
Servi à 16-18°C, sans besoin de carafage, ce vin est prêt à être dégusté. C’est une archive liquide, un trésor familial, à découvrir comme on lirait une lettre du passé.

La force tranquille d’un Cahors patient et vibrant
Avec Covenant 2018, le domaine Danis dans la vigne poursuit son travail d’orfèvre autour du Malbec, en lui offrant un écrin de temps et de soin rare. Ce rouge naturel du Cahors, cultivé en agriculture biologique sur argilo-calcaire, a bénéficié d’un élevage hors norme : 2 ans en barriques, suivis de 4 ans en cuve avant la mise. Le tout, sans aucune précipitation, sans collage, sans filtration, dans une logique artisanale et profondément respectueuse du raisin et du terroir.
Ce vin à la robe sombre, presque opaque, dégage immédiatement un sentiment de profondeur. L’élevage long et maîtrisé lui confère une expression aromatique complexe, où la violette, signature du Malbec, se mêle aux fruits noirs confits, aux épices douces et à une touche délicate de bois fondu.
Un rouge naturel de caractère et de garde
En bouche, Covenant 2018 est ample, structuré, mais tout en équilibre. Les tanins sont présents mais veloutés, la matière est juteuse, enveloppante, et la finale saline prolonge l’élégance. Ce vin n’a rien perdu de sa vivacité malgré ses six années d’élevage — bien au contraire, il gagne en profondeur à chaque respiration.
À déguster dès aujourd’hui ou à laisser en cave encore 10 ans ou plus, cette cuvée est idéale sur une viande rouge rôtie, un barbecue d’automne, ou un plat aux truffes. Servez-le à 16-18°C, sans carafage nécessaire, dans un grand verre ballon pour libérer toute sa complexité.

Un Malbec droit et charnel, tiré d’un terroir d’exception
Marty 2022 est bien plus qu’une simple cuvée : c’est un hommage vibrant au terroir profond de Cahors, et notamment à l'une des plus belles parcelles du domaine Danis dans la vigne. Ce Malbec issu de sols argilo-calcaires, cultivé en agriculture biologique et sans aucune chimie de synthèse, donne ici un vin naturel dense, juteux et profondément sincère.
La macération courte, suivie de 8 mois d’élevage en cuve inox, permet de préserver l’intégrité du fruit tout en révélant la finesse du cépage. Sans ajout d'intrants, avec des levures indigènes uniquement, cette cuvée respecte l'esprit du vin vivant, et offre une expression élégante et lisible du Malbec, loin des extractions pesantes et des boisés marqués.
Un rouge vibrant, structuré mais souple
Dès l’ouverture, Marty 2022 affiche une robe pourpre profonde aux reflets violacés. Le nez est immédiat, généreux, mêlant des arômes de fruits noirs mûrs, de fruit confit, et une touche subtile de cuir, qui évoque la rusticité noble du cépage. En bouche, l’attaque est souple, suivie d’une belle structure tannique fondue, sans dureté, et portée par une belle fraîcheur. C’est un vin à la fois gourmand et sérieux, qui accompagnera parfaitement des viandes rouges grillées, des plats mijotés ou une belle pièce de bœuf maturée.
À servir entre 16 et 18°C, il peut se déguster dès maintenant ou se garder 5 à 10 ans en cave pour gagner encore en complexité. Un Cahors moderne et vivant, comme une passerelle entre tradition et liberté.
Rubaiyat Red 2009
Elegantly aged in magnum format for over thirteen years, this is a classic from the Barranco Oscuro estate. It offers a full-bodied, tannic, and dry profile, rich in mature notes of black and red fruits (blackcurrant, raspberry). Leather and earth also dominate, accentuated and enhanced by aging. Smooth, roasted, and nuanced notes of chocolate and spices, and superb balance. Rubaiyat is an allusion and homage to the Persian poet Omar Khayyam, a polymath who wrote a poetic cycle entitled Rubaiyat in the 11th century, glorifying mystical and physical intoxication. The Persian origin of the Syrah grape variety, from which this wine is entirely composed, was not for nothing in this choice of name. Rubaiyat comes from Syrah vines planted in 1996 at an altitude of approximately 1,290 meters and facing south on schist and clay soils. The harvest, manual, carefully sorted and destemmed, macerates in stainless steel vats and ferments with indigenous yeasts. The vinification is naturally controlled by the coolness of autumn nights in the mountains. Malolactic fermentation followed by aging takes place for sixteen months in old barrels. No sulfites are added, the wine is unclarified, and lightly filtered at bottling.

Between the Sierra Nevada and the sea, in Andalusia, the Sierra Contraviesa boasts the highest vineyard in Europe (1,368 meters) at its summit. Barranco oscuro means "dark valley" in Spanish, but this valley is part of the past; it was the original site of the property, but it was moved at the end of the 19th century, when phylloxera put an end to a period of intense winemaking and mass production. In 1979, the estate was taken over by Manuel Valenzuela, who decided to work it using natural methods and without resorting to modern oenology methods. Initially, he bought grapes, but his goal was to replant vines, which he did between 1982 and the mid-1990s. Currently, the twelve hectares of Cortijo Barranco Oscuro extend over a drop of almost 1,400 meters. On a poor, dry, schistose terroir, two localities concentrate the plots: Cerro Las Monjas at the very top and Hoyo y Cerro de Las Gayumbas lower down, near the winery buildings. Strong thermal contrasts explain the freshness of the wines, produced without the addition of exogenous yeasts and without any inputs in the vineyard or cellar. Although the estate is not certified organic due to the disillusionment Manuel suffered from fraud in this area, his estate is a member of the Spanish Association of Natural Wine Producers. His wines are straightforward and clean, without compromise: they are wines that give joy through the seriousness of the work that went into their production.

The destemmed harvest macerates in stainless steel vats, and is aged for sixteen months in old barrels. The Syrah, originally from Persia, inspired the name of the vintage: Rubaiyat is the title of a lyrical cycle by the Persian poet Omar Khayyam (11th century), a man of great wisdom, mathematician, astronomer... He wrote in particular about the joys that wine brings, among other pleasures of life.
