The latest addition to the Culinaries family, The Jones is already an institution! Located in the heart of Paris's bustling 11th arrondissement, this neighborhood restaurant has always attracted fans of flavorful cuisine and natural wines: it's an honor to take over.

In the kitchen, Chef Juan Pablo Rojas Pineda: a traveling chef for several years, he is now permanently setting down his knives at The Jones. Born in Medellín, he grew up in Sèvres, trained at Ferrandi, and worked in restaurants ranging from brasseries to Michelin-starred establishments. His cuisine is inspired by his origins.

The cellar keys are on Enzo Viola's keyring. After training in viticulture and oenology, he joined our restaurant YARD, also in the 11th arrondissement. Gradually, he climbed the ranks, eventually becoming its manager: it was only natural that we embarked on this adventure with him for The Jones.

Culinaries is proud to entrust the co-management of The Jones to these two individuals.

PARISIAN CUISINE & NATURAL WINES IN THE 11TH

Juan Pablo and Enzo, it sounds like an obvious match: they share a common passion for good drinks, good food, and... hip-hop! "Cuisine de Paname": that's how they summarize their new Jones. For them, Paris is about multiculturalism, the blend of cultures and flavors: the Jones will be a tribute to that.

While Juan Pablo's culinary starting point is Franco-Colombian, his inspirations also come from Mediterranean and Asian cuisines.

Enzo's wine list is 100% natural wine: wines selected with respect for life, primarily from Culinaries' references. Jean-Pierre Robinot, Jean-Yves Péron, Frédéric Cossard, Théo Eingart, Danis Bessières... Winemakers we adore.
