Where?

Éric Collinet is a winegrower and arborist in Bragelogne-Beauvoir, in the Côte des Bar region, in the south of the Aube region. Close to the borders of the Yonne and Côte-d'Or departments, this small, hilly village belongs to the canton of Riceys, known for its still rosé wines, appreciated by Louis XIV. The Côte des Bar has long remained the "modest" part of the Champagne wine region, distinguished by a strong agricultural worker culture and a great talent for Pinot Noir. This beautiful mosaic of chalk and limestone hills, crisscrossed by numerous valleys traced by waterways, has long remained in the background of the sumptuous showcase of Champagne. The Côte des Bar, after having supplied the great houses of Reims and Épernay with cooperative wines, is now raising its head and acquiring its letters of nobility through the excellence of its small producers who often work organically, biodynamically or with High Environmental Value (the southern location of the Côte des Bar makes it easier to use these methods than in the more northern areas of Champagne). It is therefore not surprising that our selection of champagnes, at Culinaries, comes mainly from this region. We are delighted to welcome Éric Collinet to this selection.
Originally from Limousin, Éric Collinet took over this Champagne estate in 1987 with his wife Martine, "out of love for the land and for the king of wines." Production was initially devoted to blackcurrant buds, replaced in 2003 by the autumn truffle or Burgundy truffle (Tuber uncinatum), in addition to the winemaking activity dedicated to organic champagne. "My daily work with the soil and the vines reflects, in all my actions, a respect for the rhythm of nature and the seasons," says the winemaker. His lifelong quest is to create an ecosystem and biodiversity on his Champagne estate.

Terroir, plots, and grape varieties

The 2.25 hectares of the Collinet estate, fully certified organic, lie on clay-limestone soils. Kimmeridgian, typical of the Côte des Bar. In addition, a stratigraphic layer dating from the Upper Jurassic reinforces the minerality and salinity of the wines. The area is divided between Pinot Noir (83%) and Chardonnay (17%); the average age of the vines is thirty-three years. A little Pinot Blanc and Pinot Meunier complete the blends.

Cultivation Methods

The Domain's Commitment to Certification (AB, Ecocert, Eurofeuille) dates back to April 2, 2011, and the first certified organic harvest dates back to 2014. Biodynamics is also practiced. Located on a slight slope facing south-southeast (up to 35% for Chardonnays), the vines, pruned using the Guyot and Cordon de Royat systems, require special care. In the winter of 2018, trees were planted in the plots. According to Éric Collinet, agroforestry is a solution to current ecological and climatic challenges. The harvest is done by hand.

Winemaking

This is entrusted to the cooperative, which is a tradition in Côte des Bar. "The cooperative model," explains Éric, "guarantees us quality, consistency, and traceability in the production of our vintages." This system secures Ecocert accreditations, allows for the sharing of state-of-the-art production tools, and the assistance of a team of dedicated oenologists. Éric Collinet advises storing your bottles lying down in a cool, constant temperature, and away from light.

The Wines

The mineral, limestone, and saline signature characteristic of the Côte des Bar is found in the fresh and lively champagnes from Collinet, alongside a well-defined, rounded fruitiness and opulent. No chemical obstacle distorts these pure sensations. The wines are described as very fresh with fruit, as well as a lively yet silky bubble. All-terrain champagnes, designed for all pairings.
