This man of constant questioning lives in human and cosmic resonance with his contrasting terroir: he has demonstrated that the powerful minerality of a great volcanic soil can be enhanced by the naturalness of his wines. The brilliance, the integrity, and the exquisite fruitiness of his vintages earn him the admiration even of those who are reluctant to accept "natural." These are good introductory wines.
His Sicilian azienda is located in Passopisciaro, in the northern Etna Valley. It is, he says, the "Night Coast" of Etna for the great diversity of its wines spread over many locations (contrade) at different altitudes. The climate is continental and harsh, even snowy, in winter, but very warm and sunny from June to September. The altitude gives the wines tension and elegance. The vines coexist with a Mediterranean mixed crop: olive trees, almond trees, vegetable gardens... (Frank also produces olive oil). The vines range in age from forty to over one hundred years. The nineteen plots, covering twenty-four hectares in total, are all at altitude, between 600 and 900 meters, on several volcanic flows. They are all vinified separately: Frank decides on the blend based on the quality of the wines from each plot. In general, seven or eight vintages are produced in addition to the generic wines (rosé, basic red, and white). The soils are made up of different types of basalt, between powder and rock, with perfect drainage that allows for the production of concentrated and refined wines. Nerello Mascalese dominates the estate's grape varieties. This great traditional red grape variety from the northern valley of Etna is the only grape variety used in the great vintages. Its growing cycle is long, which allows the vine to work the soil and capture its minerality in the fruit. Chiroubles Red 2017

Garnata Red 2010
A smooth, characterful wine. Aromas of crushed wild blackberries like cocoa. High-altitude Grenache.
This Grenache comes from a plot planted between 1,300 and 1,368 meters above sea level on slate and schist soils. The destemmed harvest macerates in stainless steel vats. Alcoholic fermentation occurs spontaneously using native yeasts present in the environment, without any additives. The fermentation temperature is not altered: the coolness of autumn nights is sufficient (the winery is also at an altitude of 1,280 meters). Malolactic fermentation occurs naturally in barrels during aging in the underground cellar.

Kikiriki Black Red 2018
Elegance, purity, and a crisp minerality due to the limestone characterize the productions of Clos Lentiscus. The note of controlled oxidation, when present, does not dominate the tasting, and the wines are never deviant. The cavas are renowned for their exuberance, but those from Clos Lentiscus never have more than two grams of residual sugar per liter. The estate also produces still wines, red, white, and rosé.

This Cocorico (in Catalan) is a red made from a blend of Tempranillo and Cariñena (Carignan). It is in Sitges, Catalonia, in the heart of the Garraf Natural Park, that Manel Avinyo and his brother Joan took over the family estate, renamed Clos Lentiscus by Manel. Even though Barcelona is only a half-hour drive away, the beauty of the landscape is striking and the immersion in nature is total: Mediterranean forests rub shoulders with Catalan scrubland (thyme, rosemary, rockrose, mastic tree which gave its name to the estate, etc.). The Penedès region also has a long winemaking history. Nestled in its gentle hills is Clos Lentiscus, in the Penedés appellation, on twenty hectares of sandy and clay-limestone soils facing due south at an altitude of 225 meters. According to historical documents, the family of Manel and Joan Avinyo has been established there since at least the 14th century. For a long time, the grapes were sold to local cooperatives, but since the two brothers took over the estate, organic and biodynamic farming has replaced conventional practices, the entire harvest goes into the house vintages, and organic and biodynamic practices have allowed this beautiful property to reconnect with its former prestige: in the 19th century, its wines were sold in France and as far away as the Americas. Manel quickly earned a nickname: The Bubbleman, a tribute to his talent for making cavas, the sparkling white wines characteristic of the northeast of the Iberian Peninsula, from native varieties that only Catalonia has the secret to: sumoll, ull de llebre, xarel·lo, malvasia from Sitges, cartoixà vermell, cariñena (carignan), accompanied by tempranillo and muscat from Alexandria. In the vineyard and in the winery
Through Concerto, master winemaker Jean-Pierre Robinot showcases Pineau d'Aunis grown on limestone soils. The harvest is carried out by hand and vinified in whole bunches with three weeks of maceration, which gives the wine body. Aged for a year in old barrels.
Tasting
All the typical characteristics of Pineau d'Aunis: spices, cranberry, pomegranate, and a touch of raspberry. Limestone and mineral notes, a touch of undergrowth, a touch of yeast and butter, a pure and light color. A touch of menthol and black pepper on the palate. Drink with a good roast beef or lamb, a delicately roasted pigeon, charcuterie, cured meats, and even uninhibited fish such as smoked mackerel or any other smoked seafood.

Anyone interested in natural wine in France has crossed paths with Jean-Pierre Robinot and has never forgotten this smiling, bouncing figure. Although it has not yet been proven that all wines resemble their winemaker (a study to be undertaken), the organic and natural wines produced by Jean-Pierre, warm, friendly and luminous, are in the image of their creator. After running the wine bar L’Ange Vin for nearly fifteen years, on rue Richard-Lenoir in Paris, Jean-Pierre returned to his native Chahaignes, a small village in the south of Sarthe. His dream is to acquire his vineyard and make natural wines, without added sulfites.
Great terroirs of the Loir and tuffeau cellars
Jean-Pierre therefore reclaims hillside wasteland, on great terroirs, as well as troglodyte cellars dug into the tuffeau. 2002 will be his first vintage. At the same time, under the brand L’Opéra des vins, he vinifies organic grapes purchased from local winemakers. A member of the S.A.I.N.S. natural viticulture association, Jean-Pierre Robinot practices strict organic viticulture practices, without chemical weeding or the addition of sulfites. The soil is worked and amended with natural composts. All harvests, carried out at maturity on healthy grapes, are done by hand. The location and climate favor noble rot.

With Susucaru Rosato 2024, Frank Cornelissen continues to push the boundaries of rosé. Born on the volcanic slopes of Etna, this Sicilian wine with a pale color and intense nuances is much more than a thirst-quenching rosé: it's a terroir-driven rosé, complex, structured, and deeply vibrant.
Made from a unique blend of indigenous grape varieties – Nerello Mascalese, Malvasia, Moscadella, and Catarratto – harvested by hand, this IGP Terre Siciliane wine is crafted without compromise: destemmed maceration for one week, fermentation with indigenous yeasts, no oenological additives, and a one-year aging in epoxy tanks to preserve the purity of the fruit.
The terroir plays a major role here. The black volcanic soils of Etna bring a striking mineral tension, almost saline, which structures the whole. On the nose, there's great aromatic complexity: fresh red fruits, white pepper, dried rose petals, and a slightly smoky touch. On the palate, it's a textured wine, between the fluidity of a rosé and the depth of a light red. The finish is long, persistent, marked by a noble bitterness and an almost tannic sensation.
Susucaru Rosato is a chameleon wine: perfect as an aperitif, with grilled meats, artisanal charcuterie, spicy dishes, or seared red meats. Made from the famous traditional Catalan grape variety Xarello, it comes from vines planted on calcareous-sandy soils and harvested by hand. It is pressed directly, the must is vinified using indigenous yeasts and fermented for six months in stainless steel vats.

In the heart of the Blaye-Côtes-de-Bordeaux appellation, on the right bank of the Gironde estuary, flourish the vines of Château Frédignac, a family estate driven by the sincere commitment of Vignobles L'Amouller. Cultivation methods
True to a peasant philosophy that respects all living things, the estate is managed using certified organic farming methods, bearing the AB and Nature & Progrès labels. Here, the vines are nurtured without synthetic inputs, in a careful balance between soil, plant, and human intervention. Biodiversity is encouraged, treatments are gentle and measured, and every intervention is carried out with the aim of preserving the soil's identity and the purity of the fruit. This approach naturally extends to the cellar, where the "Coince ta bulle" cuvée is crafted using the ancestral method: a single fermentation, without the addition of yeasts or sulfites, resulting in a brut sparkling wine that is spontaneous and vibrant. Ti'Blanc Blanc 2021,

It's good, it's white, it's aromatic, it's light, it's fresh, and it's easy to drink, to say the least. The color is distinct, tending toward orange, due to a brief maceration of one of the grape varieties. Ti'blanc stands out as an ampelographic synthesis of the Domaine des Miquettes for the simple reason that it brings together all of its white grape varieties. 2021 was, in fact, a very rainy vintage with a heavy harvest: the resulting wines had low alcohol content. Chrystelle and Paul therefore gathered all their Viogniers, Marsannes, and Chasselas and made Ti'blanc instead of making their usual cuvées. It is therefore a unique wine, exclusive to this vintage. Only the Chasselas is macerated for two days, which gives it a distinct orange color and a certain structure. The Viogniers and Chasselas were pressed directly. Ti’blanc has a low alcohol content (10.5°) but a nice acidity; it will therefore keep a little, but we recommend enjoying it young.

Paul Estève and Chrystelle Vareille are the creators of the Domaine des Miquettes, whose great specificity is the use of Georgian techniques. They are passionate about this country in the Caucasus, the cradle of wine, where eight-thousand-year-old winemaking techniques are still used. At the heart of this viticulture is the qvevri, the buried jar where all the winemaking takes place: fermentation with skin maceration and aging. They set out to discover this country and returned with the decision to age all their wines in buried jars. They have twenty-six, but distinguish between tinajas (Spanish jars) for fermentation-maceration and buried "amphorae" for aging. No sulfur is added. For both reds and whites, the terracotta erases astringency and transmutes it into a velvety texture, a fruity and supple material.
The estate, located in Ardèche, is south of the Saint-Joseph appellation. Paul trained with René-Jean Dard and François Ribo, two great figures of natural wine in the Rhône Valley. With Chrystelle, he began by taking over Paul's family farm with two ares of vines, then in 2004 the entire estate, which now covers 4.3 hectares. The white grape varieties are located around the house, the red grape varieties are planted on steep hillsides, between 300 and 450 meters above sea level. The plots rest on a granite base with light soils: black mica granite, schist, and gneiss. Everything is grown organically (Ecocert) using biodynamic practices. The vines are cared for and fortified using plant decoctions and clay. The soils are worked by horse or winch and pickaxe. No chemical inputs are added to the vineyard work. The harvest is entirely manual.
Jour de Fête Sparkling Rosé 2019
Marie and Vincent Tricot
You pour it, pour it, pour it again, and you're amazed to have emptied the bottle. This organic, natural sparkling rosé wine doesn't bear this name for nothing. Made using the ancestral method (bottling during fermentation, which completes in the container), Jour de Fête is a seductive natural sparkling wine made from Gamay d'Auvergne that doesn't lend itself to melancholy. It displays a deep, slightly cloudy strawberry-raspberry color that already invites indulgence. On the nose, cherry, raspberry, and the promise of a vinous and concentrated sparkling wine, not just a gurgling experience. It can be described as both gurgling and complex.
The cherry, raspberry, redcurrant and strawberry are confirmed on the palate with a great deal of sweetness and indulgence, a little sugar reminiscent of the raspberry fruit paste from Auvergne, and the slight bitterness of the volcanic soil Gamay in the background. The effervescence is moderate, we also perceive citrus notes (orange, mandarin) and the floral notes are then revealed with a touch of violet. The roundness is pleasant, the freshness is exceptional. Made from Gamays grown on hillsides on volcanic and clay-limestone soils, Jour de fête is truly exceptional and as joyful and festive as its label promises.

Among the generation of Auvergne winemakers who, at the dawn of the 21st century, are reviving the vineyards of this beautiful volcanic province of the Massif Central from the ashes using organic and natural methods, Marie and Vincent Tricot are pioneers, and their name is well known to those who have long loved natural wine. After a colorful winemaking journey that took them from Beaujolais to Chile and from Chile to Costières-de-Nîmes, they landed in Auvergne, at the foot of the Puy de Dôme, in the commune of Orcet where they took over Claude Prugnard's vineyard, a land that has not seen the slightest chemical input for thirty years. The estate is located on a hillside on the left bank of the Allier River, in a volcanic clay-limestone area near the vineyards of Châteaugay, Chanturgue, and Corent. They acquired it in 2003 and have since been making wines from Auvergne Gamay, Chardonnay, and Pinot Noir, with a little Sauvignon Blanc and Muscat. These rare and sought-after wines are mainly sold directly. They have a straightforward, flamboyant profile and express themselves with as much character as simplicity.

Cloé is a Nerello Mascalese from the Sicilian estate Abbazia San Giorgio, planted on terraces. The grapes grow on volcanic soils poor in organic matter. Harvested at the end of September, they undergo a brief maceration, then are aged in stainless steel vats and chestnut barrels for 6 months. This is a rosé with character, boasting great freshness in addition to its floral aromas.

Benoit Camus
Château Roulant is a Beaujolais red wine, organic and natural (Ecocert certified), made from Gamay. Classified as a Vin de France, it is produced by Benoît Camus at his Pierre Dorées estate, in the south of the appellation. Its name evokes the itinerant life once led by the winemaker, a former seasonal agricultural worker.
Vinification
The Gamay vines of Beaujolais grow on clay-limestone soils. The very steep plots prohibit any mechanized work. The harvest, carried out by hand, undergoes a three-week semi-carbonic maceration. The wine is aged in concrete vats for fifteen months.
Tasting
The Beaujolais wines from Pierre Dorées are structured, long-lasting, and beautifully fruity. Here, after admiring a bright garnet color, we find strawberry, raspberry, red cherry, and cranberry, with a beautiful acidity in the mid-palate giving way to a rich and voluptuous finish. Freshness and acidity, leather, earth, and some animal notes. Wonderful richness in the mouth that we will enjoy accompanying with cold meats and cured meats, poultry such as pigeon or duck. You might think he's itinerant, with his vintages called "Château roulant" or "Vagabond", but for Benoît Camus, it's a memory of his previous life, when he was a seasonal farmer in the Rhône Valley and as far as Roussillon. Since 2003, he has settled in Southern Beaujolais, in the Pierres Dorées terroir, to make organic (Ecocert) and natural wines.
Nature before, nature always
Before purchasing his seven-hectare estate from an old winemaker, the vines had not yet seen pesticides or chemical additives. Many in Beaujolais worked this way. He made his first vintage in 2006, "natural without knowing it," he says. A brief attempt at chemical spraying to treat grape worm definitively dissuaded him from adding anything to the vineyard or the cellar. He acquired Ecocert organic certification and continues to make natural wines.
The Pierre Dorées terroir
The southern Beaujolais, with its clay-limestone soils, produces wines that are more structured and powerful than those from the granite soils of the North. This is the profile presented by the reds of Benoît Camus, natural wines that are straight, dense and long-aging, with good acidity and well-integrated tannins, not forgetting abundant, rich and seductive fruit.

Terroir, plot size and grape varieties
Nestled in the heart of the Dentelles de Montmirail, the Gigondas terroir asserts itself with its quiet strength and raw beauty. Cultivation methods
True to a respectful approach to living things, Les Grandes Serres crafts this Gigondas using natural winemaking methods, without artifice, allowing the grapes to express themselves freely. The vines are cultivated in harmony with natural balances, without synthetic products, with meticulous care given to each vine. The harvest is done by hand, selecting grapes at perfect ripeness, guaranteeing healthy and concentrated raw materials. In the cellar, aging is carefully controlled with restraint, without masking the wine's personality, to preserve its original freshness and lusciousness.

The 2022 Gigondas from Grandes Serres is a true explosion of pleasure. From the first sniff, it seduces with its intense aromas of ripe red fruits, crushed strawberry, juicy cherry, which mingle with notes of wild thyme, dark chocolate and a slightly smoky, almost meaty touch.
On the palate, it's a wave of generosity: ample, velvety, but never heavy. i Vicini Cortese White 2022
I Vicini Cortese is a dry white wine from Jean-Yves Péron, organic, biodynamic, and natural, made from Cortese grapes harvested in Piedmont. It is a merchant cuvée from the I Vicini series, harvested organically in Northern Italy and vinified in Savoie.
Vinification
The grapes from which I Vicini Cortese is made come from Asti and grow in a cool microclimate that allows for relatively late ripening. Cortese is an ancient grape variety often associated with Trebbiano or Garganega. It produces a fresh and tangy wine with a straw-yellow color with greenish highlights. Here, it undergoes two weeks of carbonic maceration and spends a year in 34-hectoliter tuns. No fining, no filtration, and no addition of sulfites.
Tasting
I Vicini Cortese is a light and fresh, digestible wine, with an alcohol content between 10 and 11 degrees, making it easy to drink. It has a minerality due to the terroir and citrus notes, particularly lemon zest. A perfect companion for tapas and the most refined starters, shellfish, and seafood.

Jean-Yves Péron is a talented embodiment of the organic, biodynamic, and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italo-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
