Where?

Among the small areas that make up the mosaic of Languedoc, Cabardès is, historically and geographically, one of the most remarkable. A former subdivision of Cathar Country, it covers a large part of the southern slope of the Montagne Noire and extends as far as Carcassonne, bordered to the west by Lauragais and to the east by Minervois. Wild and hilly, it flattens slightly—but not completely—to the south and east. At its eastern end are Conques-sur-Orbiel and the place called Font Juvénal, where the Domaine du Temps extends. This former 18th-century priory and the vast land surrounding it belong to Jeremy Gobert and Lauranne Plegat. Lauranne trained with Frédéric Cossard: while she works mostly in the cellar, Jeremy tends the vines.

Terroir, plots, and grape varieties

Conveniently located on the divide between the Atlantic and Mediterranean climate zones, Cabardès is influenced by both, and its appellation allows for both Mediterranean grape varieties and others more common on the Atlantic coast. This gives winemakers a fairly wide range of grape varieties. Domaine du Temps is no exception: Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, and Grenache for the reds; Muscat, Viognier, Sémillon, Roussanne, and Chenin for the whites. The estate is a magical place where sixty hectares of forests and scrubland surround and protect thirteen hectares of vineyards on stony clay-limestone soils whose beautiful balance between dryness and coolness is a blessing for the vines. The plots are almost all southwest-facing, but the Cabernet Sauvignons, which are slower to ripen, face south.

Cultivation Methods

Such vast natural terrain encompassing the plots ensures remarkable ecological purity. Ecocert-certified since 1998, the estate is entirely cultivated using biodynamic agriculture and has been dedicated to nature since 2015. Grass cover in the rows of vines is permanent but controlled, and all irrigation is prohibited. No fertilizer is added: the frequent passage of donkeys, goats, and chickens ensures this. The harvest, entirely manual, is carried out in ten-kilogram crates for rigorous grape sorting: yields are reduced (25 hl per hectare).

Vinification

No inputs are used in the vineyard, no inputs in the winery. Destemming is determined based on the ripeness of the stems. The reds are vinified using carbonic maceration, grape variety by grape variety, in concrete vats, with blending taking place before aging. This lasts approximately one year, in stainless steel vats or Burgundy barrels, depending on the case. The whites are obtained by direct pressing at low pressure, long and gentle, to extract only the best from the grapes. They are aged successively in new Burgundy barrels for six months and in stainless steel vats for the same duration. No sulfites are added during the winemaking process, and no fining or filtration is performed.

The Wines

The wines of Vignes du Domaine du Temps are clean, straightforward, with very supple tannins. The exceptional terroir is clearly evident in their deliciousness and freshness. Its qualities are evident in the minerality and solidity of Sans ordonnance, a wine that can be reserved for all occasions and all meals; in the density and spice of I Wine, a beautiful blend of Syrah and Côt; or in the delicious expressiveness of Combe du temps, a white made from Chenin, Sémillon, and Roussanne.
