Armagnac Laballe "Résistance"
The Laudet family, in Capbreton (Landes), has been making wine and distilling eaux-de-vie for eight generations. The old still is called Marie-Jeanne. The current generation, Cyril and Julie, are nevertheless not afraid to challenge the codes of Armagnac. Made from 100% of the late-ripening, phylloxera-resistant Baco hybrid grape variety (hence the name of the vintage), this is the result of a blend of six Armagnacs aged at least six years: here 2009, 2010 and 2012. The color is brilliant; the nose is intense, fresh and complex, developing aromas of apple, citrus and roasted coffee. The palate is round and delicious, ending with liquorice and sweet spices.
Pure malt, first peat, organic malted barley brandy, Ergaster Distillery
This is Ergaster's peated whisky, aged for eighteen months in new French oak barrels and then in reused barrels containing equal proportions of Banyuls, Cognac, and Pineau des Charentes. The nose is floral and musky, finishing with a mineral and earthy note. The attack is sweet, smoky, and saline, well-structured, then gives way to leather, cocoa bean, and a hint of prune. The finish is warm and woody, leaving aromas of toasted almonds on the palate. Those who love peat will love it, those who have never tried it can learn.
Rye whiskey, The Helsinki Distilling Co.
You don't need to live in Kentucky to make a good rye whiskey: the three makers of the Helsinki Distilling Company—two Finns, one Irish—do it very well. Rye is, in Finnish tradition, a symbol of power and vitality; it was therefore only natural that they pay homage to it. This three-year-aged whiskey (47.5%, 70% Finnish rye, 30% Finnish barley) is a pure masterpiece, straightforward and controlled, with a nose of toasted rye, honey, and dark chocolate. Rich and deep on the palate, it offers notes of caramel, licorice, and spices, with a hint of coffee. A big favorite of the Culinaries team.
French Single Malt Whisky Coperies
Coperies is a 100% French single malt whisky from a single distillery, the venerable Merlet & Fils distillery, in Charente-Maritime. It bears the mark of its region even in its name: "copieries" is a very old word meaning "harvest" in old Charente. This appellation refers to the French identity of this beverage—all the ingredients of which are French—but also, beyond that, to its specifically Charente roots. The barley from which it is made is grown, malted, and brewed in France before being distilled and aged at the Merlet & Fils distillery. Son.
Its development is the fruit of centuries-old expertise, used for the production of the most prestigious wine spirits and applied here to cereals. The first step is double-pass distillation, in Charentais copper stills, which produces round and elegant malt spirits. The aging takes place in French oak barrels, maintaining a balance between new and old barrels in order to modulate the contribution of wood and toasting: this produces subtle spicy notes and silky tannins. The whisky is surprising, remarkable for the sweetness and roundness of its accents. It is floral, fruity, and of unparalleled finesse. The nose first reveals a very discreet vanilla and a light touch of caramel. On the palate, it is the smooth and fluid texture that surprises, all in suppleness: no alcoholic burn hinders the sweet, aromatic, and delicately spiced notes of this whisky. The purity of single malt is very apparent. It will be wonderful neat, with an ice cube that will bring out its tenderness, and can also lend itself to the preparation of cocktails. It is, we specify, an excellent way to enter the world of whisky for those who are not used to this beverage: it will not be aggressive and will provide them with a gentle initiation.
VS-Fine Calvados, Domaine de la Flaguerie
The Domaine de La Flaguerie and the Ducy orchards are located between Caen and Bayeux, in the Bessin region. The Calvados produced there has an aromatic profile linked to this rolling plain region, more lively, more dynamic, and less well-known to the general public than the rounded, sweet style of the Pays d'Auge. Made from the estate's apples, this organic Calvados (40% alcohol) is a perfect example of the local style: the color is amber, with a nose reminiscent of tobacco, pepper, and cinnamon. On the palate, this spicy liveliness is confirmed before rounding out into vanilla apple. A complex Calvados, long in the mouth, full of elegance.

Armagnac by Maurice 2009 Spirits
Take advantage of it, not everyone has access to Armagnac by Maurice: organic (Demeter, AB, and Eurofeuille labels), artisanal, it is made by Maurice de Mandelaëre (Domaine de Saoubis), the only biodynamic Armagnac producer. Hootch is responsible for packaging and distributing this small-producer Armagnac with an alcohol content of 49.3%.
Production

Tasting
The Baco grape variety gives a beautiful complexity to the nose with aromas of vine flowers, bay leaf, spices, and exotic fruits. On the palate, there is great finesse and length with notes of vanilla, flan, tobacco, and flowers. Serve it as a digestif or a light pick-me-up, and you can even eat it with: pastries, desserts, fruits, or charcuterie such as peasant terrines. It will be served alongside beautiful poultry or roasted black Gascon pork.

Nc'nean Organic Single Malt
L'explorateur du goût
Nc'nean Organic Single Malt has all the information in its name: this single malt Scotch whisky, labeled Eurofeuille, is made at the Nc'nean distillery, founded by Annabel Thomas in the West Highlands. The distillery is certified organic and BCorp-certified (a global organic and ethical label). The Celtic goddess Neachneohain, protector of nature, inspired the brand name.
Production
100% organic Scottish malted barley is slowly crushed before fermentation, which can last up to 114 hours. The purest and fruitiest part is used for distillation. The whisky is aged in red wine and American whiskey barrels. The use of diverse indigenous yeasts gives Nc’nean whiskies their unique identity.
Tasting
On the nose, Nc’Nean Organic Single Malt offers a creamy, lemony note, followed by peach, apricot, and rye bread. The palate is spicy, fruity, and delicate, with a smooth, elegant finish. A perfect whisky for all occasions.

This Nc’Nean Organic single malt was selected by L’Explorateur du goût, a project by François Sommer that seeks out the best spirits from around the world. Its conditions: ecological concern (Bcorp label of respect for social and environmental standards; organic certification for most of the references…), attention to people and the terroir (solid and lasting relationships with producers), quality of products and taste, originality. In the catalog: French spirits (cognac, calvados…) and exotic spirits (whisky, rum, mezcal…), not forgetting liqueurs and tonics. Ergaster Distillery
This single malt with its beautiful amber color is the pride of the Ergaster team. It is first aged in new barrels, then completes its maturation in reused barrels (25% vin jaune, 75% cognac). The nose is subtly fruity (guava, almond, white grape), unfolding into leather, walnuts, and fresh tobacco in the glass. On the palate, the attack is powerful with floral, woody, and vanilla notes, evolving into dried fruits. The finish is long and more herbaceous: green barley, spring onions, and hazelnut. Entirely organic (Demeter, AB, and Eurofeuille labels), biodynamic, and artisanal, The Morning Dew can challenge your Armagnac experience with its transparency. It is indeed a young Armagnac, which owes its paleness to four years of aging in oak barrels. Classified VSOP (Very Superior Old Pale). Developed by Maurice de Mandelaëre (Domaine de Saoubis), the only biodynamic Armagnac producer, it is distributed by Hootch and has an alcohol content of 44%.
Development
The Morning Dew is made from 100% Baco grapes grown biodynamically in Bas-Armagnac and aged in 200-liter microbarrels. It is neither reduced nor filtered, and is free of coloring. No fertilizers or pesticides are used in the vineyards, and no additives are used in the cellar. Cuvée limited to 390 bottles.
Tasting
It's a real treat, a delicacy. Dried fruits, honey, and spices, an irresistible taste and floral notes. The silky, round palate reveals fruit, vanilla, and caramel.
