The Savoie vineyard extends over 2,200 hectares across the departments of Savoie, Haute-Savoie, Isère, and Ain. It is a very old mountain vineyard, dating back to Gallo-Roman times. According to ancient sources, the Allobroges, an indigenous Celtic people, developed a grape variety resistant to the harsh and contrasting Alpine climate, thus giving a boost to Savoie viticulture.
In ancient and medieval times, viticulture in Savoie was practiced in hautain (raised trellises or dead trees called "crosses", which could reach almost 12 meters in height). Production remained of uneven quality until the 19th century, when the Chasselas white wines from the Évian region, grown on crosses, were renowned. However, it took a long time for this vineyard to attract widespread attention, probably because it is very fragmented, made up of small islands of viticulture, and little known to the general public.
Today, Savoie wines are once again attracting attention, following a return to popularity over the past twenty years. Among their main AOC-AOPs, we can note Jongleux, Marignan, Combe-de-Savoie, Apremont, Chautagne, Roussette-de-Savoie, Ripaille, Crépy, Chignin, Chignin-Bergeron, and various others, including the IGP Vin de Pays des Allobroges (which covers the entire region) and the AOC Seyssel, in the Ain.
Savoie excels in dry white wines. It also produces red and rosé wines, as well as excellent Savoie crémants. It is especially around its indigenous white grape varieties — Altesse, Jacquère, Gringet, Chasselas, and Roussanne — that it achieves its greatest successes.
Savoie white wines are an obvious accompaniment to Savoie specialties. We think of the most convivial ones such as fondue savoyarde or raclette, but there are others, also cheese-based, such as Berthoud, which go well with wines such as a Chignin-Bergeron, a Château-Ripaille, or a Marignan Blanc. Also try a Roussette-de-Savoie, an Apremont, or a white wine from our Savoie winemaker Jean-Yves Péron based on Altesse, Jacquère, Roussanne, or Gringet with a gratin de crozets au Beaufort, a dish of wild mushrooms, or a rabbit gibelotte. The reds will go well with red meats, Savoie charcuterie, or feathered game.
What makes Savoie wines so special?
The specificity of Savoie wines, especially the whites, lies in their artisanal and regional character: they are wines from small estates, often made on steep sloping vineyards, mostly on limestone scree soils resulting from erosion, with some marl, clay, and schist terroirs in places. These geological conditions, combined with the climate and grape varieties, produce very dry and very lively white wines, but never harsh or astringent, thanks to a great mastery of harvest dates. This is why they are remarkable for their fruitiness, roundness, and richness despite their liveliness. These are always very aromatic, original, and singular wines, bearing the strong mark of their terroir.
What are the emblematic grape varieties of Savoie wines?
Savoie uses a range of about twenty-three grape varieties. While some like Gamay, Pinot Noir (reds), and Chardonnay (white) are not specifically from Savoie (although originating from the Burgundy-Rhône-Alpes region), the Savoie region can be proud of its indigenous and emblematic grape varieties: in white, Jacquère, Altesse, Gringet, Molette Blanche, Crépy Marin Ripaille or Marignan (local version of Chasselas) and Mondeuse Blanche. In red, Persan and Mondeuse are also of local origin.
How to choose a Savoie wine for a dinner with friends?
The first question is what you will be serving them. If it's a convivial sharing specialty like fondue savoyarde or raclette, immediately look for dry white wines based on Altesse, Jacquère, Roussette, Roussanne (Chignin or Chignin-Bergeron), Molette Blanche, or Chasselas. These white wines are also suitable if you are aiming for more general cuisine: white meats, poultry, vegetables, fish, seafood. For bolder dishes such as red meats, stews such as daubes or boeuf bourguignon, as well as charcuterie and cured meats, opt for a Mondeuse, a Savoie Gamay, or a red wine based on Persan or Pinot Noir. For desserts, don't hesitate to open a Savoie crémant.

I Vicini Moscato Blanc 2020
Jean-Yves Péron
I Vicini Moscato is a Muscat d'Asti vinified dry; it therefore offers the aromatic and musky nose specific to the grape variety, but without the syrupy side that is sometimes associated with it, as a very present tannic structure balances the whole. On the palate, it is rich and powerful; we find the charming aroma of Muscat in the retro-olfaction, but with the tension and freshness that the winemaker favors for his dry whites. It is a table wine, with power and presence: not really for an aperitif, but for gastronomy, no limits.
Jean-Yves Péron's "I Vicini" series is made from grapes harvested in Piedmont; for I Vicini Moscato, we are dealing with the famous muscats of the terroirs of Asti. They grow on very fine limestone soils, calcareous-magnesian, and the Asti site benefits from a cold air current that brings increased freshness compared to the rest of the region. The harvest, manual, is carried out on grapes at a fairly advanced phenolic maturity. Maceration is long, with three months of punching down, after which everything is racked in January, pressed and sent directly into 300-liter barrels (new barrels, one-wine barrels and two-wine barrels) for a year of aging. No filtration, no addition of sulfites. Straightness, tension, and freshness: a very fine mountain Muscat.

Near Conflans, in Albertville (Savoie), Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both under the banner of nature and organic high-altitude vines. Initially destined for a career in biochemistry, he quickly became drawn to the vine and trained as an oenologist in Bordeaux. He learned his trade as a winemaker with Thierry Allemand in Cornas, then with Bruno Schueller in Alsace, before spending some time in New Zealand and the United States. Jean-Yves's current vineyard, one and a half hectares of which have been biodynamic since the beginning, is divided between Conflans, near Albertville, and Fréterive, a little further down in the Isère Valley. Composed of micro-plots of vines, it is staggered between 350 m and 550 m above sea level and is worked entirely by hand. His trading activity, which he began in 2011, allows him to buy the harvest from organic winegrowers close to him (such as Raphaël Marin and Adrien Dacquin). Also, the construction of a new winery in 2017 allows him to increase production and collaborate with winegrowers from Northern Italy: Paolo Angelino in Casale Monferrato (Turin), Giorgio Barbero in Asti. This is a new dimension given to his work as a winemaker, allowing him to diversify the terroirs and deepen his experiences in winemaking and aging. Jean-Yves Péron's winemaking follows the principles of minimal intervention. On narrow and steep surfaces, his mountain vines receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The surrounding vegetation is very rich: it protects the vines and helps to strengthen them. The soils are grassed, mown and reworked with a pickaxe and winch. The harvest is entirely manual. Once vatted in whole bunches, the grapes, both red and white, undergo a semi-carbonic maceration which allows the extraction of fresh fruit aromas. This maceration time varies between five days and nine weeks depending on the vintage. The day before or two days before pressing, Jean-Yves performs foot-treading directly in the vat. After this fermentation, the musts are sent to barrels for aging on lees for twelve months in five hundred liter barrels of two or three wines (to limit the oaky sensation), followed by blending and resting in vats. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Poiré de la combe d'Ire White 17/18
Poiré de la Combe d’Ire is a sparkling cuvée from Jean-Yves Péron made with pears. Organic, biodynamic, and natural, this perry is the winemaker's only grape-free cuvée.
Vinification
Around ten varieties of old pears, growing in Savoyard orchards, are the basis of this perry from Combe d’Ire, a clay-limestone area classified as a biological reserve and protected area near Chevaline. The pears are grated and then pressed. The perry is aged for three years in 350-liter barrels.
Tasting
Completely dry (zero dosage), beautiful golden color with a lovely fine note of sweetness in the background, coexisting with a symphony of bitterness, fruitiness, and salinity. A great richness of taste, the pear sublimated in a sparkling beverage. Intensely fresh finish. This aged perry is at its best after five years of aging.

La Petite Robe Blanc 2021

A dry, organic, biodynamic, and natural macerated white wine, La Petite Robe is produced in Savoie by Jean-Yves Péron. This is a 100% Jacquère white wine whose vines grow on clay-limestone soil, in the place called Les Marches, at the foot of Mont Granier.
Vinification
La Petite Robe comes from roughly the same terroir as that of Œillets, but it is harvested earlier. Carbonic maceration lasts fifteen days. The wine is aged for one year in 15-hectoliter tuns and barrels. Neither fined, nor filtered, nor sulfited.
Tasting
Wonderfully sweet and crisp, this is yet another great success from Jean-Yves Péron. There are actually two Petites Robes: the wine will be very different depending on whether it is in magnum or bottle. Jean-Yves likes to talk about this as an exercise in style. Here, in 75 cl, the Jacquère gives its opulent, gourmand, fruity, fleshy side, with volume on the palate. The Petite Robe offers notes of charcoal, white fruits, a beautiful balance and great intensity, combined with a note of controlled oxidation. This wine is ideal with raw or cooked seafood: the choice is wide, between smoked fish, tarama and seafood rillettes (Salmon de France).

Pierra Menta White 2022
Pierra Menta is an exceptional organic, biodynamic, and natural dry white wine from Savoie made by Jean-Yves Péron. Classified as a Vin de France, Pierra Menta is made from the Gringet grape variety. The winemaker plans to plant more vines of this ancient variety until he reaches half a hectare.
Vinification
Gringet, which makes up 100% of Pierra Menta, is a white grape variety native to Haute-Savoie, historically linked to the commune of Ayse, near Bonneville. Jean-Yves Péron's vines are planted near Albertville, on a south-facing mica-schist plot. Gringet has long been confined to the Bonneville region and traditionally produces low-proof, high-yield sparkling wines. It is an interesting, fruity, low-alcohol grape variety with notes of quince and strong minerality. Pierra Menta's gringets are macerated for two weeks in carbonic acid, then punched down for two months, and aged for one year in 300-liter barrels.
Tasting
The quince is evident from the initial olfactory and taste, and the minerality supports this note. White fruits, florality, plenty of structure, and a nice acidity. An incredible length, too... Les Marlines Special White Cuvée 2018
Les Marlines is an organic and natural dry white wine from Jean-Yves Péron. This exceptional cuvée, classified as a Vin de France, is produced in Savoie in the Chignin-Bergeron region (without the appellation). It is a 100% Roussanne de Savoie merchant cuvée made from grapes grown biodynamically in Chignin by Gilles Berlioz.
Vinification
Roussannes are produced from young vines (three years old) and older vines growing on poor, shallow limestone subsoil. The plot is south-facing on a predominantly west-facing slope. This is the first harvest from these young vines, and it is producing splendid results. The grapes spend three weeks in carbonic maceration with a week of punching down, then the wine is aged under veil for four years in 225-liter barrels.
Tasting
The oxidative note is unmistakable in this Les Marlines cuvée; it is accompanied by great aromatic richness and real freshness. This complete and adaptable wine offers delicious notes of hay, dried herbs, and apricot, which is the hallmark of Roussanne. As a good sailing wine, this wine will go with everything. We recommend it with very old hard cheeses: or with exceptional charcuterie, such as galabart black pudding, Bigorre black ham or Béarnaise andouille, all three to be found in the selection of the Collectif Padouen. Or a simmered Gascon poultry (we strongly recommend using this wine for the sauce: you will therefore need more than one bottle).

Les Œillets Amphore White 2022
Les Œillets Amphore is a dry macerated white wine produced in Savoie by Jean-Yves Péron. Organic, biodynamic, and natural, it is a 100% Jacquère white, with no additives or added sulfites, classified as a Vin de France.
Vinification
Les Œillets comes from the same terroir as La Petite Robe (the clay-limestone soils of the lieu-dit Les Marches, at the foot of Mont Granier), but it is harvested later to achieve greater phenolic maturity and a higher tannin concentration. Carbonic maceration for four or five days is followed by a month of punching down in vats. At least one year of aging in terracotta amphorae.
Tasting
With a beautiful minerality and a tension polished by the time spent in terracotta, Les Œillets Amphore by Jean-Yves Péron is an atypical white, with powerful aromatic notes without any trace of wood. Lots of fruit and candied citrus. Les Œillets has chewiness, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. You will pair him with all your best dishes.

I Vicini Grignolino Red 2019

The harvest is macerated for fourteen weeks in neutral oak and the wine is aged for one year in barrels. The wine is intense, powerful and structured, with a very pretty nose and a ruby red color.
i Vicini Barbera Red 2021
This bottle from Jean-Yves Péron's I Vicini series is an organic, biodynamic, and natural red wine. It is vinified in Savoie from grapes harvested in Piedmont. The grape variety is Barbera, grown in Asti and Alba. The second most widely used red grape variety in Italy after Sangiovese, Barbera produces full-bodied, colorful wines with notes of red fruits. This vintage is classified as a Wine of the European Community.
Vinification
Hand-harvested, no sulfites added, no filtration, no fining. The two Barberas are macerated for three months with punching down and undergo fifteen days of carbonic maceration. The wine is aged for one year in 225-liter barrels. The 13.5 degrees of alcohol testifies to the desire not to exaggerate its richness and power: the average Barbera today is closer to 15 degrees.
Tasting
A great wine in every sense of the word, this I Vicini Barbera. Long, very fruity, generous, deep, with superb acidity resulting from a harvest at moderate maturity, it is both serious and joyful, intense and concentrated. Finesse, minerality, tension, beautiful intense and colorful red color: it demands to accompany beautiful cuts of meat, whether black pork from Bigorre or high-end beef from Maison Aitana.

This I Vicini Barbera is a great wine in every sense of the word. Long, very fruity, generous, deep, with superb acidity resulting from a moderately ripe harvest, it is both serious and joyful, wonderfully intense and concentrated. Finesse, minerality, tension, and a beautiful, intense and colorful red color: a superb example of what the Barbera grape variety can achieve, especially at altitude, as is the case here. Its 13.5% alcohol testifies to the desire not to exaggerate its richness and power: the average Barbera today is closer to 15%. The second most widely used red grape variety in Italy after Sangiovese, Barbera produces full-bodied, colorful wines with notes of red fruits. In 2017, Jean-Yves Péron decided to expand his range by sourcing organic grapes in the heart of Piedmont, Italy, in collaboration with his winemaker friends Paolo Angelino in Casale Monferrato and Giorgio Barbero in Asti. The result has been several vintages, including this 100% Barbera red, made from Paolo's grapes. The vines, around forty years old, grow on gray and white marl soils cultivated biodynamically. These are old, low-yielding vines, harvested by hand when slightly underripe to counterbalance the richness of the grape variety. Skin maceration, in pure carbonic mode without punching down, takes place over four weeks, using indigenous yeasts. I Vicini Barbera then ages for at least a year in 900-liter sandstone amphorae, which reinforces the wine's tension and minerality. No filtration, fining, or addition of sulfites.

Near Conflans, in Albertville (Savoie), Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both under the banner of nature and high-altitude organic vines. Initially destined for a career in biochemistry, he quickly became drawn to the vine and trained as an oenologist in Bordeaux. He learned his trade as a winemaker with Thierry Allemand in Cornas, then with Bruno Schueller in Alsace, before spending some time in New Zealand and the United States. Jean-Yves' current vineyard, one and a half hectares biodynamic since the beginning, is divided between Conflans, near Albertville, and Fréterive, a little further down in the Isère Valley. Made up of micro-plots of vines, it is staggered between 350 m and 550 m above sea level and is worked entirely by hand. His trading activity, which he began in 2011, allows him to buy the harvest from organic winemakers close to his home (such as Raphaël Marin and Adrien Dacquin). Also, the construction of a new winery in 2017 allows him to increase production and collaborate with winemakers from Northern Italy: Paolo Angelino in Casale Monferrato (Turin), Giorgio Barbero in Asti. The surrounding vegetation is very rich: it protects the vines and helps to strengthen them. The soils are grassed, mown and reworked with a pickaxe and winch. The harvest is entirely manual. Once vatted in whole bunches, the grapes, both red and white, undergo a semi-carbonic maceration which allows the extraction of fresh fruit aromas. This maceration time varies between five days and nine weeks depending on the vintage. The day before or two days before pressing, Jean-Yves performs foot-treading directly in the vat. After this fermentation, the musts are sent to barrels for aging on lees for twelve months in five hundred liter barrels of two or three wines (to limit the oaky sensation), followed by blending and resting in vats. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Le paché Red 2022
Le Paché is an organic and natural wine produced in Savoie by Jean-Yves Péron with the help of his collaborator Marc Payan. In Vin de France, it is made from Pinot Noir and hybrid grape varieties.
Vinification
The Le Paché plot is planted with old vines (60 to 120 years old) on limestone and schist soils. The vines are harvested by hand. The grapes undergo a two-week carbonic maceration before being fermented with two weeks of punching down the cap. The wine is aged for one year in 225-liter barrels.
Tasting
Floral, spicy, mineral, and delicately fruity—red berries, dried or jammy strawberries, pomegranate—, earthy notes, and a lovely aroma of roots and bark, Le Paché ticks all the boxes for a balanced, medium-bodied red wine. Les Œillets Blanc 2022

Vinified in Savoie, Les Œillets is a dry macerated white wine made by Jean-Yves Péron. Organic, biodynamic, and natural, it is a 100% Jacquère white, with no additives or added sulfites, classified as a Vin de France.
Vinification
Les Œillets comes from the same terroir as La Petite Robe (the clay-limestone soils of the lieu-dit Les Marches, at the foot of Mont Granier), but it is harvested later to achieve greater phenolic maturity and a higher tannin concentration. Carbonic maceration for four or five days is followed by a month of punching down in vats. At least one year of aging in 300-liter barrels.

Woody, with explosive minerality and beautiful tension, Les Œillets by Jean-Yves Péron is an atypical white wine with powerful aromatic notes. Lots of fruit and candied citrus. Superbly structured, Les Œillets has chewiness, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. Favorita, from the I Vicini merchant range, is produced by Jean-Yves Péron using organic, biodynamic, and natural methods. It is made from organic grapes purchased in Asti (Piedmont). This macerated white wine is made from 100% Favorita, a local white grape variety very similar to Vermentino.
Vinification
The grapes used for this Favorita cuvée are harvested at full maturity from young vines growing on semi-slopes. One-third of them are directly pressed and two-thirds are macerated in carbonic acid for two weeks. The wine is aged for one year in 300-liter barrels. Unfiltered, unfined, and no sulfites are added.
Tasting
This is a Vermentino that bears the hallmarks of a more continental terroir and climate than average. It has a beautiful acidic base and plenty of minerality, sapidity, and aroma, similar to certain Alsatian grape varieties: fragrant without being exotic. Champ Levat comes from two plots: mica schist in Albertville (the Pas de l'Ours plot) and limestone scree in Fréterive (the Côté pelée plot). The former gives a mineral and floral accent, and the latter favors a rustic side. The harvest, entirely manual, is vatted in whole bunches and undergoes two weeks of carbonic maceration. Aged for one year in barrels used for several wines (between three and ten years old), the wood of which does not overpower the fruitiness of the wine. No filtration, fining, or addition of sulfites.
Tasting
In Champ Lervat, two terroirs balance each other. This is a tender and balanced red wine, taut and straightforward, with a peppery note and plenty of spice. On the palate, it offers a profusion of fresh and intense fruit and balsamic notes. Pleasant, fresh, and dense on the palate. The tannins are well-integrated and the finish is long. This 100% Mondeuse can be kept for a long time, and will pair very well with cured meats and all mountain cuisine.

Jean-Yves Péron is a talented embodiment of the organic, biodynamic, and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow and steep surfaces, his mountain vines in micro-plots, worked by hand, do not receive any synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
