The fourth-largest wine region in France by production volume, the South-West vineyard straddles the Nouvelle-Aquitaine and Occitanie regions. It extends from the foothills of the Pyrenees (Basque vineyard) and the Massif Central, and is bordered by the Atlantic Ocean, from which it is separated by the Landes forest all the way to the Basque Country. It does not include the Bordeaux vineyard, although the "upper country," meaning the entire wine-growing area upstream of the Garonne up to Gaillac, long contributed to enriching and coloring Bordeaux wines as blending wines. The South-West boasts numerous fragmented wine appellations (AOP and AOC), mainly red and white, but also rosé, as well as some sweet and liqueur wines, and some flor wines (with controlled oxidation) in Gaillac. Some appellations in the South-West date back to the Gallic and Gallo-Roman periods, notably Gaillac, a "fossil" vineyard, the oldest in France. This is also the case for the Jurançon, Cahors, and Haut Pays Garonnais appellations.

Largely situated on the sedimentary soils of the Aquitaine basin around the Garonne, Lot, and Adour rivers, it includes some clay-limestone areas and limestone plateaus (causses, one of the finest examples of which is the AOC Cahors), sands, and loess. The soils, like the climates and landscapes, are extremely diverse, defining the regional sub-units: Pyrenean foothills (Basque and Béarnais vineyards with AOCs Irouléguy, Béarn, and Jurançon), Gascony (AOC Côtes-de-Gascogne and Landes and Gers vineyards, i.e., AOCs Tursan, Côtes-de-Saint-Mont, Madiran, and Pacherenc-de-Vic-Bilh), Garonne basin (AOCs Côtes-du-Marmandais, Côtes-de-Buzet, Côtes-du-Brulhois, Fronton, and Côtes-du-Frontonnais), Tarn basin (AOC Gaillac), Lot valley (AOC Cahors), Aveyron basin (AOCs Estaing, Marcillac, Côtes-de-Millau, Entraygues-et-Fel) and Périgord (AOPs Bergerac, Monbazillac, Pécharmant, Montravel, Saussignac, and Côtes-de-Duras).

All this viticultural richness also stems from the specificity of its grape varieties: 300 in total, including over 130 indigenous ones. Some of the oldest European grape varieties were born in the French South-West and have spread around the world: for example, Malbec in Argentina and the Cabernets almost everywhere. In addition to the classic Cabernet Sauvignon, Cabernet Franc, and Merlot, local grape varieties such as Tannat, Côt (or Malbec), Duras, Braucol, Abouriou, Carménère, Négrette, Prunelard, Castets, Petit Verdot, Fer Servadou, etc., are the basis of the aromatic richness of South-West red wines, wines that combine body, longevity, and a lot of charm and fruitiness. In white wines, Petit Manseng, Gros Manseng, Colombard, Loin-de-l'œil, Mauzac, Baco Blanc, Muscadelle, Sémillon, and Ugni Blanc contribute to making pleasant, rounded, wonderfully fruity and aromatic wines, with balanced freshness and acidity.

It is important to emphasize the aromatics of South-West grape varieties, which make them recognizable among all others: for example, the Négrette grape evokes violet, Colombard grapefruit and orange blossom, Fer Servadou blackcurrant and blackcurrant bud, Prunelard and Duras have notes of black pepper, and the Mansengs (especially Petit Manseng) acquire notes of black truffle with age. What are the essential red wines of the South-West? The essential red wines of the South-West are primarily the best known: Cahors, Madiran, Bergerac, Jurançon. However, "essential" does not mean "famous," and we advise you to discover the red wines of the South-West less known to the general public: Gaillac, Côtes-de-Buzet, Tursan, Irouléguy, Côtes-du-Brulhois, Fronton, or Côtes-du-Marmandais. These wines are most often pleasant, easy to drink, perfect for meals with friends, barbecues, and picnics. South-West wines are perfect "country wines," but they can also be extremely distinguished (sweet Jurançon, Gaillac flor wine...).

What are the ideal food and wine pairings with a South-West wine?
First, pairings with South-West red wines depend on their character: full-bodied and dense like a Madiran, a Cahors, or a wine from Braucol or Prunelard grape varieties (Gaillac), they call for red meats, all stews made with red wine, as well as so-called "dark" meats such as game (wild boar, deer, roe deer, hare...) and duck. If the red wine is rather supple and fruity while still having body, as is the case for reds from the Garonne basin and the Gascon basin, try grilled dishes, oily fish such as tuna or mackerel, and regional dishes such as cassoulet, garbure, duck magret, confits, and Basque and Béarnais charcuterie, including cured meats with Espelette pepper and Kintoa ham from the Basque Country.

With dry white wines from the South-West, fish and seafood—shellfish and crustaceans—are perfect. As these are generally very balanced wines between fruitiness and minerality, freshness and roundness, and very aromatic, the pairings are very wide. They can also be paired with cheeses, white meats, non-European cuisines (Chinese, Vietnamese, Thai), and, for the sweeter ones, with well-aged cheeses and foie gras. Black truffle is a must with a very old sweet Jurançon made from Petit Manseng, which will also go well with foie gras, like sweet Gaillac or Monbazillac.
