Les Vignes du Domaine du Temps
Sans Ordonnance is a balanced, straightforward, and solid red, slightly saline on the finish, remarkable for its freshness and minerality, but without astringency. The fruit is ripe without excessive exuberance. This is a table wine that can be paired with traditional dishes, roasts, and stews. It confirms the straightforward style of the estate, and the melting tannins are remarkable: no astringency, but fruit, maturity, minerality, and a hint of plum. Fresh, ripe, and balanced, this is a solid wine that will lend itself to all occasions and all meals. Made from equal parts Cabernet Sauvignon and Merlot, Sans ordonnance evokes a Bordeaux blend. Yes, but... both varieties grew under the Cathar sun and, in addition to the freshness and seriousness of the Gironde model, offer very different, sunny and generous notes. Vinification is done in concrete vats after destemming, before aging for twelve months in old barrels.

The Domaine du Temps is located in Cabardès, a small region of Languedoc that was once a subdivision of Cathar Country. Running from the southern slope of the Montagne Noire to the city of Carcassonne, it is bordered to the west by Lauragais and to the east by Minervois. Hilly, wild, rich in Mediterranean flora, it is a preserved ecosystem, especially since the Domaine du Temps, in the place called Font Juvénal, is a magical place: around a former 18th-century priory, sixty hectares of forests and scrubland protect thirteen hectares of vineyards on stony clay-limestone soils. The balance between dryness and coolness is a boon for viticulture, with a wide range of grape varieties. In addition to the Languedoc grape varieties (Syrah, Grenache, Roussanne, Viognier, Muscat), Cabernet Sauvignon, Cabernet Franc, Merlot, Sémillon and Chenin are grown. The estate has been Ecocert certified since 1998, is entirely managed biodynamically, and has dedicated itself to natural wine since 2015. The work in the vineyard and cellar is methodical, rigorous, and attentive: only the best grapes are kept, resulting in small yields, and destemming is determined based on the ripeness of the bunch. The reds are vinified using carbonic maceration of individual grape varieties, with the blending taking place before the year's aging. The whites are slowly and gently pressed to extract only the best from the grapes. These precautions result in smooth, controlled wines with great integrity and very supple tannins. They are fresh, delicious, and expressive.

This Corbières estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character attached to our soils, with freshness and refined tannins." They want to obtain entirely natural wines, concentrates of terroir. In the heart of the old Corbières massif, they took over an old estate already planted with abandoned Carignan and Grenache vines, which had not seen any fertilizer or pesticides for years: these clean and vibrant soils were ideal conditions for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. Sereibroc Red 2015
Sereibroc is Corbières in reverse. Centuries-old Carignan vines and a few Grenache vines, both growing on red clay soils well exposed to the sun and the tramontane winds, produced this powerful yet fresh wine, with lovely acidity, beautiful animal notes, and earthy, fruity, and candied aromas (cocoa, prune, fig). The harvest macerates for ninety days in concrete vats, and the wine spends two years in bottles. Extended decanting is recommended.

Grande Pestilence Red 2017
To make this blend of Cinsault and Grenache grown on schist soils in the Faugères appellation area, the Cinsault macerates whole bunches for sixty days with the partially destemmed Grenache, before aging for one year in vats. Its notes of white pepper, rose, and peony will complement grilled meats, charcuterie, and spicy terrines.

A beautiful texture, with notes of citrus and exotic fruits. Roussanne, Grenache Blanc, and Viognier grown on the same plot: a southern blend that produces a truly southern white, classified as a Vin de France, original, balanced, fresh, structured by light maceration, fermented and aged in barrels. Its profile is atypical in Corbières. A distinctive feature: the plot was planted according to the desired wine, and chosen to face north to ensure good acidity. The three grape varieties are harvested at different ripeness levels. As soon as the Viognier (later) is ripe, everything is harvested together: the white Grenache is often overripe. This produces a very particular taste balance, between freshness, richness, and roundness. After direct pressing, the must is vinified in old 225-liter barrels, then aged for ten months. It can be kept for around ten years, if given time: all pairings suit it.

Es d'aqui Casse Tête Red 2020
Seductive, deep, dense, with a strong personality, Casse-Tête is a blend of 50% Cabernet Sauvignon and 50% Mourvèdre. The Cabernet comes from an alluvial terrace with large pebbles in the Tarn region, and the Mourvèdre from clay-limestone soil. The harvest macerates for twenty days in whole bunches and the aging is done on lees in sandstone jars.

A child of Ariège, Jean-Louis Pinto chose to stay in the country and make wines that resemble their terroir, hence the name Es d’Aqui (“It’s, it’s from here”) that he gave to his winemaking business, located in Moulin-Neuf, a town near Aude, between Mirepoix and Limoux. A region where vines once abounded, until the major attacks of mildew at the beginning of the 20th century. Jean-Louis buys grapes grown organically by other winegrowers, his friends, in whom he has complete confidence. He doesn’t just buy the product, he monitors the fruit set, the ripening, and makes regular visits until August, in order to know the grapes before harvesting them. He vinifies it at home using natural methods, practicing long macerations with whole bunches. A three-week maceration is common for him, as are very gentle pressings in a vertical press. He says he has "a lot of vines in common" with his friend Anthony Tortul (La Sorga). His collection area extends throughout the Languedoc, particularly in the Hérault, around Adissan, Faugères and Saint-Chinian, as well as in the Aude (Limoux) and Tarn (Gaillac), two terroirs that are dear to him. It turns out that the typical Languedoc soils – schist, basalt, pebbles, clay-siliceous – particularly appeal to him for the freshness they give to the wines. "I make wines from the South," he says. I especially look for terroirs that give freshness, even if the wines are 14 degrees. " The grape varieties are, of course, typically Languedoc: Grenache, Carignan, Mauzac, Cinsault, Braucol, Duras and Sauvignon. The most powerful reds are made in five terracotta jars, which help him control the extraction and give his wines, he says, "a very crystalline side." The soil, the place, as we understand it, are of the utmost importance to him: once again, the name of his estate Es d'Aqui was not chosen by chance.

Anthony Tortul loves old vineyards: he devotes his life to finding and vinifying them. Just as there are landless shepherds, he can be defined as a landless winegrower, in other words, a wine merchant whose scope extends throughout Languedoc and, eastward, as far as Châteauneuf-du-Pape, in search of the best terroirs. Born in Foix, with six years of experience as a wine technician and oenologist in various vineyards in the south of France, he created La Sorga in 2008. His enthusiasm leads him on a path of love at first sight, and each of these loves is a vineyard. The result is a dizzying mosaic of natural, lively and spirited wines, which reinvents itself each year with around thirty cuvées per vintage. Few winemakers can include such a variety of grape varieties: the whole of southern France is there with muscat, grenache, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and tutti quanti.
Esprit Attila is made up of sixty percent carignan (one hundred and thirteen year old vines) and forty percent syrah. These two grape varieties are harvested on the ferruginous clay-limestone soils of Lagrasse, in the Corbières. Vinification, in whole bunches, is done in separate grape varieties for ninety days in quasi-infusion before blending, followed by aging in concrete vats for a year and a second aging of one year in bottles, like a great Spanish red. The nose is immediately very aromatic and we find in abundance the characters of the two grape varieties: blueberry, blackcurrant, black olive… The palate is full, delicious, extremely fresh and typical of its vintage, with notes of violet.

The label and the name with their pestilential connotations should not make this wine pass for what it is not: no morbid stench will disturb your experience once the bottle is opened. The nose, on the contrary, is of great aromatic complexity: black fruits, humus, white pepper, peony, and on the palate the citrus peel typical of the schist soils of the Faugères region and particularly Cabrerolles, from which this wine comes. The texture is very rounded, the finish is long and already very straight! No sulfites, no filtration, nothing else for that matter. The blend is made from sixty percent Cinsault (sixty-five-year-old vines), twenty percent Grenache (sixty-five-year-old vines), and twenty percent Carignan (sixty-five-year-old vines). Vinification is done in whole bunches in a quasi-infusion for sixty days for Cinsault and forty-five days for the other grape varieties. Once everything is blended, aging is one year in vats. It will keep well for a good ten years.

Kuku Yodel White 2018
A dry white wine, Kuku Yodel reveals great finesse, freshness, and fruit on the nose. On the palate, the attack reminds some of an unfiltered white beer, others of a tropical lemonade. This wine is pleasant, fruity, floral, refreshing, and very fragrant. It evokes fruits such as peach, apricot, mandarin, lemon, lychee, passion fruit, and rhubarb, with a milky, yeasty finish, with the rich aroma of a summer meadow. It is made from Muscat of Alexandria, either as a single varietal or with a small proportion of Terret Bourret and Grenache Gris depending on the vintage. Kuku Yodel is a macerated white wine made from Muscat of Alexandria vines growing on the schist and clay-limestone soils of the high slopes of Hérault. The destemmed grapes macerate for forty-five days in vats, then the wine is aged for one year. Before bottling, it is neither filtered nor clarified, and no sulfites are added during the vinification process. Kuku Yodel should be drunk very chilled and can be kept for around ten years.

This blend is composed of 60% Syrah (from thirty-five-year-old vines), with the remainder consisting of Carignan, Grenache, Merlot, and Alicante Bouschet. The grapes macerate in whole bunches for ninety days in a near-infusion and are aged in concrete vats and amphorae for one year. Its aromas of violet and red fruits will pair well with red meats, especially lamb. Aging potential: twenty years.

This pure Grenache comes from the schist soils of Faugères. It is a superb wine, refined and fresh, beautifully fruity. It has aging potential for six or seven years, but can be enjoyed now. Nose of raspberry, rose, licorice, and Languedoc garrigue. On the palate, very well-integrated tannins. Beautiful energy, sunshine, and plenty of structure.

Falgueyras Red 2018,
Vigne Vieille du Falgueyras is a fruity and indulgent red wine, rich in notes of red fruits (blackcurrant, blackberry, morello cherry) and beautifully peppery. Its profile is enhanced by sweet spices, prune on the nose, black olive, as well as more mineral accents (smoke, natural incense). It has character, oak without exaggeration, and a very beautiful body. Typical of the Gaillac terroirs, this is a red wine made 100% from old Syrah vines aged thirty and forty years, planted on boulbènes (gravelly, loamy sand) on the second terrace of the Tarn. The destemmed harvest macerates in cement vats with two punching down of the marc. The fermentation temperature did not exceed 21°C. Aging continues for nine months before bottling without filtration and, of course, without the addition of sulfites.

The name Gaillac, the region where the Bois-Moisset estate is located, owned by Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; it is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine luminosity. Many estates, including that of Bois-Moisset, showcase this uniquely rich winemaking heritage. Along with an estate planted with vines, it is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours, and grape juice. A herd of old local breed cows also thrives there, and guest rooms are available in the summer. It is in this small rural paradise that natural wines typical of their origin and terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of Gaillacois (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the vintages of the Bois-Moisset estate, which consist particularly of red wines with crisp fruitiness, concentrated but with smooth and delicate tannins.

Terroir and Vinification

This process begins as a rosé vinification and ends in red, giving the 1er Jus Domaine its unique character and light color.
Aged for 6 months in stainless steel vats, this wine is made with indigenous yeasts, guaranteeing a pure expression of the fruit and terroir. The minimal presence of sulfur and light filtration ensure a respectful and natural approach to the wine.
Tasting and Food Pairing
On the nose, the 1er Jus 2023 seduces with fresh and vibrant raspberry aromas. On the palate, it reveals a fluid, almost airy texture, with a fruity and elegant finish. It pairs ideally with a beautiful charcuterie board or as a convivial aperitif, best served chilled between 12 and 14 degrees for an optimal experience. This natural wine can be kept for up to five years, but it also tastes great young.

Marguerite Red 2019
The Marguerite 2019 from Domaine Bois Moisset is a true immersion in the winemaking heritage of the southwest. Made from Duras, a native grape variety of Gaillac, it reveals all the richness and intensity of this ancestral terroir. Made from vines 15 to 30 years old, planted on sandy loam and clayey gravel from the Tarn terraces, this natural wine is the result of a respectful approach to the vine and the soil.
The vinification follows a minimalist logic: destemmed harvest, three-week maceration in cement vats without added sulfites, and low-temperature fermentation to preserve the fruit's brightness. Aging continues in cement vats until bottling, carried out without filtration and with a tiny dose of sulfur to stabilize the wine while preserving its raw and lively character.
With an intense and clear garnet color, Marguerite 2019 offers an expressive nose, dominated by notes of sweet and spicy spices (cinnamon, black pepper), ripe black fruits, and violet. On the palate, it is a structured, ample, and fresh wine, driven by a beautiful natural acidity that balances its rich body. The tannins are supple yet present, extending into a spicy and slightly licorice-laced finish.

Rencontre Red 2020,
Rencontre's nose is subtle, laden with red fruits, with pronounced forest notes: mushroom, humus, a touch of leather, spices, and violet. On the palate, the fruit is very present, very pleasant, and decidedly peppery, and the beautiful, fine, precise tannins nestle gracefully into a very tactile, chewy finish. This is a wine of strong character that surprises with its beautiful structure. Its color is dense and full, like that of a Bordeaux. This wine from the Gaillac region is made from local grape varieties: 40% Syrah and 40% Braucol, supplemented by 20% Duras, all fermented in the same vat. The harvest is destemmed. Maceration lasts three weeks in a temperature-controlled concrete vat, with indigenous yeasts. The Braucol and Duras are co-fermented. Only a few pumpings are carried out. The press juice and free-run juice are blended with 20% Duras free-run juice to add a peppery touch. Aging is also done in vats. We recommend decanting this Encounter which, without any pun intended, is a true encounter that is definitely worth the detour.

It is in this small rural paradise that natural wines typical of their origin and their terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. The grape varieties are dominated by Syrah and Duras, but the ampelographic richness of the Gaillac region (braucol, prunelart, loin-de-l'œil, etc.) is also evident in the vintages of the Bois-Moisset estate, which consist particularly of red wines with a crisp fruitiness, concentrated but with smooth and delicate tannins.
On pourrait dire aussi « nos vins d’Occitanie » ou « nos vins du pays d’Oc ». Bien que l’Occitanie désigne officiellement un territoire plus étendu, le Languedoc viticole correspond à peu près au territoire de l’ancienne Septimanie ou province de Narbonne. Cette région méditerranéenne inclut le Gard, l’Hérault, l’Aude, le Tarn et les Pyrénées-Orientales (Roussillon ou Catalogne française). Le vignoble languedocien est un des plus grands du monde et le premier en France par la surface : 240 000 hectares. Il est aussi le plus ancien, le berceau de la vigne en France se situant à Gaillac. Pas étonnant, dans ces conditions, que les AOC-AOP (appellation d’origine contrôlée/protégée) et les IGP (indication d’origine protégée) abondent en Languedoc-Roussillon , produisant des vins dont la qualité ne fait que s’améliorer depuis des décennies — et parfois de très grands vins dans des AOC comme Minervois-La Livinière. La région est, par ailleurs, spécialiste des vins doux naturels (Rivesaltes AOC, Maury, Banyuls) et des muscats doux (muscats de Rivesaltes, de Frontignan, de Lunel, de Saint-Jean-de-Minervois, de Mireval…). Sans oublier les vins effervescents de Limoux (AOP Blanquette de Limoux, Crémant de Limoux et Limoux méthode ancestrale).

Le Languedoc-Roussillon produit des vins blancs ou rouges , avec une dominante de rouges. Ces derniers sont puissants, denses, corsés et de longue garde, offrant des notes de fruits noirs, de poivre, d’épices, de cuir, et des tannins robustes. Un sol schisteux accentuera la fraîcheur de ces vins rouges , tandis que les vins blancs , sous un climat d’une telle chaleur, étonnent par leur fraîcheur, surtout en Roussillon. Comment choisir un vin du Languedoc-Roussillon ?
Si vous appréciez les vins rouges corsés avec de la matière et des notes de fruits rouges et noirs, choisissez un cru de Faugères, de Saint-Chinian, du Minervois ou des Corbières. Un vin rouge de Cabrières (Hérault) ou de Tautavel (Roussillon) sera plus minéral grâce aux sols schisteux.
Si vous désirez un vin doux naturel, choisissez un rivesaltes ou un maury. Pour des bulles festives, optez pour une blanquette de Limoux, qui peut être un vin blanc ou rosé.
Si vous recherchez des vins blancs secs , ceux des Côtes du Roussillon peuvent être de très grands vins qui n’ont rien à envier aux grands bourgognes blancs . Ceux du Languedoc, dotés de charme et de fraîcheur, peuvent aussi s’élever très haut bien qu’ils soient moins complexes et légèrement plus acides. Les blancs du Languedoc-Roussillon ont la vertu d’offrir une belle acidité sans être dépourvus de gras et de rondeur.
Quels plats s’accordent avec les vins du Languedoc ?
Réponse : tous les plats, grâce à la diversité viticole du Languedoc, mais pas avec n’importe quel vin !
Les rouges généreux et corsés iront très bien avec des plats mijotés, des daubes, des cassoulets, de l’agneau rôti et du bœuf grillé. Et bien sûr les charcuteries et les salaisons. Quand ils prennent de l’âge, ils s’entendent avec la truffe noire.
Les vins blancs secs du Languedoc, en particulier les picpouls-de-pinet et la clairette-du-Languedoc, ont une jolie acidité qui en fait de bons compagnons pour tous les fruits de mer : huîtres, coquillages, crustacés, poissons, et aussi fromages de chèvre ou de brebis. Avec les blancs de Tautavel, des Côtes-du-Roussillon ou des Corbières, la gamme des accords est très étendue : on peut tenter les volailles rôties, mijotées ou grillées, les viandes blanches, les plats cuisinés.
Les vins doux naturels et les muscats doux sont de bons vins d’apéritif ou d’après-repas, mais sachez qu’avec l’âge ils peuvent être savourés avec tout un repas. Ne les réservez pas aux desserts, c’est un peu dommage de faire des accords « sucré sur sucré ». Leurs plus beaux accords, ce sont les fromages bien affinés et les fruits bien mûrs tels que figues, pêches, melon, cerises pour le maury, ainsi que noix, noisettes et châtaignes.
