Dorlisheim is a small village between Molsheim and Mutzig, Twenty-five kilometers from Strasbourg, on the Alsace Wine Route—the region said to be the most organic in France. This is where the Lindenlaub family has been cultivating the land since 1759, originally with agriculture and livestock. Viticulture dates back two centuries. Today, the property is a wine estate run by Christophe Lindenlaub, who succeeded his father Jacque after learning about vineyard work at the Kientzler estate in Ribeauvillé. In 1999, he took over the estate, implementing healthy practices. It was only natural that the conversion to organic farming began in 2009. AB certification was obtained in 2012; it was also the year the father and son winemakers decided to devote themselves to wines without additives, in other words, natural. The goal is to produce high-quality wines with total respect for nature and the environment. This is how the Ensö range, entirely natural, was first born. The adventure continues with a deliberate development towards natural wines and a tendency to give the estate's vintages poetic and evocative names, such as Les Papillons de Mireille, Matin fou, and La Tétine à Kiki.
Terroir, plots, and grape varieties
The twelve-hectare estate is made up of the magnificent terroirs of this Alsace region, dominated by clay-limestone on sandstone base. The plots extend over the Stierkopf area (full south), suitable for Riesling, Gewurztraminer and Pinot Noir, as well as Husaren and Rangenberg. The latter gives body and structure to the Riesling. The seven classic Alsace grape varieties are cultivated: Riesling, Pinot Noir, Sylvaner, Gewurztraminer, Pinot Gris, Auxerrois, and Muscat. The clay-limestone soil on a sandstone substrate gives the grapes great mineral depth and a beautiful aromatic breadth.
Cultivation Methods
"In the beginning, the earth, our mother, was born; she is the foundation of life, and for countless reasons we forget her. » (Christophe Lindenlaub, who has not forgotten it.) The entire estate has been organically farmed since 2012. The grassing of the Vineyards have been cultivated for twenty-five years. Soil decompaction is achieved by sowing crimson clover, annual flax, sainfoin, and phacelia, while encouraging biodiversity and, through it, the expression of the terroir in the wines. Pruning is kept short to regulate yield and concentrate the material, and therefore the taste. The vines are de-caged at the beginning of the growing cycle and the trellis is aerated twice. All the vines are harvested by hand.
Winemaking
The winemaking styles, always organic, sometimes natural, are varied: in addition to the classic profiles of white or red still Alsace wines, the Lindenlaub estate produces natural sparkling wines, crémants, maceration wines, sweet wines, and oxidative wines. Christophe enjoys experimenting with new methods and exploring the work of other winemakers. Little by little, he aims to transition the majority of production to natural winemaking, without additives or filtration. In 2014, mission accomplished. For vinification, Christophe prefers stainless steel vats to preserve the fresh and fruity expression of the grapes.
Wines
Alongside his organic wines, Christophe Lindenlaub has created the Ensö range, which is entirely natural. For him, it is a return to his origins, marked on the labels by the ensô, a circle of Chinese ink drawn with a brush, from the Zen tradition, an invitation to calm and meditation. Six vintages, all single-varietal, express the winemaker's desire to free the wine from all constraints, to favor its style and depth, as well as the terroir in the most perfect respect for nature. The Cuvée du Chat, the one we are offering, is the result of a collaboration between Christophe Lindenlaub and the trading house Le Chat botté & Co, which includes it in its series "La Barrique du Chat botté".
