It consists of eighty percent free-run juice from Carignan de la Source and twenty percent pressed juice from the Corbières blend, renamed this year Le Cordières des Andes (one-third Carignan de la Source, one-third Syrah de la Pinède, and one-third Grenache du Bois Saint-Jaume). The grapes are vinified separately before being blended in concrete vats for aging. A beautiful texture, with notes of citrus and exotic fruits. Roussanne, Grenache Blanc, and Viognier grown on the same plot: a southern blend that produces a truly southern white, classified as a Vin de France, original, balanced, fresh, structured by light maceration, fermented and aged in barrels. Its profile is atypical in Corbières. A distinctive feature: the plot was planted according to the desired wine, and chosen to face north to ensure good acidity. The three grape varieties are harvested at different ripeness levels. As soon as the Viognier (later) is ripe, everything is harvested together: the white Grenache is often overripe. This produces a very particular taste balance, between freshness, richness, and roundness. After direct pressing, the must is vinified in old 225-liter barrels, then aged for ten months. It can be kept for around ten years, if given time: all pairings suit it.

If you serve this wine very chilled on a very hot day, you'll be thanked, because that's its purpose. Lively, tangy yet velvety, full of character, it can be drunk on any occasion and at any time of day. Cyprès de Toi Rosé offers a lovely color of soft salmon pink and wild strawberry, but make no mistake: it won't sing you a lullaby. Powerful and assertive, perfectly dry, beautifully balanced between fruit and acidity, it hasn't forgotten its Malbec of origin, whose grapes were purchased from a certified organic winemaker. Malbec, in fact, benefits from rosé vinification, as it is one of the varieties that produces very vinous rosés with substance. The grapes undergo direct pressing and traditional vinification, using indigenous yeasts and without additives. Settling is done in the cold and fermentation, as well as aging, are carried out in stainless steel vats. A light filtration is done before bottling.

Fond Cyprès's 1er Jus 2023 is a bold and original expression of the Languedoc-Roussillon terroir. This red wine, made from a blend of Carignan and Grenache Noir, offers a unique and fluid taste experience, halfway between a red wine and a rosé. With a moderate alcohol content of 12.5°, it stands out for its freshness and lightness, perfect for convivial moments.
Terroir and Vinification
The Carignan and Grenache Noir vines grow on clay-limestone soils typical of the region, giving this wine a subtle minerality and a beautiful structure. The vinification is carried out according to a unique method: the whole bunches of Carignan are immersed in a saignée of Grenache in full fermentation, with pressing two days later. This process begins as a rosé vinification and ends in red, giving the 1er Jus Domaine its unique character and light color.
Aged for 6 months in stainless steel vats, this wine is made with indigenous yeasts, guaranteeing a pure expression of the fruit and terroir. The minimal presence of sulfur and light filtration ensure a respectful and natural approach to the wine.

With Retour de Milan, Fond Cyprès unveils a brilliant and unprecedented interpretation of Muscat Petit Grain, vinified as a macerated white. This organic orange wine from Languedoc, as elegant as it is expressive, breaks new ground to offer a unique, fresh, and gourmet sensory experience.
A subtle maceration
Here, whole Muscat grapes are macerated for a few days to provide texture and complexity without losing the delicacy of the varietal. Fermentation is spontaneous, using indigenous yeasts, without oenological additives, followed by 5 months of aging in concrete egg, which promotes the wine's natural movement and gentle contact with the lees. The result: a lively, textured juice, yet with exemplary freshness.
A luminous and aromatic orange wine
The nose is vibrant, with notes of bergamot, citrus zest, orange blossom, and fresh lychee. On the palate, the wine balances tension and sweetness, with very fine tannins and a delicately bitter finish that prolongs the pleasure. It is a digestible, chiseled orange wine, both floral and citrusy.
Bold pairings, immediate pleasure
Serve between 10 and 12 °C, without decanting. This wine pairs ideally with Asian cuisines (mild spices, Thai curry, sashimi), aged cheeses (blue cheese, long-aged tommes) or even a lightly sweetened fruit dessert. It can age in the cellar for 5 to 10 years.

Ici, les grappes entières de Muscat sont mises à macérer quelques jours, afin d’apporter texture et complexité sans perdre la délicatesse du cépage. La fermentation est spontanée, en levures indigènes, sans intrants œnologiques, suivie d’un élevage de 5 mois en œuf béton, qui favorise le mouvement naturel du vin et un contact doux avec les lies. Le résultat : un jus vivant, texturé, mais d’une fraîcheur exemplaire.
Un vin orange lumineux et aromatique
Le nez est éclatant, entre bergamote, zeste d’agrumes, fleur d’oranger et litchi frais. En bouche, le vin joue l’équilibre entre tension et douceur, avec des tanins très fins et une finale délicatement amère qui prolonge le plaisir. C’est un orange digeste, ciselé, à la fois floral et citronné.
