Frédéric Cossard
This Puligny-Montrachet Premier Cru comes from Chardonnays grown on the plot that gave its name to the cuvée, between 230 and 250 meters above sea level. The terroir, facing west-southeast, is based on brown marl and clay-limestone soils, sometimes directly on the limestone rock. The soil structure is fine, clay-silt. After direct pressing of the grapes, the wine is aged for about a year in barrels. The wine is typically Puligny: buttery, mineral, complex, and layered.
A natural wine with no added sulfites.
Pairs with: Lobster, Oysters and Shellfish, Chicken Stew, Cooked Fish
Magnum Tonton Red 2015
This 100% Cabernet Franc comes from Vincent Wallard's Loire winery. Produced from clay-limestone soils, the grapes are vinified using a mille-feuille process (skin-on maceration using layers of destemmed grapes and whole bunches to control the astringency of the tannins) before aging for twenty months. Excellent with red meats and wild mushrooms (porcini mushrooms, for example), it can be kept for twenty years.
A natural wine with no added sulfites.
Le Rocher red 2017
Le Rocher is made from Beaujolais Gamay grapes grown in the Combe Fleurette area, at an altitude of 550 meters and on an average 40% slope, facing south, on a plot of blue granite with very shallow soil. The 25-year-old vines rest on a rocky outcrop. The harvest is left to vat for 40 days in whole bunches with regular turning. After pressing, the young wine is aged on fine lees in Burgundy oak barrels. Bottling is done in the waning moon, without fining or filtration. This infinitely silky and delicious red, very mineral and very straight, will accompany meats in sauce, noble fish and even chocolate desserts.
Tasting temperature: between 14 and 16 °C.
Natural wine without added sulfites.
Maquis Red 2015
Lledo what? Here's a deep red produced from Lledoner Pelut, a little-known Catalan grape variety. The Maquis cuvée reflects the quintessence of the clay-limestone soil, with the added bounty of Roussillon. The grapes are vinified in whole bunches, crushed by foot, then placed in cement vats. A captivating nose with notes of raspberry, confirmed on the palate, with a fairly pronounced tannic texture.
Natural wine with no added sulfites.
Es d'aqui Nino Red 2016
A 100% Braucol from the Gaillac region! On the palate, this wine, which may seem austere in its early years, eventually develops a vegetal side, notes of candied fruit, and beautiful tannins. The attack is rustic and earthy, the finish fruity and complex.
Ah! Ramon Rouge 2015, La Sorga
Ah! Ramon is a blend of 70% Aramon (ninety-year-old vines), about 30% Malbec, and the rest: Cinsault, Terret, Noir de la Calmette, Alicante, Muscat of Alexandria. It is also a blend of vintages: 2015 (70%) and 2016 (30%). The grapes come from the Saint-Chinian appellation area, on schist soils. All the blended grape varieties macerate for forty days in whole bunches in a quasi-infusion, then are aged in vats for ten months for the 2016 and twenty-two months for the 2015. Notes of violet and blood orange: a lovely accompaniment to cooked pasta (lasagna) or lamb chops. Aging potential: twenty years.
Goes with: Pasta, Red meats, Grilled meats

This fortified wine, in the tradition of Saint-Jean-de-Minervois, is a fortified wine, that is, a must whose fermentation has been interrupted by the addition of alcohol. Both sweet and fresh, with incredible aromatic complexity, it can be kept chilled almost indefinitely after opening: ideal for pouring a drink for friends who are passing by.
Natural wine with no added sulfites.
Muscat Sec Des Roumanis White 2011
