This simply named rosé comes from two exceptional plots: Matthew Rorick's vineyard in Calaveras, California, a very steep, high-altitude vineyard whose high-quality soils provide the Tinta Roriz (Tempranillo) used in this blend. The other, Fox Hill Vineyard, nurtured the Portuguese grape varieties (Souzão and Touriga Nacional) that make up the rest. These fleshy, sappy, and tannic grapes, combined with the Tinta Roriz, allowed Ruth to create a rosé wine that redefines the conventional image of this type of wine: deep, earthy, and structured.

With El Nino Rouge 2013, the Casot des Mailloles delivers a cuvée of striking intensity, faithful to the spirit of the great natural wines of Collioure. Made from a blend of Carignan, Syrah, and Mourvèdre, this deep, structured red wine expresses the pure minerality of the schist soils and the raw energy of the old, low-yielding vines. Cultivated by hand on steep slopes, these vines require meticulous work, rewarded by incomparable concentration and freshness.
A powerful, mineral, and spicy wine
At first glance, the intense garnet color announces the richness of the material. The nose is complex and deep, combining aromas of ripe black fruits, peppery and spicy notes, as well as a salty touch reminiscent of the maritime influence of the Banyuls terroir. On the palate, the balance is remarkable: a beautiful freshness supports the wine's density, while the silky and melted tannins provide an elegant structure. The finish is long, marked by a persistent minerality and a beautiful aromatic tension.
A vinification without artifice
As always at Casot des Mailloles, this wine is vinified completely naturally, without added sulfites. The grapes are fermented in whole bunches in concrete vats, then aged in stainless steel vats to preserve all the purity of the fruit and the minerality of the terroir. This vinification choice highlights the raw and sincere expression of the vineyard, without masking its identity by aging in oak.
Ideal with a grilled prime rib, lamb tagine, or game in sauce, El Nino Rouge 2013 is a wine of character, to be enjoyed after aeration to appreciate all its complexity.

Distillerie Cazottes
This organic and natural elderflower liqueur from the Cazottes distillery, located in the Gaillac region (Tarn), has the Eurofeuille label. It is a wine-based aperitif, made from black elderberries grown in Laurent Cazottes' garden without pesticides or any chemical treatment.
Production
The elderflowers are harvested in the spring and only the petals are used, macerated in a homemade natural wine that can be made from Jurançon Noir or Prunelart grapes, depending on the vintage, and organic eau-de-vie from the estate. Thus, a frank and powerful aroma can be obtained. A little sugar (just enough to reduce the bitterness). A long resting time follows to harmonize the flavors of this Cazottes elderflower liqueur, which is 17% ABV.
Tasting
We close our eyes, we are in a Tarn garden in spring: the heavenly, frothy, creamy and fresh scent of elderflower in bloom is fully present. The color is light ruby, coral, cinnamon; the nose is spicy, woody, evoking blond tobacco and dried fruits. The overall note is that of both fruit and black elderflower. This Cazottes elderflower liqueur can be paired as an aperitif with a good cured ham, a dry sausage without nitrites or a delicious Spanish beef ham from maison Aitana.

Laurent Cazottes, winemaker, distiller and natural liqueur maker, is a revealing quintessences. In Villeneuve-sur-Vère, near Gaillac (Tarn), he cultivates a veritable Eden of biodiversity. Production secrets
First of all, the integrity of the fruit and the vine, cultivated in certified organic (Eurofeuille and Nature & Progrès labels) and biodynamically, then attentive care given to their maceration at perfect maturity in the estate's organic eau-de-vie, and finally a precise and light dosage of sugar.
The Cazottes touch
"Liqueur does not mean sweet," Laurent likes to say. The unique feature of Cazottes liqueurs and eaux-de-vie is their faithfulness to the raw material: it is the whole fruit that is on the palate, with all its nuances and deliciousness. They are low in alcohol and low in sugar: they are exceptional nectars.
Les Pradels Rouge 2019, Domaine Bois Moisset
Les Pradels is made entirely from Syrah from twenty-year-old vines growing on the pebble and gravel soils of the third terrace of the Tarn, facing east and northwest. The harvest is vatted in whole bunches for an eleven-day carbonic maceration. The wine, made from a blend of free-run juice and press wine, is aged for six months and bottled without filtration. It is fruity and delicious, with notes of red and black fruits: blackcurrant, blackberry, morello cherry.
Trepat Beer with Wine 2020,
Cyclic Beer Farm
Packaged in 75 cl bottles so that everyone can satisfy their thirst, the beers from the Barcelona-based brewery Cyclic Beer Farm play between classicism and flights of inspiration, in a contrasting and creative way, in the Catalan style. Based on classic principles and a Belgian fermentation model, the two brewer-winemakers Joshua and Alberto play with ingredients, aromas, and macerations, including cereals, fruits, vegetables, and grape skins from Catalan grape varieties, to achieve flavors reminiscent of an unidentified drinkable object (OBNI). Whether they assert themselves on balance or on a certain controlled dissonance, these beers will never leave you indifferent and will reveal their full potential in the summer heat, served well chilled.
At 4.25% alcohol, Trepat is part of the Cyclic Beer Farm 2020 Wine Ales series, which also includes Garnatxa, Carignan and Xarel·10. They are fermented with the marc of local grape varieties. All the grapes are organic and harvested by hand before being pressed or macerated for the production of wines. The resulting marc (skins and stems) is then added to already fermented and aged beers, selected for each type of grape variety. A maceration of one to six months follows to allow the residual sugar to complete its fermentation and the character of the grape variety to be communicated to the beer through infusion. Before bottling, brewers decide whether or not to add beer to achieve the desired flavors, based on acidity, the natural taste of the grape variety, tannins, complexity, and drinkability.
Brewers choose beers from three bases: their saison, their sour base (fermented from their blend of lactic acid bacteria and their blend of indigenous yeasts), and their "funky" base (indigenous yeasts and a cocktail of brettanomyces-type yeasts). After blending and bottling, the beers referment and mature for varying lengths of time.
Trepat is brewed with the marc of the local grape variety of the same name, an ancient variety with raspberry notes. It first seduces with a pretty bubble-gum pink color that announces freshness. It is delicious and seductive with its notes of raspberry, blackberry and its finely musky character, like the grape variety that goes into its composition.

Blancas Nobles is a dry white wine from Andalusia made from the indigenous Vigiriega grape variety and a collection of noble white grape varieties from Europe (Sauvignon Blanc, Chardonnay, Riesling, Albarino) grown on schist-clay soils. This 2011, aged for twenty-one months in stainless steel vats, is particularly successful and presents a beautiful straw yellow color tending towards gold. It expresses notes of green apple, fresh orange zest with buttery and brioche accents: a delight! A beautiful, controlled oxidation that does not contradict the fruity nature of the wine. Noble grape varieties make for a noble wine: incredibly complex, full of balance, minerality, and seduction.

Vino Rosso Cereza Rouge 2016
Corvagialla
This single-variety Ciliegiolo comes from vines planted at an altitude of 450 meters on a west-facing plot of volcanic soil. The harvest is destemmed and macerated for approximately three weeks, with daily pumping over or punching down as needed. Aging is six months in chestnut barrels.

Clef à Molette Blanc 2021,

Lots of charm, yellow citrus and white flowers, and a clean, saline finish for this Clé à Molette, so named because it is, naturally, made 100% from the local grape variety called Molette (hence the label), harvested at the Trichon estate in Lhuis (Bugey), this wine is produced biodynamically on clay-limestone soils. The grapes are pressed directly; The must ferments and matures in vats for nine months.

Created in 2005, Domaine d’Alice is located in Arbois, in the wine-growing Jura region, often described as the most organic vineyard in France. The practice of making – among other things – oxidative wines is a good preparation for natural wine, as this type of wine does not allow any chemical additives and especially no sulfites. It’s a secret of this magnificent region. Originally spread over two hectares, the estate, managed entirely biodynamically (Demeter) since 2010, has expanded through the gradual acquisition of plots and now covers seven hectares.
An accomplished musician and passionate music lover, Alice intends to apply her musical sensitivity to the wines she makes. She draws a parallel between the technical perfection of conventional wines, which risks excluding feeling, while "a musician who does not know music theory and plays with his guts creates emotion." For her, living wine is like this: instinctive, improvised, emotional. Introduced to natural wine by Stéphane Planche, sommelier at chef Jean-Paul Jeunet in Arbois, she will faithfully follow this path. The sometimes whimsical titles of her vintages are inspired sometimes by musical art (Dorabella, Zerline), sometimes by the numerous plots of land that make up her vineyard (En Curon, Les Corvées, En Poussot, etc.), and do not disdain a pun from time to time. Ganache Red 2021,
A complex, innovative, and delicious wine, obtained after eight weeks of whole-bunch maceration. Bottling was done in June 2022. Ganache is not far from Grenache, that's it, you get the idea, and Gamay joins the fray. The famous southern grape variety, cultivated biodynamically and harvested in Carpentras (SCEA L’Authentique by Claude Ughetto), vinified in the Jura, doesn’t feel out of place at all: nothing prevents it from unleashing its brazenly fruity notes – cherry, fresh and candied strawberry, raspberry, blackberry, plum, dried fruit – enhanced with plum, black pepper, spices and chocolate. All that? Yes. Don’t be surprised by a slight reduction upon opening: aerate the wine, decant, or let it wait a little in the glass, it will disappear.

VéNéNuM Rouge 2018,
Aurélien Lefort
One hundred percent Gamay from Auvergne, VéNéNuM is a red cuvée made in small quantities from vines over a hundred years old, planted in 1904 on red clay soils rich in quartz and granite sand (Lamouret location). Harvested in September, the wine macerated in vats with whole bunches for forty-five days, and aged for eighteen months in vats followed by eleven months in bottle.

Established since 2011 in Madriat, near Boudes, in the southern part of Puy-de-Dôme, Aurélien Lefort is an artist (a Fine Arts graduate) with a passion for wine and nature. After training with Michel Auger (Loire) and Patrick Bouju, he decided to move to Auvergne and took over the lease of abandoned vineyards. The Boudes region is an ancient wine-producing land, an exceptional volcanic terroir, warm and vibrant, cultivated for nearly two thousand years. Aurélien's approach is to encourage the revival of this magnificent vineyard. He does this on small areas of stunning pedological diversity: basalt, granite, calcareous red clay, sandy and gravelly clay on quartz flows, and, at the foot of the hillside, marly white clay. On this substrate, the Auvergne trilogy (Gamay, Pinot Noir and Chardonnay) takes the lion's share. In Aurélien's hands, the singular talent of Auvergne Gamay, an ancient grape variety as dense and powerful as it is spicy, which finds a particular expression on these volcanic soils. His plots are grassed but mown to control humidity, and the vines are worked with a pickaxe to prevent the root system from suffocating. The harvest, always manual, can last up to three weeks due to the meticulous sorting of the berries. This is the price Aurélien Lefort pays to create his rare and sought-after vintages, resulting from long macerations (up to three months). Mostly red, sometimes sparkling, sometimes also mellow (late harvest reds), they always leave a lasting, even unforgettable, impression.

Harmonie Blanc Champagne Brut,
Eric Collinet
The Harmonie cuvée from Maison Collinet is an organic, biodynamic, and natural brut white champagne (Ecocert, AB, and Eurofeuille certifications) from the vines of the Éric Collinet estate, in Côte des Bar, the southernmost region of Champagne. Since 2014, this estate has been fully certified organic. The blend is 90% Chardonnay and 10% Pinot Blanc.
The Mark of Limestone
The Chardonnay and Pinot Blanc vines grow on Kimmeridgian clay-limestone soils, bringing minerality and tension to the wines. The wines are from the 2018 harvest. Hand-picked. Dosage: 3.5 g/l.
A champagne for all occasions
A beautiful straw-gold color and fine, persistent bubbles characterize this champagne dominated by Chardonnay. The minerality is marked, with siliceous and iodized notes giving way to white fruits (peach, melon, candied citron). The evolution of the champagne in the glass is fascinating, the wine successively offering changing profiles. Domaine de Chassorney
This Pinot Noir comes from a plot with a steep, south-southeast-facing terroir located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils are primarily marl, limestone, and clay. The grapes, from fifty-year-old vines, macerate in whole bunches. Aging takes place in barrels for about a year. Beautiful structure, well-rounded tannins, and lovely notes of black fruit.

Magnum Régnié La Haute Ronze Red 2017
La Haute Ronze is one of two plots cultivated by Nicolas in the Régnié appellation; it is considered of very high quality, with deep clay soils that produce full-bodied wines. This 100% Gamay is obtained through semi-carbonic maceration and aged for approximately twenty months. It offers notes of leather, earth, and Mediterranean herbs (oregano, rosemary), through its red fruits.

Dolce & Cabanon Red 2024
Terroir, plot size and grape varieties
It is in the heart of Beaujolais, in a rural corner where vines grow undisturbed, that Dolce & Cabanon 2024 is born, an atypical, vibrant, and charming red wine. This cuvée, crafted by La Tribu Alonso, defies conventions with panache: it blends no fewer than 52 hybrid grape varieties, including 30% Seibel 54/55, enhanced by the aromatic freshness of Muscat Petit Grain—a rarity in red wines, here sublimely expressed.
