Fond Cyprès
Le Cinsault retrouve ses lettres de noblesse avec cette cuvée parcellaire signée Fond Cyprès, dans une interprétation toute en subtilité et en franchise. Issu d’un terroir argilo-calcaire du Languedoc, certifié bio (label Eurofeuille), ce vin rouge naturel est une belle démonstration du potentiel de ce cépage trop souvent relégué au second plan.
Un vin naturel, vinifié avec précision
Après une macération d’une semaine, le raisin fermente spontanément en levures indigènes, sans aucun intrant œnologique. Le vin est ensuite élevé pendant six mois en cuve bois, ce qui lui confère à la fois rondeur et structure, tout en préservant la fraîcheur de l’expression aromatique.
Élégance, fruit et légèreté
Au nez, la cerise griotte domine, avec une jolie pureté et une touche florale délicate. En bouche, l’attaque est souple, la matière fluide, les tanins soyeux. Le vin déroule avec finesse, sans excès, mais avec une longueur étonnante pour un vin de ce degré d’alcool (12 %). Une vraie personnalité, entre légèreté et précision.

Avec Cyprès de Toi, le domaine Fond Cyprès signe une cuvée de Chardonnay bio venue du Languedoc, au style étonnamment frais et aérien. Ce vin blanc tranquille, issu de presse directe et élevé en cuve inox, met en avant la pureté du fruit, la vivacité du cépage et la gourmandise simple d’un vin naturel accessible.
Un Chardonnay sans maquillage
Cultivé sur des sols argilo-calcaires, le Chardonnay est vendangé tôt pour préserver son acidité naturelle. Pressé directement, il fermente en levures indigènes sans ajout d’intrants œnologiques, puis il est élevé six mois en cuve inox, afin de conserver toute sa fraîcheur et son éclat aromatique. La vinification est artisanale : macération douce de deux semaines, fermentation en levures indigènes, sans intrants œnologiques, suivie d’un élevage de neuf mois en cuves inox. Ce choix permet de conserver toute la vivacité du fruit, sans masquer l'identité du cépage ni celle du terroir.

Vinifié en presse directe, sans intrants œnologiques, avec les seules levures indigènes, ce blanc naturel est élevé 8 mois en cuve inox, afin de préserver l’expression la plus sincère du fruit. Le sol argilo-calcaire apporte tension et minéralité à l’ensemble, et le faible degré alcoolique (11,5 %) accentue sa buvabilité. On est loin des clichés lourds du Sud-Ouest : ici, tout respire l’agilité, la transparence et la sincérité.

In the heart of the Blaye-Côtes-de-Bordeaux appellation, on the right bank of the Gironde estuary, flourish the vines of Château Frédignac, a family estate driven by the sincere commitment of Vignobles L'Amouller. It is here, on sunny and breezy slopes, that Merlot finds its ideal expression. This emblematic Bordeaux variety, usually vinified as a red wine, reveals itself here in an unexpected and seductive light: as a naturally sparkling rosé. Cultivation methods
True to a peasant philosophy that respects all living things, the estate is managed using certified organic farming methods, bearing the AB and Nature & Progrès labels. Here, the vines are nurtured without synthetic inputs, in a careful balance between soil, plant, and human intervention. Biodiversity is encouraged, treatments are gentle and measured, and every intervention is carried out with the aim of preserving the soil's identity and the purity of the fruit. Perspectives is a rare and luminous cuvée, originating from the Bourgogne AOC, but boasting a unique perspective. The plot, located at the southernmost edge of the appellation, borders Beaujolais. From there, the view encompasses a 360-degree panorama of two great wine regions: Burgundy and Beaujolais. It is this expansive vision, this sense of space and balance, that this wine seeks to convey.
Purity of Chardonnay, ancestral aging
Made from Chardonnay grapes grown without synthetic inputs on schist soils, Perspective benefits from natural vinification using direct pressing, followed by six months of aging in amphorae, which gives it a limpid texture and striking mineral tension. No superfluous oenological intervention: here, only indigenous yeasts orchestrate the fermentation, allowing the terroir to express itself freely.

Nc'nean Organic Single Malt
L'explorateur du goût
Nc'nean Organic Single Malt has all the information in its name: this single malt Scotch whisky, labeled Eurofeuille, is made at the Nc'nean distillery, founded by Annabel Thomas in the West Highlands. The distillery is certified organic and BCorp-certified (a global organic and ethical label). The Celtic goddess Neachneohain, protector of nature, inspired the brand name.
Production
100% organic Scottish malted barley is slowly crushed before fermentation, which can last up to 114 hours. The purest and fruitiest part is used for distillation. The whisky is aged in red wine and American whiskey barrels. The use of diverse indigenous yeasts gives Nc’nean whiskies their unique identity.
Tasting

La Tour Sarazine White 2022
La Tour Sarazine is an organic, biodynamic, and natural dry white wine from Jean-Yves Péron. Made from Muscat à Petit Grain, this white wine macerated in Vin de France is sometimes blended with Jacquère when the vintage is low-yielding.
Vinification
Sourced from a schistose micro-plot in the Albertville vineyard, the La Tour Sarazine harvest ferments using carbonic maceration for fifteen days. After pressing, it is aged for one year in tuns and barrels. Unfiltered, unfined, no added sulfites.
Tasting
Jean-Yves Péron's Tour Sarazine has a very muscat profile – musky, floral, aromatic, exotic – reinforced by the mineral clarity of Savoyard schist. Jean-Yves Péron is a talented embodiment of the organic, biodynamic and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italo-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
Les Œillets Blanc 2022
Jean-Yves Péron
Vinified in Savoie, Les Œillets is a dry macerated white wine made by Jean-Yves Péron. Organic, biodynamic, and natural, it is a 100% Jacquère white, with no additives or added sulfites, classified as a Vin de France.
Vinification
Les Œillets comes from the same terroir as La Petite Robe (the clay-limestone soils of the lieu-dit Les Marches, at the foot of Mont Granier), but it is harvested later to achieve greater phenolic maturity and a higher tannin concentration. Carbonic maceration for four or five days is followed by a month of punching down in vats. At least one year of aging in 300-liter barrels.
Tasting
Woody, with explosive minerality and beautiful tension, Les Œillets by Jean-Yves Péron is an atypical white wine with powerful aromatic notes. Lots of fruit and candied citrus. Superbly structured, Les Œillets has chewiness, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. This is a wine for roasted poultry and high-end cured meats, but its pairings are broad.

Jean-Yves Péron skillfully embodies the organic, biodynamic, and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep surfaces, his mountain vines in micro-plots, worked by hand, receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers in Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his winemaking and aging experiences.
La Grande Journée White 2022
La Grande Journée, by Jean-Yves Péron, is an organic, biodynamic, and natural maceration white wine made in Savoie. Classified as a Vin de France, it is made from 100% Altesse grapes. Unfiltered, unfined, and no sulfites added.
Vinification
The Altesse grapes, grown on mica schist terraces near Albertville, are harvested at the most ripeness possible. They then undergo two weeks of carbonic maceration and two months of punching down in vats. After devatting, the wine is aged for at least a year in 300-liter barrels.
Tasting
La Grande Journée is a magnificent polyphonic maceration white, a distinguished orange structured in layers. It evokes white fruits, flowers, with a spicy and mineral dimension. Beautiful controlled oxidation that will enhance Alpine cheeses, or white meats or roasted poultry, stuffed or not.
