Amoroso Blanc
Distillerie Sentema
Amoroso Blanc is an ode to freshness, finesse, and controlled indulgence. Crafted by Distillerie Sentema in the Alpes-Maritimes, this sweet white vermouth is part of an artisanal approach rooted in the Provençal terroir. It is made from Rolle (Vermentino) grown in Correns, Var, then fortified with a local wine spirit, before undergoing a two-week maceration with a complex blend of organic plants and citrus fruits.
Unlike many commercially available white vermouths, Amoroso Blanc avoids any heaviness. Its sweetness is precisely balanced, supported by delicate bitters and a great vegetal freshness. It features absinthe from Barjols, sweet mint, and verbena harvested in the south, bitter orange leaves, and precious Menton IGP lemon peels, which bring an elegant zesty note to the blend.
On the nose, the aroma is floral and citrusy, with mentholated and slightly herbaceous nuances. On the palate, the attack is smooth, sweet yet taut, very fresh. Verbena and mint offer an almost ethereal dimension, while citrus fruits structure the whole. The finish is long, vibrant, never sugary, with a beautiful floral and citrus persistence.
Perfect as an aperitif, Amoroso Blanc can be enjoyed neat, chilled, or in a cocktail. It also pairs very well with seafood dishes, a citrus salad, or white fruit-based desserts.

A cellar gem, between family heritage and the depth of time
Here is a rare, almost confidential wine, which tells a story even before it is opened. Antenet 1998 is a unique cuvée, vinified more than twenty-five years ago by Danis's father, the current winemaker of the Danis dans la Vigne estate. This Cahors from another era, made from 100% Malbec, was crafted with respect for tradition and with a philosophy already very close to natural winemaking: short maceration, aging in concrete vats for two years, no oenological "makeup."
The typical clay-limestone soil of the Cahors vineyard produces an excellent keeping wine, with tannins polished by time and incredibly rich aromatics. At only 12% alcohol, it defies modern standards with its balance, freshness, and exceptional longevity.

After more than two decades of rest, Antenet 1998 reveals a brick-red garnet color, with brown reflections. It is in the heart of the limestone soils of Cognac, in this region where the sky and the vines have harmonized for centuries, that Alain Chadutaud passionately cultivates his Ugni Blanc. On typical clay-limestone soil, the roots draw the freshness and minerality necessary for the expression of a perfectly balanced white Pineau. The 2015 vintage, bathed in sunshine and tempered by Atlantic breezes, allowed for perfect grape maturation, giving birth to a generous and precise cuvée.
Cultivation methods
True to a philosophy that respects living things, Alain Chadutaud works biodynamically, with constant attention to soil vitality and vine balance. No synthetic inputs, but gentle practices, meticulous soil work, and natural preparations to support the plant throughout its cycle. The harvest, carried out at full maturity, precedes the subtle blending of grape juice and homemade Cognac eau-de-vie, according to the traditional savoir-faire of Pineau des Charentes. Aging takes place slowly in barrels, in order to develop this characteristic aromatic complexity.

From the very first nose, the Organic Pineau 2015 opens with a charming bouquet of candied fruits, dried apricot, and acacia honey, underscored by a hint of sweet almond. On the palate, the magic happens: the attack is lively, almost lemony, followed by a honeyed roundness that caresses the palate, supported by a tangy framework that prevents any heaviness. The balance is perfect, the persistence remarkable, leaving a sensation of freshness and deliciousness on the finish.
This is a Pineau of character, both sunny and invigorating, ideal as an aperitif, served chilled with iodine-flavored appetizers or cheese puff pastries. It also nobly accompanies pan-seared foie gras, highlighting its richness without overpowering it. “You don’t need anything,” says Alice Bouvot, winemaker at Domaine de l’Octavin, “just a grape that’s happy in its skin.” Everything is said in favor of natural wine; it’s a perfect description. Created in 2005, Domaine d’Alice is located in Arbois, in the wine-growing Jura region, often described as the most organic vineyard in France. The practice of making – among other things – oxidative wines is a good preparation for natural wine, as this type of wine does not allow any chemical additives and especially no sulfites. It’s a secret of this magnificent region. Originally spread over two hectares, the estate, managed entirely biodynamically (Demeter) since 2010, has expanded through the gradual acquisition of plots and now covers seven hectares.
An accomplished musician and passionate music lover, Alice intends to apply her musical sensitivity to the wines she makes. She draws a parallel between the technical perfection of conventional wines which risks excluding feeling, while "a musician who does not know music theory and plays with his guts creates emotion." For her, living wine is like this: instinctive, improvised, emotional. Introduced to natural wine by Stéphane Planche, sommelier at chef Jean-Paul Jeunet in Arbois, she will faithfully follow this path. The sometimes whimsical titles of her vintages are inspired sometimes by musical art (Dorabella, Zerline), sometimes by the numerous plots of land that make up her vineyard (En Curon, Les Corvées, En Poussot, etc.), and do not disdain a pun from time to time. Likewise, the labels adorned with happy and salacious little gnomes are a signature of the estate. As for the grape varieties, they are the classics of the Jura — Poulsard, Trousseau, Pinot Noir for the reds, and Chardonnay, Savagnin for the whites. Alongside her Arbois wines, Alice has created a business of "on the vine" grapes (Ecocert certified) with her winegrower friends from the region. Natural, committed, joyful and highly drinkable, the wines of Alice Bouvot are all the more sought-after as the vintages, produced in plot-by-plot mode, appear, disappear and reappear depending on the vintage and inspiration.

L'Enchanteresse Rouge 2017,
La Grapperie
A very intense nose of black fruits extends into a beautiful volume on the palate, and the length leaves one dreaming. A cuvée of old vines, L'Enchanteresse is a 100% Pineau d'Aunis with excellent aging potential. The terroir of this aptly named Enchanteresse is made up of flint clay over limestone. The Pineau d'Aunis, which makes up the entire cuvée, is harvested at full maturity, sorted, then macerated for four weeks in truncated cone-shaped vats with punching down by foot. Fermentation occurs naturally using indigenous yeasts, without any oenological additives, in order to preserve the purity of the grapes and the expression of the vintage and the soil. The wine is aged for between twelve and twenty-four months on lees in demi-muids in cellars dug into the tuffeau stone.

La Grapperie, in the Coteaux du Loir appellation, is the name of the estate of Renaud Guettier, who can be described as a master of Chenin, but also of Pineau d'Aunis, which is one of the oldest grape varieties in the Loire Valley. His principle, he confides, is "to produce complex, rich wines with good aging potential and imbued with the minerality of their terroir." The vines are located on hillsides, between 60 and 120 meters above sea level, protected from the north winds by the Bercé forest. Depending on the altitude, the terroirs are predominantly clay (at the bottom of the slope), flint (mid-slope) or sand (on the higher ground). The 60-hectare vineyard comprises around fifteen plots. The grape varieties are the two traditionally permitted in the appellation: Chenin for the whites and Pineau d'Aunis for 90% of the reds, the remainder consisting of a few acres of Côt, Gamay, and Grolleau. The average age of the vines is seventy years, including almost two hectares of century-old vines and one and a half hectares of vines aged between sixty and eighty years. Convinced of the enormous potential that these old vines can bring to his vintages, Renaud has been meticulous in restoring the vineyard. The entire estate is farmed organically. The soils are worked, and all viticultural interventions are manual, including the harvest, which is carried out at full maturity, which is reflected in the fullness and smoothness of the wines. For the reds, the Pineaux d'Aunis are partially destemmed (depending on the plot) and the macerations are quite long, three to four weeks, with punching down, to promote aging potential. The wines are aged in barrels for between twelve and twenty-four months, then racked, blended and bottled without filtration. For the whites, the Chenins are pressed directly at low pressure and then poured into barrels by gravity. Fermentation takes place in barrels, using indigenous yeasts, with complete malolactic fermentation, for at least eighteen months and sometimes up to thirty-six months.

Marie and Vincent Tricot
Marie and Vincent Tricot's Vin de paille is undoubtedly a curiosity: it's a sweet wine made from 100% Auvergne Gamay, entirely organic and natural, made like a Vin de paille from the Jura. The harvest is dried on straw in an attic before pressing. We're not used to Gamay vinified this way, or even red wine vinified this way.
It's an experiment, but the result more than justifies the boldness. Drying on straw concentrates the sugar in the grape berries and accentuates the flavors. Only a drop remains in each berry, but what a drop! Sweet, caressing, syrupy, complex, this Vin de paille is a delight. Its color is not a pure red but an amber, and the nose is a veritable basket of slightly jammy fruits: plum, prune, raisins, strawberry. It is possible that a refermentation takes place in the bottle, which can give a sparkling attack to this wine, but it disappears quickly. On the palate, a delicious sweetness, lots of strawberry and pleasantness. Very easy to drink.

Among the generation of Auvergne winemakers who, at the dawn of the 21st century, are resurrecting the vineyards of this beautiful volcanic province of the Massif Central in organic and natural ways, Marie and Vincent Tricot are pioneers, and their name is well known to those who have long loved natural wine. After a varied winegrowing journey that took them from Beaujolais to Chile and from Chile to Costières-de-Nîmes, they landed in Auvergne, at the foot of the Puy de Dôme, in the commune of Orcet where they took over Claude Prugnard's vineyard, a land that had not seen the slightest chemical input for around thirty years. The estate is located on a hillside, on the left bank of the Allier, in a volcanic clay-limestone area neighboring the vineyards of Châteaugay, Chanturgue and Corent. They acquired it in 2003 and, since then, have been making wines from Auvergne Gamay, Chardonnay and Pinot Noir, with a little Sauvignon Blanc and Muscat. These rare and sought-after wines are mainly sold directly. They have a straight and flamboyant profile, and express themselves with as much character as simplicity.
Made from 100% Obeideh, Lebanon's emblematic grape variety, this wine comes from vines over 60 years old located in Zahlé, at an altitude of 1,150 meters, on clay-limestone soils with an eastern exposure.
Organically farmed, it is vinified and aged for 12 months in stainless steel tanks on lees, revealing a straightforward and luminous wine, characterized by beautiful tension, a fine texture, and a pure expression of the terroir. Production limited to 5,000 bottles.
Made from 100% Viognier, this wine comes from vines over 25 years old located in Riyaq, at an altitude of 900 meters, on deep red clay soils with an east-facing exposure.
Organically farmed, it is mostly vinified in stainless steel tanks, with 25% of the fermentation taking place in 400L French oak barrels, then aged for 6 months on lees. The result is an expressive and elegant wine, combining freshness, a silky texture, and a subtle hint of wood. A limited production of 3,000 bottles.
