Champ Levat 2017 Red, Jean-Yves Péron
This 100% Mondeuse is the result of a blend of two plots: Le Pas de l’Ours and Côte Pelée. Tender and balanced with a peppery note, it is the result of two weeks of carbonic maceration before a year of barrel aging. It pairs very well with cured meats and mountain cuisine.

Tonton du sud Rouge 2015
Vincent Wallard
Made from Grenache vines growing on limestone and schist soils, Tonton du Sud comes from Vincent Wallard's winery. The harvest macerates in mille-feuille (layers of destemmed grapes and whole bunches to control the astringency of the tannins) before aging for one year and eight months. Pairing well with meats and grilled dishes, it can be kept for twenty years.

Magnum Tonton Red 2014
This 100% Cabernet Franc comes from Vincent Wallard's Loire winery. Grown in clay-limestone soils, the grapes are vinified using a mille-feuille process (skin-on maceration using layers of destemmed grapes and whole bunches to control the astringency of the tannins) before aging for twenty months. Excellent with red meats and wild mushrooms (particularly porcini mushrooms), it can be aged for twenty years.
