Blancas Nobles is a dry white wine from Andalusia made from the indigenous Vigiriega grape variety and a collection of noble white grape varieties from Europe (Sauvignon Blanc, Chardonnay, Riesling, Albarino) grown on schist-clay soils. This 2011, aged for twenty-one months in stainless steel vats, is particularly successful and presents a beautiful straw yellow color tending towards gold. It expresses notes of green apple, fresh orange zest with buttery and brioche accents: a delight! A beautiful, controlled oxidation that does not contradict the fruity nature of the wine. Noble grape varieties make for a noble wine: incredibly complex, full of balance, minerality, and seduction.

This premier cru of Puligny-Montrachet comes from Chardonnays grown on the plot that gave its name to the cuvée, between 230 and 250 meters above sea level. The terroir, facing west-southeast, rests on brown marl and clay-limestone soils, sometimes directly on the limestone rock. The soil structure is fine, clay-silt. After direct pressing of the grapes, the aging is about a year in barrels. The wine is typically Puligny: buttery, mineral, complex, structured in layers.

This wine from the "I Vicini" series by Jean-Yves Péron is made by skin maceration from organic muscats (Muscat of Alexandria and Muscat à petits grains) from Piedmont. The whole bunch maceration lasts two weeks in vats with indigenous yeasts. Aging is twelve months in barrels. No filtration, no addition of sulfites. I Vicini Moscato is an "orange" that combines the aromatic power of muscat (floral notes, exotic fruits, candied apricot, beeswax), with a slight smoky note, and the rectitude, the tension of the maceration white. Although atypical, it is suitable for all situations.

The blend here is dominated by Nerello Mascalese (85%) and complemented by Nerello Cappuccio, Minella Nera, Minella Bianco and Alicante Bouschet, all vines at least fifty years old growing on several plots. Perfectly ripe, ready to drink; age has done its work: a freshness melted into the fruit, herbal aromas. Lovely notes of spice and maturity: cinnamon, cherry, smoke. Aromatic, fascinating, capable of facing all gastronomic pairings.

Alea Jacta Est Red 2010, Le Coste
This falsely fatalistic red is made from the Aleatico grape variety, an ancient local variety from the Lazio region, on the borders of Tuscany and Umbria. The grapes were picked when slightly overripe and then macerated in whole bunches in large open French oak vats, before being aged in small 700-liter foudres. While the more recent vintages of Alea Jacta Est radiate freshness, here we move towards a more fleshy palate with notes of red fruits and spices, which will work wonders with dark chocolate with a hint of bitterness.

Magnum VN Ancestral Red Sparkling Wine 2015
Partida Creus
VN, Vinel·lo Ancestral Red, is a natural sparkling wine resulting from a blend of indigenous grape varieties: Samsó (Cinsault), Garrut (Mourvèdre), Trepat, Ull de Perdiu, Queixal de Llop, Sumoll, and Grenache Noir, harvested from predominantly limestone soils. After crushing, the musts of the different grape varieties ferment one after the other and are gradually added, thus extending the fermentation with indigenous yeasts. Fermentation completes in the bottle, for ten months, on fine lees. No filtration, no additives, and no added sulfites. A fruity, very fresh sparkling wine with floral and yeasty notes. Very long finish.

Rosso 2011
Le Coste
This generous Italian red is made from a blend composed primarily of Grechetto (a local variety related to Sangiovese), with the secondary grape varieties being Cannaiolo, Colorino, Ciliegiolo, and Vaiano, indigenous varieties planted in the vineyards on the volcanic soils of the Le Coste estate. Fermentation lasts about a month in French oak and chestnut vats. Rosso is then aged in Slovenian oak barrels. At first glance, a beautiful ruby color, a crisp and juicy palate, with notes of red and black fruits.

This pure Nerello Mascalese, produced under the IGP Terre Siciliane, comes from the basalt soils of the Cornelissen estate's three highest plots (Vigne Alte), rich in biodiversity: Tartaraci (1,000 m above sea level), Monte Dolce (870 m), and Pettinociarelle (890 m). It perfectly expresses the excellence of the old, ungrafted Nerello Mascalese vines grown on the high terraces of Etna's northern valley. It is the estate's most Burgundian vintage, with the most pronounced acidity. A balanced, structured, gourmet, and easy-to-drink cuvée, it offers plenty of crisp fruit without ever being too easy. A certain bite and freshness typical of the estate. A perfect table red, it pairs well with roasted farm-raised chicken.

This earthy, complex, and distinguished wine, yet surprisingly accessible to all palates, offers a rich, dense texture and flavor that is earthy, fruity, and smoky. This Munjebel is a bouquet of wild red fruits, pure classic Nerello Mascalese, rich and aromatic, carrying all the crunch of ripe fruit, with a Pinot Noir edge and a brilliant translucent color. It comes from several plots, including those from which the azienda's greatest vintages come (Zottorinoto, Feudo di Mezzo-Porcaria, Pontale Palino), and from vines specially dedicated to this vintage: Rampante, Piano Daini, and Crasà. Among Frank Cornelissen's vintages, it best represents the typicality of the northern valley of Etna.
