Perill Noir est sans doute la cuvée la plus emblématique de Clos Lentiscus. Élaboré exclusivement à partir de Sumoll, ancien cépage catalan, ce rouge associe une grande fraîcheur à une profondeur étonnante. Le nez dévoile des groseilles, de la griotte, des fleurs rouges, des herbes sauvages et des épices fines. La bouche est délicate, légèrement sauvage, portée par une belle tension et une longue finale minérale.
Vinification
100 % Sumoll, macération d'environ 15 jours, fermentation avec levures indigènes puis 30 mois d'élevage en fûts de chêne français. Vinification naturelle avec très peu d'intervention.
Issu des coteaux granitiques de Chénas, La Bruyère est un Gamay à la fois fin et profond. Le nez dévoile des arômes de cerise fraîche, de framboise, de violette et une touche épicée. En bouche, le vin se montre aérien, précis et porté par une belle tension minérale, avec des tanins soyeux qui prolongent une finale élégante.

Vendanges manuelles, macération carbonique en grappes entières avec levures indigènes. Élevage en anciens fûts afin de préserver la pureté du fruit. Vin non collé, non filtré et avec très peu, voire pas, de sulfites ajoutés selon le millésime.
Les Journets est une cuvée parcellaire qui exprime un Gamay raffiné et énergique. Le bouquet mêle fruits rouges mûrs, fleurs séchées et une légère touche de pierre chaude. La bouche offre une matière souple, des tanins fins et une finale fraîche, marquée par une belle minéralité.

Vendanges manuelles, fermentation spontanée en grappes entières, macération carbonique douce puis élevage en anciens fûts. Vinification sans collage ni filtration, avec une utilisation minimale du soufre.
Les Petits Bois dévoile un Gamay gourmand et lumineux, aux arômes de fraise des bois, de griotte et de fleurs fraîches. La bouche est croquante, juteuse et particulièrement digeste, soutenue par une belle tension qui apporte beaucoup d'élégance à l'ensemble.

La bouche est profonde mais toujours fraîche, avec des tanins soyeux et une finale longue et minérale.

Domaine Einhart
Pinot Noir—it's all in the title—is a red wine from the Alsatian terroir, organic (Ecocert and AB labels) and natural, made from Pinot Noir. Classified as AOC Alsace, it is a model of its kind, much fuller-bodied and robust than the average Alsatian Pinot Noir. A serious wine that makes you happy.
Vinification
The thirty-year-old Pinot Noirs from which this wine is made grow on the muschelkalk (shell limestone) terroirs of Dittelsberg-Albermohn and are harvested by hand, then destemmed. Maceration, using indigenous yeasts, takes place over two weeks. Aging for one year on fine lees, in demi-muids, precedes bottling without filtration. From the vine to the cellar, this wine was made without any chemical additives or added sulfites.
Tasting
The deep, purplish color of this Pinot Noir from the Einhart estate evokes black cherry: it is a velvety, ripe red, 100% Pinot Noir, with an intense, fragrant, and gently fruity aroma. The first nose is enhanced by aromas of black fruits (blackberry, blackcurrant, black cherry) with a hint of freshness blended into a light vanilla woodiness. The second nose is more open, with aromas of blood orange, bitter almond, and kirsch. On the palate, the small fruits are still there, supported by present but well-melted tannins, and lead to a velvety finish resting on a lovely freshness. Plenty of persistence and length. Decant to express all its finesse and grace, and serve with red meats, roasts, stews, charcuterie and cured meats.

In the northern part of the Alsatian vineyard, Domaine Einhart is a ten-hectare family estate whose vines grow on the foothills of the Vosges Mountains. The soil is clay-limestone and rich in fossils (muschelkalk, or shell limestone and oolitic limestone, and lettenkohle or dolomitic limestone).
A family estate
Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is co-founder, Nicolas devotes his winemaking work to protecting the land and biodiversity, making wine without inputs, refusing harmful phytosanitary products, and maintaining ecological refuge areas. His estate has been certified organic (Ecocert and AB) since 2011. The estate produces white wines from maceration or direct pressing and a Pinot Noir red.
The best of Alsatian terroirs
Entirely manual harvests, destemming of the bunches, light punching down, and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees, and the absence of filtration before bottling. The wines are pure grapes, lively, powerful, invigorating, and transcribe the minerality of these very beautiful terroirs in the Vosges foothills.

Marty 2022 is much more than just a wine: it's a vibrant tribute to the deep terroir of Cahors, and particularly to one of the most beautiful plots of the Danis estate in the vineyard. This Malbec, from clay-limestone soils, cultivated organically and without any synthetic chemicals, produces a dense, juicy, and profoundly sincere natural wine.
Short maceration, followed by 8 months of aging in stainless steel tanks, preserves the integrity of the fruit while revealing the finesse of the grape variety. With no added inputs and only indigenous yeasts, this wine respects the spirit of living wine, offering an elegant and clear expression of Malbec, far from heavy extractions and pronounced oakiness.
A vibrant, structured yet supple red
From the first pour, Marty 2022 displays a deep purple color with violet reflections. The nose is immediate, generous, blending aromas of ripe black fruits, candied fruit, and a subtle touch of leather, evoking the noble rusticity of the grape variety. On the palate, the attack is supple, followed by a beautiful, melted tannic structure, without harshness, and carried by a lovely freshness. It's a wine that is both gourmet and serious, perfect for accompanying grilled red meats, stews, or a fine cut of aged beef.
Serve between 16 and 18°C, it can be enjoyed now or aged 5 to 10 years in the cellar to gain even more complexity. A modern and lively Cahors, like a bridge between tradition and freedom.
Créée en exclusivité pour Culinaries, cette cuvée est née de l'assemblage minutieux de plusieurs lots de Malbec élevés séparément. Une partie du vin est élevée en cuve béton afin de préserver l'éclat du fruit et la fraîcheur naturelle du cépage, tandis qu'une autre passe un an en barriques ayant déjà contenu plusieurs vins, apportant complexité et profondeur sans masquer le caractère du terroir.
Le résultat est un Cahors à la fois précis et accessible, où les arômes de fruits rouges mûrs se mêlent à de délicates notes fumées, herbacées et florales de violette. Romanissa 2023 is one of Tom Lubbe's most unique cuvées. Produced from old vines cultivated biodynamically on the cool heights of Roussillon, this cuvée perfectly illustrates the Matassa style: a free, vibrant, and highly energetic wine.
The nose develops vibrant aromas of fresh red fruits, pomegranate, tart cherry, and Mediterranean herbs, enhanced by a slightly spicy and floral touch.
