Tasting
Fresh, wild, and intense, this Mercurey "Les Vignes Blanches" is a pleasure to drink with abandon. Morello cherries, black fruits, cherry, raspberry, complexity on the nose, giving way to floral then mineral and roasted notes. On the palate, there is plenty of fruit, sap, breadth, and density, with silky, melted tannins of great finesse, completely devoid of harshness. Long, fruity, and distinguished finish. Made for the rib steak, the beef fillet, the roast duck, the fine charcuterie.

Made in an illustrious Burgundy appellation, it is made from 100% Pinot Noir vines growing on the plot that gave its name to the cuvée.
Vinification
The Genevrières climate, in AOP Gevrey-Chambertin, is located on clay soil on a limestone base. Vinification begins with two weeks of whole-bunch maceration, followed by gentle pressing to preserve the fruit. A year of aging in terracotta (qvevri) gives additional velvety, sensuality and complexity to a wine that already offered a lot.
Tasting
The profile of a great classic red Burgundy with the freedom and breadth of nature. Black fruits, blackcurrant, blackberry, peony, red rose, delicately spiced, a touch wild… So many distinguished notes for this “Les Genevrières” 2022 vintage. This Chambolle-Musigny "Les Herbues" is an organic, natural white wine produced in Burgundy by Frédéric Cossard. It comes from the Les Herbues vineyard, from which it takes its name. Made from 100% Pinot Noir, it is classified under the Burgundy Chambolle-Musigny AOP.
Vinification
The Les Herbues plot is located between 250 and 300 meters above sea level. The clayey terroir, exposed to the east, rests on hard, fissured limestone formations that allow the roots to plunge into the subsoil. The Pinot Noir grapes macerate in whole bunches. Aging is approximately one year in barrels.
Tasting
Beautiful garnet color, finesse, elegance, density and uprightness. This Chambolle-Musigny “Les Herbues” is a complex and delicate red wine based on the aromas of raspberry, candied strawberry and violet with a touch of undergrowth, licorice and cocoa. Floral finish reminiscent of red rose. This clear and silky wine will be a delight with a gourmet meal as well as with local dishes. Burgundy Bedeau red 2022
Bedeau is an organic and natural red wine from Frédéric Cossard in the AOC/AOP Bourgogne region. While a "generic" red Burgundy, it perfectly evokes the character of its appellation and is suitable for all occasions. This is the red counterpart to the Bigotes cuvée.
Vinification
Bedeau is made from Pinot Noir vines grown on clay-limestone soils, on forty-year-old plots in Volnay and the surrounding area, as well as a plot of fifty-year-old vines in Nuits-Saint-Georges. The harvest is macerated in whole bunches.
Tasting
The nose is fresh, natural, evocative of tangy red fruits (morello cherry, plum, redcurrant). Bedeau is a beautiful, delicious and refined Pinot Noir, bursting with fresh, tangy and satiny fruit with a touch of insolence to enhance the whole. Fleurie Red 2022
Vinified by Frédéric Cossard, this vintage is an organic and natural red wine from Beaujolais, in the AOC Fleurie, one of the ten Beaujolais appellations located in the northern part of the country. It combines the typical characteristics of the granite soils and the Gamay grape variety of Beaujolais with the Frédéric Cossard touch, with fullness and respect for the terroir.
Vinification
100% Gamay from Beaujolais growing on granite soils, harvested by hand, it first undergoes a carbonic maceration of fifteen days in whole bunches. After pressing, it is aged for a year in concrete eggs, which rounds it out and highlights the fruit.
Tasting
A superb Cossard in Beaujolais version: this Fleurie is fruity, tangy, delicious, fine and elegant, typical of its appellation. Lovely bright color, raspberry, cherry, a touch of violet. Frédéric worked for a while as a wine broker before creating the domaine de Chassorney with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations.
In 2006, he created his own wine trading house and bought organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais vintages. The exercise is not limited to Burgundy, as vintages are made from grapes purchased in the Jura or Languedoc. Cuvée Carignan Red 2022
It's all in the title: this Cuvée C Carignan by Frédéric Cossard is a 100% organic and natural Carignan, vinified in Burgundy by Frédéric Cossard. The Burgundian master here takes on Carignan from the South, expressing its virtues with his usual dexterity. The blend includes a little Mourvèdre.
Vinification
The Cuvée C Carignan vines are planted at the foot of Mont Ventoux. The vinification of organic grapes is entirely natural, using indigenous yeasts, and maceration is done in whole bunches without exaggerating extraction. Aging is done in vats. No sulfites added.

Pommard Rouge 2021
Domaine de Chassorney
The illustrious Burgundy vineyard of Pommard, the epitome of Burgundy red wine, is represented here by Frédéric Cossard in the form of this beautiful wine full of red fruits and voluptuousness. On the palate, it is supple and light, but also has presence and personality. A straightforward, loyal, taut wine, adored by the ancient Dukes of Burgundy. The soils are clay-limestone and well-drained at the lower slopes, and at higher altitudes are Oxfordian marl, brown calcic and brown calcareous soils. Occasionally, a red tint emerges, revealing iron oxide. Pommard retains a virile and assertive reputation, especially inherited from the 19th century. However, it reveals itself to be sensitive, supple, and feline, tending towards leather, pepper, and chocolate with age. It is best to let this wine age a little to allow it to express its full potential. The Pinot Noir harvest on clay-limestone soil is macerated for three weeks in whole bunches before aging for a year in concrete eggs.

This Vosne-Romanée, a prestigious vintage from the Côte de Nuits, comes from the Les Champs-Perdrix vineyard. Very distinctive, voluptuous, complex, and powerful, this wine also displays beautiful finesse with soft, velvety tannins. This Pinot Noir in the Vosne-Romanée AOC comes from the plot that gave its name to the cuvée. The terroir, facing east, is based on limestone soils mixed with clayey marl at a depth that varies between a few dozen centimeters and one meter. The grapes macerate in whole bunches. Skin Contact Zizifredo is a surprising wine, a blend of Grenache Gris, Bourboulenc, and Muscat d'Alexandrie, macerated on the skins for a long time. Rare, appetizing, and sophisticated, with plenty of presence and character, it expresses notes of tropical fruits (pineapple) and various citrus fruits: mandarin, grapefruit, orange, in addition to iodine notes. On the palate, it is fresh and appetizing, with very fine tannins and plenty of fruit alongside the tension inherent in a long-macerated wine. Beyond the pun that its name constitutes (do we need to draw you a picture?), it also alludes to zibibbo, as Muscat of Alexandria is called in Sicily, the distinctive grape variety of this vintage. The grapes are purchased in the south of France by a winemaker friend of Frédéric Cossard. The vines are organic and harvested by hand, the harvest is vinified in whole bunches for nine months (it's really skin contact!) before being slowly pressed. The wine is aged in concrete eggs and bottled without the addition of sulfites, fining or filtration.

Skin-Contact Rafling White 2021
Classified as a Vin de France, Skin Contact Rafling is a wine resulting from a fairly extensive skin maceration: hence the presence of "Skin Contact" on the label. "Rafling" is a play on words relating to the maceration on stems (whole bunches) and the name of the Riesling grape variety. It is a dense and robust wine that is both round and straightforward, elegant and full of personality. Our national Frédéric Cossard, as comfortable with Burgundian-style winemaking (but without additives) as with the multi-colored refinements of merchant winemaking, offers us here a Riesling from twenty-five-year-old biodynamic vines harvested in Alsace on clay-limestone soil. Maceration is three weeks in whole bunches. Don't worry too much about food and wine pairings, this one is made for all occasions and can even compete with dishes that we usually think are reserved for red wine. Its aging potential—at least ten years—is generous.

This beautiful golden yellow color catches the eye; you pour yourself a small glass and suddenly you wake up. It sparkles, it's fresh, it's full of flavor and joie de vivre, and you could consider La Chassornade a festive wine if you didn't have a furious desire to drink it on any occasion, especially without an excuse or a word from your parents. It is, in short, a magnificent expression of the Aligoté grape variety in sparkling mode: floral, citrusy, taut, fresh, and mineral. It's also a natural sparkling wine that demonstrates the creativity of its winemaker. Aligoté was the first white grape variety in Burgundy—well before Chardonnay—and it deserves to regain its former glory. Vinifying it as a natural sparkling wine isn't a bad idea, quite the opposite: the grape's rounded, pleasant, and fruity notes (lemon and white grapefruit) stand out elegantly. Absolutely delicious. The grapes were harvested near Puligny-Montrachet, from vines that are around forty years old. The harvest is directly pressed, and bottling is done in the clear, without disgorging. Fermentation and aging take place in the bottle for around ten months. Native yeasts, no added sulfites, no additives.
