Vinification
The organic grapes, harvested by hand in the south of France, are vinified in Burgundy by Frédéric Cossard. The grapes macerate for nine months in whole bunches before being slowly pressed. The wine is aged in concrete eggs. Skin Contact Zizifrédo is bottled without the addition of sulfites, fining, or filtration.
Tasting
Rare and sophisticated with plenty of presence and character, Skin Contact Zizifrédo expresses notes of tropical fruits (pineapple) and various citrus fruits: mandarin, grapefruit, orange, in addition to iodine notes. On the palate, it is fresh and appetizing, with very fine tannins and plenty of fruit alongside the tension of a long-macerated wine. This wine is made for all pairings.

This Puligny-Montrachet AOP is a dry, organic, natural white Burgundy wine vinified by Frédéric Cossard. Frédéric produces several Puligny-Montrachet vintages, including this one with no climate indication, but endowed with all the graces of this great white wine appellation from the Côte de Beaune, one of the most prestigious in Burgundy.

Vinification
The small clay-limestone Monts Luisants plot is located above the village of Morey-Saint-Denis. The Pinot Noir planted here is of the Pinot Fin variety, a very old and increasingly rare strain. The vines are around seventy years old. The vines are cultivated without pesticides and the wine is made without any additives or added sulfites, with whole bunch maceration.
Tasting
A dense, powerful, complex and elegant wine, a Burgundian gem like Frédéric Cossard knows how to make. Made entirely from Pinot Noir (a Pinot Fin variety), it is produced in the Morey-Saint-Denis appellation and comes from the "Les Champs de la Vigne" climate. Its distinctive feature is its terracotta aging, which suits it well.
Vinification
The vines grow on a clay-limestone plot and are around sixty years old. They are made from Pinot Fin grapes, an old strain of Pinot Noir that is increasingly rare in Burgundy. The harvest macerates in whole bunches and the wine is aged in qvevri (Georgian-style terracotta jars) for at least a year. This maturation gives it a velvety patina and allows its red fruit aromas to flourish.
Tasting
Typical of the Morey-Saint-Denis climate, this Champs de la Vigne is a powerful and complex wine, offering notes of violet and red fruits. It expresses opulent fruit and remarkable minerality. Frédéric Cossard fait partie des figures incontournables du vin naturel en Bourgogne. Ancien sommelier puis courtier en vins, il fonde avec sa compagne Laure, au milieu des années 1990, le Domaine de Chassorney à Saint-Romain. Très tôt, il s’engage dans une viticulture sans chimie et des vinifications peu interventionnistes, à contre-courant des pratiques dominantes de l’époque en Bourgogne.
Pendant plus de vingt ans, il développe à la fois le domaine et une activité de négoce exigeante, lui permettant de travailler des raisins issus de certains des plus grands terroirs bourguignons : Meursault, Puligny-Montrachet, Chambolle-Musigny, Gevrey-Chambertin ou encore Morey-Saint-Denis. Ses vins deviennent rapidement des références pour les amateurs de Bourgogne naturelle, reconnus pour leur pureté, leur énergie et leur liberté de style.
En 2022, Frédéric Cossard quitte officiellement le Domaine de Chassorney, désormais conduit par une nouvelle équipe et dans une autre philosophie. Il poursuit aujourd’hui son activité exclusivement sous son propre nom, avec une sélection pointue de raisins cultivés selon un cahier des charges strict et toujours cette même recherche de précision, de vibration et de sincérité du terroir.
Les vins signés Frédéric Cossard proviennent de multiples terroirs bourguignons, principalement situés entre Côte de Beaune et Côte de Nuits. Sols calcaires, argilo-calcaires ou marno-calcaires : chaque parcelle est choisie pour sa capacité à produire des vins vivants et équilibrés. Certaines cuvées issues du Beaujolais reposent également sur des terroirs granitiques.
Le Pinot Noir et le Chardonnay occupent une place centrale dans le travail de Frédéric Cossard, avec également quelques cuvées de Gamay, d’Aligoté ou d’autres cépages selon les origines des raisins sélectionnés. Les vignes travaillées sont généralement âgées et cultivées avec des rendements maîtrisés afin de préserver concentration et finesse.
Le travail de la vigne est réalisé sans produits de synthèse ni désherbants chimiques. Les sols sont travaillés avec soin pour préserver leur vie et leur équilibre naturel. Les vendanges sont manuelles et effectuées à pleine maturité afin de conserver l’identité la plus juste du raisin.
Les fermentations se font grâce aux levures indigènes, sans levures exogènes ni standardisation technique. Les interventions en cave sont réduites au minimum afin de laisser le terroir s’exprimer librement. Les élevages, souvent en fûts, cherchent davantage l’équilibre et la texture que la marque du bois.
