Unit price perNuits-Saint-Georges Les Charmottes Red 2020,
Frédéric Cossard
This Nuits-Saint-Georges Les Charmottes 2020, by Frédéric Cossard, is a vibrant and natural expression of this prestigious appellation from the Côte de Nuits. Produced using unpretentious vinification, it reveals exceptional aromatic depth, combining floral finesse and fruity intensity.
The Nuits-Saint-Georges AOC, an exceptional terroir
Renowned for its structured and expressive wines, the Nuits-Saint-Georges AOC offers powerful and distinguished reds with long aging potential. The Charmottes plot, located on deep clay-limestone soils, gives this wine a beautiful concentration and a satiny feel. In the old Burgundian dialect, "charmottes" or "charmes" refers to formerly fallow lands, now enhanced by the meticulous work of Frédéric Cossard.
A natural and elegant Pinot Noir
This 2020 vintage, produced through a whole-bunch maceration, expresses a captivating floral nose, blending peony and violet, before giving way to an explosion of fruit black like blackberry and blackcurrant. On the palate, the body is silky and supple, with tannins of rare elegance and a lingering finish marked by a subtle minerality.
A wine of character, to enjoy now or to keep
With its balanced structure and its aging potential of 5 to 10 years, this Nuits-Saint-Georges can be enjoyed young, for the purity of its fruit, or after a few years, for a more complex and refined expression. Serve between 16 and 18°C, it will perfectly accompany a grilled prime rib, duck breast with red fruits or game in sauce. A great Burgundy wine, in a natural and masterful interpretation.

Through his entirely natural approach, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years of trading, the existence of harmful wine-growing practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice which are among the most sought-after in Burgundy. Frédéric worked for a time as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations. In 2006, he created his own wine merchant house and purchased organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais vintages. The practice is not limited to Burgundy since vintages are made from grapes purchased in the Jura or Languedoc. At his place, the work of the soil and the vines is done as naturally as possible: regular plowing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. red or white, classic Burgundies or more atypical or less “regional” bottles, Frédéric’s vintages are rare and sought-after wines, which sometimes require waiting.

Unit price perMorey Saint Denis les Champs de la Vigne Qvevris Red 2020,
Frédéric Cossard
This Morey-Saint-Denis Les Champs de la Vigne 2020, by Frédéric Cossard, is a true ode to Pinot Fin, a rare and precious strain of Pinot Noir. Aged in qvevri, this wine reveals exceptional purity and depth, enhancing the richness of its terroir.
The Morey-Saint-Denis AOC, a showcase for an exceptional wine
Located between Gevrey-Chambertin and Chambolle-Musigny, the Morey-Saint-Denis appellation is renowned for its powerful yet refined reds. Here, Frédéric Cossard delivers a natural and lively interpretation, from sixty-year-old vines rooted in clay-limestone soils. The result is a wine of great minerality, where the structure and elegance of the terroir are sincerely expressed.
The unique imprint of qvevri vinification
Far from classic barrel aging, this Morey-Saint-Denis was vinified and matured in buried terracotta jars. This technique, inspired by Georgian tradition, gives the wine a beautiful satiny texture, natural aeration and a pure expression of fruit. On the nose, bright red fruits, morello cherry and subtle earthy nuances herald a full and vibrant palate. The body is silky and velvety, with a deep minerality and fine tannins that ensure great length.
A wine for aging and gastronomy
This Morey-Saint-Denis is a emotional bottle, perfect to be enjoyed young with its fruit or after 5 to 10 years of aging, when it will develop all its complexity. Serve between 16 and 18°C, it will pair wonderfully with roast poultry, stewed meats or mature cheeses. A great Burgundy wine, natural and vibrant, not to be missed.

Unit price perBourgogne Blanc Bigotes Qvevris Blanc 2020,
Frédéric Cossard
The organoleptic and tactile qualities of Bigotes are enhanced by aging in qvevris, a Georgian-style buried terracotta jar, which gives it even more silkiness and velvety texture. The aromatic attack of this dry white wine is distinctly lemony and continues with yellow fruits. On the palate, it offers tension, fullness, indulgence, a touch of fat, and plenty of persistence. For a generic Burgundy, it soars at a good height. Produced on a small plot of Chardonnay in the Burgundy regional appellation, it is, in a way, the white counterpart of the Bedeau red.

The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Reds or whites, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.

An exceptional Chardonnay, aged in Georgian jars
The Saint-Romain Combe Bazin Qvevris Blanc 2020 from Domaine de Chassorney is an exceptional cuvée that combines Burgundian elegance with the ancestral Georgian tradition of ageing in qvevris. This pure Chardonnay, from a steep, east-facing plot, draws its minerality and complexity from a soil composed of marl, clay, and limestone. At an altitude varying between 280 and 400 meters, this terroir gives the grapes vibrant tension and superb freshness.
Upon opening, the luminous golden color announces a wine of character. The nose reveals a beautiful aromatic palette, combining candied citrus, juicy pear, fresh almond and notes of flint, typical of great white Burgundy. The skin maceration, followed by ageing in qvevris, brings additional depth, enriching the texture with honeyed, spicy and slightly tannic nuances. On the palate, the balance is masterful: a beautiful mineral tension supports a full-bodied and structured wine, whose saline and persistent finish leaves an unforgettable impression.
A natural and unfiltered wine, this unique cuvée deserves to be decanted to reveal its full complexity. Served between 10 and 12°C, it pairs magnificently with pan-fried scallops, roasted lobster, truffle risotto, or creamed poultry. A rare, deep, and vibrant wine that will evolve gracefully over 5 to 10 years.

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years of trading, the existence of harmful wine-growing practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice which are among the most sought-after in Burgundy. Frédéric worked for a time as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own wine merchant company and purchased organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais vintages. The practice is not limited to Burgundy, as vintages are made from grapes purchased in the Jura, Languedoc and elsewhere. Frédéric Cossard is one of the most prominent figures in natural wine in Burgundy. A former sommelier and then wine broker, he founded Domaine de Chassorney in Saint-Romain with his partner Laure in the mid-1990s. From the outset, he committed to chemical-free viticulture and low-intervention winemaking, going against the prevailing practices of the time in Burgundy.
For over twenty years, he developed both the estate and a demanding négociant business, allowing him to work with grapes from some of Burgundy's greatest terroirs: Meursault, Puligny-Montrachet, Chambolle-Musigny, Gevrey-Chambertin, and Morey-Saint-Denis. His wines quickly became benchmarks for natural Burgundy enthusiasts, renowned for their purity, energy, and freedom of style.
In 2022, Frédéric Cossard officially left Domaine de Chassorney, which is now run by a new team and with a different philosophy. He continues his work exclusively under his own name, with a meticulous selection of grapes grown according to strict specifications and always with the same pursuit of precision, vibrancy, and authenticity of terroir.
Frédéric Cossard's wines come from various Burgundian terroirs, mainly located between the Côte de Beaune and Côte de Nuits. Calcareous, clay-limestone, or marl-limestone soils: each parcel is chosen for its ability to produce vibrant and balanced wines. Some cuvées from Beaujolais also come from granite terroirs.
Pinot Noir and Chardonnay play a central role in Frédéric Cossard's work, with a few cuvées of Gamay, Aligoté, or other grape varieties depending on the origins of the selected grapes. The vines are generally old and cultivated with controlled yields to preserve concentration and finesse.
Vineyard work is carried out without synthetic products or chemical herbicides. The soils are carefully worked to preserve their life and natural balance. Harvesting is manual and done at full maturity to retain the truest identity of the grape.
Fermentations occur with indigenous yeasts, without exogenous yeasts or technical standardization. Interventions in the cellar are kept to a minimum to allow the terroir to express itself freely. Aging, often in barrels, seeks balance and texture rather than the imprint of wood.
Frédéric Cossard's wines are distinguished by their energy, precision, and great drinkability. The reds offer fine and vibrant textures, while the whites often develop taut, complex, and profoundly lively profiles. Unique, sought-after, and immediately recognizable wines that have largely contributed to changing the perception of natural Burgundian wines.
