This wine from the Aux Croix Rouges plot has a beautiful deep gold color, a magnificent nose, opulent, deep, and heady, with notes of white flowers. On the palate, there is plenty of presence and freshness, a beautiful honeyed and brioche-like palate. This superb Nuits-Saint-Georges white seduces with its rarity but also with its freshness and balance. The Pinot Blanc grapes from which it is made grow on marl-limestone soils. They are around forty years old. The harvest is directly pressed and the must is fermented without punching down. The aging is one year in concrete.

The vines growing on the clay-limestone plot known as Les Champs de la Vigne are around sixty years old. This beautiful golden yellow color catches the eye; you pour yourself a small glass and suddenly you wake up. It sparkles, it's fresh, it's full of flavor and joie de vivre, and you could consider La Chassornade a festive wine if you didn't have a furious desire to drink it on any occasion, especially without an excuse or a word from your parents. It is, in short, a magnificent expression of the Aligoté grape variety in sparkling mode: floral, citrusy, taut, fresh, and mineral. It's also a natural sparkling wine that demonstrates the creativity of its winemaker. Aligoté was the first white grape variety in Burgundy—well before Chardonnay—and it deserves to regain its former glory. Vinifying it as a natural sparkling wine isn't a bad idea, quite the opposite: the grape's rounded, pleasant, and fruity notes (lemon and white grapefruit) stand out elegantly. Absolutely delicious. The grapes were harvested near Puligny-Montrachet, from vines that are around forty years old. The harvest is directly pressed, and bottling is done in the clear, without disgorging. Fermentation and aging take place in the bottle for around ten months. Native yeasts, no added sulfites, no additives. This is a voluptuous wine to be enjoyed at special occasions. Its velvety structure is fine and delicate, soaring into notes of airy lightness. The Lurets plot, in the Volnay AOC, produced this Pinot Noir. Its steep, west-southeast-facing terroir is located between 230 and 280 meters above sea level. The soils are primarily composed of pink limestone supported by white schist pebbles. The grapes macerate in whole bunches for two weeks in open wooden fermenters. Volnay Red 2021
This warm and straightforward wine from the Volnay appellation, with notes of red and black fruits, reveals itself on the palate to be balanced and lively, with lovely, gently spicy notes. On the nose, it has already expressed beautiful notes of red fruits (strawberry), spices, and candied fruits. On the palate, it is warm and powerful, with floral aromas and a great minerality on the finish. This Volnay comes from old Pinot Noir vines growing at the bottom of the slopes, on dense, stony soils of ferruginous red clay and limestone. On the palate, there is plenty of sap, fullness, and density, with silky, melted tannins of great finesse, completely devoid of harshness. The finish is long, fruity, and distinguished. Les Vignes Blanches is a Mercurey vineyard where Frédéric Cossard is producing his third vintage. For the occasion, the winemaker vinified and aged it in qvevri (a Georgian-style buried jar), which rounds it out and accentuates its velvety texture and depth. This is a magnificent red wine from Beaune with dark harmonies: blueberry, black fruits, black cherry, alongside aromas of red rose petals and fresh violets. It is a calm and elegant wine, endowed with elegant richness and admirable fruit concentration, in which the slight astringency of well-evolved tannins blends gracefully. It comes from a plot of land that has been cultivated organically for three years and faces south. This Chardonnereux plot is known for ensuring early ripening of the grapes. To highlight the minerality of this red Beaune, Frédéric Cossard decided to ferment and age it in qvevri, a Georgian-style buried jar. Aging in qvevri lasts twelve months, after a month and a half of fermentation with indigenous yeasts. The passage in qvevri is preceded by a three-month passage in stainless steel vats.

Marvelously pure, this wine is produced by directly pressing grapes harvested from twenty-year-old vines near Vaison-la-Romaine (Vaucluse), on clay-limestone soils. Domaine de Chassorney
The olfactory bouquet of this Saint-Romain "Sous Roche" offers notes of morello cherry and sweeter red fruits such as strawberry and pomegranate. On the palate, it displays superb structure, well-rounded tannins, and lovely notes of rustic, earthy red and black fruits. There is plenty of mid-palate concentration, aromas, energy, and length. The wine blossoms beautifully in the glass. This Saint-Romain "Sous Roche" is a pure Pinot Noir from a plot with a steep, south-southeast-facing terroir located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils are primarily marl, limestone, and clay. The grapes, from fifty-year-old vines, macerate in whole bunches. The aging is approximately one year in barrels.

Frédéric Cossard is one of the most prominent figures in natural wine in Burgundy. A former sommelier and then wine broker, he founded Domaine de Chassorney in Saint-Romain with his partner Laure in the mid-1990s. From the outset, he committed to chemical-free viticulture and low-intervention winemaking, going against the prevailing practices of the time in Burgundy.
For over twenty years, he developed both the estate and a demanding négociant business, allowing him to work with grapes from some of Burgundy's greatest terroirs: Meursault, Puligny-Montrachet, Chambolle-Musigny, Gevrey-Chambertin, and Morey-Saint-Denis. His wines quickly became benchmarks for natural Burgundy enthusiasts, renowned for their purity, energy, and freedom of style.
In 2022, Frédéric Cossard officially left Domaine de Chassorney, which is now run by a new team and with a different philosophy. He continues his work exclusively under his own name, with a meticulous selection of grapes grown according to strict specifications and always with the same pursuit of precision, vibrancy, and authenticity of terroir.
Frédéric Cossard's wines come from various Burgundian terroirs, mainly located between the Côte de Beaune and Côte de Nuits. Calcareous, clay-limestone, or marl-limestone soils: each parcel is chosen for its ability to produce vibrant and balanced wines. Some cuvées from Beaujolais also come from granite terroirs.
Pinot Noir and Chardonnay play a central role in Frédéric Cossard's work, with a few cuvées of Gamay, Aligoté, or other grape varieties depending on the origins of the selected grapes. The vines are generally old and cultivated with controlled yields to preserve concentration and finesse.
Vineyard work is carried out without synthetic products or chemical herbicides. The soils are carefully worked to preserve their life and natural balance. Harvesting is manual and done at full maturity to retain the truest identity of the grape.
Fermentations occur with indigenous yeasts, without exogenous yeasts or technical standardization. Interventions in the cellar are kept to a minimum to allow the terroir to express itself freely. Aging, often in barrels, seeks balance and texture rather than the imprint of wood.
