Les Grandes Serres
A good Côtes-du-Rhône, without the slight bite of sulfites, the "vin de ballon" restored to its natural fullness and innocence, does that tempt you? Here's one for you, produced by the Castel-Papal estate of Les Grandes Serres. This rich, dense, and fruity wine is made from 80% Syrah, with 5% of each of the following grape varieties: Grenache, Mourvèdre, Cinsault, all grown on limestone and sandstone soils. Harvested by hand, the grapes are destemmed and macerated on the skins for three weeks. After pressing, the wine rests for eight months in stainless steel vats. This Côtes-du-Rhône is part of the estate's organic and natural Comics series and will always be perfect when you want a warm, fruity red wine that's suitable for all occasions.

Everyone knows where Châteauneuf-du-Pape is, but how well do we really know this appellation? The Domaine des Grandes Serres represents both its excellence and its vitality. Produces exceptional estate and merchant wines, both red and white, it harvests, buys grapes, vinifies, and ages over a wide area, centered around Châteauneuf and the southern Côtes-du-Rhône and including more peripheral areas such as Lirac and the Costières de Nîmes. In Châteauneuf-du-Pape itself, the estate owns twelve hectares. Created in 1977, it has long been founded on respect for the environment and the terroir. Currently, a large portion of its vintages are organic and without added sulfites, though it doesn't boast about it publicly. Samuel Montgermont, the estate's general manager, modestly explains that the geological and climatic conditions, particularly the mistral wind, favor the health of the vineyard and allow for the elimination of additives. Covering the entire range of white and red wines from the Midi and all their grape varieties, the estate is now committed to producing natural wines under labels that take themselves in no way seriously, but the wines in the bottles—each bearing the name of its appellation—are solid and serious, in addition to being fresh and flavorful.

Les Vignes du Domaine du Temps
La Combe du Temps Blanc is a cuvée from Les Vignes du Domaine du Temps, in Cabardès (Languedoc). Full-bodied and expressive, it is lively and dry with a lovely hint of melted wood. Elegance and a slightly rich note are traits found in all the whites from this estate. Its balance will delight everyone and open up numerous flavor pairings. The blend combines the North, West, and South: 60% Chenin, 20% Roussanne, and 20% Sémillon. Everything ferments naturally, using indigenous yeasts, and La Combe du Temps is aged for a year in old oak barrels. No sulfites are added.

The Domaine du Temps is located in Cabardès, a small region of Languedoc that was once a subdivision of Cathar Country. Stretching from the southern slope of the Montagne Noire to the city of Carcassonne, it is bordered to the west by the Lauragais and to the east by the Minervois. Hilly, wild, and rich in Mediterranean flora, it is a preserved ecosystem, especially since the Domaine du Temps, in the Font Juvénal area, is a magical place: around a former 18th-century priory, sixty hectares of forests and scrubland protect thirteen hectares of vineyards on stony clay-limestone soils. The balance between dryness and coolness is a boon for viticulture, with a wide range of grape varieties. In addition to the Languedoc grape varieties (Syrah, Grenache, Roussanne, Viognier, Muscat), Cabernet Sauvignon, Cabernet Franc, Merlot, Sémillon, and Chenin are grown. The estate has been Ecocert certified since 1998, is entirely managed biodynamically, and has been dedicated to natural wine since 2015. The work in the vineyard and cellar is methodical, rigorous, and attentive: only the best grapes are kept, resulting in small yields, and destemming is determined based on the ripeness of the bunch. The reds are vinified using carbonic maceration of individual grape varieties, with the blending taking place before the year's aging. The whites are slowly and gently pressed to extract only the best from the grapes. These precautions produce smooth, controlled wines of great integrity, with very supple tannins. They are fresh, delicious, and expressive.
Blurry Moon Gin 42° 50cl
A tasting gin, organic and unfiltered, presented in a beautiful transparent glass sphere. The name Blurry Moon, "cloudy moon," refers to the hazy appearance produced by the gin's lack of filtration and the precipitate of essential oils it contains. It is made using the same basic London dry gin, a wheat distillate macerated with five botanicals: juniper, coriander, wild hops, lemongrass, and red cinchona. Cinchona, in particular, strongly influences the aromatic bouquet with a subtle bitterness. This artisanal gin offers superb freshness and notes of pine sap. Enjoy on its own or with a good tonic.
Farmhouse Cider 2017,
Florian Bourrienne makes ciders for aging, intended to evolve over the years, and this sets him apart from most other producers. His orchard is located in the heart of Calvados, in the Pays d'Auge, but outside the AOC (Protected Designation of Origin) in order to preserve the freedom and uniqueness of his ciders. We can, without hesitation, call it natural cider, because the cider maker goes beyond organic to respect the traditional production method, which is delicate, patient, and requires a tremendous amount of work. From his fifteen-hectare orchard planted with tall stems, he produces ciders for aging, excellent to drink in their youth but sumptuous after several years. The blend is carefully measured according to the characteristics of each vintage. The fruit production is entirely organic and the fermentation processes—there are two for traditional cider—are slow and patient, so that the cider is made the right way, using natural yeasts. These are preserved in the cider thanks to a light filtration that respects all the living elements capable of polishing the taste and aromas, but also facilitates the formation of foam, which must be just right: neither too strong nor too weak. It's difficult to manage, but the result is well worth it. These are mastered ciders, eminently delicious, marked by an extraordinary sweetness and roundness of apple. Over time, they acquire notes of acidity and astringency that gracefully reinforce their beautiful aromatic palette. These are ciders of taste and pleasure, as delicious at the table as they are as an aperitif.
Obviously more evolved than the 2018, this 2017 vintage has a more sustained acidity in an overall still very marked by sweetness. Round, full-bodied, slightly astringent, it is approaching adulthood and you can drink it now or keep it for three to five years. The apple flavor is enhanced with a remarkable freshness. A sunny cider that puts you in a good mood.
Argile White 2020,
Argile is a dry Jurançon, 100% Petit Manseng, produced by direct pressing, fermented and aged in terracotta jars. This wine, with its strong personality, will surprise you with its balance, length, and frank minerality. Fresh, long, and lively, with a continuous line between tension and fruit, enhanced by a unique aromatic palette due to fermentation and aging in terracotta. It's a real companion to oysters and seafood, but it also tastes great on its own. Harvested by hand in mid-September, the grapes are healthy and meticulously sorted. Petit Manseng lends itself to the production of very fine wines, with aromas that faithfully reflect their terroir and region. No chemical additives in the vineyard or cellar, no added sulfites. Keep it in the cellar for two to five years.

Château Lafitte is located in Béarn, on the noble terroir of Jurançon, the origin of superb sweet wines and dry wines that have nothing to envy. Since the 14th century, Monein, the commune where the estate is located, has been nestled in an exceptional natural, rich, and hilly environment. In the 16th century, vines already occupied a significant part of the property, and they have persisted to this day. Philippe and Brigitte Arraou, the current owners, have undertaken to revive viticulture on the site, helped since 2012 by their son Antoine, a winemaker as passionate as his parents. Château Lafitte is now managed biodynamically and with agroforestry: five hectares of marl-limestone soils typical of the appellation, on a hilly terrain that can become very cold in winter. The king grape varieties of Jurançon, Petit Manseng and Gros Manseng, represent the majority of the grape varieties. Also typical of Jurançon and the Pyrénées-Atlantiques in general, viticulture en hautains, that is to say raised and trained very high, is practiced. As it was in many primitive vineyards, some of which are still active (Portugal, Spain, Georgia, etc.). On this beautiful estate, winemaking experiments are legion: aging in terracotta jars for dry wines, solera for sweet wines in untopped barrels, photovoltaic roofs for the cellar, rainwater harvesting, gravity-fed vinification. Château Lafitte produces sweet Jurançons as well as still dry wines and a very successful natural sparkling wine, Funambule.
Cabernat Red 2019,
Cabernat is a red wine with no additives or added sulfur, made from Cabernet Sauvignon grown on east-facing plots on clay-gravel soils. The grape variety has the particularity, for this cuvée, of being harvested slightly overripe. The average age of the vines is fifteen years. The planting of cover crops allows for soil decompaction and provides nutritional support, alternating with natural grass cover. The harvest is destemmed and macerated carbonically with pressing in the first third of fermentation. Alcoholic fermentation ends in the liquid phase. Aging is six months on lees in stainless steel vats. Drink this first natural cuvée from Simon Capmartin within the year: it may surprise you upon opening with the presence of carbon dioxide and appear quite closed. The winemaker strongly recommends careful decanting, which will allow beautiful notes of ripe fruit to emerge that are "quite stunning" (we quote).

Guy Capmartin settled in 1985 in the former convent of Maumusson-Laguian, in the Gers, to exploit the magnificent surrounding soils, from which he would soon produce highly acclaimed wines in the Madiran and Pacherenc-du-Vic-Bilh appellations. In 1987, Tradition, his first cuvée, was born. In the 2000s, he decided to work exclusively in organic and biodynamic agriculture, a decision reinforced and entrenched by his son Simon, who took over. The wines were noted and received numerous awards. Certification was obtained in 2013, the Demeter label is in progress. Taking advantage of his most specific plots of the estate, Simon also undertakes to produce natural cuvées, without input and according to the principle of minimal interventionism. Labeled Vin de France or Côtes-de-Gascogne, these are the cuvées that we offer you at Culinaries.
The estate's grape varieties are organized around Tannat, the king of Madiran, surrounded by a palette as rich and diverse as the estate's soils: Cabernet Sauvignon, Cabernet Franc, a little Syrah and Grenache Noir, plus a few old red vines currently being identified. A plot of Tannat, located on a very fine and very supple clay-marl soil with gravel, is pre-phylloxera. For the white, Petit Manseng, Gros Manseng and Petit Courbu, as well as, for the Côtes-de-Gascogne, Sauvignon Blanc, Sauvignon Gris and Viognier.
The main objective of the Capmartin estate is to make frank, fruity, authentic and honest wines, perfectly reflecting their terroir, which explains the parcel-based nature of the wines under the appellation: one parcel corresponds to one vintage, and vice versa. This also explains the number and variety of vintages.
Cuvée YARD II (exclusive cuvée) Red 2021
Aubert & Mathieu
We are pleased to present the YARD II cuvée, designed and produced using organic and natural viticulture (AB, Eurofeuille, B-Corp labels, etc.) by the Carcassonne-based wine merchant Aubert et Mathieu. This is a red wine from Languedoc-Roussillon in the IGP Pays d’Oc appellation, resulting from an exclusive partnership between Aubert and Mathieu and YARD-Culinaries.
Vinification
The blend is composed of Grenache (60%) and Syrah (40%) growing on clay-limestone soils. Vinification lasts approximately three weeks and aging is done in concrete vats for six months. No sulfites are added during vinification or bottling.
Tasting
A true wine from the South, from the Pays d’Oc, with the fullness of Grenache and the depth of Syrah. Beautiful ruby color, lots of red fruits (cherry, strawberry), a little violet and sweet spices, a fresh structure, beautiful body and a nice length on the palate. With these crisp and peppery tannins, you will enjoy roast pork, charcuterie, cured meats and Mediterranean cuisine such as pizza, pasta with tomato sauce or elaborate tapas.

Methodology
Aubert and Mathieu buy organic grapes from around thirty winegrowers in Languedoc and Roussillon: local grape varieties (syrah, mourvèdre, grenache, carignan, etc.), chardonnay, sauvignon, etc. The house observes great vigilance over the process, chooses the degree of maturity of the grapes (not too ripe), and produces the wines in the winegrowers' own cellars. They include in their collection of organic and eco-responsible labels that of B-Corporation, one of the most demanding in the world.
A sustainable and innovative wine
Anthony and Jean-Charles are committed to offering "sustainable" and superior quality ("premium") wines, affirming their dedication to protecting the planet. Even if one of their vintages was produced with the help of ChatGPT, the Languedoc winemaking traditions are not lost sight of (it should be noted that the name of this vintage, The End, alludes to the limits that they themselves found in the approach).

Fond Cyprès
If you serve this wine very chilled on a very hot day, you'll be thanked, because that's its purpose. Lively, tangy yet velvety, full of character, it can be drunk on any occasion and at any time of day. Cyprès de Toi Rosé offers a lovely color of soft salmon pink and wild strawberry, but make no mistake: it won't sing you a lullaby. Powerful and assertive, perfectly dry, beautifully balanced between fruit and acidity, it hasn't forgotten its Malbec of origin, whose grapes were purchased from a certified organic winemaker. Malbec, in fact, benefits from rosé vinification, as it is one of the varieties that produces very vinous rosés with substance. The grapes undergo direct pressing and traditional vinification, using indigenous yeasts and without additives. Settling is done in the cold and fermentation, as well as aging, are carried out in stainless steel vats. A light filtration is done before bottling.

Premier Jus is the very image of a delicious gurgle: a juicy bomb that oscillates between light red and dark rosé. Fresh, fruity, delicious, and addictive, it awakens the mind dulled by the summer heat. It is the result of a blend of Carignan and Grenache grown on marl-limestone soils. The two harvests are processed separately: the Carignan is macerated for two days in whole bunches, then added to the Grenache must in a direct press during fermentation. Gin Mist 37.5° - 50cl
This organic gin, which received the gold medal in the Spirits Selection at the 2016 Brussels World Gin Competition, offers clean, fresh notes of distilled juniper berries, accentuated by lemongrass. Hops, coriander, and angelica root are also included in the blend, resulting in a cloudy gin after distillation, hence its name (mist, "fog"). An almost alchemical recipe whose powerful and penetrating aroma makes you want to enjoy it neat, but gin and tonic also goes very well with it—gin, tonic water, a slice of lime, ice cubes, and why not a simplified gin fizz? The Awen Nature distillery is a factory of magic potions: beverages with a strong Celtic flavor, organic liqueurs with a strong touch of poetry. This Breton distillery, located in Ille-et-Vilaine and run by Julien Fanny, initially focused on absinthe, a liqueur that Julien helped to rehabilitate. It's not "the liqueur that makes you crazy," he says: "we were already crazy before." » He strives—successfully—to recreate the taste of yesteryear, that of absinthes that were once given to children on a sugar cube as a dewormer. “You need a touch of madness to be a distiller today,” says Julien. A white wine to delight in: this Mus'cat is so lovely, both on the nose and on the palate! Muscat of Alexandria harvested in Languedoc, crafted in the Jura style, is something else. Full of fruit and freshness, Mus’cat offers fruity notes that languidly extend across the entire palette of yellow and tropical fruits: peach, apricot, citrus, mango, pineapple… As its name suggests, Mus’cat is vinified from muscats from the Pyrénées-Orientales (50% muscat à petits grains, 50% muscat d’Alexandrie from Vincent Lafage, sixty-six-year-old vines growing in Saint-Jean-Lasseille) cultivated biodynamically on clay-limestone soils, macerated for ten days in whole bunches to promote the extraction of their lovely aromas. Bottled in May 2022, Mus’cat will lend itself to all pairings, including desserts (but not too sweet, please).

“You don’t need anything,” says Alice Bouvot, winemaker at Domaine de l’Octavin, “just a grape that’s happy in its skin.” Everything is said in favor of natural wine; it’s a perfect description. Created in 2005, Domaine d’Alice is located in Arbois, in this wine-growing Jura region, often described as the most organic vineyard in France. The habit of making – among other things – oxidative wines is a good preparation for natural wine, this type of wine does not allow any chemical additives and especially no sulfites. It’s a secret of this magnificent region. Originally spread over two hectares, the estate, managed entirely biodynamically (Demeter) since 2010, has expanded through the gradual acquisition of plots and now covers seven hectares.
An accomplished musician and passionate music lover, Alice intends to apply her musical sensitivity to the wines she makes. She draws a parallel between the technical perfection of conventional wines, which risks excluding feeling, while "a musician who does not know music theory and plays with his guts creates emotion." For her, living wine is like this: instinctive, improvised, emotional. Introduced to natural wine by Stéphane Planche, sommelier at chef Jean-Paul Jeunet in Arbois, she will faithfully follow this path. The sometimes whimsical titles of her vintages are inspired sometimes by musical art (Dorabella, Zerline), sometimes by the numerous plots of land that make up her vineyard (En Curon, Les Corvées, En Poussot, etc.), and do not disdain a pun from time to time. Likewise, the labels adorned with happy and salacious little gnomes are a signature of the estate. As for the grape varieties, they are the classics of the Jura - Poulsard, Trousseau, Pinot Noir for the reds, and Chardonnay, Savagnin for the whites. Alongside her Arbois wines, Alice has created a business of "on the vine" grapes (Ecocert certified) with her winegrower friends from the region. Natural, committed, joyful and highly drinkable, the wines of Alice Bouvot are all the more coveted as the vintages, produced in plot-by-plot mode, appear, disappear and reappear depending on the vintage and inspiration.
Falgueyras Red 2018,
Vigne Vieille du Falgueyras is a fruity and indulgent red wine, rich in notes of red fruits (blackcurrant, blackberry, morello cherry) and beautifully peppery. Its profile is enhanced by sweet spices, prune on the nose, black olive, as well as more mineral accents (smoke, natural incense). It has character, oak without exaggeration, and a very beautiful body. Typical of the Gaillac terroirs, this is a red wine made 100% from old Syrah vines aged thirty and forty years, planted on boulbènes (gravelly, loamy sand) on the second terrace of the Tarn. The destemmed harvest macerates in cement vats with two punching down of the marc. The fermentation temperature did not exceed 21°C. Aging continues for nine months before bottling without filtration and, of course, without the addition of sulfites.

The name Gaillac, the region where the Bois-Moisset estate is located, owned by Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; it is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine luminosity. Many estates, including that of Bois-Moisset, showcase this uniquely rich winemaking heritage. Along with an estate planted with vines, it is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours, and grape juice. A herd of old local breed cows also thrives there, and guest rooms are available in the summer. It is in this small rural paradise that natural wines typical of their origin and terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character, rooted in our soils, with freshness and refined tannins." They want to create entirely natural wines, concentrated expressions of terroir. In the heart of the ancient Corbières massif, they are taking over an old estate already planted with abandoned Carignan and Grenache grapes, which have seen neither fertilizer nor pesticides for years: these clean, vibrant soils are ideal conditions for launching into natural winemaking. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. The vinification is done without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. The wines of Fond Cyprès poetically evoke the estate's ecosystem and the vegetation that protects the plots: the pine forests, the shady springs, the beauty of the natural environment that brings freshness to the wines and leaves the soil's signature. Deliciously balanced between mineral imprint, vegetal environment and expression of fruit, the wines of Fond Cyprès reflect the South: the caress of its sun, but also the freshness of its shadows.
Coming from a plot of young vines exposed to the north and bordered by pines and cypresses, the Syrah harvest used to make this wine is destemmed, gently extracted, and aged for one year in old barrels. Dense, ample and generous, this Syrah is ready to drink but can still wait. It carries within it the freshness and shade of its forest environment and a certain gravity that is not rare in Corbières wines based on this type of blend. It is a true wine of the South, born of the sun and faithful reflection of the earth.

A wine that stands the test of time, a preserved terroir, and natural vinification: Combe du Temps 2018 is a straightforward and vibrant red, made from a balanced blend of Syrah and Grenache. In the majestic setting of Cabardès, on the outskirts of Carcassonne, the Domaine du Temps has produced an intense, mineral, and expressive cuvée, where nature expresses itself without artifice.
An exceptional terroir and pure vinification
Located on stony clay-limestone soils, the vineyard benefits from a rare balance between freshness and dryness, perfect for revealing the finesse of Grenache and the depth of Syrah. Certified biodynamic since 1998 and dedicated to natural wine since 2015, the estate practices demanding viticulture: low yields, careful grape selection, and additive-free vinification. Carbonic maceration for each grape variety, fermentation with indigenous yeasts, no fining or filtration, and less than 2g of sulfur added before bottling. Aging takes place for nine months, including 20% in barrels, adding a subtle oaky touch without masking the fruit.
An intense and racy red
Combe du Temps boasts a deep garnet color that heralds beautiful concentration. The nose is a captivating blend of vibrant red fruits, sweet spices and mineral notes reminiscent of the earth and surrounding scrubland. On the palate, the freshness perfectly balances the tannic structure, offering a silky touch and a lingering, slightly salty and peppery finish.

100% old Syrah vines, aged between thirty and forty years, planted on boulbènes on the second terrace of the Tarn. The destemmed harvest macerated for one month in cement vats, with two punchings of the marc. The temperature did not exceed 21°C. Aging continued for nine months before bottling without filtration. The wine is fruity and delicious, rich in notes of red fruits (blackcurrant, blackberry, morello cherry).

In the heart of Vaucluse, between Saint-Maurice-sur-Eygues and Visan, the Grandes Serres vineyard thrives on deep clay-limestone soils bordered by garrigue. The Wine Witch 2024, a subtle blend of Clairette, Marsanne, and Vermentino, is a generous white, both powerful and balanced, faithful to its terroir.
A bold and natural vinification
The uniqueness of this cuvée lies in a 24-hour maceration of the Vermentino grapes before pressing, providing structure and depth. Spontaneous fermentation in stainless steel vats preserves the purity of the fruit, while partial aging in barrels (10% of the Marsanne) enriches the texture. Like all the house wines, The Wine Witch is unfiltered, with a light addition of sulfites to stabilize the whole.
A charming nose and a full palate
The nose opens with notes of ripe, even exotic fruits, accompanied by slightly buttery nuances. On the palate, the attack is supple and round, revealing a remarkable amplitude, carried by a rich and balanced structure. The finish is long, with a beautiful aromatic persistence.
