1er Jus Red 2023
Fond Cyprès's 1er Jus 2023 is a bold and original expression of the Languedoc-Roussillon terroir. Terroir and Vinification
The Carignan and Grenache Noir vines grow on clay-limestone soils typical of the region, giving this wine a subtle minerality and a beautiful structure. The vinification is carried out according to a unique method: the whole bunches of Carignan are immersed in a saignée of Grenache in full fermentation, with pressing two days later. This process begins as a rosé vinification and ends in red, giving the 1er Jus Domaine its unique character and light color.
Aged for 6 months in stainless steel vats, this wine is made with indigenous yeasts, guaranteeing a pure expression of the fruit and terroir. The minimal presence of sulfur and light filtration ensure a respectful and natural approach to the wine.
Tasting and Food Pairing
On the nose, the 1er Jus 2023 seduces with fresh and vibrant raspberry aromas. On the palate, it reveals a fluid, almost airy texture, with a fruity and elegant finish. Puls'Art White 2022
Here's Puls'Art from Domaine Einhart, a natural, organic (Ecocert) macerated white wine classified as AOC Alsace. Don't confuse it with a Poulsard because of its name (the Poulsard grape variety is found in the Jura region, a little further south). This magical wine is called Puls’Art simply because it pulses, and skin-macerated Gewurztraminer is a great art—we affirm it.
Vinification
The Gewurztraminers used to produce Puls’Art, aged twenty-five years and sourced entirely on the estate, are harvested by hand and then destemmed. Maceration lasts one week, and fermentation is carried out using indigenous yeasts. Aging on fine lees is ten months in barrels, followed by unfiltered bottling. From the vine to the cellar, this wine was made without any additives.
Tasting
Puls’Art has a bright orange color. The first nose, very appealing, brings aromas of candied apricot and rose petals. The second nose, very fresh, evokes green cardamom. The attack on the palate is ample, balanced, with a velvety sensation. On the palate, we find the aromas of ripe apricot from the first nose. The finish is powerful and spicy, vibrant, "a limestone lollipop," according to the winemaker's expression. Decanting is recommended so that your Puls'Art spreads its wings and expresses its mineral and charming notes, both earthy and exotic. For pairings, it is all-terrain but also capable of the most delicate associations: do not hesitate to pair it with smoked fish, fine poultry, white meats, game birds, a wild mushroom risotto, and cheeses.

In the northern part of the Alsatian vineyard, the Einhart estate is a ten-hectare family estate whose vines grow on the foothills of the Vosges mountains. The soil is clay-limestone and rich in fossils (muschelkalk, or shell limestone and oolite limestone, and lettenkohle or dolomitic limestone).

Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. Faithful to his commitments to the TIFLO association, of which he is co-founder, Nicolas devotes his winemaking work to protecting the land and biodiversity, making wine without additives, refusing harmful phytosanitary products and maintaining ecological refuge areas. Its estate has been certified organic (Ecocert and AB) since 2011. The estate produces white wines from maceration or direct pressing and a Pinot Noir red.
The best of Alsatian terroirs
Entirely manual harvests, destemming of the bunches, light punching down and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees and the absence of filtration before bottling. Frank Cornelissen
Rich, fragrant, with beautifully melted tannins and the smoothness of ripe fruit, Munjebel Rouge is a classic, classified as DOP Etna Rosso or IGP Terre Siciliane Nerello Mascalese. Among Frank Cornelissen's wines, this one best represents the typical character of the northern Etna valley. “A rich and fragrant wine of pure Nerello Mascalese,” explains Frank Cornelissen, “from different vineyards, partly from our best plots where we produce our crus (Zottorinoto-Chiusa Spagnolo, Feudo di Mezzo-Sottana and Porcaria) as well as from the vineyards designated for this specific wine (Rampante Sottana, Piano Daini and Crasà). Classic, traditional, with tannins and a sweetness of ripe fruit. My vision of a traditional, balanced and rich wine from the northern valley of Etna.” Munjebel red is a true bouquet of wild red fruits, aromatic and balanced, carrying all the crunch of ripe fruit, with a Pinot Noir side and a bright translucent color. It is vinified with indigenous yeasts, without additives or sulfites, unclarified and minimally filtered before bottling.

A major figure and universally respected figure in natural wine, Frank Cornelissen is a classic. This man of constant questioning lives in human and cosmic resonance with his contrasting terroir: he has demonstrated that the powerful minerality of a great volcanic soil could be highlighted by the naturalness of his wines. The brilliance, the directness and the exquisite fruitiness of his vintages earn him the admiration even of those reluctant to accept "natural". They are good introductory wines.
His Sicilian azienda is located in Passopisciaro, in the north of the Etna valley. It is, he says, the "côte de Nuits" of Etna for the great diversity of its wines spread over many locations (contrade) at different altitudes. The climate is continental and harsh, even snowy in winter, but very warm and sunny from June to September. The altitude gives the wines tension and elegance. The vines coexist with a Mediterranean mixed crop: olive trees, almond trees, vegetable gardens... (Frank also produces olive oil). The vines range in age from forty to over one hundred years. The nineteen plots, covering twenty-four hectares in total, are all at altitude, between 600 and 900 meters, on several volcanic flows. They are all vinified separately: Frank decides on the blend based on the quality of the wines from each plot. In general, seven or eight vintages are produced in addition to the generic wines (rosé, basic red, and white). The soils are made of different types of basalt, between powder and rock, with perfect drainage that allows for concentrated and refined wines. Nerello Mascalese dominates the estate's grape varieties. This great traditional red grape variety from the northern valley of Etna is the only grape variety used in the great vintages. Its growing cycle is long, allowing the vine to work the soil and capture its minerality in the fruit. Other grape varieties include: Nerello Cappuccio, Minella Bianco, Minella Nera, Alicante Bouschet, Malvasia, Cattaratto, Moscadella, Grecanico Dorato, Carricante, etc.
Pet Nat White 2021
We are proud to present the natural sparkling wine from Domaine Einhart, a true bouquet of Alsace grape varieties, floral and cheerful, yet based on a solid framework due to skin maceration: this gives a resolutely vinous, complex, and profound character to a type of wine (Pet Nat) better known for its light, fruity, and airy notes. This makes it a rather paradoxical vintage, a firmly planted orange wine, but with added bubbles—light and joyful bubbles that do nothing to diminish the paradox. This is a festive wine, yet very mineral, very earthy, which has many strings to its bow and is not reserved for festivities: it demands to be savored on its own and especially at the table. At 12.5% ABV, it is composed of Sylvaner, Gewurztraminer, Riesling and Pinot Gris, entirely from the estate, harvested by hand. The vines, averaging thirty years old, grow on the muschelkalk soils of the Weingarten and Oberer Altenberg sites. Vinification begins with destemming, followed by a four-day maceration with indigenous yeasts. The wine is aged in bottles, on slats, for ten months before disgorging. Serve chilled.

Distillerie du Viaduc
We are very proud to offer you Culinaries Gin, our first house spirit, the result of our collaboration with the Distillerie du Viaduc, located in Paris's 12th arrondissement. The distillery team—its two founders, Théo and Quentin—worked to determine the profile of this beverage, agreeing on the recipe and its dominant aromas. We wanted a very fresh gin, with a clean and precise aromatic palette. Once the composition of the macerate was fixed after several trials and errors, the bouquet of plants, 100% organic and French, and spices was brought together by the two distillers: always dried plants, for the preservation and concentration of aromas. The maceration of dried plants indeed gives a more flavorful gin. The ingredients are first macerated in neutral wheat-based alcohol with a 96% alcohol content, and everything is then distilled. Since the double distillation has already been carried out to obtain the alcohol, a triple distillation is carried out with the plants, which are left in the macerate to better extract the essential oils. The gin is distilled in one of the house's two stills. Once the gin is distilled, it is bottled at the distillery itself, in pretty transparent glass bottles of a refreshing aquatic blue.
Culinaries gin has an alcohol content of 43% and comes in 70 centiliter bottles. What's in it? The Culinaries gin recipe includes angelica root, dill seeds, coriander seeds, orange peel, sage leaves, juniper berries, and fenugreek seeds. We wanted it to be aromatic but not overpowering, unlike some contemporary recipes that are more reminiscent of a perfumer's workshop than a distiller's, and we wanted to emphasize freshness, for the greatest pleasure of your gin and tonics or dry martinis. On the nose, angelica immediately announces itself with its heavenly scent; orange peel and dill follow suit, and the remaining ingredients unfold in a subtle, soothing, and comforting range. Fenugreek appears last, enhancing this fresh symphony with a discreet warm and spicy note. We are sure that you will already find the bottle superb and that you will appreciate the contents even more. Serve this gin chilled, refrigerated, or even frozen for a more enjoyable experience. We recommend using a pouring spout for ease of use.
Bison Grass Botanical Vodka 40° - 70cl
This vodka offers delicate aniseed and peppery notes, supported by the magnificent herbal harmony of freshly cut bison grass: vanilla, tonka bean, hay, and toasted almond. Bison grass vodka is a classic Polish recipe, but what exactly is this herb? Hierochloe odorata is a plant in the grass or poaceae family. Depending on the region, it is also called sweet grass, vanilla grass, or holy grass. It is a Nordic plant that is capable of growing as far as the Arctic Circle: it is also found in Canada, in the northern Rocky Mountains and in certain regions of Northern Europe. Medicinal, curative, aromatic, it plays an important role in shamanic rituals as a sacred plant with magical properties. Its name "bison grass" is specific to northern Poland and Belarus, where it grows in the territory of wild bison. Awen Nature has made this vodka according to the traditional Polish recipe revisited, from fresh bison grass grown organically in the distillery's botanical garden and pure spring water from the Black Mountains of the Armorican massif.

The balance between dryness and coolness is a boon for viticulture, with a wide range of grape varieties. In addition to the Languedoc grape varieties (Syrah, Grenache, Roussanne, Viognier, Muscat), Cabernet Sauvignon, Cabernet Franc, Merlot, Sémillon, and Chenin are grown. The Sans ordonnance white cuvée is made from sixty percent Muscat à Petit Grain and forty percent Viognier. Fermentation takes place naturally in stainless steel vats without fining or filtration, and aging is nine months in old barrels. The nose is fine, complex, exotic without excess: the musky notes of Muscat à Petit Grain are initially very discreet and then develop in the glass. The aroma unfolds on the palate with very controlled notes of ripeness, wisteria, honey candy, and yellow peach. The freshness is wonderful, tempered by a little fat. A delicious and expressive wine.

Marguerite Red 2019
The Marguerite 2019 from Domaine Bois Moisset is a true immersion in the winemaking heritage of the southwest. Made from Duras, a native grape variety of Gaillac, it reveals all the richness and intensity of this ancestral terroir. Made from vines 15 to 30 years old, planted on sandy loam and clayey gravel from the Tarn terraces, this natural wine is the result of a respectful approach to the vine and the soil.
The vinification follows a minimalist logic: destemmed harvest, three-week maceration in cement vats without added sulfites, and low-temperature fermentation to preserve the fruit's brightness. Aging continues in cement vats until bottling, carried out without filtration and with a tiny dose of sulfur to stabilize the wine while preserving its raw and lively character.
With an intense and clear garnet color, Marguerite 2019 offers an expressive nose, dominated by notes of sweet and spicy spices (cinnamon, black pepper), ripe black fruits, and violet. On the palate, it is a structured, ample, and fresh wine, driven by a beautiful natural acidity that balances its rich body. The tannins are supple yet present, extending into a spicy and slightly licorice-laced finish.
Best enjoyed between 16 and 18°C, this vibrant red is the perfect accompaniment to rib of beef, a prune tagine, or a game terrine. Decanting will allow it to reveal all its complexity.
Rencontre Red 2020,
Rencontre's nose is subtle, laden with red fruits, with pronounced forest notes: mushroom, humus, a touch of leather, spices, and violet. On the palate, the fruit is very present, very pleasant, and decidedly peppery, and the beautiful, fine, precise tannins nestle gracefully into a very tactile, chewy finish. This is a wine of strong character that surprises with its beautiful structure. Its color is dense and full, like that of a Bordeaux. This wine from the Gaillac region is made from local grape varieties: 40% Syrah and 40% Braucol, supplemented by 20% Duras, all fermented in the same vat. The harvest is destemmed. Maceration lasts three weeks in a temperature-controlled concrete vat, with indigenous yeasts. The Braucol and Duras are co-fermented. Only a few pumpings are carried out. The press juice and free-run juice are blended with 20% Duras free-run juice to add a peppery touch. Aging is also done in vats. We recommend decanting this Encounter which, without any pun intended, is a true encounter that is definitely worth the detour.

The name Gaillac, the region where the Bois-Moisset estate is located, owned by Sylvie Ledran and Philippe Maffre, has been associated with wines since Antiquity; It is the oldest vineyard in France, with two thousand years of history and an impressive collection of ancient indigenous grape varieties. It is also a region of dazzling beauty, nicknamed "French Tuscany" because of its gentle hills planted with groves and its almost Florentine brightness. Many estates, along with that of Bois-Moisset, showcase this uniquely rich wine-growing heritage. Along with an estate planted with vines, it is an organic mixed farm that directly sells its production of lentils, sunflower oil, cereal flours and grape juice. A herd of old local breed cows also thrives there and guest rooms are available in the summer. It is in this small rural paradise that natural wines typical of their origin and their terroir are born, on fifteen hectares of boulbènes, gravelly and sandy-loam soils carried by the Tarn for thousands of years. Located in the northern part of the Alsatian vineyard, horizontally above Strasbourg, the Einhart estate is a ten-hectare family estate whose vines are located on the hillsides that rise between the Alsace plain and the Vosges mountains. The soil is clay-limestone and rich in fossils (muschelkalk, i.e. shell limestone and oolite limestone, and lettenkohle or dolomitic limestone). Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. True to his commitments to the TIFLO association, of which he is co-founder, Nicolas devotes his winemaking work to protecting the land and biodiversity, winemaking without inputs, refusing harmful phytosanitary products and maintaining ecological refuge areas. His estate has been certified organic since 2011. Like Jean-Marc Dreyer, he is resolutely moving towards skin maceration and produces white maceration wines (orange wines) in addition to a Pinot Noir red. Entirely manual harvesting, destemming of the bunches, light punching down and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees and the absence of filtration before bottling. The wines are pure grape, lively, powerful, invigorating, and transcribe the minerality of the very beautiful terroirs of the Vosges foothills.

Domaine Einhart
A velvety, ripe red, 100% Pinot Noir, with an intense, fragrant, and gently fruity aroma. The deep, purplish color evokes black cherry. The initial nose is enhanced by aromas of black fruits (blackberry, blackcurrant, black cherry) with a hint of freshness blended into a light vanilla woodiness. The second nose is more open, with aromas of blood orange, bitter almond, and kirsch. On the palate, the berries are still present, supported by present but well-melted tannins, and lead to a velvety finish resting on a lovely freshness. Plenty of persistence and length. The Pinot Noirs from which it is made, aged around thirty years, grow on the muschelkalk (shell limestone) terroirs of Dittelsberg-Albermohn and are harvested by hand, then destemmed. Maceration, using indigenous yeasts, takes between ten and twelve days. Aging for one year on fine lees, in demi-muids, precedes bottling without filtration. From the vine to the cellar, this wine was made without any additives. Decanting is recommended so that it can fully express its finesse and grace.

Why the king? Because it's Riesling, the king of grape varieties, grown biodynamically in Alsace (Philippe Brand estate) on clay-limestone soils. Even better: it's a Riesling macerated for fifteen days in whole bunches to capture all the power of the grape. For fine dinners, refined dishes, and delicate gastronomy. And to drink on its own, as an aperitif or after dinner, to appreciate its thousand aristocratic nuances.

Hip Hip White 2018
Domaine de l'Octavin
Hip Hip savagnin is a dry white wine made from Arbois savagnin, macerated for two months in whole bunches. Pressing is followed by a year of aging in vats. The long maceration gives Alice Bouvot the opportunity to highlight the most aromatic aspects of the grape variety: exotic fruits, vibrant acidity, a lovely touch of tannins and spices. A magnificent balance between dryness and suppleness. Truly made for all pairings.
