Xarab Silver White 2006
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created this astonishing sweet white wine from the Xarab series, made from Pedro Ximenez and Xarel·lo grapes, raisined on the vine and harvested in December. Golden-amber in color, with a nose of candied grapes and buttery caramel, the palate is rich and taut, avoiding the pitfalls of excessive richness and syrupiness. The finish lingers on dried fruits and caramel, and the cellaring is very long.

A 100% Sangiovese Italian red from the Azienda Le Coste estate, produced from vines grown on the superb volcanic soils of Lazio, Rosso di Gaetano could almost be mistaken for a Gamay if true aficionados didn't notice an extra soul, depth, and spicy notes that tickle the nostrils and are confirmed on the palate, blended with notes of red fruits and a slightly smoky finish.

A single-varietal red, 100% Cabernet Franc, from vines planted in the mid-1950s (Babass hadn't even been born yet). Roc' Cab' was vinified in whole bunches and aged in fiberglass vats. On the nose, there are beautiful notes of candied red fruits, which continue on a round, fluid, peppery, and decidedly fleshy palate, expressing all the beauty of this very straightforward grape variety.

The fruit of the partnership between Philippe Jambon and Benoît Camus, this Gamay macerates in whole bunches before aging in barrels. A lovely, generous, velvety, and opulent natural Beaujolais. Gourmet notes of cherry, blackcurrant, elderberry, and a touch of smoke. On the palate, there is plenty of substance, fleshy tannins, and an impressive chewiness.

Produced on mid-altitude plots from equal parts Grecanico Dorato and Carricante, on the Calderara, Borriglione, Crasà and Picciolo plots, this white is very mature. It combines beautiful concentration, freshness and oriental aromas: orange blossom, jasmine, dried apricot. The vines are over forty years old; the grapes are destemmed, lightly crushed and macerated for about four days. No fining, no sulfiting, light filtration before bottling. This wine will pair with an almost infinite variety of dishes, meat and fish, oysters and shellfish, and all Asian cuisines.

Skin maceration takes place for sixty days on destemmed and lightly crushed grapes. No fining, no sulfites, light filtration before bottling. With a very dense texture, this red is more mineral than fruity (the fruit notes are candied: blackberry, prune, all roundness and melted tannins). Its depth and power are balanced by great freshness. Possibility of traces of volatile acidity, quickly disappearing with decanting.

Mineral and dry yet fruity, joyful and pleasant, it offers a nose of pear and pineapple, plenty of freshness and acidity. Made for very good charcuterie: we can go as far as pata negra or Iberian chorizo. An excellent aperitif or table wine.
