Rose Rosé 2017
Domaine Ruth Lewandowski
This simply named rosé comes from two exceptional plots: Matthew Rorick's vineyard in Calaveras, California, a very steep, high-altitude vineyard whose high-quality soils provide the Tinta Roriz (Tempranillo) used in this blend. The other, Fox Hill Vineyard, nurtured the Portuguese grape varieties (Souzão and Touriga Nacional) that make up the rest. These fleshy, sappy, and tannic grapes, combined with the Tinta Roriz, allowed Ruth to create a rosé wine that redefines the conventional image of this type of wine: deep, earthy, and structured.

Magnum VY Ancestral White 2013

This is a superb natural sparkling wine made from Vinyater (a traditional Catalan grape variety) that should be enjoyed, especially now that it has aged a little and is developing the full richness of its fresh notes – white flowers, almonds, white fruits – and its magnificent length. It will shine as an aperitif, for celebrations, and at the table with seafood, grilled white meats, sweetbreads, or a beautiful vol-au-vent financier.

Les Œillets Blanc 2022
Jean-Yves Péron
Vinified in Savoie, Les Œillets is a dry macerated white wine made by Jean-Yves Péron. Organic, biodynamic, and natural, it is a 100% Jacquère white, with no additives or added sulfites, classified as a Vin de France.
Vinification
Les Œillets comes from the same terroir as La Petite Robe (the clay-limestone soils of the lieu-dit Les Marches, at the foot of Mont Granier), but it is harvested later to achieve greater phenolic maturity and a higher tannin concentration. Carbonic maceration for four or five days is followed by a month of punching down in vats. At least one year of aging in 300-liter barrels.
Tasting
Woody, with explosive minerality and beautiful tension, Les Œillets by Jean-Yves Péron is an atypical white wine with powerful aromatic notes. Lots of fruit and candied citrus. Superbly structured, Les Œillets has chewiness, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. This is a wine for roasted poultry and high-end cured meats, but its pairings are broad.

Jean-Yves Péron skillfully embodies the organic, biodynamic, and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies the grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep surfaces, his mountain vines in micro-plots, worked by hand, receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers in Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his winemaking and aging experiences.

Cette cuvée est issue de parcelles plantées sur des sols de schistes dans l’appellation Anjou, terroir idéal pour le Chenin blanc. Le pressurage direct permet une expression nette du fruit, sans extractions ni maquillage. Le vin est ensuite élevé un an en barriques ayant déjà contenu plusieurs vins, pour oxygéner sans marquer.

Lumière de Silex se déploie avec grâce : le nez s’ouvre sur des fleurs blanches, la pêche, une touche de fruit exotique. En bouche, l’attaque est ample, ronde, avec une texture généreuse, équilibrée par une tension minérale qui étire la finale. In the heart of the Blaye-Côtes-de-Bordeaux appellation, on the right bank of the Gironde estuary, flourish the vines of Château Frédignac, a family estate driven by the sincere commitment of Vignobles L'Amouller. Night Potion Skin Contact is an organic and natural dry white wine certified CCPAE (Catalan Council for Organic Agriculture) and biodynamic, produced by Clos Lentiscus in the Baix-Penedés region (Catalonia).
Vinification
Produced on the limestone soils of the Garraf Natural Park, Night Potion Skin Contact is made using skin maceration, hence its name and its solid, structured yet velvety character. It is made from 100% native Catalan grapes, xarel lo, and is vinified in terracotta containers.

In Sitges, Catalonia, in the Penedès appellation, Clos Lentiscus is an organic and natural wine estate located in the heart of the Garraf Natural Park. In a superb landscape of Mediterranean greenery, Manel Avinyo, nicknamed "the Bubbleman", his brother Joan and his daughter Núria specialize in cavas, sparkling wines made using the traditional method, and also make some still wines, all biodynamically, without added additives or sulfites.
History of Clos Lentiscus
The family has been established here since at least the 14th century. When the two brothers took over the estate, organic, biodynamic and additive-free winemaking replaced conventional practices, allowing this beautiful property to regain its former prestige: in the 19th century, its wines were sold in France and as far away as the Americas.
The Clos Lentiscus style
Purity, elegance and a crisp minerality characterize the organic and natural wines of Clos Lentiscus. This Catalan estate also produces still wines. The grape varieties are traditionally Catalan: Sumoll, Ull de Llebre, Xarel-lo, Cartoixà Vermell, Cariñena, and especially Malvasia from Sitges, accompanied by Tempranillo and Muscat from Alexandria. The vines are old, sometimes centuries old. No synthetic additives are used in the vineyard, where operations are dictated by the lunar phases. Pollination is facilitated by the presence of beehives, whose honey sometimes supports the secondary fermentation of the grapes.
BS Blanc de Sumoll White 2020
Partida Creus
Finely macerated, with a superb golden hue vering with orange, BS Blanc de Sumoll is perfect for the table and refined dishes. Vibrant and aromatic, it offers notes of citrus (grapefruit, orange, lemon), rose, peach, apple, quince, garrigue (thyme, rosemary), and quince, with a rather saline finish. It is also mineral with notes of honey, leather, and stone. This still, sunny Blanc de Noirs, made from 100% white Sumoll (a grape variety that has become extremely rare in Catalonia) and produced directly from the press, is a historic cuvée, the first produced by Massimo and Antonella. Classified as Vino de Mesa (table wine), this is a very rare vintage that should not be missed when a few bottles appear.

Partida Creus is an important estate, both in terms of wine and history – we are talking here about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont – and even from the Langhe region, where wine is well-known – first pursued careers as architects in Barcelona. But the wine bug bit them, and soon they abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they found a quantity of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties that they passionately revived to save these varieties – and their wines – from oblivion. On their part, it’s not just a matter of saving heritage, no: it’s a matter of taste and nature. Natural wines, which they will continue to make from now on on these sandy, poor, clay-limestone or clay-gravelly, poor and poorly irrigated lands, where the vines suffer to give their best juice. Massimo and Antonella practice organic, biodynamic, entirely manual and natural viticulture in order to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, ceciat parent, maccabeu, parellada, pansé, vinel·lo, bobal, cartoixà vermell or xarel·lo: it is a true conservatory of the native Catalan grape varieties that Partida Creus cares for. Moscatel, Grenache, Merlot, and Cabernet (among others) are also grown here. Few wineries can boast growing so many different grape varieties. The wines reflect this diversity, with winemakers striving to best convey the signature of the soil and the grape variety: single-varietal wines are common among them, alongside extensive blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that denote the cuvée. The wines, fresh, vibrant, lush but always straightforward and impeccably juicy and fruity, breathe life. The arrival of a Partida Creus at the table always elicits cries of satisfaction.
UGM Qvevris White 2023,
With UGM Qvevris White 2023, Frédéric Cossard offers a captivating natural white, made from a unique blend of Grenache Blanc, Muscat, and Ugni Blanc. Grown at the foot of Mont Ventoux on clay-limestone soils, these organic grapes are then vinified in Burgundy according to the winemaker's exacting principles.
Vinification in qvevri for a vibrant and expressive white
This wine is made with a no additives approach, with total respect for the fruit and the terroir. After a direct press, it is aged in buried amphorae (qvevris), an ancestral method which promotes gentle oxygenation and preserves a great aromatic purity. This unusual vinification process gives the wine a subtle balance between tension and roundness, with a texture that is both silky and invigorating.

Weingarten Blanc 2024
Domaine Einhart
Sous la houlette du Domaine Einhart, en Alsace, la cuvée Weingarten incarne la délicatesse d’un Sylvaner travaillé avec justesse sur un terroir d’argilo-calcaire. Vinifié en bio certifié, sans artifice œnologique, ce vin naturel blanc exprime une belle pureté de fruit, équilibrée par une trame fraîche et droite. Ici, le cépage le plus humble s’épanouit pleinement sur les sols les plus généreux.
La vinification repose sur une macération pré-fermentaire à froid (12 à 14 °C) durant 24 heures, favorisant l’expression aromatique sans extraire les composés tanniques indésirables. Le pressurage direct qui suit permet d’obtenir un jus clair et délicat, ensuite élevé en cuve inox pendant 10 mois, préservant toute la vivacité du vin. Le domaine mise sur une fermentation spontanée grâce aux levures indigènes, en respect total du raisin et de son écosystème.
À la dégustation, Weingarten 2024 dévoile une robe pâle aux reflets verts. Le nez est éclatant : fleurs blanches, notes herbacées et une pointe de fruits exotiques. Fidèle à sa philosophie, cette cuvée est issue d’une vinification sans intrants, sans levures ajoutées, et sans sulfites. Le résultat : un vin vivant, pur, et intensément gourmand.
Pinot Noir jurassien, vinifié en Bourgogne
Cette cuvée 100 % Pinot Noir provient de raisins cultivés dans le Jura, sur des sols argilo-calcaires, puis vinifiés dans le chai de Frédéric en Bourgogne. Une macération en grappes entières de deux semaines permet une extraction en douceur, avant un élevage de 8 mois en cuve inox, pour préserver l’éclat du fruit et la tension naturelle.
Un rouge frais et fruité, facile mais pas simple
Au nez, on retrouve des arômes nets de petits fruits rouges, de griotte et une touche florale légère. La bouche est souple, digeste, avec une trame minérale et des tanins fins qui structurent sans dominer. L’ensemble est juteux, désaltérant, et d’une belle pureté. À 11 %, ce vin allie légèreté et caractère.

Méthode ancestrale sur schistes et barriques
L’As des années folles est un vin rosé effervescent issu d’un assemblage de Chenin et de Pineau d’Aunis. Les raisins, cultivés sur des sols de schistes, sont vinifiés selon la méthode ancestrale, c’est-à-dire sans adjonction de levures ou de sucre. La fermentation est interrompue puis reprise en bouteille pour une prise de mousse naturelle. Le vin est ensuite élevé longuement sur lattes, en barriques de plusieurs vins, ce qui lui confère texture, complexité et persistance.
Un rosé pétillant ample et floral

I Vicini Cortese is a dry white wine from Jean-Yves Péron, organic, biodynamic, and natural, made from Cortese grapes harvested in Piedmont. It is a merchant cuvée from the I Vicini series, harvested organically in Northern Italy and vinified in Savoie.
Vinification
The grapes from which I Vicini Cortese is made come from Asti and grow in a cool microclimate that allows for relatively late ripening. Cortese is an ancient grape variety often associated with Trebbiano or Garganega. It produces a fresh and tangy wine with a straw-yellow color with greenish highlights. Here, it undergoes two weeks of carbonic maceration and spends a year in 34-hectoliter tuns. No fining, no filtration, and no addition of sulfites.
Tasting
I Vicini Cortese is a light and fresh, digestible wine, with an alcohol content between 10 and 11 degrees, making it easy to drink. It has a minerality due to the terroir and citrus notes, particularly lemon zest. A perfect companion for tapas and the most refined starters, shellfish, and seafood.

High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.

Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.

Partida Creus
"The nose of this Vinel lo Blanco Ancestral offers aromas of ripe white fruits and yeast reminiscent of pastries. On the palate, it is elegant, fresh, and suitable for all occasions, but we recommend it as an aperitif or to accompany desserts (king cake, pithiviers, millefeuille, and all types of puff pastry). This lively and easy-drinking white sparkling wine (10% alcohol) is a blend of native Catalan grape varieties: Garnatxa Blanca, Macabeu, Moscatell, Vinyater, Xarel lo, Pansé, and Parellada. The harvest is pressed directly, and the must ferments in temperature-controlled stainless steel vats with indigenous yeasts. A second fermentation takes place in the bottle, where it ages for 10 months on its lees. fines. Partida Creus is an important estate, both from a winemaking and historical perspective—we're talking about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont—and even from the Langhe region, where wine is well-known—first pursued careers as architects in Barcelona. But the wine bug bit them, and soon they abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they found a quantity of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines— of oblivion. For them, it is not just a matter of heritage rescue, no: it is a matter of taste and nature. Of natural wines, which they will never stop making from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to give their best juice. Massimo and Antonella practice organic, biodynamic viticulture, entirely manual and natural in order to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, subirat parent, maccabeu, parellada, pansé, vinel·lo, bobal, cartoixà vermell or xarel·lo: it is a true conservatory of native Catalan grape varieties that Partida Creus cares for. There is also moscatel, Grenache, Merlot, and Cabernet (among others). Few wineries can boast growing so many different grape varieties. The wines reflect this diversity, with winemakers striving to convey the signature of the soil and the grape variety as best as possible: single varietals are common among them, alongside extensive blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that indicate the cuvée. The wines, fresh, vibrant, lush but always straight and impeccably juicy and fruity, breathe life. The arrival of a Partida Creus at the table always elicits cries of satisfaction.
Les Oeillets White 2021
Les Œillets is a dry white maceration wine harvested and vinified in Savoie by Jean-Yves Péron. Organic, biodynamic and natural, this is a 100% Jacquère white wine whose vines grow on clay-limestone soil, in the place called Les Marches, at the foot of Mont Granier.
Vinification
It is roughly the same terroir as that of La Petite Robe, harvested later to obtain greater phenolic maturity and a higher tannic concentration. Carbonic maceration for four or five days is followed by ten days of punching down in vats. At least one year of aging in 225-liter barrels. Neither fined, nor filtered, nor sulfited.
Tasting
Superbly structured, Les Œillets has chew, texture, a tannic mouthfeel and a note of controlled oxidation. The tension is strong, balanced by a note of apricot. Woody, with explosive minerality and beautiful tension, it is an atypical white, with powerful aromatic notes. Lots of fruit and candied citrus. With this, you can enjoy a good Bigorre black ham, unless a smoked salmon presents itself. Or, the best of the best, treat yourself: an exceptional beef ham from Maison Aitana, made from wagyu or black angus.
