The Carignan cultivated by Rémi Poujol and vinified by Alice Bouvot explodes in the mouth and this obviously gives Cariboum! But Carignan represents 88% of the blend: the rest, in small proportions, consists of Muscat, Viognier and Molette. Obtained by semicarbonic maceration of whole bunches, it presents an undeniable freshness. Pretty purplish ruby color and tangy notes of blueberry, cherry, blackberry, blackcurrant and cranberry. Fruity, juicy. The white grape varieties contribute to the airy lightness of this wine and its atypical fruitiness. On the finish, licorice and bay leaf rub shoulders with cinnamon: Cariboum is ultimately very complex despite its great drinkability.

Orange Bianco Zibibbo 2017
Abbazia San Giorgio
Orange is a white Zibibbo produced by the Sicilian estate Abbazia San Giorgio (on the island of Pantelleria), whose vineyard is laid out in terraces. The sixty-year-old vines grow on volcanic soils rich in minerals and poor in organic matter. The grapes are harvested in early September and undergo a skin maceration for approximately twenty days. Finally, the wine is aged for six months in stainless steel vats and then in chestnut barrels. Aging potential: fifteen years. Close to an orange wine, aromas of tropical fruits and candied citrus.

Before fermentation with indigenous yeasts and ten months of aging on fine lees in oak barrels, the harvest, which is hand-picked, is destemmed and partially pressed. Press juice and free-run juice are mixed for a clever blend: this Arbois red presents all the red fruits of Pinot and the spicy, undergrowth notes of Trousseau. The palate is frank, balanced, and structured.
