La Chute 2017, Domaine Julien Guillon At an altitude of 750 meters, on soils of schist, clay, and white quartz, the Gamaret grape variety (twenty-year-old vines) cultivated biodynamically for three years gives its best. Fifteen days of carbonic maceration in whole bunches, and voilà, a superb nose of spices and cloves, followed by a palate of intensely fresh black cherry. A magnificent, dense and deep wine, to pair with game, the best quality beef, noble mushrooms such as oronge or cep. And of course, black truffle. How much harder will the fall be? Navine Blanc 2007, Domaine des Griottes This wine, named after its plot, is a 100% sulfur-free Loire Chenin, slightly oxidative at the start but then revealing a great aromatic opulence: the complexity of its grape variety is fully expressed by the white fruits, typical of the Chenins of this micro-region, whether dry or sweet. On the nose, wonderful notes of candied fruit, notably quince, and on the palate, a lot of freshness with touches of walnut in addition to the candied quince that asserts itself. Malophet Rouge 2011, Domaine Leonine 80% Carignan, 20% Grenache Noir: a wine whose name doesn't evoke some Kabbalistic demon but rather "malo fait" (malolactic fermentation, of course), under the aegis of a hypothetical goddess of Bacteria in fermentation mythology (which is as good as any other). A herbaceous, earthy nose precedes a palate of stewed fruit, mineral, with substance, velvety texture, and freshness. No added sulfur. The tannins, with nine years of age, are perfectly melted. Cerretina Blanc 2016, Domaine Pacina The vines for this blend of 50% Trebbiano Toscano and 50% Malvasia del Chianti are planted on alluvial tufa, clay, sandstone, and sandy soils. Matéo Rouge 2017, Domaine Julien Guillon A vintage made from Pinot Noirs planted in 1962 on very steep slopes. It took a lot of work to bring this plot back to life. Very low yield for this first vintage. Semicarbonic maceration of the partially destemmed harvest, the rest in whole bunches. An extremely delicate wine, drinkable, fresh and digestible, which is fortunate because we come back to it very willingly. The fruit bursts in the mouth, the Iberian bellota ham is not far away, as well as all the high-quality cured meats.
Chatò Paquita Red 2016, Eloi Cedo Perello This luscious red is a blend of Callet, Manto Negro, and Monastrel, all vinified separately. The Monastrel undergoes semi-carbonic maceration. The grapes are then gently blended by hand in five-hundred-liter barrels for fermentation. The wine then rests for three months in vats and six months in bottle. Natural wine with no added sulfites.
