Clé à Molette Blanc 2019, Domaine de l'Octavin
Naturally made from 100% of the grape variety called Molette (hence the label) harvested in Bugey, this wine is produced biodynamically on clay-limestone soils. The grapes are pressed directly; the must ferments and matures in vats for nine months. Lots of charm, yellow citrus and white flowers, and a clean, saline finish.

Elle Aime is the result of two months of whole-bunch maceration and surprises on the palate with its buttery, fruity (cherry), nutty, and autumnal notes. A little balsamic vinegar and floral touches in the aroma. This slightly sparkling gurgle nevertheless has a beautiful acidic and tannic structure, and will not leave you indifferent.

The harvest is pressed directly, then the wine is aged for eighteen months in old barrels. Very nice, controlled oxidation on the nose and palate, notes of sherry and hazelnut alongside lemon peel. A remarkable minerality.
