Xarab Garnacha Red 2009

Cette cuvée issue de Pinot Noir planté sur sols argilo-calcaires s’inscrit dans une démarche profondément naturelle, fidèle à la philosophie sans compromis de ce vigneron pionnier : aucun intrant de synthèse à la vigne, vinification sans intrants œnologiques, et fermentation exclusivement avec levures indigènes.
La macération en grappes entières durant trois semaines permet une extraction douce et subtile. Mais c’est l’élevage d’un an en amphores géorgiennes (qvevris) qui confère à cette cuvée sa signature si particulière. Loin des boisés classiques de Bourgogne, l’amphore respecte la matière et amplifie la pureté du fruit, tout en apportant une belle sphéricité en bouche.
Au nez, le vin s’ouvre sur des notes franches de griottes, de fruits rouges croquants et d’infimes touches florales. En bouche, l’équilibre est remarquable : les tanins sont souples, la trame est fraîche, et l’ensemble glisse avec élégance, sans renier la profondeur minérale du terroir de Mercurey. Frédéric Cossard n’aime pas les frontières. Vigneron nature de Bourgogne, il cultive aussi des raisins dans d’autres régions, comme ici dans le Jura, pour en révéler une expression personnelle et sincère. Fidèle à sa philosophie, cette cuvée est issue d’une vinification sans intrants, sans levures ajoutées, et sans sulfites. Le résultat : un vin vivant, pur, et intensément gourmand.
Pinot Noir jurassien, vinifié en Bourgogne
Cette cuvée 100 % Pinot Noir provient de raisins cultivés dans le Jura, sur des sols argilo-calcaires, puis vinifiés dans le chai de Frédéric en Bourgogne. Une macération en grappes entières de deux semaines permet une extraction en douceur, avant un élevage de 8 mois en cuve inox, pour préserver l’éclat du fruit et la tension naturelle.
Un rouge frais et fruité, facile mais pas simple
Au nez, on retrouve des arômes nets de petits fruits rouges, de griotte et une touche florale légère. La bouche est souple, digeste, avec une trame minérale et des tanins fins qui structurent sans dominer. L’ensemble est juteux, désaltérant, et d’une belle pureté. Le Susucaru Rosso de Frank Cornelissen, cuvée désormais culte, nous emmène au cœur des terres noires de l’Etna pour une expression unique du vin rouge naturel sicilien. Produit en IGP Terre Siciliane, ce millésime 2024 est un assemblage de Nerello Mascalese, Nerello Capuccio, Minnella, Alicante Bouschet et Uva Francesa, cultivés en agriculture biologique sur des sols volcaniques à haute altitude.
Un vin nature, précis et profond
Les raisins sont égrappés puis macèrent durant un mois, avant fermentation en levures indigènes sans ajout d’intrants œnologiques. L’élevage s’étend sur un an en cuve époxy, matériau neutre permettant de préserver l’intégrité du fruit et la finesse du terroir. Ici, tout est mis en œuvre pour traduire la minéralité et la tension des pentes de l’Etna, tout en conservant une buvabilité remarquable.
Entre finesse et structure
Le nez est intensément floral et fruité, mêlant violette, fruits noirs, épices douces et une touche légèrement fumée. En bouche, la trame est tannique mais fluide, avec une attaque vive, un cœur généreux et une finale poivrée, saline, pleine d’énergie. Une cuvée monumentale, entre verticalité et finesse
Avec Cathédral 2020, le domaine Danis dans la vigne signe un vin puissant, complexe et méditatif, à l’image de son nom évocateur. Cette cuvée d’exception associe Malbec et Cabernet Franc, deux cépages nobles du Sud-Ouest, sur un terroir argilo-calcaire travaillé en agriculture biologique. Un vin naturel, vivant, sans intrants œnologiques, qui fait le pari du temps long : 3 ans d’élevage en barriques, ouillées une seule fois par an, dans une approche oxydative volontaire, suivis d’un an de repos en cuve inox, puis d’un affinage d’un an en bouteille.
Un processus rare et exigeant, qui donne naissance à un vin au profil aromatique profond, à la texture soyeuse, et à la complexité remarquable, capable de traverser les années avec grâce.
Un vin noble, ample, patiné
Dès le premier regard, la robe sombre aux reflets grenat annonce la richesse du vin. Le nez s’ouvre sur des fruits noirs et rouges compotés, évoluant vers des notes d’amande grillée, de cacao, d’épices douces et de sous-bois. En bouche, la matière est dense, veloutée, mais jamais lourde. Le Cabernet Franc apporte une fraîcheur bienvenue, qui équilibre la puissance du Malbec. La finale, longue et harmonieuse, laisse apparaître une touche saline et légèrement fumée.
Cathédral 2020 est une cuvée de gastronomie par excellence, taillée pour des accords ambitieux : viandes rouges, gibiers à plume, plats à la truffe, ou même certains fromages affinés. À servir entre 16 et 18°C, sans besoin de carafage. Ce vin peut être bu dès maintenant ou conservé 10 ans et plus.

A Burgundy that opens up new horizons
Perspectives is a rare and luminous cuvée, originating from the Bourgogne AOC, but boasting a unique perspective. The plot, located at the southernmost edge of the appellation, borders Beaujolais. From there, the view encompasses a 360-degree panorama of two great wine regions: Burgundy and Beaujolais. It is this expansive vision, this sense of space and balance, that this wine seeks to convey.
Purity of Chardonnay, ancestral aging
Made from Chardonnay grapes grown without synthetic inputs on schist soils, Perspective benefits from natural vinification using direct pressing, followed by six months of aging in amphorae, which gives it a limpid texture and striking mineral tension. No superfluous oenological intervention: here, only indigenous yeasts orchestrate the fermentation, allowing the terroir to express itself freely.
A vibrant white, full of freshness
On tasting, the wine is clear, bright, and a pale yellow with silvery highlights. The nose opens with delicate notes of honeysuckle, fresh lemon, and a touch of salinity reminiscent of sea spray. On the palate, a wave of freshness, taut and tangy, almost crystalline, accompanies a lovely fruity depth. The finish is clean, long, and mouthwatering.
Suitable for large gatherings as well as for aperitifs
This characterful white wine pairs equally well with shellfish, cooked fish, or mushrooms, as with white meats or soft cheeses. Served chilled, it reveals its full gastronomic potential and can be aged for 5 to 10 years without any problem.
In Absentia Red 2018
Entirely produced in the north of El Bierzo from trousseau (locally called bastarda) on various quartz-clay-limestone plots at an altitude of 550 meters. The vines are seventy to ninety years old. Maceration lasts three to four days in chestnut vats, followed by nine months of aging in French oak barrels. No filtration, no added sulfites. Dark garnet color, smoky and fruity nose (trousseau-style: black cherry and raspberry), with a characteristic hint of bitter cocoa and peony. The mouthfeel is full and velvety, the flavor is fruity and smoky, both crisp and mineral. The delicious finish calls for another sip... Serve with roasted game birds, rare pigeon, roast venison, coq au vin, or chicken mole poblano. In a carafe, it will fully express its charms.
Munjebel CD Red 2020
Cornelissen
Munjebel CD is a single-plot red cuvée, certified organic (Eurofeuille) and biodynamic. Made from 100% Nerello Mascalese, it is produced by Frank Cornelissen in the DOP (AOP) Etna Rosso/IGP Terre Siciliane Nerello Mascalese. It comes from a single plot in the Calderara Sottana contrada, at an altitude of 610 m, facing north. This high-quality contrada is appreciated in cold and difficult vintages: its gravelly soil absorbs heat and re-radiates it during the coldest hours of the night.
Vinification
100% Nerello Mascalese, Munjebel CD comes from 40-year-old vines cultivated biodynamically. The grapes are destemmed and lightly crushed. Fermentation starts from a vat foot and is accompanied by a 50-day skin maceration. Aged for 18 months in epoxy vats, then 18 months in bottles. No fining, light filtration.
Tasting
This highly regarded contrada produces quite feminine wines, combining elegance and depth, especially in the best years. You can pair them with red meats, charcuterie, and great Italian, Iberian, or Gascon hams. For example, ham from black pork from Bigorre or a cecina (beef ham) from maison Aitana.

An ideal terroir for plot-by-plot vinification
In Passopisciaro, Sicily, in the north of the Etna valley, the 19 plots cover 24 hectares of basalt soils spread over numerous localities (contrade) between 600 and 900 meters above sea level on the side of the volcano. It is, says Frank Cornelissen, the "Night Coast of Sicily". Frank Cornelissen's contrade are all cultivated biodynamically and vinified separately: he decides on the blends based on the quality of each.
The nobility of Nerello Mascalese
Nerello Mascalese is the dominant variety and alone makes up the greatest vintages. From the prestigious AOP Saint-Joseph, Domaine des Miquettes offers us a unique cuvée with its Saint-Joseph Cuvée Madloba 2014. Certified organic (Eurofeuille, All our organic wines), this wine is made from Syrah grown on steep terroirs in the northern Rhône, offering a pure and intense expression of the grape variety.
A Georgian-inspired vinification
This cuvée bears the name "Madloba," which means "thank you" in Georgian, a nod to an ancestral winemaking method. The wine is aged in qvevris (buried amphorae), which gives it a beautiful aromatic depth and a silky texture, while preserving its natural and authentic character.
An intense nose and a structured palate
Upon opening, this organic Saint-Joseph reveals a deep and complex nose, marked by notes of ripe black fruits (blackcurrant, blackberry), violet and spices. On the palate, the attack is ample and velvety, with a well-integrated tannic structure and a long finish with slightly smoky and mineral accents.

Vino Bianco White 2022,
An emblematic white cuvée from Azienda Corva Gialla, Vino Bianco is only produced in the finest vintages. Fresh and fruity, this Vino da Tavola (table wine) offers a golden yellow color with amber highlights and a surprisingly rich nose of exotic fruits. White flowers, Mediterranean herbs, candied fruits... And despite this aromatic opulence, the wine reveals itself on the palate as clean, tangy, mineral, and intense, and stands out for its sapidity due to the volcanic soils. All of this makes it a balanced wine, suitable for all occasions. Vino Bianco is a blend of three grape varieties: Grechetto, Trebbiano, and Procanico. It comes from vines of varying ages planted at an altitude of 450 meters on a west-facing plot of volcanic soil. The harvest is hand-picked and destemmed. A small starter is prepared, while the rest of the harvest is pressed directly and added to the starter. The whole thing ferments and rests in fiberglass tanks until bottling in March.

Corva Gialla
Red fruits, mineral and earthy notes, tertiary aromas, spices, and tobacco: this sums up the profile of Vino Rosso, the emblematic red of Azienda Corva Gialla, with beautiful notes of evolution and a pronounced but not excessive full-bodiedness. The richness, due to a high natural sugar content during fermentation, and the polyphenolic maturity are remarkable, as well as the balance between velvety and tannicity, lightness and body, roundness and acidity. On the nose, notes of spices such as cinnamon, black pepper, and fennel; On the palate, the wine is full-bodied and dominated by red fruits: ripe cherry, raspberry and strawberry. Black fruits and plum are not left out, and delicious aromas of dried fruits (prune, fig) combine with spices on the finish. Vino Rosso is a 100% Sangiovese from vines planted at an altitude of 450 meters on a west-facing plot with volcanic soils. The harvest is destemmed and macerated for about three weeks in fiberglass vats, with daily pumping over or punching down as needed. Vino Rosso is aged for twelve months in chestnut barrels and at least two years in bottles before being marketed.

It is dense and full-bodied, with a supple texture and well-integrated tannins, and superb accents of leather and tobacco. The nose is intense and persistent—notes of red fruits, rose, and violet. On the palate, the olfactory sensations are confirmed, supported by a beautiful structure. Poggio Pastene is dry and straightforward, well-balanced between roundness and acidity. This is a single-variety Sangiovese whose vines are planted at an altitude of 450 meters on a west-facing plot with volcanic soils. The harvest, done by hand, is destemmed and macerated for about three weeks on the skins in fiberglass vats, with daily pumping over or punching down as needed. Aging is twenty-four months in old oak barrels. Poggio Pastene is kept in bottle for two years before being marketed.

Magnum Que Pasa Red 2012, Domaine Leonine
Seventy-year-old Grenache noir and gris combine to create this highly drinkable red. The harvest spends fifteen days in carbonic maceration before spending five months in barrels before being bottled by gravity without added sulfur. Juicy, sappy, and delicious, it smells and tastes of the garrigue and the Mediterranean, enhanced by flawless freshness. So what's going on? Only very pleasant things.

Jéroboam Munjebel Red 2016

This Munjebel is a bouquet of wild red fruits, pure classic Nerello Mascalese, rich and aromatic, carrying all the crunch of ripe fruit, with a Pinot Noir edge and a brilliant translucent color. It comes from several plots, including those from which the azienda's greatest vintages come (Zottorinoto, Feudo di Mezzo-Porcaria, Pontale Palino), and from vines specially dedicated to this vintage: Rampante, Piano Daini, and Crasà. La Haute Ronze is one of two plots cultivated by Nicolas in the Régnié appellation; it is considered of very high quality, with deep clay soils that produce full-bodied wines. This 100% Gamay is obtained through semi-carbonic maceration and aged for approximately twenty months. It offers notes of leather, earth, and Mediterranean herbs (oregano, rosemary), through its red fruits.
