Cazottes Distillery A sensual and surprising liqueur made from guignes et guins, black cherries and wild cherries picked in the hedgerows of the Gaillac region. The production process—fourteen months of open-air maceration in a slightly sweetened eau-de-vie; filtering and distillation of the marc; reintroducing the marc into the liqueur—produces complex flavors, with notes of red rose and cedarwood. Perspectives is a rare and luminous cuvée, originating from the Bourgogne AOC, but boasting a unique perspective. The plot, located at the southernmost edge of the appellation, borders Beaujolais. From there, the view encompasses a 360-degree panorama of two great wine regions: Burgundy and Beaujolais. It is this expansive vision, this sense of space and balance, that this wine seeks to convey.

Purity of Chardonnay, ancestral aging

Made from Chardonnay grapes grown without synthetic inputs on schist soils, Perspective benefits from natural vinification using direct pressing, followed by six months of aging in amphorae, which gives it a limpid texture and striking mineral tension. No superfluous oenological intervention: here, only indigenous yeasts orchestrate the fermentation, allowing the terroir to express itself freely.
A vibrant white, full of freshness
On tasting, the wine is clear, bright, and a pale yellow with silvery highlights. The nose opens with delicate notes of honeysuckle, fresh lemon, and a touch of salinity reminiscent of sea spray. On the palate, a wave of freshness, taut and tangy, almost crystalline, accompanies a lovely fruity depth. The finish is clean, long, and mouthwatering.

Made from yuzus freshly picked from the estate, this liqueur reveals all the richness of the fruit processed in its entirety. The pulp provides a vibrant zest, while the peels release their essential oils, offering depth and aromatic complexity. This meticulous work allows access to an aromatic palette rarely achieved, where intense citrus notes, delicate floral touches, and a slight noble bitterness mingle.

To the eye, the color seduces with its luminous hue, evoking the freshness of freshly opened fruit. Yeti Rouge 2024

La Tribu Alonso

The 2024 Yeti cuvée is a wine as atypical as its name, born in Beaujolais under the passionate impetus of the collective La Tribu Alonso. This 100% Gamay, or rather, should we say "100% Gamay diversity," brings together no fewer than 31 different varieties of this grape: Gamay teinturier, white, rosé, old clones, forgotten plants... A mosaic of grapes that reflects the richness of life and the free spirit of its winemakers.

The grapes are grown on granitic soils, without synthetic products, following a completely natural approach, even without certification. After a 5-day semi-carbonic maceration in fiber tanks, fermentation occurs thanks to indigenous yeasts, without oenological input. The wine is then aged for 12 months in concrete eggs, which brings roundness, energy, and balance, without woody masking.

The result? A vibrant and juicy red wine, with a light and brilliant color. The nose reveals crisp red fruits, a herbaceous touch, some sweet spices, and a peppery hint. On the palate, it is fluid, digestible, with a beautiful texture that remains fresh and elegant. A smooth Gamay, but never simplistic.

Lumière des sens Red 2022

Jean-Pierre Robinot

With "Lumière des Sens" 2022, Jean-Pierre Robinot continues to skillfully explore all the finesse and expressiveness of Pineau d'Aunis, a fascinating Loire grape variety, here presented in a natural, sincere, and luminous version. Grown on clay-limestone soils, this red wine, without official label but fully respecting natural wine principles (no chemical inputs, vinification without laboratory yeasts, zero superfluous intervention in the cellar) stands as a declaration of intent: to offer the true taste of the grape and its soil.

The cuvée results from approximately one week of maceration, followed by a year of aging in barrels that have previously held several wines. This aging choice allows the wine to breathe, gaining roundness and depth while respecting the fruit's momentum. The nose is immediately engaging: fresh red fruits, white pepper, humus, and that hint of undergrowth reminiscent of a forest walk after the rain.

The palate is both juicy and elegant, stretched by a well-balanced natural acidity and supported by supple tannins. This earthy wine reveals an almost tactile character, between vegetal freshness, a spicy frame, and a slightly earthy finish reminiscent of wild mushrooms.

"Lumière des Sens" perfectly complements characterful cuisine: red meats, spicy dishes, or roasted poultry with herbs. It can be enjoyed now after a slight decanting but will gain complexity with 10 years or more of aging. Serve between 14 and 16°C, in a large glass that will allow it to open up.

Cinsault Cuvée n°5, Red 2023

Fond Cyprès

Cinsault regains its prestige with this single-parcel cuvée by Fond Cyprès, offering a subtle and forthright interpretation. From a clay-limestone terroir in Languedoc, certified organic (Euroleaf label), this natural red wine is a beautiful demonstration of the potential of this grape variety, too often relegated to the background.

A natural wine, precisely vinified

After a week of maceration, the grapes ferment spontaneously with indigenous yeasts, without any oenological additives. The wine is then aged for six months in wooden vats, which gives it both roundness and structure, while preserving the freshness of its aromatic expression.

Elegance, fruit, and lightness

On the nose, sour cherry dominates, with a beautiful purity and a delicate floral touch. On the palate, the attack is supple, the texture fluid, the tannins silky. The wine unfolds with finesse, without excess, but with surprising length for a wine of this alcohol content (12%). A true personality, between lightness and precision.

Open without hesitation (or keep)

Serve it slightly chilled, between 16 and 18°C, with fine charcuterie, a summer barbecue, roasted meats, or everyday dishes that call for a fresh, digestible, and vibrant red. This cuvée can be drunk now, but its structure also allows for aging for 5 to 10 years. A pleasant surprise from Fond Cyprès.

Pastiche

Distillerie du Viaduc

Pastiche is anything but an imitation. With this creation, Distillerie du Viaduc asserts an artisanal and botanical vision of pastis, far from industrial versions saturated with sugar and artificial flavors. This organic aniseed spirit is crafted with purity in mind, slowly macerating whole plants in neutral alcohol, following a gentle and controlled process that reveals the natural complexity of the botanicals.

Among the ingredients, all organically grown: green anise seeds, fennel, licorice, dill, and lemon thyme. Maceration lasts one month, followed by progressive dilutions with no added sugar, coloring, or additives. It is this slow reduction that gives Pastiche its smooth texture and balanced palate.

The nose opens with a clear aniseed base, supported by fennel and a fresh touch of lemon thyme. On the palate, the attack is clean, herbaceous, structured by a beautiful presence of licorice and the aniseed elegance of dill. The finish is long, persistent, and evokes natural licorice candies, without any heaviness.

This new generation pastis can be enjoyed neat or slightly diluted, depending on the desired intensity. It is designed for lovers of bitters, botanicals, and freshness. More than just an aperitif, Pastiche is a vibrant infusion of the Mediterranean garden in a bottle, at once intense, dry, and digestible.

With Cathédrale 2020, Danis dans la vigne has created a powerful, complex, and meditative wine, reflecting its evocative name. This exceptional cuvée blends Malbec and Cabernet Franc, two noble grape varieties from the Southwest, grown in clay-limestone soil cultivated organically. A natural, lively wine, free of oenological additives, that embraces the long haul: 3 years of aging in barrels, topped up only once a year, in a deliberate oxidative approach, followed by a year of rest in stainless steel tanks, then a year of refinement in the bottle.

From the first glance, the dark robe with garnet reflections announces the wine's richness. The nose opens with stewed black and red fruits, evolving into notes of toasted almond, cocoa, sweet spices, and undergrowth. On the palate, the texture is dense, velvety, but never heavy. De Vini's (Vinilibre) Gabbrodo 2022 is an ode to the terroir of the Pays Nantais. This natural wine, made without any additives, expresses with finesse the Melon de Bourgogne, the region's emblematic grape variety. Grown in gabbro soils, a rare volcanic rock in the Loire Valley, it benefits from nine months of aging in sandstone amphorae, imparting remarkable purity and tension to this exceptional white wine.

Its pale, golden robe heralds a luminous and crystalline wine. The nose seduces with its freshness and aromatic complexity: notes of citrus (lemon, grapefruit), white fruits (pear, peach), and a touch of iodine that recalls its maritime origins.
