Unatantum Liquoreux Red Still 2009
This sweet red is 100% aleatico, grown on the volcanic soils of the Azienda Le Coste estate. The grapes are air-dried for a month, hung in whole bunches from wires, and the wine is slowly fermented for three years. This produces a wine that is sweet without being syrupy, and wonderfully complex.

My Sweet Navine White 2015
A small bottle but a great wine! A sweet white made from 100% Chenin, My Sweet Navine is produced from late harvests on the schist plot where the estate's other Chenins are also grown. A delicate amber color, with notes of citrus and candied fruit on the nose. On the palate, there is a surprising freshness despite the residual sugar: this is explained by the lack of sorting, as the grapes are at varying stages of ripeness. We thus benefit from green berries, ripe berries, and varying degrees of noble rot. and a light sparkle which gives way to a beautiful length, always with notes of candied fruit.

Xarab Vigiriega Doré VGR White 2009,
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created, within the Xarab series, this astonishing sweet white wine made entirely from the native Vigiriega grape variety, raisined on the vine and harvested in December. The color is a beautiful bright gold, the nose fragrant (yellow fruits); the flavor is rich, intense, generous, and aromatic. A perfectly balanced sweet wine.

Super Pink Rosé 2024
Frédéric Cossard
Avec Super Pink 2024, Frédéric Cossard revisite le rosé en version libre, naturelle et joyeuse. Cette cuvée de négoce 100 % Cinsault, vendangée à la main dans le Vaucluse, est vinifiée en Bourgogne, dans le respect total des principes du vin nature : sans intrants, sans levures exogènes, sans filtration ni soufre ajouté.
Le cépage méridional, léger et fruité, est ici travaillé en pressurage direct, pour une extraction douce et précise. La fermentation se fait uniquement avec les levures indigènes, dans une logique de respect total du raisin et de son origine. Le vin est ensuite élevé 6 mois en cuve inox, ce qui lui conserve toute sa fraîcheur, son éclat aromatique et sa buvabilité.
La robe est pâle, légèrement saumonée, presque cristalline. Le nez explose sur des fruits rouges frais, des notes d'agrumes acidulés et un joli fond floral. En bouche, le vin est sec, vif, très fluide, avec une légère structure vineuse qui le distingue des rosés technos. L’équilibre entre tension, fruit et légèreté en fait un véritable vin de plaisir, mais aussi de gastronomie.
Parfait pour l’apéritif, des grillades estivales, des plats légèrement épicés ou même en contrepoint rafraîchissant à certains desserts fruités. Super Pink est un rosé naturel, sincère et immédiat, à boire jeune, bien frais, les pieds dans l’herbe ou face à la mer.
Fleckstein 2023 White 2023,
A mineral and complex Riesling from an exceptional terroir
The Fleckstein 2023, from Domaine Einhart, is a superb expression of Riesling from clay-limestone soil, enhanced by artisanal vinification. After a low-temperature pre-fermentation maceration, designed to preserve the purity of the aromas while structuring the wine, this iconic grape variety was aged for one year in a sandstone egg. This unique container allows for a subtle exchange with the air, enhancing the wine's depth and texture while maintaining its freshness.
On the nose, this Riesling reveals an elegant aromatic blend of citrus, white peach, and white flower notes, enhanced by a flinty minerality typical of the terroir. On the palate, the attack is lively and crystalline, offering a beautiful tension supported by fruity flavors and dense salivation. The finish, long and marked by subtle bitters, allows the typicality of the limestone to fully express itself, with a horizontality and structure that enchants the taste buds.
Refined gastronomic pairings
The Fleckstein 2023 pairs wonderfully with seafood, shellfish, or raw fish such as ceviche or sea bream tartare. It will also enhance white meats and fresh cheeses. Its great liveliness and aromatic complexity make it an ideal choice for special occasions or gourmet meals.

Chateau Roulant Red 20/21
Benoit Camus
Château Roulant is a Beaujolais red wine, organic and natural (Ecocert certified), made from Gamay. Classified as a Vin de France, it is produced by Benoît Camus at his Pierre Dorées estate, in the south of the appellation. Its name evokes the itinerant life once led by the winemaker, a former seasonal agricultural worker.
Vinification
The Gamay vines of Beaujolais grow on clay-limestone soils. The very steep plots prohibit any mechanized work. The harvest, carried out by hand, undergoes a three-week semi-carbonic maceration. The wine is aged in concrete vats for fifteen months.
Tasting
The Beaujolais wines from Pierre Dorées are structured, long-lasting, and beautifully fruity. Here, after admiring a bright garnet color, we find strawberry, raspberry, red cherry, and cranberry, with a beautiful acidity in the mid-palate giving way to a rich and voluptuous finish. Freshness and acidity, leather, earth, and some animal notes. Wonderful richness in the mouth that we will enjoy accompanying with cold meats and cured meats, poultry such as pigeon or duck. You might think he's itinerant, with his vintages called "Château roulant" or "Vagabond", but for Benoît Camus, it's a memory of his previous life, when he was a seasonal farmer in the Rhône Valley and as far as Roussillon. Since 2003, he has settled in Southern Beaujolais, in the Pierres Dorées terroir, to make organic (Ecocert) and natural wines.
Nature before, nature always
Before purchasing his seven-hectare estate from an old winemaker, the vines had not yet seen pesticides or chemical additives. Many in Beaujolais worked this way. He made his first vintage in 2006, "natural without knowing it," he says. A brief attempt at chemical spraying to treat grape worm definitively dissuaded him from adding anything to the vineyard or the cellar. He acquired Ecocert organic certification and continues to make natural wines.
The Pierre Dorées terroir
The southern Beaujolais, with its clay-limestone soils, produces wines that are more structured and powerful than those from the granite soils of the North. This is the profile presented by the reds of Benoît Camus, natural wines that are straight, dense and long-aging, with good acidity and well-integrated tannins, not forgetting abundant, rich and seductive fruit.

Fond Cyprès
Avec Retour de Milan, Fond Cyprès dévoile une interprétation brillante et inédite du Muscat Petit Grain, vinifié en blanc de macération. Ce vin orange bio du Languedoc, aussi élégant qu’expressif, sort des sentiers battus pour offrir une expérience sensorielle unique, fraîche et gourmande.
Une macération tout en subtilité
Ici, les grappes entières de Muscat sont mises à macérer quelques jours, afin d’apporter texture et complexité sans perdre la délicatesse du cépage. La fermentation est spontanée, en levures indigènes, sans intrants œnologiques, suivie d’un élevage de 5 mois en œuf béton, qui favorise le mouvement naturel du vin et un contact doux avec les lies. Le résultat : un jus vivant, texturé, mais d’une fraîcheur exemplaire.
Un vin orange lumineux et aromatique
Le nez est éclatant, entre bergamote, zeste d’agrumes, fleur d’oranger et litchi frais. En bouche, le vin joue l’équilibre entre tension et douceur, avec des tanins très fins et une finale délicatement amère qui prolonge le plaisir. C’est un orange digeste, ciselé, à la fois floral et citronné.
Accords audacieux, plaisir immédiat
Servez-le entre 10 et 12 °C, sans carafage. Ce vin se marie idéalement avec les cuisines d’Asie (épices douces, curry thaï, sashimis), des fromages affinés (pâte persillée, tommes longues) ou même un dessert fruité peu sucré. Il pourra évoluer en cave sur 5 à 10 ans.

Danis dans la Vigne
Un Malbec d’exception, mûri dans le silence du chai
Covenant 2020, c’est le temps long et la patience comme philosophie. Une cuvée très singulière signée Danis dans la vigne, façonnée avec une rare minutie. Ce 100 % Malbec, cultivé en agriculture biologique sur les sols argilo-calcaires du Cahors profond, est vinifié naturellement, sans intervention œnologique superflue, avec une macération courte, puis élevé pendant trois ans en barriques, ouillées une seule fois par an. Une méthode exigeante, audacieuse, qui permet au vin de se concentrer, de s’oxyder lentement, de s’arrondir dans une dynamique quasi oxydative, avant un passage en cuve inox pendant un an, puis un repos d’un an en bouteille.
Un vin mûr, complexe, abouti, qui tranche avec l’image parfois brute du Malbec. Covenant porte bien son nom : un véritable pacte entre le temps, la matière et le geste vigneron.
Profond, enveloppant, méditatif
Dès le service, le vin s’ouvre sur une robe sombre, aux reflets grenat profonds. Le nez est envoutant : cacao amer, épices douces, fruit noir compoté, truffe, presque un soupçon de cuir. En bouche, c’est une expérience à part. La texture est veloutée, ample, mais parfaitement équilibrée. La longueur est remarquable, persistante, saline en finale. On sent un vin en pleine maturité, prêt à être dégusté, mais aussi armé pour la garde.
Covenant 2020 est taillé pour les viandes rouges nobles, le gibier, un plat à la truffe, ou même un dessert au chocolat noir pour les plus audacieux. À servir à 16-18°C, sans carafage, dans un grand verre qui lui laisse le temps de respirer.

La force tranquille d’un Cahors patient et vibrant
Avec Covenant 2018, le domaine Danis dans la vigne poursuit son travail d’orfèvre autour du Malbec, en lui offrant un écrin de temps et de soin rare. Ce rouge naturel du Cahors, cultivé en agriculture biologique sur argilo-calcaire, a bénéficié d’un élevage hors norme : 2 ans en barriques, suivis de 4 ans en cuve avant la mise. Le tout, sans aucune précipitation, sans collage, sans filtration, dans une logique artisanale et profondément respectueuse du raisin et du terroir.
Ce vin à la robe sombre, presque opaque, dégage immédiatement un sentiment de profondeur. L’élevage long et maîtrisé lui confère une expression aromatique complexe, où la violette, signature du Malbec, se mêle aux fruits noirs confits, aux épices douces et à une touche délicate de bois fondu.
Un rouge naturel de caractère et de garde
En bouche, Covenant 2018 est ample, structuré, mais tout en équilibre. Les tanins sont présents mais veloutés, la matière est juteuse, enveloppante, et la finale saline prolonge l’élégance. Ce vin n’a rien perdu de sa vivacité malgré ses six années d’élevage — bien au contraire, il gagne en profondeur à chaque respiration.
À déguster dès aujourd’hui ou à laisser en cave encore 10 ans ou plus, cette cuvée est idéale sur une viande rouge rôtie, un barbecue d’automne, ou un plat aux truffes. Servez-le à 16-18°C, sans carafage nécessaire, dans un grand verre ballon pour libérer toute sa complexité.

Terroir, plot size and grape varieties
Born from the dialogue between the ancestral terroir of Gaillac and a contemporary vision of winemaking, the YARD x Bois Moisset Sparkling Wine 2024 embodies a luminous encounter between tradition and freshness. The Bois Moisset estate, located in the heart of the Tarn vineyards, passionately cultivates the indigenous grape varieties Braucol and Duras. These varieties, typical of Southwest France, lend their unique character to this rosé: Braucol for its vivacity and aromas of red fruit, and Duras for its finesse and floral notes. The clay-limestone soil, bathed in sunshine and caressed by the breezes of the Tarn River, imparts a beautiful tension and a pure expression of fruit to the grapes.
Cultivation methods
Long committed to sustainable viticulture, Domaine Bois Moisset is certified organic. The vines are cultivated without synthetic inputs, in a living ecosystem where observation takes precedence over intervention. Slightly cloudy, by design, this 2024 sparkling rosé displays a delicate, salmon-pink hue. Ranciolytique Red 2010
The Grenache vines from which this red wine is produced are located in Lagrasse, in the Corbières region, on clay-limestone and ferruginous soils. After a nine-month whole-bunch maceration, the wine is aged in demijohns and then in old barrels for eighteen months. This wine possesses sweet aromas of candied grapes, chocolate, and cherry, making it an excellent companion to cheese, a tangy dessert, or chocolate mousse. It can be aged for twenty years.

Pet Nat White 2023,
A crisp and thirst-quenching natural sparkling wine
Domaine Einhart's Pet Nat White 2023 is a cuvée full of vitality, carefully crafted according to the principles of the ancestral method. Composed of a unique blend of Gewurztraminer and Pinot Noir, this natural sparkling wine (or "Pet Nat") is the result of a destemmed maceration of several days for each grape variety, before blending. Bottling took place during fermentation, followed by 7 months of resting on slats to obtain a fine and natural effervescence.

i Vicini Moscato White 2022
I Vicini Moscato is an organic, biodynamic, and natural macerated (orange) dry white wine from Jean-Yves Péron. Vinified in Savoie using Muscat d'Asti. It is part of the I Vicini series of cuvées, vinified in Savoie using organic grapes from Northern Italy.
Vinification
The Muscats in this I Vicini series grow on very fine, calcareous-magnesian limestone soils, on a particularly cool site. Harvested by hand at good phenolic maturity, they macerate for two months in vats on the skins with punching down. Aged for one year in 300-liter barrels. No filtration, fining, or addition of sulfites.
Tasting
Straightness, tension, and freshness: this beautiful Muscat d'Asti offers the aromatic and musky nose specific to the grape variety, without any syrupy notes. A very present tannic structure balances the whole. On the palate, it is rich and powerful; we find the charming scent of Muscat in the retro-olfaction, but with the tension and freshness that Jean-Yves Péron loves for his dry whites. It is a great table wine, not really for an aperitif, but for gastronomy, no limits.

Jean-Yves Péron talentedly embodies the organic, biodynamic, and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.
High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italo-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
Ichigo Ichie Red 2022,
Ichigo Ichie is an organic and natural red-rosé wine (a "blouge" we would say) from the Rhône Valley (Ardèche, Saint-Joseph terroir) certified organic by Écocert. It is produced by Paul Estève and Chrystelle Vareille of Domaine des Miquettes, and the name of the cuvée pays tribute to one of their Japanese collaborators who recently passed away. The expression ichigo ichie means "a unique moment in life."
Vinification
Made without additives or added sulfites, unfiltered, Ichigo Ichie is a blend of all the grape varieties grown on the estate: Gamay, Marsanne, Roussanne, Syrah and Viognier, on granite and loess soils. This organic and natural wine from the Rhône Valley is aged for one year in vats.
Tasting
Ichigo Ichie can be consumed as a light red or a full-bodied rosé; its exotic notes are very seductive. It is recommended to drink it chilled. This additive-free wine will accompany all products from the land and the sea. Domaine des Miquettes, in the Saint-Joseph appellation (Ardèche), is run by Paul Estève and Chrystelle Vareille, who are passionate about Georgian winemaking techniques. At the heart of this centuries-old viticulture is the kvevri, the buried jar where the entire winemaking process takes place. They also have unburied tinajas (Spanish jars) for fermentation and maceration, while kvevris are used for aging. No sulfites are added to the wines of Domaine des Miquettes. The astringency of the tannins is polished by the terracotta, which produces a velvety texture, a fruity and supple substance.

Paul Estève learned his trade from René-Jean Dard and François Ribo, two great figures of natural wine in the Rhône Valley. With Chrystelle, he gradually rebuilt the family estate until it reached 4.3 hectares. The plots, located between 300 and 450 meters above sea level, rest on a granite base with light mica and gneiss soils. The agriculture is organic (Ecocert certification) and biodynamic. The soils are worked by horse or winch and pickaxe, and the harvest is manual. No chemical inputs are added to the vineyard work and winemaking.
Vin de France Cuvée Madloba White 2020
Madloba blanc is an orange wine that asserts itself from the first intensely floral nose, full of character and depth. The floral nature is confirmed on the palate with an abundance of tea rose, accompanied by a surprising, exotic expression of lychee and mango. With a rather rich and dense body, the freshness acts as a balance, and lovely bitter touches mark the finish. This white Madloba ("thank you" in Georgian) is produced in the Saint-Joseph AOP. It is a blend of 50% Marsanne and 50% Viognier. The vines, almost forty years old, are planted at an altitude of 350 meters, on a hillside plot with granite and black mica soils. The two grape varieties are fermented together for six months in tinajas, unburied terracotta jars, and after pressing the wine returns to the tinaja for six months of aging. This aging method promotes the wine's texture and develops the fruit. Decant one hour before serving. Perfect for oriental, Asian, and exotic cuisines in general.

Paul Estève and Chrystelle Vareille are the creators of the Domaine des Miquettes, whose great specificity is the use of Georgian techniques. They are passionate about this Caucasian country, the cradle of wine, where eight thousand year old winemaking techniques are still used. At the heart of this viticulture is the qvevri, the buried jar where all the winemaking takes place: fermentation with skin maceration and aging. They set out to explore this country and returned with the decision to age all their wines in buried jars. They have twenty-six, but distinguish between tinajas (Spanish jars) for fermentation-maceration and buried "amphorae" for aging. No sulfur is added. For both reds and whites, the terracotta erases astringency and transmutes it into a velvety texture, a fruity and supple material.
The estate, located in Ardèche, is south of the Saint-Joseph appellation. Paul trained with René-Jean Dard and François Ribo, two great figures of natural wine in the Rhône Valley. With Chrystelle, he began by taking over Paul's family farm with two ares of vines, then in 2004 the entire estate, which now covers 4.3 hectares. The white grape varieties are located around the house, the red grape varieties are planted on steep hillsides, between 300 and 450 meters above sea level. The plots rest on a granite base with light soils: black mica granite, schist and gneiss. Everything is cultivated organically (Ecocert) with biodynamic practices. The vines are cared for and fortified using plant decoctions and clay. The soils are worked by horse or winch and pickaxe. No chemical inputs are added to the vineyard work. The harvest is entirely manual.
Xarab Silver White 2006
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created this astonishing sweet white wine from the Xarab series, made from Pedro Ximenez and Xarel·lo grapes, raisined on the vine and harvested in December. Golden-amber in color, with a nose of candied grapes and buttery caramel, the palate is rich and taut, avoiding the pitfalls of excessive richness and syrupiness. The finish lingers on dried fruits and caramel, and the cellaring is very long.
