Champ Levat Rouge 2020,
Jean-Yves Péron
Champ Levat is a tender and balanced red wine, taut and straightforward, with a peppery note and plenty of spice. On the palate, it offers a profusion of fresh and intense fruit, with balsamic notes. The freshness lends a pleasant and dense mouthfeel. The tannins are well-integrated and polished, and the finish is long. This 100% Mondeuse, a blend of two plots: Le Pas de l'Ours and Côte Pelée, can be aged for a long time. Two terroirs are highlighted: mica schist soils in Albertville, giving a mineral and floral accent, and limestone soils in Fréterive, favoring a rustic and fruity side. The two terroirs balance each other. The harvest, entirely manual, is vatted in whole bunches and undergoes two weeks of carbonic maceration before devatting, pressing, then aging for one year in barrels of several wines (between three and ten years old) whose wood does not impose itself on the fruitiness of the wine. No filtration, fining or addition of sulfites. Champ Levat will pair very well with cured meats and all mountain cuisines.

Jean-Yves Péron embodies the natural renaissance of the beautiful Savoyard vineyard, which has long suffered from a somewhat flimsy image, not taken seriously enough. Yet, what treasures are produced by its varied soils and its many ancient grape varieties! Near Conflans, in Albertville (Savoie), Jean-Yves Péron skillfully combines committed viticulture and merchant winemaking, both under the banner of nature and high-altitude organic vines. Initially destined for a career in biochemistry, he quickly became drawn to the vine and trained as an oenologist in Bordeaux. He learned his trade as a winemaker with Thierry Allemand in Cornas, then with Bruno Schueller in Alsace, before spending some time in New Zealand and the United States. Jean-Yves' current vineyard, one and a half hectares of biodynamic farming from the start, is divided between Conflans, near Albertville, and Fréterive, a little further downstream in the Isère valley. Composed of micro-plots of vines, it is staggered between 350 m and 550 m above sea level and is entirely worked by hand. His trading activity, which began in 2011, allows him to buy the harvest from organic winegrowers close to his home (such as Raphaël Marin and Adrien Dacquin). Also, the construction of a new winery in 2017 allows him to increase production and collaborate with winegrowers from Northern Italy: Paolo Angelino in Casale Monferrato (Turin), Giorgio Barbero in Asti. This is a new dimension given to his work as a winemaker, allowing him to diversify the terroirs and deepen his experiences in winemaking and aging.
Jean-Yves Péron's winemaking work follows the principles of minimal intervention. On narrow and steep surfaces, his mountain vines receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. The surrounding vegetation is very rich: it protects the vines and helps to strengthen them. The soils are grassed, mown and reworked with a pickaxe and winch. The harvest is entirely manual. Once vatted in whole bunches, the grapes, both red and white, undergo a semi-carbonic maceration which allows the extraction of fresh fruit aromas. This maceration time varies between five days and nine weeks depending on the vintage. The day before or two days before pressing, Jean-Yves performs foot-treading directly in the vat. After this fermentation, the musts are sent to barrels for aging on lees for twelve months in five hundred liter barrels of two or three wines (to limit the woody sensation), followed by blending and resting in vats. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Champ Levat Red 022
Champ Levat is an organic, biodynamic, and natural red wine from Savoie produced by Jean-Yves Péron using Mondeuse grapes. This vintage, vinified without additives, is classified as a Vin de France.
Vinification
Champ Levat comes from two plots: mica schist in Albertville (the Pas de l'Ours plot) and limestone scree in Fréterive (the Côté pelée plot). The former gives a mineral and floral accent, and the latter favors a rustic side. The harvest, entirely manual, is vatted in whole bunches and undergoes two weeks of carbonic maceration. Aged for one year in barrels used for several wines (between three and ten years old), the wood of which does not overpower the fruitiness of the wine. No filtration, fining, or addition of sulfites.
Tasting
In Champ Lervat, two terroirs balance each other. This is a tender and balanced red wine, taut and straightforward, with a peppery note and plenty of spice. On the palate, it offers a profusion of fresh and intense fruit and balsamic notes. Pleasant, fresh, and dense on the palate. The tannins are well-integrated and the finish is long. This 100% Mondeuse can be kept for a long time, and will pair very well with cured meats and all mountain cuisine.

High-altitude biodynamics
Jean-Yves Péron's work follows the principles of minimal intervention. On narrow and steep surfaces, his mountain vines in micro-plots, worked by hand, do not receive any synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.
Italian-Savoyard trade
Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.
Champagne Fleur d'Etoile Extra-Brut White non-vintage,
Fleur d'étoile is a zero-dosage extra-brut vinified without sulfur. Alcoholic fermentation takes place in 228-liter Burgundy barrels and aging is 99 months on slats. The result is a ripe and distinguished champagne, a textured wine with a brilliant color with golden yellow highlights, very emblematic of the Aube terroir. The nose, clean and aromatic, offers floral and vinous aromas. The attack on the palate confirms the balance, the mid-palate is characterized by freshness and acidity, and the finish offers aromas of citron peel with a nice bitterness. To serve it at the table, think of a galette des Rois filled with almond cream with candied citrus peel, aged comté cheese, or fine dishes in sauce (fish or poultry with yellow wine).

Four generations of winemakers have succeeded one another at the head of Maison Fleury, a pioneer of biodynamics and natural wine in Champagne. Organic farming has been practiced for around thirty years with Demeter and Biodyvin certifications, and the vines have not seen any herbicides for fifty years. Fleury stands out for its organic and natural vintages, typical of the Côte des Bar, where Pinot Noir dominates, the main grape variety in this Fleur d'étoile vintage, with a touch of Chardonnay. The vines grow mainly on Kimmeridgian limestone, with a few plots on calcareous marl.
Chant Lunaire Red 2023,
"Chant Lunaire" represents the elegance and sweetness of Jurançon Noir, a rare grape variety from the Southwest, enhanced by Danis dans la vigne. This red wine, produced from loamy soils and vinified gently with a one-week maceration, offers a tangy and fruity profile, both light and silky. With its moderate alcohol content (11%), it is a pleasant, airy and smooth wine, perfect for convivial moments.
A delicate red
Grown in the Cahors region, this Jurançon Noir is vinified with a delicate extraction. Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years of trading, the existence of harmful viticultural practices, the winemaker used this counterexample to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked for some time as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The exercise is not limited to Burgundy, as vintages are made from grapes purchased in the Jura or Languedoc regions. This exquisite Loire Chenin offers beautiful notes of citrus and spices: white fruits, honey, lemon peel, and dried fruits on the back palate. Elegant, deep, refined, and full of vivacity, a touch exotic around the edges, it displays beautiful minerality and plenty of freshness. A truly seductive wine you won't be able to live without. The wine comes from forty-year-old vines on siliceous, clayey (red clay), and limestone soils. Vinification is carried out by spontaneous alcoholic fermentation with indigenous yeasts and whole-bunch maceration. Aging is twenty-four months in oak barrels previously used for several wines. Decanting for one hour is recommended.

Anyone interested in natural wine in France has definitely come across Jean-Pierre Robinot at some point and has never forgotten this smiling, bouncy figure. It is clear that while it has not yet been proven that all wines resemble their winemaker (a study to be undertaken), the vintages produced by Jean-Pierre, warm, friendly, and luminous, are in the image of their creator. After running the wine bar L’Ange Vin on rue Richard-Lenoir in the 11th arrondissement of Paris for nearly fifteen years, Jean-Pierre returned to his native Chahaignes, a small village in the south of Sarthe, on the borders of Anjou and Touraine. His dream is to acquire his own vineyard and make sulfur-free wines. He reclaims uncultivated hillside land on great terroirs, as well as troglodyte cellars dug into the tuffeau. 2002 will be his first vintage. At the same time, under the brand L’Opéra du vin, he vinifies grapes purchased from local winegrowers. Jean-Pierre Robinot practices demanding organic viticulture, without chemical weed control. The soil is worked and amended using natural composts. All harvests, carried out at maturity on healthy grapes, are done by hand. The location and climate favor noble rot.

Charme, between chalk, herbs, and citrus
From a probably chalky terroir (unspecified but felt during tasting), this Chenin blanc cuvée reveals a profile of great freshness, taut with minerality and punctuated by fine herbal notes. Direct pressing helps preserve the integrity of the fruit, then the wine is aged for a year in barrels that have contained several wines, for gentle oxygenation without any woody input.
A dry and saline white wine with an herbaceous nose
The nose is precise and expressive, balancing ripe citrus, white flowers, and herbaceous touches reminiscent of crushed leaves or dry herbal teas.
