From one of the finest climates in Volnay, this premier cru red wine is opulent, balanced, and dense. It offers abundant notes of red and black fruits, including a full, ripe, and flavorful cherry. This is a voluptuous wine to be enjoyed at special occasions. Its velvety structure is fine and delicate, soaring into notes of airy lightness. The Lurets plot, in the Volnay AOC, produced this Pinot Noir. Its steep, west-southeast-facing terroir is located between 230 and 280 meters above sea level. The soils are primarily composed of pink limestone supported by white schist pebbles. The grapes macerate in whole bunches for two weeks in open wooden fermenters. The aging is about a year in old and new oak barrels.

Made in an illustrious Burgundy appellation, it is made from 100% Pinot Noir vines growing on the plot that gave its name to the cuvée.
Vinification
The Genevrières climate, in AOP Gevrey-Chambertin, is located on clay soil on a limestone base. Vinification begins with two weeks of whole-bunch maceration, followed by gentle pressing to preserve the fruit. A year of aging in terracotta (qvevri) gives additional velvety, sensuality and complexity to a wine that already offered a lot.
Tasting
The profile of a great classic red Burgundy with the freedom and breadth of nature. Black fruits, blackcurrant, blackberry, peony, red rose, delicately spiced, a touch wild… So many distinguished notes for this “Les Genevrières” 2022 vintage. You will happily pair it with local red meats such as the fine fat Mézenc from Florian Gibaud, or the high-end Spanish meats from the maison Aitana. This Chambolle-Musigny "Les Herbues" is an organic, natural white wine produced in Burgundy by Frédéric Cossard. It comes from the Les Herbues vineyard, from which it takes its name. Made from 100% Pinot Noir, it is classified under the Burgundy Chambolle-Musigny AOP.
Vinification
The Les Herbues plot is located between 250 and 300 meters above sea level. The clayey terroir, exposed to the east, rests on hard, fissured limestone formations that allow the roots to plunge into the subsoil. The Pinot Noir grapes macerate in whole bunches. Aging is approximately one year in barrels.
Tasting
Beautiful garnet color, finesse, elegance, density and uprightness. This Chambolle-Musigny “Les Herbues” is a complex and delicate red wine based on the aromas of raspberry, candied strawberry and violet with a touch of undergrowth, licorice and cocoa. The nose is full of stewed and spicy red fruits; raspberry dominates. On the palate, we clearly recognize the typicality of the Pommard terroir, the suppleness and liveliness it gives to the wine. This magnum of Pommard "Les Pézerolles" needs time to reveal itself: this 2017 vintage is worth drinking now or waiting a little longer. Classified as a premier cru, this Pinot Noir, full of candied red fruits and suppleness, comes from the Pézerolles plot, just above the Petits Épenots climat. It was among the first plots established in the AOC Pommard in 1936. Its terroir is located between 250 and 330 meters above sea level on marl, brown calcic and brown calcareous soils. Tasting
Bigotes is characterized by tension and indulgence. On the nose, the aromatic attack is lemony, lingering with yellow fruits. On the palate, tension, fullness, indulgence, a little fat, and plenty of aromatic persistence. Frédéric worked for some time as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The exercise is not limited to Burgundy, as vintages are made from grapes purchased in the Jura or Languedoc. At his place, the work of the soil and the vines is done as naturally as possible: regular plowing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Reds or whites, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.
This Pinot Noir comes from a plot whose steep terroir, facing south-southeast, is located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils there are mainly marl, limestone and clay. The grapes macerate in whole bunches. Aging takes place for about a year in barrels. The soils and the work in the vineyard reveal the full potential of the grape variety: a deep, complex, fleshy and silky wine, packaged only in magnum format.

This white Auxey-Duresses produced on the Crais plot is remarkably pure in expression. The maturity of the grapes is exceptional and is felt in the form of a pleasant roundness and generous fruit. Lots of straightness, elegance, complexity and tension.
