Bedeau Red 2019,
Frédéric Cossard
Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undistorted by agricultural chemicals. Having observed, during his years as a wine merchant, the existence of harmful viticultural practices, the winemaker used this counterexample to practice unadulterated viticulture. Thus, he produces vintages of unadulterated purity and elegance that are among the most sought-after in Burgundy. Frédéric worked as a wine broker for some time before creating the domaine de Chassorney with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The practice is not limited to Burgundy since vintages are made from grapes purchased in the Jura or Languedoc. At his place, the work of the soil and the vines is done as naturally as possible: regular plowing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Reds or whites, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and coveted wines, which sometimes require waiting.
A beautiful Pinot Noir full of finesse. The harvest comes from plots of forty-year-old vines in Volnay and the surrounding area, and from a plot of fifty-year-old vines in Nuits-Saint-Georges. Bedeau presents a sumptuous and satiny fruit and a touch of insolence to enhance the whole.

Sylvaner Siggi White 2017,
Siggi (the s is pronounced z) is an organic, biodynamic, and natural Alsatian dry white wine (AB label) from Jean-Marc Dreyer, vinified from Sylvaner grapes without added sulfites. A beautiful aging process (seven years, the age of reason) allows Siggi to be appreciated at its peak.
Vinification
The Sylvaner grapes from Jean-Marc Dreyer's estate, grown organically, are hand-harvested and directly pressed. The wine undergoes two years of maturation in foudres and finishes this maturation in bottles. No topping up, no addition of sulfites or other additives, no filtration.
Tasting
Clean orange color, nose of citrus and dried fruits and a little sparkle at the opening. Woody palate, controlled oxidation, walnuts, hazelnut, acidity comes next with notes of peach and nectarine associated with leather and yeasty touches, not to mention saline and iodized notes. The finish returns to hazelnut. This incredible complexity gives Siggi a key to all pairings. It will be paired with cheeses, spicy cuisine, Indian curries and Réunion curries. It is also a good partner for well-roasted poultry and pata negra ham. We recommend a good decanting.

Jean-Marc Dreyer, a biodynamic and natural Alsace winemaker (AB organic certification label), succeeds several generations of his family at the Dreyer & Fils estate, created in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics. In 2009, upon returning from a pilgrimage to Compostela, he decided to never again add sulfur to any wine. Having made this decision, he asserted his style around skin maceration, accentuated and chiseled, bringing out the soul of Alsatian grape varieties. Jean-Marc also works in direct pressing and often with single varietals. He also produces Pinot Noir reds of surprising depth.
Maceration and direct press
Jean-Marc Dreyer's wines are characterized by whole-bunch maceration (but you should also try his direct-press whites). "Maceration in Alsace," he says, "is an ancestral tradition! In the past, we worked by hand and let the grapes macerate before sending the pomace to the press." Gentle oxidation is also a particular feature of his wines, generally vinified without topping up. Jean-Marc is best known for his "Origin" series, a finely macerated expression of Alsace grape varieties, but we invite you to discover his other wines.
Harmonie Blanc Champagne Brut,
Eric Collinet
The Harmonie cuvée from Maison Collinet is an organic, biodynamic, and natural brut white champagne (Ecocert, AB, and Eurofeuille certifications) from the vines of the Éric Collinet estate, in Côte des Bar, the southernmost region of Champagne. Since 2014, this estate has been fully certified organic. The blend is 90% Chardonnay and 10% Pinot Blanc.
The Mark of Limestone
The Chardonnay and Pinot Blanc vines grow on Kimmeridgian clay-limestone soils, bringing minerality and tension to the wines. The wines are from the 2018 harvest. Hand-picked. Dosage: 3.5 g/l.
A champagne for all occasions
A beautiful straw-gold color and fine, persistent bubbles characterize this champagne dominated by Chardonnay. The minerality is marked, with siliceous and iodized notes giving way to white fruits (peach, melon, candied citron). Dense, taut, dry, and aromatic, Jean-Marc Dreyer's Pinot Gris Origin expresses structure and integrity here. Jean-Marc Dreyer's Origin range is dedicated to single-varietal cuvées based on Alsatian varieties, here the classic Pinot Gris grape variety, formerly called Tokay in Alsace, macerated in whole bunches. Pinot Gris Origin is a true redefinition of this world-famous grape variety, whose name has been somewhat misused by the American market in its Italian form (Pinot Grigio) in recent years, which makes this Alsatian interpretation particularly interesting, based not only on the local expression of the grape variety but also on the deployment of its possibilities. The color of this beautiful dry natural Sylvaner is pale yellow with golden highlights. The nose is powerful and complex, laden with aromas of ripe stone fruit. Belonging to a family established since 1601 in the Alsatian wine-growing village of Mittelbergheim, the Armand Gilg estate bears the name of its founder, who resolutely oriented the family business towards viticulture in 1937. Since then, the Gilgs have remained in charge, having expanded the vineyard from an initial one hectare to twenty-nine hectares, purchased centuries-old cellars for bottles and tuns, and built buildings for pressing and other winemaking activities. The estate, classified as HVE (High Environmental Value) for several years, acquired organic farming certification in 2021. Its plots, scattered around the village, are grouped into around a hundred groups, including five hectares on the famous Grand Cru of Zotzenberg, one of the most renowned lieux-dits in Alsace, and one hectare planted solely with Riesling on the Grand Cru Moenchberg. Production embraces all seven traditional Alsatian grape varieties (Pinot Noir, Sylvaner, Auxerrois, Riesling, Muscat, Pinot Gris and Gewurztraminer), also including Chardonnay for the Crémants and the Klevener de Heiligenstein (Savagnin Rose). Cariboom Rouge 2020,
Domaine de l'Octavin
Carignan and Grenache, cultivated by Claude Ughetto in Saint-Pierre-de-Vassols (Vaucluse) and vinified in Arbois by Alice Bouvot, explode on the palate, resulting in Cariboom! The Carignan (50% of the blend) macerates for twenty days in whole bunches, while the Grenache macerates for five weeks. The semicarbonic maceration of the whole bunches gives Cariboom! an undeniable freshness, fruit, and sap. Pretty purplish-ruby color and tangy notes of blueberry, cherry, blackberry, blackcurrant, and cranberry. Fruity, juicy, airy lightness, and atypical fruitiness. On the finish, licorice and bay leaf mingle with cinnamon: Cariboom! is very complex despite its great drinkability.

"You don't need anything," says Alice Bouvot, winemaker at Domaine de l'Octavin, "just a grape that feels good in its skin." Everything is said in favor of natural wine; it's a perfect description. Created in 2005, Domaine d'Alice is located in Arbois, in the Jura wine region, often described as the most organic vineyard in France. The practice of making—among other things—oxidative wines is a good preparation for natural wine, as this type of wine does not allow any chemical additives, and especially no sulfites. It's a secret of this magnificent region. Originally spread over two hectares, the estate, managed entirely biodynamically (Demeter) since 2010, has expanded through the gradual acquisition of plots and now covers seven hectares.
An accomplished musician and passionate music lover, Alice intends to apply her musical sensitivity to the wines she makes. She draws a parallel between the technical perfection of conventional wines, which risks excluding feeling, while "a musician who does not know music theory and plays with his guts creates emotion." For her, living wine is like this: instinctive, improvised, emotional. Introduced to natural wine by Stéphane Planche, sommelier at chef Jean-Paul Jeunet in Arbois, she will faithfully follow this path. The sometimes whimsical titles of her vintages are inspired sometimes by musical art (Dorabella, Zerline), sometimes by the numerous plots of land that make up her vineyard (En Curon, Les Corvées, En Poussot, etc.), and do not disdain a pun from time to time. Likewise, the labels adorned with happy and salacious little gnomes are a signature of the estate. As for the grape varieties, they are the classics of the Jura - Poulsard, Trousseau, Pinot Noir for the reds, and Chardonnay, Savagnin for the whites. Distillerie Sentema
Amoroso Blanc is an ode to freshness, finesse, and controlled indulgence. Crafted by Distillerie Sentema in the Alpes-Maritimes, this sweet white vermouth is part of an artisanal approach rooted in the Provençal terroir. It is made from Rolle (Vermentino) grown in Correns, Var, then fortified with a local wine spirit, before undergoing a two-week maceration with a complex blend of organic plants and citrus fruits.
Unlike many commercially available white vermouths, Amoroso Blanc avoids any heaviness. Its sweetness is precisely balanced, supported by delicate bitters and a great vegetal freshness. It features absinthe from Barjols, sweet mint, and verbena harvested in the south, bitter orange leaves, and precious Menton IGP lemon peels, which bring an elegant zesty note to the blend.
On the nose, the aroma is floral and citrusy, with mentholated and slightly herbaceous nuances. On the palate, the attack is smooth, sweet yet taut, very fresh. Verbena and mint offer an almost ethereal dimension, while citrus fruits structure the whole. The finish is long, vibrant, never sugary, with a beautiful floral and citrus persistence.

Here is a rare, almost confidential wine, which tells a story even before it is opened. Antenet 1998 is a unique cuvée, vinified more than twenty-five years ago by Danis's father, the current winemaker of the Danis dans la Vigne estate. This Cahors from another era, made from 100% Malbec, was crafted with respect for tradition and with a philosophy already very close to natural winemaking: short maceration, aging in concrete vats for two years, no oenological "makeup."
The typical clay-limestone soil of the Cahors vineyard produces an excellent keeping wine, with tannins polished by time and incredibly rich aromatics. At only 12% alcohol, it defies modern standards with its balance, freshness, and exceptional longevity.

It is in the heart of the limestone soils of Cognac, in this region where the sky and the vines have harmonized for centuries, that Alain Chadutaud passionately cultivates his Ugni Blanc. On typical clay-limestone soil, the roots draw the freshness and minerality necessary for the expression of a perfectly balanced white Pineau. The 2015 vintage, bathed in sunshine and tempered by Atlantic breezes, allowed for perfect grape maturation, giving birth to a generous and precise cuvée.
Cultivation methods
True to a philosophy that respects living things, Alain Chadutaud works biodynamically, with constant attention to soil vitality and vine balance. No synthetic inputs, but gentle practices, meticulous soil work, and natural preparations to support the plant throughout its cycle. The harvest, carried out at full maturity, precedes the subtle blending of grape juice and homemade Cognac eau-de-vie, according to the traditional savoir-faire of Pineau des Charentes. Aging takes place slowly in barrels, in order to develop this characteristic aromatic complexity.

From the very first nose, the Organic Pineau 2015 opens with a charming bouquet of candied fruits, dried apricot, and acacia honey, underscored by a hint of sweet almond. On the palate, the magic happens: the attack is lively, almost lemony, followed by a honeyed roundness that caresses the palate, supported by a tangy framework that prevents any heaviness. The balance is perfect, the persistence remarkable, leaving a sensation of freshness and deliciousness on the finish.
This is a Pineau of character, both sunny and invigorating, ideal as an aperitif, served chilled with iodine-flavored appetizers or cheese puff pastries. One hundred percent Grenache is the composition of Version Sud by Frédéric Cossard, an organic and natural red wine vinified in Burgundy from organic grapes harvested in the Vaucluse region.
Vinification
The Grenache grapes used to make Version Sud are harvested near Vaison-La-Romaine, in northern Provence, on clay-limestone soils. The vinification begins with a two-week maceration of whole bunches, without exogenous yeasts or added sulfur, and ends with a one-year aging in concrete eggs.
Tasting
The nose of Version Sud is intensely fruity, highlighted by garrigue plants. The ruby color is superb and silky. On the palate, red and black fruits abound and are fresh. A true Provençal Rhône wine in the hands of this Burgundian virtuoso, Frédéric Cossard.

Between viticulture and trade
Frédéric Cossard created the Chassorney estate in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own trading house and buys organic grapes from the greatest climates of Burgundy, but also from Jura, Languedoc and elsewhere.
A solid commitment to nature
At Frédéric Cossard, the work of the soil and the vines is done naturally: plowing by horse, no chemical fertilizers or weedkillers. The vines are tended biodynamically, the harvest is manual, carried out at full maturity. Frédéric Cossard's vintages are rare and sought-after wines, always highly anticipated but which sometimes require waiting.
