Feel Good Savagnin Blanc 2023

Amphore Rouge, 2023

Philippe Chatillon

With Amphore 2023, Philippe Chatillon delivers a rare and unique red cuvée, blending the typicality of the Jura with an ancestral aging method. This certified organic natural wine, classified as Vin de France, comes from a subtle blend of Pinot Noir and Trousseau, two emblematic grape varieties of the Jura, grown on clay-limestone soils and vinified with a spirit of purity and respect for the fruit.

After a short one-week maceration, the wine is aged for two years in amphorae (qvevris), these terracotta jars traditionally used in Georgia. This aging choice allows for slow and natural oxygenation, without the transfer of woody aromas, thus preserving the frankness of the fruit, the floral delicacy, and the complexity of the wine.

On the nose, Amphore 2023 immediately captivates: crisp red fruits, violet, a fresh herbaceous note, and a slightly earthy touch that recalls the very material of the amphora. On the palate, it is a light, fluid, yet structured wine, with a natural tension and a beautiful aromatic persistence. The balance between the finesse of Pinot Noir and the vitality of Trousseau is remarkable, supported by an aging process that acts as a revealer rather than a disguise.

At the table, this vibrant red will accompany grilled red meats, root vegetable dishes, or fine charcuterie. It will express itself fully at around 12 to 14°C, after decanting, and can be kept for 5 to 10 years.

With this cuvée, Philippe Chatillon creates an author's red wine, free and inspired, where the terroir of the Jura meets the millennial wisdom of amphora winemaking.

Le Sage Vagnin, White 2023

Philippe Chatillon

Le Sage Vagnin 2023 is a precious, exclusive, and wise vintage. Only 800 bottles are produced each year, all from a small walled vineyard (clos) planted with 65-year-old Savagnin vines, deeply rooted in the grey Jurassic marl. This rarity is the result of the precise and inspired work of Philippe Chatillon, a winemaker sensitive to living things, whose estate is certified organic and located in Arbois, the birthplace of the grape variety.

Vinified with direct pressing and then aged for two years in old barrels, this AOC Arbois white wine stands out for its aromatic purity and balanced roundness. No new wood, no additives: just the grapes, time, and the winemaker's care. The result is a nuanced Savagnin, with a mineral roundness, between tension and sweetness.

The nose is both expressive and delicate: fresh citrus, white peach, acacia blossom, with a subtle mineral touch. On the palate, the texture is round yet taut, with a beautiful length, an elegant saline sensation, and a fresh, floral finish. The wine avoids any heaviness, playing on the perfect balance between the natural richness of the grape variety and the finesse of the terroir.

Le Sage Vagnin will gracefully accompany seafood, aged cheeses like Comté or Bleu de Gex, but also more spicy, oriental, or vegetarian cuisine. Serve between 10 and 12°C, with light decanting, and enjoy now or keep for up to 5 years.

A rare wine, for lovers of finesse and Jura's unique character.

Puits Saint Pierre, White 2023

Philippe Chatillon

The Puits Saint Pierre 2023 cuvée by Philippe Chatillon is a magnificent tribute to Savagnin, the iconic grape variety of the Jura, meticulously crafted with remarkable precision. Sourced from the estate's finest parcel, planted on typical Côtes du Jura marl soils, this natural white wine, certified organic, embodies Jura tradition while asserting a pure, clean, and vibrant style.

The grapes are harvested at optimal ripeness then pressed directly, without maceration, to preserve freshness and varietal expression. The wine is then aged for two years in old barrels, without oenological intervention or new wood, allowing for subtle micro-oxygenation that refines the structure and develops aromatic complexity.

On the nose, it's a festival of sensations: dried apricot, delicate honey, a hint of brioche, alpine herbs, and a chalky minerality that hints at the tension on the palate. The palate is direct, dry, taut, with superb acidity that carries the flavors to a long, saline finish. The balance between the subtle richness of the aging and the natural straightforwardness of the grape makes it an excellent gastronomic wine.

Puits Saint Pierre pairs ideally with iodized seafood, aged Comté cheese, or spicy dishes with oriental flavors. Decanting is recommended for it to fully open up. It can be enjoyed now for its purity or aged 5 to 10 years to gain complexity. Serve chilled, between 10 and 12°C.

Philippe Chatillon delivers a deep and sincere wine, both rooted in its terroir and of rare elegance.

Antenet Cahors Rouge 1998

Danis dans la Vigne

A cellar gem, between family heritage and the depth of time

Here is a rare, almost confidential wine, which tells a story even before it is opened. Antenet 1998 is a unique cuvée, vinified more than twenty-five years ago by Danis's father, the current winemaker of the Danis dans la Vigne estate. This Cahors from another era, made from 100% Malbec, was crafted with respect for tradition and with a philosophy already very close to natural winemaking: short maceration, aging in concrete vats for two years, no oenological "makeup."

The typical clay-limestone soil of the Cahors vineyard produces an excellent keeping wine, with tannins polished by time and incredibly rich aromatics. At only 12% alcohol, it defies modern standards with its balance, freshness, and exceptional longevity.

A deep, aged, memory-filled wine

After more than two decades of rest, Antenet 1998 reveals a brick-red garnet color, with brown reflections. The complex and captivating nose unveils aromas of stewed black fruits, prune, blond tobacco, with a hint of undergrowth. On the palate, the texture is melted, ample, with a rare smoothness. This wine evokes a bygone era, yet remains strikingly delicious, perfect with roasted meats, game, or a dish rich in umami.

Served at 16-18°C, with no need for decanting, this wine is ready to be enjoyed. It is a liquid archive, a family treasure, to be discovered like reading a letter from the past.

Jean-Yves Péron

I Vicini Moscato is an organic, biodynamic, and natural macerated (orange) dry white wine from Jean-Yves Péron. Vinified in Savoie using Muscat d'Asti. It is part of the I Vicini series of cuvées, vinified in Savoie using organic grapes from Northern Italy.

Vinification

The Muscats in this I Vicini series grow on very fine, calcareous-magnesian limestone soils, on a particularly cool site. Harvested by hand at good phenolic maturity, they macerate for two months in vats on the skins with punching down. Aged for one year in 300-liter barrels. No filtration, fining, or addition of sulfites.

Tasting

Straightness, tension, and freshness: this beautiful Muscat d'Asti offers the aromatic and musky nose specific to the grape variety, without any syrupy notes. A very present tannic structure balances the whole. On the palate, it is rich and powerful; we find the charming scent of Muscat in the retro-olfaction, but with the tension and freshness that Jean-Yves Péron loves for his dry whites. It is a great table wine, not really for an aperitif, but for gastronomy, no limits.

Learn more about Jean-Yves Péron

Jean-Yves Péron talentedly embodies the organic, biodynamic, and natural renaissance of the Savoyard vineyard, which is based on varied soils and numerous indigenous grape varieties (Jacquère, Altesse, Mondeuse, etc.). At his Chevaline winery in the Bauges region, he vinifies grapes from his plots in Conflans, near Albertville, and Fréterive, in the Isère valley.

High-altitude biodynamics

Jean-Yves Péron's work follows the principles of minimal intervention. On narrow, steep slopes, his hand-worked mountain vines in micro-plots receive no synthetic products, Jean-Yves preferring horsetail and nettle manure. All of Jean-Yves Péron's wines are sulfite-free, made from hand-harvested grapes, vinified in whole bunches and foot-trodden in the vat. For all vintages, the free-run and press are blended, then aged on lees for at least one year, in two- or three-wine barrels, amphorae or tuns, before final blending. They must be stored at a temperature below 18°C. No sulfites are added, or as little as possible, and the wines are not fined or filtered.

Italo-Savoyard trade

Since 2011, a trading activity has allowed Jean-Yves Péron to buy the harvest from neighboring organic winegrowers and to collaborate with winegrowers from Northern Italy: this is the I Vicini series, which allows him to diversify the terroirs and deepen his experiences in winemaking and aging.

Vin de Lies White 2021/22 Magnum

Jean-Yves Péron

Vin de Lies is an organic, biodynamic, and natural dry white wine that Jean-Yves Péron makes every two vintages in his Savoyard cellars. It is based on a winemaking practice that is little known outside the industry, but which produces a highly regarded wine. It is not usually sold commercially but reserved for the cellar team. Classified as a Vin de France, it is a treat that the winemaker bestows upon us, in magnum format no less.

Vinification

The grape varieties include Jacquère, Muscat, Altesse, Mondeuse, Favorita, Muscat à Petit Grain, Roussanne… After racking the barrels and aging vats from all his terroirs (Savoyard and Italian), Jean-Yves gathers all the lees in a single vat to obtain Vin de lies. These lees are suspended in a small quantity of wine, again decanted and recovered once or twice. Nourished by the lees, the red becomes smoother, sweeter, and the white is less tense, rounder. Jean-Yves Péron has gathered here the lees from all his 2021 whites and some from 2022.

Tasting

“It’s a wine for pleasure,” says Jean-Yves Péron of this Vin de lies. “It can be drunk anytime, from 10 a.m. to 2 a.m.!” This is the true “house cuvée,” generally very popular. Pairings: goes with everything.

Learn more about Frédéric Cossard
Frédéric Cossard gives the floor in organic and natural mode to the wines of Burgundy (and elsewhere), undistorted by agricultural chemicals, according to the style and convictions of this winegrower and merchant. Wherever the grapes come from, his wines bear the Cossard brand, both classic and creative.

Between viticulture and trading
Frédéric Cossard created the Chassorney estate in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, then ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. Since the recent sale of this estate, Frédéric continues to manage his trading house, created in 2006 in his own name. He vinifies grapes from the greatest climates of Burgundy, but also from the Jura, Languedoc and elsewhere.

A solid commitment to nature
At Frédéric Cossard, the work of the soil and the vines is done naturally: plowing by horse, biodynamics, no chemical fertilizers or weedkillers. The harvest, by hand, is carried out at full maturity. Frédéric Cossard's vintages are rare and coveted, wines that are always highly anticipated but which sometimes require waiting.

Cailloux Rouge 2022

Patrick Bouju

Classified as a Vin de France, it is a wine extremely representative of its terroir and a fine example of the winemaker's refined expertise. The magnum format amplifies its natural character and further accentuates its depth.

Cailloux lives up to its name: wild, smoky, long, and stony, with great aromatic persistence. Marked by intensely mineral notes: stone, metal. The fruit is present and juicy. The overall impression is dense and concentrated; the wine can be drunk now but will still have a few years to drink. Serving temperature: 14-16 °C. Open twenty minutes before tasting or decant. You can pair it with charcuterie, salted meats, beef and all kinds of local cuisine.

Learn more about Patrick Bouju and the La Bohème estate
Near Billom, the Auvergne Tuscany, once covered with vines, is the privileged domain of Gamay d'Auvergne, a strain old grape variety. It is there, on these volcanic soils, that Patrick Bouju works, mainly with old vines.

Viticulture and trade
Patrick breathes new life into the often abandoned terroirs of Puy-de-Dôme and its indigenous grape varieties. Under the La Bohème estate, he operates as a wine merchant using purchased organic grapes. His exclusive Culinaries partnerships are famous: with Action Bronson for the series A la Natural, with Jason Ligas in Greece for Sous le Végétal…

A winemaker who lends a helping hand
The current renaissance of the Auvergne vineyard (which was once the third largest in France) owes a lot to Patrick. The fact that he likes to lend a hand to his winemaker friends in France and elsewhere only confirms his image as a role model, a leader. Its noble, chiseled, distinguished, never trivial wines are immediately recognizable in the glass.

Maceration lasts three to four days in chestnut vats, followed by nine months of aging in French oak barrels. No filtration, no added sulfites. Volnay 1er Cru Les Roncerets Rouge 2021

Domaine de Chassorney

A very fine, gourmet, complex wine, endowed with finesse and great aromatic concentration. Solid, well-structured tannins. This robust wine for laying down, which can be left for some time before drinking and will age magnificently, comes from vines around forty years old. The twelve-month aging is done mainly in barrels, a third of which are new oak. The Roncerets climate consists of very stony clay-limestone soil. This wine has excellent aging potential. It is aged for one year in barrels and vinified without the addition of sulfites.

To find out more
Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undeformed by agricultural chemicals. Having observed, during his years of trading, the existence of harmful viticultural practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked for some time as a wine broker before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The practice is not limited to Burgundy, as vintages are made from grapes purchased in the Jura, Languedoc, and elsewhere. At his farm, the soil and vines are worked as naturally as possible: regular horse-drawn ploughing, no addition of chemical fertilizers or weedkillers. The vines are tended according to biodynamic principles: homeopathic treatments based on essential oils, copper, and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Red or white, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.
