Chatzen Blanc 2017
La Sorga
Anthony Tortul loves old vineyards: he devotes his life to finding and vinifying them. Just as there are landless shepherds, he can be defined as a landless winegrower, in other words, a wine merchant whose scope extends throughout Languedoc and, eastward, as far as Châteauneuf-du-Pape, in search of the best terroirs. Born in Foix, with six years of experience as a wine technician and oenologist in various vineyards in the south of France, he created La Sorga in 2008. His enthusiasm leads him on a path filled with favorites, and each of these favorites is a vineyard. The result is a dizzying mosaic of natural, lively, and spirited wines, which reinvents itself each year with around thirty cuvées per vintage. Few winemakers can list such a variety of grape varieties on their list: the whole of southern France is covered with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and all the rest.
This wine is a blend of seventy percent sauvignon blanc (twenty-eight-year-old vines) and thirty percent chasan (a cross between listan and chardonnay; forty-three-year-old vines) from sandy limestone soils near Carcassonne. The chasan is processed by direct pressing and the sauvignon macerates in the must in whole bunches for four months. The aging is three years in old barrels, without topping up. This explains the controlled oxidative character of this wine, with a nose of veil (walnut husk) and stewed tropical fruits, dried banana, curry... and the aromatic, straight, long and complex palate, well tannic. The aging potential is enormous but the wine already stands out for gastronomy and the most refined dishes on the most joyful tables.
Natural wine without added sulfites.
Made from 100% Obeideh, this wine comes from vines over 60 years old located in Zahlé, at an altitude of 1,150 meters, on white clay soils with an eastern exposure.
Organically farmed, it is vinified with 7 months of skin maceration in stainless steel tanks, then aged 12 months on lees. This vinification results in a wine of character, with a full and structured texture, combining depth, aromatic complexity, and beautiful high-altitude freshness. A very limited production of 2,000 bottles.
Weingarten Blanc 2024
Domaine Einhart
Under the guidance of Domaine Einhart in Alsace, the Weingarten cuvée embodies the delicacy of a Sylvaner expertly crafted on a clay-limestone terroir. Vinified with certified organic methods and without oenological artifice, this natural white wine expresses a beautiful purity of fruit, balanced by a fresh and direct structure. Here, the humblest grape variety flourishes fully on the most generous soils.
The winemaking process involves a pre-fermentation cold maceration (12 to 14 °C) for 24 hours, promoting aromatic expression without extracting undesirable tannic compounds. The subsequent direct pressing produces a clear and delicate juice, which is then aged in stainless steel tanks for 10 months, preserving all the wine's vibrancy. The estate relies on spontaneous fermentation using indigenous yeasts, in full respect of the grape and its ecosystem.
Upon tasting, Weingarten 2024 reveals a pale color with green reflections. The nose is vibrant: white flowers, herbaceous notes, and a hint of exotic fruits. On the palate, it is elegance itself: a full body yet always held by a vertical freshness. A slight, well-controlled bitterness on the finish prolongs the pleasure and makes you want more.
Ideal as an aperitif, this wine also lends itself to more daring pairings: Thai cuisine, spicy dishes, seafood, or tender-fleshed poultry. An expressive, versatile, and honest cuvée, to be enjoyed now or cellared for a few years.
Westerberg Blanc 2023,
The subtle and mouth-watering expression of a unique terroir
The Westerberg 2023, produced by Domaine Einhart, is a highly expressive cuvée that combines Gewurztraminer and Riesling, two emblematic grape varieties of Alsace. Produced from vines planted on a terroir of limestone silt, this cuvée draws its unique character from a meticulous 11-month maturation in foudres, which amplifies its complexity while preserving its freshness.
An intense and elegant tasting
On the nose, the Westerberg 2023 reveals a striking aromatic richness: notes of candied apricot, juicy pear and jasmine blend harmoniously with touches of mango and citrus. On the palate, this wine displays a supple and velvety texture, balanced by a marked mineral freshness. The vibrant acidity brings a beautiful salivation, while the long and persistent finish highlights brioche and slightly buttery nuances. This contrast between breadth and liveliness makes this wine a true sensory journey.

Sylvaner Siggi White 2017,
Siggi (the s is pronounced z) is an organic, biodynamic, and natural Alsatian dry white wine (AB label) from Jean-Marc Dreyer, vinified from Sylvaner grapes without added sulfites. A beautiful aging process (seven years, the age of reason) allows Siggi to be appreciated at its peak.
Vinification
The Sylvaner grapes from Jean-Marc Dreyer's estate, grown organically, are hand-harvested and directly pressed. The wine undergoes two years of maturation in foudres and finishes this maturation in bottles. No topping up, no addition of sulfites or other additives, no filtration.
Tasting
Clean orange color, nose of citrus and dried fruits and a little sparkle at the opening. Woody palate, controlled oxidation, walnuts, hazelnut, acidity comes next with notes of peach and nectarine associated with leather and yeasty touches, not to mention saline and iodized notes. The finish returns to hazelnut. This incredible complexity gives Siggi a key to all pairings. It will be paired with cheeses, spicy cuisine, Indian curries and Réunion curries. It is also a good partner for well-roasted poultry and pata negra ham. We recommend a good decanting.

Jean-Marc Dreyer, a biodynamic and natural Alsace winemaker (AB organic certification label), succeeds several generations of his family at the Dreyer & Fils estate, created in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics. In 2009, upon returning from a pilgrimage to Compostela, he decided to never again add sulfur to any wine. Having made this decision, he asserted his style around skin maceration, accentuated and chiseled, bringing out the soul of Alsatian grape varieties. Jean-Marc also works in direct pressing and often with single varietals. He also produces Pinot Noir reds of surprising depth.
Maceration and direct press
Jean-Marc Dreyer's wines are characterized by whole-bunch maceration (but you should also try his direct-press whites). "Maceration in Alsace," he says, "is an ancestral tradition! In the past, we worked by hand and let the grapes macerate before sending the pomace to the press." Gentle oxidation is also a particular feature of his wines, generally vinified without topping up. Jean-Marc is best known for his "Origin" series, a finely macerated expression of Alsace grape varieties, but we invite you to discover his other wines.
Rosé 2016,
Domaine Le Temps retrouvé
A blend of Grenache and Carignan for a rosé that doesn't do things by halves, sourced from the clay-limestone plots of Domaine du Temps retrouvé. On the nose, notes of redcurrant and raspberry are echoed on the palate, accompanied by a lovely acidity. Drink as an aperitif, while listening to Laurent Voulzy's Le Cœur Grenadine.
A natural wine with no added sulfites.
Les Galets Roulés Blanc 2025 is a fresh and floral vintage from Domaine Bois Moisset, made from Loin de l'Œil and Muscadelle, emblematic grape varieties of the Gaillac vineyard. Grown on rolled pebble soils, the grapes produce a luminous and expressive white wine, with notes of citrus, white flowers, and honey, with a supple, fresh, and delicately aromatic palate.
Vinification by direct pressing preserves all the purity of the fruit and the subtlety of the aromatic profile. With only 11.1% alcohol, this vintage remains light, digestible, and easy to drink. Serve between 12 and 14°C, it pairs well with aperitifs as well as fish, cheeses, or lightly spiced dishes.
Made exclusively from old Meunier vines, this Rosé de Meunier reveals a gourmet and refined profile. Aromas of wild strawberry, raspberry, pomegranate and rose petals are supported by a full, fresh and delicately spicy palate, prolonged by a beautiful minerality.
Vinification
100% Pinot Meunier, of which approximately 50% are reserve wines. Blended rosé from old vines, fermentation in barrels, aging on lees and Extra Brut dosage of 2.5 g/L.
Perill de Perills ("the danger of dangers") is a singular white wine that highlights the Xarel·lo grape. The nose combines white fruits, candied lemon, Mediterranean herbs, and a subtle smoky note. The palate is full, saline, and taut, offering beautiful depth while retaining much freshness. A wine of character, true to the identity of Clos Lentiscus.
Vinification
100% Xarel·lo, spontaneous fermentation with indigenous yeasts followed by aging in old containers to preserve the purity of the fruit and the expression of the terroir. A low-intervention wine with minimal sulfur.
With Tomoe Gozen Blanc 2023, La Tribu Alonso creates an inspired and profoundly original vintage, conceived as an homage to the first female samurai. Made from a collection of 28 Chardonnays, this white wine reveals a rare complexity, shaped by a bold vision and an artisanal approach to natural wine.
The grapes are grown without any synthetic products, respecting the living balance of the vineyard. In the cellar, vinification relies solely on indigenous yeasts, without inputs or artificial additions, to allow the identity of the vintage and the terroir to fully express itself. The 16-month aging in Sauternes barrels adds an extra dimension to the wine, enriching its aromatic palette and texture.

With Retour de Milan, Fond Cyprès unveils a brilliant and unprecedented interpretation of Muscat Petit Grain, vinified as a macerated white. This organic orange wine from Languedoc, as elegant as it is expressive, breaks new ground to offer a unique, fresh, and gourmet sensory experience.
A subtle maceration
Here, whole Muscat grapes are macerated for a few days to provide texture and complexity without losing the delicacy of the varietal. Fermentation is spontaneous, using indigenous yeasts, without oenological additives, followed by 5 months of aging in concrete egg, which promotes the wine's natural movement and gentle contact with the lees. The result: a lively, textured juice, yet with exemplary freshness.
A luminous and aromatic orange wine
The nose is vibrant, with notes of bergamot, citrus zest, orange blossom, and fresh lychee. On the palate, the wine balances tension and sweetness, with very fine tannins and a delicately bitter finish that prolongs the pleasure. It is a digestible, chiseled orange wine, both floral and citrusy.
Bold pairings, immediate pleasure

Le Sage Vagnin, White 2023

Le Sage Vagnin 2023 is a precious, exclusive, and wise vintage. Only 800 bottles are produced each year, all from a small walled vineyard (clos) planted with 65-year-old Savagnin vines, deeply rooted in the grey Jurassic marl. This rarity is the result of the precise and inspired work of Philippe Chatillon, a winemaker sensitive to living things, whose estate is certified organic and located in Arbois, the birthplace of the grape variety.
Vinified with direct pressing and then aged for two years in old barrels, this AOC Arbois white wine stands out for its aromatic purity and balanced roundness. No new wood, no additives: just the grapes, time, and the winemaker's care. The result is a nuanced Savagnin, with a mineral roundness, between tension and sweetness.
The nose is both expressive and delicate: fresh citrus, white peach, acacia blossom, with a subtle mineral touch. On the palate, the texture is round yet taut, with a beautiful length, an elegant saline sensation, and a fresh, floral finish. The Puits Saint Pierre 2023 cuvée by Philippe Chatillon is a magnificent tribute to Savagnin, the iconic grape variety of the Jura, meticulously crafted with remarkable precision. Sourced from the estate's finest parcel, planted on typical Côtes du Jura marl soils, this natural white wine, certified organic, embodies Jura tradition while asserting a pure, clean, and vibrant style.
The grapes are harvested at optimal ripeness then pressed directly, without maceration, to preserve freshness and varietal expression. The wine is then aged for two years in old barrels, without oenological intervention or new wood, allowing for subtle micro-oxygenation that refines the structure and develops aromatic complexity.
On the nose, it's a festival of sensations: dried apricot, delicate honey, a hint of brioche, alpine herbs, and a chalky minerality that hints at the tension on the palate. The palate is direct, dry, taut, with superb acidity that carries the flavors to a long, saline finish. The Paradoxe 2021, a unique cuvée from Domaine Einhart, embodies a bold and elegant approach to Chardonnay in Alsace. Produced from a rich clay terroir, this organic AOP Alsace white wine is the result of careful vinification using direct pressing. The cuvée was aged for three years on fine lees in stainless steel vats, a rare method that gives the wine aromatic depth and remarkable texture.

On the nose, Paradoxe 2021 seduces with its complex and refined bouquet. Aromas of candied citrus and lemon zest intertwine with floral notes and a slightly mineral hint. Grisou Rosé 2021
Belly Wine Experiment
Complex, refreshing, unusual, and delicious… A rosé, obviously, but with a fairly solid structure. One might guess from its name that it's a vin gris, and its color gives us the final hint. Grisou is a vin gris (therefore) quite typical of Belly Wine's experimental passion, since it is made from Carignan from the South and Pinot Gris from Heiligenstein (Alsace) grown on clay-siliceous soils. Two very different terroirs are united in one wine. Let's remember that Grisou, like Rosé, is a still wine with a pale color made from black grapes in short maceration. Here, it's a little more complicated since two-thirds of the grapes are directly pressed, the remaining third being crushed in whole bunches and macerated for four days. Disgorging takes place two months later. This wine is organically grown and has received no chemical inputs or sulfites, in the vineyard or in the cellar. As it plays on several levels, both light and straightforward, Grisou can allow for very wide pairings.

The creative duo has it in spades: Claire is the sister of Daniel Sage, a fan of underwater wine aging but above all an importer of Catalan wines. Hence the presence of Catalan grape varieties in Belly Wine Experiment's blends, alongside Burgundy, Auvergne, and Jura grape varieties, readily found in the same bottle. Aimé is the son of Manu Duveau, a poet-winemaker from Auvergne, a former stonemason, and a great winemaker of local Gamays at his Domaine de l'Égrappille. The uniqueness of Belly Wine Experiment is the exoticism (in the literal sense) of the blends, with Xarel lo from Catalonia, for example, being able to sit alongside Gamay from Puy-de-Dôme with the utmost naturalness. The wines are made using semicarbonic maceration, without the addition of chemical additives or excessive manipulation in the cellar. The house is also known for its very high-quality, vinous perries.
Crac Rosé 2021
Belly Wine Experiment
Fresh, fruity, and pleasant, Crac is a vin gris, a still rosé wine made entirely or partially from black grapes. It generally undergoes a very short maceration, hence its light color. This is obtained by slow direct pressing (forty-eight hours) of Auvergne Gamays "sur limagne," or on the dark-colored sedimentary and volcanic soils that make up the Auvergne plain. This slow pressing, replacing a short maceration, allows for a gentle extraction of the grape's constituents and gives the wine its color. To these Auvergne Gamays are added a proportion of Pinot Gris from Alsace. Categorized as Vin de France, free from any chemical or sulfite additives in the vineyard or in the cellar, Crac spends a year aging on lees before bottling. This wine is produced using organic farming methods and has received no chemical or sulfite additives, in the vineyard or in the cellar. It will go very well with charcuterie, cured meats, and tapas of all kinds.
