Among the ten Beaujolais crus, Fleurie is undoubtedly the most ethereal, the most floral, and Domaine Bélicard offers a natural and elegant interpretation here. This 100% Gamay Noir, organically certified, grows on the granitic slopes of the cru, which give this wine remarkable mineral finesse.

Gentle winemaking for a delicate wine

The grapes, picked at perfect ripeness, undergo a short maceration of a few days to extract just enough matter without harshness. Fermentation occurs naturally, without exogenous yeasts or additives. The six-month aging takes place in barrels that have held several wines (not new), bringing complexity and suppleness without masking the fruit.

A Fleurie of character with finesse

The nose is expressive, featuring fresh red fruits, violet, and a subtle spicy touch. On the palate, the texture is fine, the structure supple yet present, with a mineral tension that lengthens the finish. Terroir, plot size and grape varieties

Born from the dialogue between the ancestral terroir of Gaillac and a contemporary vision of winemaking, the YARD x Bois Moisset Sparkling Wine 2024 embodies a luminous encounter between tradition and freshness. The Bois Moisset estate, located in the heart of the Tarn vineyards, passionately cultivates the indigenous grape varieties Braucol and Duras. These varieties, typical of Southwest France, lend their unique character to this rosé: Braucol for its vivacity and aromas of red fruit, and Duras for its finesse and floral notes. The clay-limestone soil, bathed in sunshine and caressed by the breezes of the Tarn River, imparts a beautiful tension and a pure expression of fruit to the grapes.

Cultivation methods

Long committed to sustainable viticulture, Domaine Bois Moisset is certified organic. The vines are cultivated without synthetic inputs, in a living ecosystem where observation takes precedence over intervention. The soils are worked gently, fostering flourishing biodiversity and true harmony between the vine and its environment. This artisanal philosophy naturally extends to the cellar, where winemaking is as gentle as possible. The secondary fermentation, likely natural, gives this cuvée its sparkling, fine bubbles, without ever compromising the purity of the fruit.

Tasting & pairings

Slightly cloudy, by design, this 2024 sparkling rosé displays a delicate, salmon-pink hue. On the nose, an intoxicating bouquet of orange blossom and strawberry unfolds, reminiscent of the sweetness of a spring garden. On the palate, the bubbles are lively yet delicate, supporting a light and refreshing, almost carefree, texture. The overall impression is dry, remarkably drinkable, with a fruity touch that evokes homemade strawberry granita.

A bright and balanced cuvée, a tribute to Auxerrois and Pinot Noir

The Frohnberg 2023, by Domaine Einhart, is a captivating blend of Auxerrois and Pinot Noir. This organic AOP Alsace white wine reflects a unique clay-limestone terroir, enhanced by direct pressing and careful vinification. Aged for one month in stainless steel vats on fine lees, the Frohnberg 2023 is a vibrant wine, where purity and elegance combine to offer a refined experience.

A fresh and precise tasting

On the nose, the Frohnberg 2023 unfolds delicate and seductive aromas: notes of citrus, lemon and white flower intertwine with touches of pear and a mineral hint reminiscent of flint. On the palate, the attack is straightforward and fresh, carried by a lively acidity that gives this wine a beautiful energy. The texture is fluid, taut and precise, with a marked salinity on the finish. A subtle minerality accompanies the long persistence, revealing all the richness of its terroir.

Cahors Red 2018

Danis dans la vigne

A Cahors, quite simply: this 100% Malbec red wine, organic and natural, is produced by Danis Bessières and Domaine de l’Antenet in the Cahors AOC. It is, strictly speaking, Danis’s father’s Cahors, from a vintage that has already matured.

Vinification

The Malbec vines grow at Domaine de l’Antenet, in the Cahors region. The harvest is cultivated and vinified without additives or sulfites. "If I have the joy today of letting you taste these vintages from the past, it is thanks to the perseverance, talent and flair of my father. He knew very well how to give time the care to preserve the beautiful years, confident that he was in the capacity of well-made wine to travel the ages."

Tasting

Despite its six years of age, this Cahors from the Domaine de l'Antenet/Danis dans la vigne remains very marked by cherry, with body and noble aromas of an evolved wine that are beginning to manifest themselves: leather, undergrowth, hay, truffle, tobacco... Everything we love in Cahors. Powerful, full-bodied, but drinkable and very supple for the appellation.

A vibrant, hybrid, and bold red, born from the granite terroir of Beaujolais

The Art Brut 2023, produced by La Tribu Alonso, is an atypical and captivating cuvée. This red wine is distinguished by its exceptional ampelographic diversity, bringing together a mosaic of grape varieties, including Cabernet Sauvignon, Garnacha, and Syrah, enriched with a touch of white grapes. Produced on granite soils, it reflects an artisanal and innovative philosophy that celebrates biodiversity and the terroir.

Vinified with a short maceration to extract finesse and freshness, then aged for a year in vats, this wine reveals a natural and sincere approach, without artifice.

An intense and original tasting

On the nose, the Art Brut 2023 charms with its aromas of black cherry, kirsch and leather, with subtle nuances of pepper and spices. On the palate, it offers a frank and invigorating attack, supported by a supple texture and a beautiful freshness. Paoudou Red 2022,

Danis dans la vigne

Paoudou is a 100% Cahors Malbec red wine, organic and natural, produced in Vin de France by Danis Bessières of Danis dans la vigne. It is part of the winemaker's "Esprit du lieu" series of single-plot cuvées.

Vinification

Danis dans la vigne's single-plot cuvées are vinified with a certain neutrality to respect the grape variety (in this case, Malbec), the soil, and the vintage. In this case, the 2022 vintage was hot and the wine comes from the finest plot, a place called Paoudou.

Tasting

Paoudou is a sunny, dense and fruity wine, with substance. It requires decanting to fully express its character. Typically Cahors Malbec: Paoudou is full of presence, energy, with a little austerity. It is a wine for red meats, roasts and stews.

Beaujolais Blanc 2023

Jean Foillard

Le Beaujolais Blanc 2023 est la seule cuvée blanche de Jean Foillard, élaborée à partir de 100 % Chardonnay. Issue de sols granitiques, elle propose une lecture ample et profonde du cépage, avec un style plus structuré et gastronomique que celui d’un blanc simplement porté sur la fraîcheur.

La cuvée est vinifiée en presse directe, puis élevée pendant un an en barriques de plusieurs vins. Cet élevage apporte de la matière, de la rondeur et une légère empreinte boisée, tout en laissant s’exprimer le fruit et la minéralité du terroir.

Le nez développe des notes de fleurs blanches, de fruits exotiques et d’herbes fraîches. En bouche, le vin est rond, puissant et complexe, avec une belle longueur et une matière généreuse. C’est un blanc de table, pensé pour accompagner aussi bien des poissons et fruits de mer que des viandes blanches ou des fromages.

À servir autour de 10 à 12°C. Il peut être apprécié dès aujourd’hui, mais possède également un potentiel de garde de 5 à 10 ans.

Cuvée 0.72+ (exclusive cuvée) White 2023

De Vini
Vinified without additives or sulfites by Christophe Bosque of De Vini, 0.72+ is an organic and natural dry white wine. It comes straight from the land of Muscadet, the Loire estuary. Without having the appellation (it is classified as Vin de France), it can be considered a Muscadet and drunk as such.

In the vineyard and in the cellar
0.72+ white from De Vini is made from 100% Melon de Bourgogne (another name for the Muscadet grape variety) planted in Maisdon-sur-Sèvre (Loire-Atlantique) on gabbro soils characteristic of the region. Gabbro is a grainy igneous rock resting on a granite subsoil, contributing to the production of splendid, lively and mineral white wines. Gabbro and granite are Christophe Bosque's favorite soils. The wine was aged for one year on lees in buried cement vats (traditional in this region), without any additives.

If you want to know...
An anecdote explains the name of the cuvée: originally, due to a small technical incident during bottling, it did not contain exactly the standard quantity. The error has since been corrected (0.72+ of De Vini is in its fifth vintage).

Tasting
0.72+ white is excellent to drink now or later, well chilled. An elegant acidity mixed with a balancing roundness, a saline and salivating side make 0.72+ an unfailing companion to raw or smoked fish and seafood, especially oysters. This vintage also exists in red.

De Vini, along with the Vinilibre winery, is the dual activity of Christophe Bosque, originally from Saint-Nazaire. He has always been passionate about wine. We are particularly interested in his local creations, produced from his vineyard of some two hectares and fermented in buried vats in the Nantes style - a true reinvention of Muscadet (outside the appellation) in natural mode.

Gabbro Fondu
After spending years as a merchant, importer, then wine merchant, this former cameraman with a BTS in oenology-viticulture acquired a few plots (two hectares) of Melon de Bourgogne vines in Gorges, in Loire-Atlantique, near Clisson in 2017. The soils there are made up of gabbro on a granite substrate, a pedological configuration specific to the Nantes region and particularly to Clisson. Christophe is full of praise for this type of soil.

Muscadet for the better
Christophe's vintages may come from grapes purchased from the best French terroirs, particularly in Languedoc, but the winemaker retains a special affection for his vines, which he maintains with passion and attention to the terroir. A touch of humor and a sense of pun can be seen on his labels and in his appellations, but in the bottle, they are serious, off-the-beaten-track wines, just the way he likes them.

An Anjou Chenin that plays on beautiful fruit ripeness while maintaining great freshness. Radicalement Blanc 2025 offers a gourmand and luminous profile, with notes of yellow fruit, ripe apple, citrus, and a floral touch, carried by a lively and slightly mineral structure.

The palate remains supple, clean, and easy-drinking, with enough tension to balance the ripeness of the vintage. A very accessible white, to be enjoyed as an aperitif or with a meal, paired with fish, seafood, poultry, or goat cheese.

Altanelle 2023

Danis in the vineyard

Altanelle 2023 is a red wine from the South-West that stays true to the style of Danis Bessières: natural, expressive, and light on its feet. Sourced from the family vineyard, which has been farmed organically since the 1980s, the wine emphasizes fresh fruit and low-intervention winemaking. The nose leans towards ripe red and black fruits, spices, and a subtle vegetal touch, while the palate remains supple, easy-drinking, and structured by fine tannins.

It is a versatile red, to be served at around 16°C, that will easily pair with artisanal charcuterie, grilled meats, roasts, or slow-cooked dishes. The house style remains very evident here: a lively and accessible Cahors, far removed from the overly heavy expressions often found in the region.

Le Carignan de la Source Rouge 2021

Fond Cyprès
Languedoc to the tips of its nails, delicate, dense, and fresh, fruity and generous, all freshness and delicacy: a beautiful, lively and spicy bottle, with lovely notes of leather and undergrowth, and well-integrated tannins that don't attack the palate. Coming from a sixty-year-old limestone-marl Carignan plot, this wine, after hand-harvesting and destemming, is fermented for four weeks in concrete vats. The wine is then aged for twelve months in old demi-muid (barrels of 500 to 650 liters) which has the quality of not oaking the wine but ensuring a comfortable, gentle aging. With its ripe and evolved tannins, this classified Vin de France cru offers great aging potential, but we can already start drinking it. A lively bottle, to be paired with everything that the Western Mediterranean coast (Languedoc, Roussillon, Catalonia, Valencia region, etc.) has to offer. We obviously don't forget the region east of the Rhône: Provençal, Italian, Greek cuisines, etc. Keep for around ten years.

This Languedoc estate is built on solid foundations: its two winemakers, Rodolphe and Laetitia, are also descendants of winemakers. Even before planting their first vine, they already had a clear objective: "to produce southern wines that reflect us, wines with character, attached to our soils, with freshness and refined tannins." They wanted to obtain entirely natural wines, concentrates of terroir. In the old Corbières massif, they took over an old heart of the estate already planted with abandoned Carignan and Grenache, which had not seen any fertilizer or pesticides for years: these clean and living soils were an ideal condition for launching into natural wine. Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. The vinification is done without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. The wines of Fond Cyprès poetically evoke the estate's ecosystem and the vegetation that protects the plots: the pine forests, the shady springs, the beauty of the natural environment that brings freshness to the wines and leaves the signature of the soil. Deliciously balanced between mineral imprint, plant environment, and fruit expression, the wines of Fond Cyprès reflect the South of France: the caress of its sun, but also the freshness of its shadows.

With Les Galets Roulés 2025, Domaine Bois Moisset offers a light and delicious red, true to the rustic and natural spirit of Sylvie Ledran and Philippe Maffre in Gaillac. This cuvée blends two emblematic grape varieties from the Southwest, Braucol and Duras, grown on rolled pebble soils. The nose is dominated by fresh red fruits, accompanied by herbaceous and slightly spicy notes. With only 11.1% alcohol, the palate is supple, crisp, and particularly digestible: a true thirst-quenching wine, but with enough character to accompany a meal.

The grapes are vinified in whole clusters, with a maceration that prioritizes fruit and freshness over extraction. This approach results in a lively, light, and immediately accessible red. Serve slightly chilled, around 16°C, as an aperitif or with a charcuterie board, grilled meats, barbecue sausages, or simple and generous cuisine.

Perill de Perills ("the danger of dangers") is a singular white wine that highlights the Xarel·lo grape. The nose combines white fruits, candied lemon, Mediterranean herbs, and a subtle smoky note. The palate is full, saline, and taut, offering beautiful depth while retaining much freshness. A wine of character, true to the identity of Clos Lentiscus.

Vinification

100% Xarel·lo, spontaneous fermentation with indigenous yeasts followed by aging in old containers to preserve the purity of the fruit and the expression of the terroir. A low-intervention wine with minimal sulfur.

Born from the collaboration between Youri Bosque and Antony Tortul (La Sorga), Splinter Twin is a macerated wine with a strong personality. The nose combines candied citrus, exotic fruits, dried flowers, and a delicate spicy note. The palate is full-bodied, energetic, and slightly tannic, offering a beautiful balance between freshness, texture, and salinity.

Vinification

Hand-harvested, skin maceration, fermentation with indigenous yeasts, then aging in old vessels. Unfined, unfiltered, and with no unnecessary additives, in the pure style of both winemakers.

Created exclusively for Culinaries, this cuvée is the result of a meticulous blend of several batches of Malbec, aged separately. A portion of the wine is aged in concrete vats to preserve the fruit's vibrancy and the grape variety's natural freshness, while another spends a year in barrels that have already held several wines, adding complexity and depth without masking the character of the terroir.

The result is a Cahors that is both precise and approachable, where aromas of ripe red fruits mingle with delicate smoky, herbaceous, and floral notes of violet. The palate is round, balanced, and supported by a beautiful freshness that prolongs the tasting experience. A contemporary interpretation of Malbec, true to the philosophy of Danis dans la Vigne: to produce lively, digestible wines that respect their environment.

Gewurztraminer Origin Blanc 2020,

Jean-Marc Dreyer
Sumptuous, disconcerting, addictive, Gewurztraminer as you wouldn't expect, with a super-powerful aroma, without the sugar. Jean-Marc Dreyer's Origin range is dedicated to single-varietal cuvées based on Alsatian varieties. Decidedly orange, this macerated Gewurztraminer is the answer to those who find this grape variety heady and syrupy: all the sugars have been consumed, leaving an extraordinary richness of aromas, bare and unvarnished. The mango, ylang-ylang, and bouquet of flowers and exotic fruits are all there, enhanced by a dry, unsweetened structure. This wine calls for foie gras, but it can be drunk with anything. Biodynamic method, fermentation with indigenous yeasts, unfiltered, unclarified, with no sulfites added in the vineyard or cellar.

"Maceration in Alsace is a tradition!" says Jean-Marc Dreyer, adding that direct pressing in this region is a modern invention, linked to the advent of electricity. In the past, we worked by hand and let the grapes macerate before sending the marc to the press. " Whole-bunch maceration is Jean-Marc Dreyer's signature and represents 85% of the estate's production, the rest consisting of direct-pressed whites, often aged using gentle oxidation. Jean-Marc succeeds several generations of his family at the Dreyer & Fils estate, established in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics, but he hesitated for a while between several methods: at first, his wines were more oaky, aged in new barrels with stirring. Then, a sweet period: all his wines contained residual sugar. In 2008, he tried vinifying without any sulfur and found his direction: the following winter, upon returning from the pilgrimage to Compostela, he swore never to add sulfur to any wine again. Having made this decision, he affirmed his style around skin maceration, quite extensive, chiseled, always surprising on Alsatian grape varieties, whose structure it brings out without sacrificing delicacy. Jean-Marc works in single-varietal or blended vintages and also produces Pinot Noir reds of surprising depth.
