Made from Grenache vines growing on limestone and schist soils, Tonton du Sud comes from Vincent Wallard's winery. The harvest macerates in mille-feuille (layers of destemmed grapes and whole bunches to control the astringency of the tannins) before aging for one year and eight months. Pairing well with meats and grilled dishes, it can be kept for twenty years.

A rare and surprising wine, a rich, atypical and voluptuous blend, a superb natural sparkling wine for the table, an aperitif or a party. Full of fruit, freshness and tenderness, even if the years have given it some oxidative notes that bring spices to the whole. Drink chilled (15 °C) and pour directly into the glass where it will open. A Bordeaux or tulip glass would be preferable to a flute; this wine needs movement.

The grapes are hand-harvested between September and October, then ferment for two to eight weeks depending on the grape variety. Aging is six months in oak barrels.

Excellent with red meats and wild mushrooms (particularly porcini mushrooms), it can be aged for twenty years.

The white is made from chardonnay on volcanic and clay-limestone soils. This is a wine for pleasure and indulgence that has received the most attentive care: the grapes are harvested when overripe, raisined and botrytized (a little noble rot appears on the bunches). The wine, with its fine sparkle, is aged in barrels for twelve months. All this gives a great richness of taste with this “layered” structure that we love in great natural wines: fruit, sweetness, acidity, just the right amount of structure and fullness, and a very delicious yeasty touch.
