This 100% Cinsault, grown on schist soils near Saint-Chinian, is obtained by fermentation with indigenous yeasts during twenty-eight days of whole-bunch maceration. Part of the wine is aged in steel vats. With a beautiful, bright ruby color, it offers a nose of pepper, rose, and strawberry, as well as notes of garrigue, candied black olive, and prune. Lively and powerful.

Le Coste
This generous Italian red is made from a blend composed primarily of Grechetto (a local variety related to Sangiovese), with the secondary grape varieties being Cannaiolo, Colorino, Ciliegiolo, and Vaiano, indigenous varieties planted in the vineyards on the volcanic soils of the Le Coste estate. Fermentation lasts about a month in French oak and chestnut vats. Rosso is then aged in Slovenian oak barrels. At first glance, a beautiful ruby color, a crisp and juicy palate, with notes of red and black fruits.

This pure Nerello Mascalese, produced under the IGP Terre Siciliane, comes from the basalt soils of the Cornelissen estate's three highest plots (Vigne Alte), rich in biodiversity: Tartaraci (1,000 m above sea level), Monte Dolce (870 m), and Pettinociarelle (890 m). It perfectly expresses the excellence of the old, ungrafted Nerello Mascalese vines grown on the high terraces of Etna's northern valley. It is the estate's most Burgundian vintage, with the most pronounced acidity. A balanced, structured, gourmet, and easy-to-drink cuvée, it offers plenty of crisp fruit without ever being too easy. A certain bite and freshness typical of the estate. A perfect table red, it pairs well with roasted farm-raised chicken.

Terre des Anonymes Blanc 2015, Domaine La Sorga
This 100% Colombard white wine comes from the basalt sandy soils of the Hérault Valley, in Adissan. The grapes are vinified in whole bunches for forty-five days, then macerated for eleven months in vats. Its mango notes give it a real affinity with Asian cuisine and seafood such as scallops, cuttlefish, or squid. Its aging potential is ten years.

This Pinot Noir comes from a plot with a steep, south-southeast-facing terroir located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils are primarily marl, limestone, and clay. The grapes, from fifty-year-old vines, macerate in whole bunches. Aging takes place in barrels for about a year. Beautiful structure, well-rounded tannins, and lovely notes of black fruit.

Xarab Garnacha Red 2009
On south-facing schist hillsides at an altitude of 1,300 meters, Manuel Valenzuela has created this astonishing sweet red wine from the Xarab series, made from Grenache and Cabernet Sauvignon grapes, raisined on the vine and harvested in December. The wine is rich, intense, and generous, loaded with candied red fruits.

Pikade Rouge 2013, Gianfranco Manca Panevino
A blend of two century-old vines: Carignan on quartz and Monica on schist. Fermentation and aging are done in stainless steel vats. Fine, elegant, fresh, this wine for all occasions will keep for about ten years. It evokes red fruits on the bitterness: pomegranate, cranberry. The smoky and earthy note is also very present and persists in the finish.

Munjebel FM Rouge 2016, Frank Cornelissen
The Feudo di Mezzo plot, from which this Munjebel red comes, is very large. It is divided into two parts: the sottana, the lower part, and the soprana, or Porcaria, which is the upper part. Although relatively lower than the estate's other plots, it produces wines of remarkable elegance. The soil is quite deep, which can pose maturation problems in wet years, but the plot benefits from good ventilation, which compensates for this disadvantage. This wine is all Burgundian elegance and roundness, even in hot years: it is characterized by its finesse and adapts to the most varied dishes.

Coyade White 2015
A voluptuous southern white wine born from a blend of Macabeu, Grenache Blanc, and Carignan Blanc planted in the Agly Valley, in the heart of Roussillon, Coyade comes from vines grown on a predominantly clay-limestone terroir. Malolactic fermentation took place in stainless steel vats, and the three grape varieties were vinified separately before being blended. The color is intense and golden, with notes of straw and honey on the nose, and a slight oxidation on the palate that pairs perfectly with hard cheeses.

Partially destemmed, the grapes macerate for three to four weeks, which gives them excellent aging potential. Bottling takes place after thirty months of aging. A very intense nose of black fruits that continues with a beautiful volume on the palate, and a length that leaves you thinking.
