Made from old vines (sixty years old) of the Catalan vinyater grape variety on clay-limestone soil, aged in 50-liter demijohns, this is a fresh and seductive white wine that excels with seafood, grilled white meats and sweetbreads, but it can also seduce without any accompaniment or pretext. Rounded, buttery, expressive and mineral. The nose is all about white fruits and white flowers. Lemon zest, a little beeswax. On the palate, volume, body, a very long finish. The name of the plot refers to the old chapel that can still be seen today on the side of the road leading to Monthélie, in the lower part of the village. "Carelle" refers to the shape of the plot, from the Latin quadrus, "square".

This Pinot Noir from the Qvevris series (aged in Georgian-style terracotta jars) comes from a plot whose sloping terroir, facing south-southeast, is located between 280 and 400 meters above sea level in the Saint-Romain appellation. The soils are mainly marl, limestone and clay. The grapes macerate in whole bunches. Plenty of fruit and roundness supported by a sumptuous minerality. The Pinot Noir benefits greatly from the velvety texture brought by aging in qvevri.

Subirat Parent, one of the oldest Catalan grape varieties, a close relative of Malvasia, remains rare even in its country of origin. The clay-limestone reinforces its freshness and integrity. The harvest is pressed after a three-day skin maceration. The must is settled and fermented with indigenous yeasts in stainless steel vats. It rests for three months in vats on fine lees before bottling. This wine is crisp and aromatic, with a nose of ripe white fruits, melon, and wildflowers. Agile on the palate, fresh and straightforward, lemony and slightly saline, with a long finish tinged with a delicate bitterness typical of the estate. It will be wonderful with all seafood, especially bouillabaisses, bourrides, and fish soups. It will also accompany sushi, sashimi, ceviche, fresh oysters...

The dry Muscat from Partida Creus is a white wine with a hint of orange, deliciously fresh, fragrant, and aromatic. This pure Nerello Mascalese comes from a partially ungrafted vine, approximately seventy years old, on the Campo Re plot, in the far west of the valley, at an altitude of 735 meters. The soil is particularly deep, and ripeness is difficult to achieve during wet years. The grapes are destemmed and lightly crushed; skin-contact fermentation lasts about sixty days. No fining, filtration before bottling. The wines are deep, elegant, and tannic. Compared to other vintages from this estate, they are somewhat similar to Nebbiolo.

Magnum Rosso Red 2011
This generous Italian red is made from a blend composed primarily of Grechetto (a local variety related to Sangiovese), with the secondary grape varieties being Cannaiolo, Colorino, Ciliegiolo, and Vaiano, indigenous varieties planted in the vineyards on the volcanic soils of the Le Coste estate. Fermentation lasts about a month in French oak and chestnut vats. Rosso is then aged in Slovenian oak barrels. At first glance, a beautiful ruby color, a crisp and juicy palate, with notes of red and black fruits.
