The Wine Witch White 2024,
Les Grandes Serres
In the heart of Vaucluse, between Saint-Maurice-sur-Eygues and Visan, the Grandes Serres vineyard thrives on deep clay-limestone soils bordered by garrigue. The Wine Witch 2024, a subtle blend of Clairette, Marsanne, and Vermentino, is a generous white, both powerful and balanced, faithful to its terroir.
A bold and natural vinification
The uniqueness of this cuvée lies in a 24-hour maceration of the Vermentino grapes before pressing, providing structure and depth. Spontaneous fermentation in stainless steel vats preserves the purity of the fruit, while partial aging in barrels (10% of the Marsanne) enriches the texture. Like all the house wines, The Wine Witch is unfiltered, with a light addition of sulfites to stabilize the whole.
A charming nose and a full palate
The nose opens with notes of ripe, even exotic fruits, accompanied by slightly buttery nuances. On the palate, the attack is supple and round, revealing a remarkable amplitude, carried by a rich and balanced structure. The finish is long, with a beautiful aromatic persistence.
What to enjoy with this bottle?
Served around 10-12°C, this racy white wine goes wonderfully with roasted white meats, grilled fish or even hard cheeses. With its aging potential of 5 years, it will evolve towards even more complex aromas.

This single-varietal Muscat wine comes from a plot planted at an altitude of 1,300 meters on schist and clay soils. The wine is aged for ten months in old barrels.

Lune Rayée Red 2020,
Lune Rayée, vintage 2020, is a natural red wine from the Pic-Épeiche estate (Haut-Layon, Anjou), produced traditionally and entirely by hand by Jean-Baptiste Peltier. It is made from Cabernet Franc (80%) and Cabernet Sauvignon (20%) planted in the same plot on clay-limestone soil.
Vinification
Lune Rayée was made without any additives in the vineyard, except for a little Bordeaux mixture as needed, and without sulfites added during vinification. Semicarbonic maceration (13 days) is followed by a long fermentation in vats using indigenous yeasts. Aging, at Domaine Pic-Épeiche, is done on lees for eleven months, with passage through a vertical press in between.
Tasting
The color of Lune Rayée 2020 is bright, clear, limpid, a beautiful transparent coral red. The palate is intensely sapid, fruity, and one would speak of gurgling if it weren't for a minerality that gives structure and a remarkably saline finish, as well as the touch of bitterness typical of Cabernet. Lune Rayée 2020 from Domaine Pic-Épeiche is easy to drink yet intense, full of red fruits—fresh strawberry—, an energizing sensation of fresh fruit and a beautiful length. It is a wine without additives, deceptively simple, that will be able to measure up to the finest cuisine - such as a rabbit stew of first quality - as well as local charcuterie and salted meats. Seafood rillettes will suit it like a glove. Best enjoyed chilled.

Entirely natural, produced in a traditional, artisanal manner, Domaine Pic-Épeiche is located in Haut-Layon, in Anjou. It is run by Jean-Baptiste Peltier, who learned the trade from Jérôme Lambert and Patrick Desplats: another fine example of a natural, non-interventionist wine estate in this Loire region where there are many.
In the vineyard and in the cellar
No intervention, but a lot of vigilance: "We work with the grapes," says Jean-Baptiste about his natural wines. Cabernet Franc and Cabernet Sauvignon, Chenin and Grolleau, all from old vines, cultivated and vinified without additives. Macerations are short but aging is long, almost a year in vats, entirely on lees.
The style
All the freshness and liveliness of the clay-limestone soils are intact in the wines of the Pic-Épeiche estate, which offer the full typicity of the Anjou terroirs worked naturally. Red and white wines are fruity and flavorful, offering a lively and nuanced expression of the local grape varieties: Cabernet Sauvignon, Cabernet Franc, Grolleau and Chenin.

The Damodes climate, in the Nuits-Saint-Georges appellation, gives the wines great finesse, tenderness, and silkiness with a solid structure. This is the case with this Pinot Noir, concentrated, floral, structured, and fresh, with wonderfully silky tannins. This Pinot Noir comes from the Damodes plot in the Nuits-Saint-Georges AOC. Its name apparently comes from ancient female deities dating back to before the Gallo-Roman period: earth goddesses and druidesses. The vines are planted on finely gravelly brown limestone soils and clay-silt fractions. The grapes macerate in whole bunches. The aging is approximately one year in barrels.

Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undeformed by agricultural chemicals. Having observed, during his years of trading, the existence of harmful viticultural practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked as a wine broker for some time before creating the Chassorney estate with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne Hautes Côtes de Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The practice is not limited to Burgundy since vintages are made from grapes purchased in the Jura or Languedoc. At his place, the work of the soil and the vines is done as naturally as possible: regular ploughing by horse, no addition of chemical fertilizers or weedkillers. The vines are cared for according to the principles of biodynamics: homeopathic treatments based on essential oils, copper and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. It offers notes of citrus and tropical fruits balanced by traditional hopping that gives it a moderate bitterness. The initials stand for "Sauvignon-Marsanne," referring to the blend from which this merchant wine is made. The grapes come from the Hérault Valley. Whole bunches of Sauvignon Blanc macerate in Marsanne must by direct pressing for fifty-five days before aging for eleven months in vats. Its notes of dried apricot, fennel, and bergamot will pair perfectly with goat cheese or blue-veined cheeses (Roquefort, Bleu des Causses). Aging potential: ten years.

The scope of Festejar white ("To celebrate" in Occitan, a clear indication of the use of this wine) is dizzying, as this thirst-quenching wine is also a complex vintage, combining very fine bubbles, delicious freshness, a slight sweetness, measured acidity, and a structuring bitterness. Perfect for an aperitif with friends, perfect for the table, perfect for thirst: an all-terrain vehicle for everyone's greatest joy. This semi-dry natural sparkling wine is available in rosé and white. The rosé version (dark pink, almost a red) is based on Gamay d'Auvergne. Near Billom, the Limagne clermontoise rises towards the east to form a hilly area with a mild climate, dominated by volcanic hills. This is the Auvergne Tuscany, so named because of its resemblance to the Italian province. This land of mixed subsistence farming was once covered with vines and was the preferred domain of Gamay d'Auvergne, a robust ancient strain, the origin of dense, deep and fruity wines. This is where Patrick Bouju cultivates and vinifies, on these high-quality volcanic soils and mainly on old vines. The soils vary between basalt, limestone, clay-limestone, and pozzolan. Patrick collects and cares for the best terroirs of Puy-de-Dôme, often abandoned, and gives them new life. He also preserves the native grape varieties, of which he cultivates a good fifty, and simultaneously works as a wine merchant using purchased organic grapes. The current renaissance of the Auvergne vineyard (which was once the third largest in France) owes much to Patrick. The fact that he enjoys lending a helping hand to his winegrowing friends in France and elsewhere only confirms his image as a role model, a leader. His partnerships are famous: with Action Bronson for the series A la Natural, with Jason Ligas in Greece for Sous le Végétal… Patrick practices long macerations, and the wines rest for up to six months after bottling. Very sensitive to sulfites in wines, Patrick has found that his wines do very well without them. He also found that if the grapes are healthy and concentrated, balance occurs naturally, regardless of the successive phases a vintage goes through. His noble, chiseled, distinguished, never bland wines are immediately recognizable in the glass. They are straight, clean, precise, often marked by floral notes and a spicy minerality. They also constitute a formidable anthology of the terroirs and ancient vines of Lower Auvergne and its volcanic soils.

Made from old vines (sixty years old) of the Catalan Vinyater grape variety on clay-limestone soil, aged in 50-liter demijohns, this is a fresh and seductive white wine that excels with seafood, grilled white meats, and sweetbreads, but can also seduce without any accompaniment or pretext. Rounded, buttery, expressive, and mineral. The nose is all about white fruits and white flowers. Lemon zest, a touch of beeswax. On the palate, volume, body, and a very long finish.

Partida Creus is an important estate, both from a winemaking and historical perspective—we're talking here about the history of the vine in Catalonia. Massimo Marchiori and Antonella Gerosa, originally from Piedmont—and even from the Langhe region, where wine is well-versed—first pursued careers as architects in Barcelona. But the wine bug tickled them, and they soon abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There they found a number of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines—from oblivion. For them, it's not just a matter of saving their heritage, no: it's a matter of taste and nature. Of natural wines, which they will never stop making from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to produce their best juice. Massimo and Antonella practice organic, biodynamic, entirely manual and natural viticulture in order to give new life to these wines. Vinyater, sumoll, garrut, monastrell, ull de perdiu, ull de llebre, sumoll, queixal de llop, cariñena, trepat, ceciat parent, maccabeu, parellada, pansé, vinel.lo, bobal, cartoixà vermell or xarel.lo: it is a true conservatory of the native Catalan grape varieties that Partida Creus cares for. There is also Moscatel, Grenache, Merlot and Cabernet (among others). Few wineries can boast of growing so many different grape varieties. The wines reflect this diversity, with winemakers striving to best convey the signature of the soil and the grape variety: single varietals are common among them, alongside very rich blends, all in the styles dear to Catalonia: still wine, "ancestral" sparkling wine, and even vermouth. The bottles themselves are works of art: bare glass, simply marked with two large stenciled initials that indicate the cuvée. The wines, fresh, vibrant, lush but always straightforward and impeccably juicy and fruity, breathe life. The arrival of a Partida Creus at the table always elicits cries of satisfaction.

VN, Vinel·lo red, is a particularly successful blend of native grape varieties: samsó (cinsault), garrut (mourvèdre), trepat, ull de perdiu, queixal de llop, sumoll and grenache noir, harvested on predominantly limestone soils. Vinification is done individually according to the varieties. No filtration, no additives, no added sulfites. A supple and hyperfruity classic "à la jura", an everyday wine, easy to drink, with a beautiful fresh expression and notes of pomegranate.

Hommage à Robert Rouge - 2019,
Le Raisin Et L'Ange
This red is composed of 50% Gamay, 30% Merlot, and 20% Syrah. The harvest underwent two weeks of semicarbonic maceration, and the wine was neither filtered nor clarified before bottling. No sulfites were added, of course. It offers plenty of fruit, lusciousness, and lightness. At the time of writing, in 2021, it requires a little decanting to express all its tenderness and freshness.

Antony Tortul loves old vineyards: he devotes his life to finding and vinifying them. Just as there are landless shepherds, he can be defined as a landless winegrower, in other words, a wine merchant whose area of activity extends throughout Languedoc and, eastward, as far as Châteauneuf-du-Pape, in search of the best terroirs. Born in Foix, with six years of experience as a viticultural technician and oenologist in various vineyards in the south of France, he founded La Sorga in 2008. His enthusiasm leads him on a path filled with favorites, and each of these favorites is a vineyard. The result is a dizzying mosaic of natural, lively, and spirited wines, which reinvent themselves each year with around thirty cuvées per vintage. Few winemakers can include such a variety of grape varieties on their menu: the whole of southern France is there with muscats, grenaches, picpoul, mauzac, carignan, cinsault, marsanne, alicante, braucol, duras, viognier, len-de-l’el, and tutti quanti. The label sets the bar very high: Gustave Doré’s Dante crosses the raging Acheron in a boat and doesn’t seem very sure of himself, understandably. Don’t let this infernal image throw you off balance; Feu I, far from plunging you into hell, propels you into the paradise of aromatic white wines. Indeed, it is one hundred percent Terret Bourret (vines aged eight and sixty-five years) harvested on clay-limestone soils in Marseillan, near the Thau basin, and in Paulhan on Villafranchian limestone (all in Hérault). The harvest of old Terrets macerates in whole bunches in the juice pressed from the young Terrets for twenty-four days before aging in vats for nine months. On the nose, white pepper, tobacco, plum, sweet spices, we didn't tell you any stories above. The palate, in harmony, is long, lemony, saline (a typical note of these wines from the sandy coast of Languedoc), while remaining extremely fresh.

Syrah and Cinsault, aged on schist soils in Vieussan, are blended directly after the harvest and macerated whole bunches for ninety days. Aging takes place in old barrels for ten months. The pale color of this rosé is graceful and delicate, as is the wine: 100% Cinsault, red fruits, citrus notes, flowers, and orange zest. Like Provençal sunshine in a bottle. Marvelously pure, this wine is produced by directly pressing grapes harvested from twenty-year-old vines near Vaison-la-Romaine (Vaucluse), on clay-limestone soils. Aging is approximately one year in barrels. This savory and fleshy red is a great success from Frédéric Cossard. The tannins are felt, but supple, fine, and velvety.

Around this historic heart, they first planted Grenache Noir and Syrah, then a plot of white grape varieties: Viognier, Grenache Blanc, Roussanne. The estate has been Ecocert certified since 2010 and also complies with the Nature & Progrès charter. The vinification is done without the addition of sulfites or exogenous yeasts. "We make wines for pleasure," say Laetitia and Rodolphe. For them, natural wine is first assessed by taste, from the harvest. The vintages closely follow the plots, the musts are fruity, fluid, and complex. The wines of Fond Cyprès poetically evoke the estate's ecosystem and the vegetation that protects the plots: the pine forests, the shady springs, the beauty of the natural environment that brings freshness to the wines and leaves the soil's signature. Deliciously balanced between mineral imprint, vegetal environment and expression of fruit, the wines of Fond Cyprès reflect the South: the caress of its sun, but also the freshness of its shadows.
Roussanne, Grenache Blanc and Viognier growing on the same plot and harvested together at different ripenesses: a southern blend that produces a truly southern white, original, balanced, fresh, structured by a light maceration, fermented and aged in barrels. The vintages closely follow the plots, the musts are fruity, fluid, and complex. The wines of Fond Cyprès poetically evoke the estate's ecosystem and the vegetation that protects the plots: the pine forests, the shady springs, the beauty of the natural environment that brings freshness to the wines and leaves the soil's signature. Deliciously balanced between mineral imprint, vegetal environment and expression of fruit, the wines of Fond Cyprès reflect the South: the caress of its sun, but also the freshness of its shadows.
Coming from a plot of young vines exposed to the north and bordered by pines and cypresses, the Syrah harvest used to make this wine is destemmed, gently extracted, and aged for one year in old barrels. Dense, ample and generous, this Syrah is ready to drink but can still wait. It carries within it the freshness and shade of its forest environment and a certain gravity that is not rare in Corbières wines based on this type of blend. It is a true wine of the South, born of the sun and faithful reflection of the earth.

Bison Grass Botanical Vodka 40° - 70cl
This vodka offers delicate aniseed and peppery notes, supported by the magnificent herbal harmony of freshly cut bison grass: vanilla, tonka bean, hay, and toasted almond. Bison grass vodka is a classic Polish recipe, but what exactly is this herb? Hierochloe odorata is a plant in the grass or poaceae family. Depending on the region, it is also called sweet grass, vanilla grass, or holy grass. It is a Nordic plant that is capable of growing as far as the Arctic Circle: it is also found in Canada, in the northern Rocky Mountains and in certain regions of Northern Europe. Medicinal, curative, aromatic, it plays an important role in shamanic rituals as a sacred plant with magical properties. Its name "bison grass" is specific to northern Poland and Belarus, where it grows in the territory of wild bison. Awen Nature has made this vodka according to the traditional Polish recipe revisited, from fresh bison grass grown organically in the distillery's botanical garden and pure spring water from the Black Mountains of the Armorican massif.

The Awen Nature distillery is a factory of magic potions: beverages with a strong Celtic content, organic liqueurs with a strong touch of poetry. This Breton distillery, located in Ille-et-Vilaine and run by Julien Fanny, initially focused on absinthe, a liqueur that Julien helped rehabilitate. It's not "the liqueur that makes you crazy," he says: we were already crazy before. He strives—successfully—to reproduce the taste of yesteryear, that of the absinthes once given to children on a sugar cube as a dewormer. "You need a touch of madness to be a distiller today," says Julien. In addition to absinthe, Julien distills a wide range of spirits and liqueurs: gins, vodkas, botanical rums, Swedish elixir, concoctions inspired by role-playing games... All made from plants, respecting the environment, without preservatives or artificial flavors. An ode to plants that the korrigans must sip in secret, at night, on the moors.
