Munjebel FM Red 2020
Munjebel FM, one of Frank Cornelissen's single-plot cuvées, is an organic (Eurofeuille), biodynamic, and natural red wine with DOP Etna Rosso and IGP Terre Siciliane Nerello Mascalese appellations. It comes from the vast Feudo di Mezzo contrada, specifically its upper part, known as Sottana. Its soil is deep, and the wines it produces are of an unusual elegance, but typical of this region. The site is ventilated, but ideal ripeness is difficult to achieve in humid vintages.
Vinification
The Nerello Mascalese harvest is destemmed, lightly crushed, and then macerated for 50 days on the skins. Fermentation is carried out using indigenous yeasts. The wine is aged for 18 months in fiberglass vats and 18 months in bottles. It is not clarified but lightly filtered.
Tasting
An almost Burgundian elegance and roundness characterize this wine, even in warm vintages. A special vintage of great finesse, which adapts to the most varied dishes. Try it with all the cuisines of the South: Italian, Greek, Provençal… We would recommend a delicious cassoulet from Sillon to accompany it. Or simply a good black pig ham from Bigorre.

An ideal terroir for plot-by-plot vinification
In Passopisciaro, Sicily, in the north of the Etna Valley, the 19 plots cover 24 hectares of basalt soils spread over numerous plots (contrade) between 600 and 900 meters above sea level on the side of the volcano. It is, says Frank Cornelissen, the "Côte de Nuits of Sicily." Frank Cornelissen's contrade are all cultivated biodynamically and vinified separately: he decides on the blends based on the quality of each.
The nobility of Nerello Mascalese
Nerello Mascalese is the dominant variety and alone makes up the greatest vintages. Folle noire liqueur 2016,
This organic and natural folle noire liqueur from the Gaillac region (Tarn) bears the Eurofeuille and Nature & Progrès labels. It is made from grapes of the typical Gaillac variety called folle noire or Jurançon noir. This grape variety produces large, juicy bunches with a delicate flavor. An original recipe from the Cazottes distillery, without chemical pesticides, colorings, or additives.
Production
To obtain this folle noire liqueur, the grapes are harvested in mid-September and fermented naturally using indigenous yeasts. As soon as the juice reaches 2 to 3 degrees of alcohol, an organic brandy of the same grape variety, distilled on the estate by Laurent Cazottes, is added to stop the fermentation. This is called mutage sur grains (grain fortification). This method allows the best aromas to be preserved and the alcohol content to be moderated (18%).
Tasting
A lovely amber red color, a delicate taste of fresh grapes, round and fruity. The Folle Noire liqueur from the Cazottes estate is reminiscent of the best Cartagenes from Roussillon with its supple and melted tannins, its aromas of fresh grapes and candied plum. This organic and delicate spirit will be a perfect companion for cured meats of beef or pork, mature cheeses or blue-veined cheese, or red fruit desserts.

Fond Cyprès
Languedoc to the tips of its nails, delicate, dense, and fresh, fruity and generous, all freshness and delicacy: a beautiful, lively and spicy bottle, with lovely notes of leather and undergrowth, and well-integrated tannins that don't attack the palate. Coming from a sixty-year-old limestone-marl Carignan plot, this wine, after hand-harvesting and destemming, is fermented for four weeks in concrete vats. The wine is then aged for twelve months in old demi-muid (barrels of 500 to 650 liters) which has the quality of not oaking the wine but ensuring a comfortable, gentle aging. With its ripe and evolved tannins, this classified Vin de France cru offers great aging potential, but we can already start drinking it. A lively bottle, to be paired with everything that the Western Mediterranean coast (Languedoc, Roussillon, Catalonia, Valencia region, etc.) has to offer. Dense, full-bodied, and generous, this Syrah is ready to drink but can still wait. Classified as a Vin de France, it carries the freshness and shade of its forest environment and a certain gravity that is not uncommon in Corbières wines based on this type of blend. It features notes of garrigue and Mediterranean herbs. Coming from a plot of young vines (between sixteen and twenty years old) exposed to the north and the northwest wind, bordered by pines and cypresses which protect and refresh it, the Syrah harvest used to make this wine is destemmed, gently extracted, fermented in concrete vats, and the wine is aged for one year in old barrels. Oolithe Blanc 2021
Domaine Einhart
Named in homage to its shell limestone soil, Oolithe is a macerated white wine with a lovely pale apricot color. It immediately reveals a beautiful minerality, great freshness, and the integrity of its predominant grape variety, Sylvaner. The olfactory sensation is enhanced by aromas of fresh apple. The second nose opens more fully with elderflower, lily of the valley, and citrus peel. On the palate, the attack is lively, fresh, and mineral, leading to a spicy and persistent finish. The name Oolithe is a direct allusion to the oolitic limestone that makes up the silty muschelkalk soil from which it is sourced (plots located in Weingarten and Oberer Altenberg). The four grape varieties that make up this wine grow on this soil: Sylvaner (30%), Auxerrois (25%), Gewurztraminer (20%) and Pinot Blanc (25%). The average age of the vines is forty-five years; the grapes come from old massal selections. The harvest, entirely manual, is destemmed, and maceration, on indigenous yeasts, takes place for a few days. The wine is aged on fine lees, in stainless steel vats, before being bottled without filtration. From the vineyard to the cellar, this wine was made without any additives or sulfites. Decanting is recommended so that it can fully express its floral grace.

Located in the northern part of the Alsatian vineyard, horizontally above Strasbourg, the Einhart estate is a ten-hectare family property whose vines are located on the hillsides that rise between the Alsace plain and the Vosges mountains. The soil is clay-limestone and rich in fossils (muschelkalk, i.e. shell limestone and oolitic limestone, and lettenkohle or dolomitic limestone). Since 1990, Nicolas Einhart has been at the helm, now assisted by his son Théo. Faithful to his commitments to the TIFLO association, of which he is a co-founder, Nicolas devotes his viticultural work to the protection of the land and biodiversity, winemaking without inputs, the refusal of harmful phytosanitary products and the maintenance of ecological refuge zones. His estate has been certified organic since 2011. Like Jean-Marc Dreyer [link], he is firmly focused on skin maceration and produces white maceration wines (orange wines) in addition to a Pinot Noir red. Entirely manual harvests, destemming of the grapes, light punching down and delicate pressing are characteristic of the estate, as well as the separate vinification of each terroir, aging on lees and the absence of filtration before bottling. The wines are pure grape, lively, powerful, invigorating, and transcribe the minerality of the very beautiful terroirs of the Vosges foothills.
Vino Rosso Poggio Pastene Red 2016,
Corva Gialla
Poggio Pastene is a superior red from the Corva Gialla range; it is produced only in the finest vintages and comes from the finest plot on the estate. It is dense and full-bodied, with a supple texture and well-integrated tannins, and superb accents of leather and tobacco. The nose is intense and persistent—notes of red fruits, rose, and violet. On the palate, the olfactory sensations are confirmed, supported by a beautiful structure. Poggio Pastene is dry and straightforward, well-balanced between roundness and acidity. This is a single-variety Sangiovese whose vines are planted at an altitude of 450 meters on a west-facing plot with volcanic soils. The harvest, done by hand, is destemmed and macerated for about three weeks on the skins in fiberglass vats, with daily pumping over or punching down as needed. Aging is twenty-four months in old oak barrels. Poggio Pastene is kept in bottle for two years before being marketed.

The Azienda Corva Gialla (“yellow crow”) is a wine estate in Lazio, Italy, located on the edge of Umbria in the Alta Tuscia Viterbese. A volcanic region considered one of the most beautiful in Italy and characterized by its calanches, high tuff rock formations delimiting deep valleys carved by numerous rivers and torrents. Corva Gialla is located in Lubriano, opposite Civita di Bagnoregio. Alta Tuscia is a breeding ground for young winemaking talents dedicated to nature, who are reclaiming these historically neglected lands. Founded in 2017, the estate comprises four hectares cultivated by Beatrice Arweiler, originally from another wine-growing region, between the Rhine and the Moselle. The new owner has also planted an olive grove (Frantoio and Leccino varieties) and converted the estate into a mixed crop and livestock system. The vines were planted with the help of Gian Marco Antonuzzi of the Le Coste estate. The friable volcanic soil lends itself beautifully to viticulture and the planting of grape varieties such as Grechetto d'Umbria, Trebbiano, Vermentino, Sangiovese, and Ciliegiolo. The estate's wines are quintessentially Italian, meaning they are made primarily for enjoyment. They are straight, deep and easy to drink, expressing the strong minerality of their soils.

Magnum Les Fesses Blanc 2018,
Frédéric Gounan
A beautiful gastronomic wine, rich and distinguished, mineral as desired, dominated by notes of honey and white fruits (quince, apple, pear, rhubarb) of remarkable purity. No provocation in the appellation, Les Fesses is the name of the plot from which this white Sauvignon and Pinot Gris comes, obtained biodynamically and through natural vinification. The soils are rich in minerals: clay-limestone, granite, and basalt. The direct-pressed Sauvignon must ferments for six months in vats with the destemmed Pinot Gris, before aging for three years in barrels.

Coming from a farming family established in the commune of Saint-Sandoux (Puy-de-Dôme) for at least two centuries, Frédéric Gounan was in his first life a mechanic and prototype designer for the French motorcycle brand Voxan, whose headquarters were in Issoire. He turned away from the industrial world to devote himself to wine with his partner Caroline. He intends to take advantage of the magnificent terroirs of his native village, far from "pissing the vines", as was done in the past: he notes that everything that comes from this land has exceptional taste qualities. He took over plots of Gamay from Auvergne, planted other grape varieties, and ended up producing vintages that are among the tastiest and most sought-after in Auvergne. On this land of the Chaîne des Puys, Pinot Noirs grow on black basalt soils, while Sauvignons and Pinot Gris grow on white clay-limestone soils with basalt pebbles. A fan of organic and biodynamic farming, Frédéric also applies methods that he considers appropriate to the climate and terroir: to facilitate photosynthesis in this harsh and contrasting climate, he practices lyre trellising, which allows the vines' foliage to be aerated and exposed to the sun, guaranteeing ripe fruit at harvest. Always a mechanic at heart, he makes his tools and tinkers with his tractors according to his needs. Its wines are rare and distinguished, highly sought after by connoisseurs: small estate (less than two hectares), small production (by volume, not by spirit).

Sumptuous, disconcerting, addictive, Gewurztraminer as you wouldn't expect, with a super-powerful aroma, without the sugar. Jean-Marc Dreyer's Origin range is dedicated to single-varietal cuvées based on Alsatian varieties. Decidedly orange, this macerated Gewurztraminer is the answer to those who find this grape variety heady and syrupy: all the sugars have been consumed, leaving an extraordinary richness of aromas, bare and unvarnished. The mango, ylang-ylang, and bouquet of flowers and exotic fruits are all there, enhanced by a dry, unsweetened structure. This wine calls for foie gras, but it can be drunk with anything. Biodynamic method, fermentation with indigenous yeasts, unfiltered, unclarified, with no sulfites added in the vineyard or cellar.

"Maceration in Alsace is a tradition!" says Jean-Marc Dreyer, adding that direct pressing in this region is a modern invention, linked to the advent of electricity. In the past, we worked by hand and let the grapes macerate before sending the marc to the press. " Whole-bunch maceration is Jean-Marc Dreyer's signature and represents 85% of the estate's production, the rest consisting of direct-pressed whites, often aged using gentle oxidation. Jean-Marc succeeds several generations of his family at the Dreyer & Fils estate, established in 1830 between Obernai and Molsheim. Upon taking over the estate, he immediately opted for biodynamics, but he hesitated for a while between several methods: at first, his wines were more oaky, aged in new barrels with stirring. Then, a sweet period: all his wines contained residual sugar. In 2008, he tried vinifying without any sulfur and found his direction: the following winter, upon returning from the pilgrimage to Compostela, he swore never to add sulfur to any wine again. Having made this decision, he affirmed his style around skin maceration, quite extensive, chiseled, always surprising on Alsatian grape varieties, whose structure it brings out without sacrificing delicacy. Jean-Marc works in single-varietal or blended vintages and also produces Pinot Noir reds of surprising depth.
Madloba White 2018,
Domaine des Miquettes skillfully combines the terroir and winemaking traditions of the Rhône with those of Georgia, whose viticulture is a model for Paul Estève and Chrystelle Vareille, the estate's founders. Located in Ardèche, south of the Saint-Joseph appellation, Paul learned his trade from René-Jean Dard and François Ribo, two leading figures in natural wine in the Rhône Valley. With Chrystelle, he began by taking over Paul's family farm with two acres of vines, then in 2004 the entire estate, which now covers 4.3 hectares. The white grape varieties are located around the house, the red grape varieties are planted on steep slopes, between 300 and 450 meters above sea level. The plots rest on a granite base with light soils: black mica granite, schist and gneiss. Everything is cultivated organically (Ecocert) with biodynamic practices. The vines are cared for and fortified using plant decoctions and clay. The soils are worked by horse or winch and pickaxe. No chemical inputs are added to the vineyard work. The harvest is entirely manual.
The great specificity of the Domaine des Miquettes remains the use of Georgian techniques, inspired by their passion for this country in the Caucasus, the cradle of wine, where eight thousand year old winemaking techniques are still used. At the heart of this viticulture is the qvevri, the buried jar where all the winemaking takes place: fermentation with skin maceration and aging. They set out to discover this country and returned with the decision to age all their wines in buried jars. They have twenty-six, but distinguish between tinajas (Spanish jars) for fermentation-maceration and buried "amphorae" for aging. No sulfur is added. For both reds and whites, the terracotta erases astringency and transmutes it into a velvety texture, a fruity and supple material.
Madloba blanc ("thank you" in Georgian) is a blend of 50% Marsanne and 50% Viognier. The vines are planted at an altitude of 350 meters, on a hillside plot with granite and black mica soils. The wine is aged for a year in qvevri, amphorae buried in the cellar in the Georgian style. This wine is reminiscent of its Georgian counterparts aged in terracotta, with its floral and spicy notes, mineral tension, a full texture, and intense flavor. It's an all-rounder when it comes to pairings.

With this bottle of Mint, Distillerie du Viaduc offers a novel and ultra-fresh interpretation of mint, far from the sugary clichés of classic liqueurs. On the palate, fennel takes over with sweet and spicy flavors, joined by the citrusy freshness of coriander and the herbaceous power of thyme. The finish evokes the Mediterranean coast, between Hellenic notes and persistent botanical freshness.
Ánizo is perfect as an aperitif, diluted with fresh water like a natural pastis, or used as a cocktail base for dry and aromatic creations. It embodies a contemporary vision of anise-flavored spirits, more vegetal, more straightforward, more vibrant.

Whichever way you look at it, Mayga Gamay is very Gamay: fruity, juicy, with pleasant notes of raspberry, blackberry, licorice, and cherry. Good acidity, lovely minerality, plenty of aroma, and a suppleness that asserts itself in the glass. Mayga Gamay also offers a slight sparkle that awakens the dead. The grapes come from Pierre Boyat's estate in Leynes, Beaujolais, and macerate for twenty days in whole bunches.

"You don't need anything," says Alice Bouvot, winemaker at Domaine de l'Octavin, "just a grape that feels good in its skin." Everything is said in favor of natural wine; it's a perfect description. Established in 2005, Domaine d'Alice is located in Arbois, in the Jura wine region, often described as the most organic vineyard in France. The practice of producing – among other things – oxidative wines is a good preparation for nature, as this type of wine does not allow any chemical additives and especially no sulfites. It is a secret of this magnificent region. Originally spread over two hectares, the estate, managed entirely biodynamically (Demeter) since 2010, has expanded through the gradual acquisition of plots and now covers seven hectares. An accomplished musician and passionate music lover, Alice aims to apply her musical sensitivity to the wines she makes. She draws a parallel between the technical perfection of conventional wines, which risks excluding feeling, while "a musician who does not know music theory and plays with his guts creates emotion." For her, living wine is like this: instinctive, improvised, emotional. Introduced to natural wine by Stéphane Planche, sommelier at chef Jean-Paul Jeunet in Arbois, she faithfully followed this path. The sometimes whimsical names of her vintages are inspired sometimes by musical art (Dorabella, Zerline), sometimes by the numerous plots of land that make up her vineyard (En Curon, Les Corvées, En Poussot, etc.), and do not disdain a pun from time to time. Likewise, the labels adorned with happy and salacious little gnomes are a signature of the estate. As for the grape varieties, they are the classics of the Jura: Poulsard, Trousseau, Pinot Noir for the reds, and Chardonnay, Savagnin for the whites. Alongside her Arbois wines, Alice has created a business selling "on the vine" grapes (Ecocert certified) with her winegrower friends in the region. Natural, committed, joyful and highly drinkable, Alice Bouvot's wines are all the more sought-after as the vintages, produced in plot-by-plot mode, appear, disappear and reappear depending on the vintage and inspiration.
