Between viticulture and trade
Frédéric Cossard created the domaine de Chassorney in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own trading house and buys organic grapes from the greatest climates of Burgundy, but also from Jura, Languedoc and elsewhere.
A solid commitment to nature
At Frédéric Cossard, the work of the soil and the vines is done naturally: plowing by horse, no chemical fertilizers or weedkillers. The vines are tended biodynamically, the harvest is manual, carried out at full maturity. Through his entirely natural work, Frédéric Cossard gives voice to the terroirs and Burgundy wines, undeformed by agricultural chemicals. Having observed, during his years of trading, the existence of harmful viticultural practices, the winemaker used this counter-example to practice unadulterated viticulture. Thus, he produces vintages of purity and elegance without artifice that are among the most sought-after in Burgundy. Frédéric worked for some time as a wine broker before creating the domaine de Chassorney with his partner Laure in 1996: initially a few ares of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune, and currently ten hectares spread across the Nuits-Saint-Georges, Pommard, Volnay, Bourgogne-Hautes-Côtes-de-Beaune and Bourgogne appellations. In 2006, he created his own wine trading house and buys organic grapes to vinify, according to his style and convictions, great vintages such as Meursault, Puligny-Montrachet, Chassagne-Montrachet, Pommard, Nuits-Saint-Georges, Chambolle-Musigny, Vosne-Romanée and several Beaujolais crus. The practice is not limited to Burgundy, as vintages are made from grapes purchased in the Jura, Languedoc, and elsewhere. At his farm, the soil and vines are worked as naturally as possible: regular horse-drawn ploughing, no addition of chemical fertilizers or weedkillers. The vines are tended according to biodynamic principles: homeopathic treatments based on essential oils, copper, and sulfur in minimal doses. The harvest is entirely manual, carried out at full maturity, at the end of October. Red or white, classic Burgundies or more atypical or less "regional" bottles, Frédéric's vintages are rare and sought-after wines, which sometimes require waiting.

Antonella Gerosa and Massimo Marchiori, originally from Piedmont—and even from the Langhe region, where wine is well-known—first pursued careers as architects in Barcelona. But the wine bug bit them, and they soon abandoned the big city and its sophistication for the vineyards of southern Catalonia, in Bonastre in Baix-Penedés. There, they found a wealth of abandoned vineyards planted with a dizzying diversity of traditional Catalan grape varieties, which they passionately revived to save these varieties—and their wines—from oblivion. For them, it's not just a matter of heritage rescue, no: it's a matter of taste and nature. Of natural wines, which they will continue to make from now on on these sandy, poor, clay-limestone or clay-gravel soils, poor and poorly irrigated, where the vines suffer to give their best juice. This is why their estate is as important from a winemaking perspective as it is from a historical perspective - we are talking here about the history of the vine in Catalonia.

Based in Bonastre, in the Baix Penedès, they are revitalizing ancient vineyards using a completely biodynamic, manual approach, and without oenological inputs. Here, the Bobal expresses all the typical characteristics of Catalan soils, thanks to a respectful vinification process that magnifies its original character.
An aromatic explosion and beautiful tension on the palate
To the eye, BB Bobal 2020 reveals a dark cherry red color with deep highlights. On the nose, it charms with its captivating floral bouquet, evoking English candy, violet and thyme, on a background of fresh red fruits. On the palate, the attack is juicy and dynamic. We find morello cherry and ripe plum, enhanced by a fine touch of black pepper and a saline finish that brings freshness and length. The balance between intense fruitiness, straightforward acidity, and elegant tannic structure makes this a wine as distinguished as it is accessible.
Food and wine pairings and tasting moments
Served well chilled, between 14 and 16°C, BB Bobal is perfect with Iberian tapas and delicatessen meats or a mature cheese. Un fruit mûr et juteux
Le nez évoque des fruits rouges éclatants, mais aussi des notes de grenade, de fruits noirs et de fruits confits. En bouche, c’est souple, glissant, avec une matière généreuse et une belle fraîcheur. Les tanins sont fondus, l’ensemble reste tonique et porté par une belle énergie. Ce magnum se savoure dans sa largeur, sans prétention mais avec beaucoup de plaisir.

Vinifié en grappes entières, avec une courte macération pour préserver la vivacité du raisin, ce vin suit une fermentation spontanée, sans aucun intrant œnologique. La particularité de cette version 2020 réside dans son élevage de 8 mois en foudre, un contenant noble qui respecte le fruit tout en lui apportant complexité et relief. Ce choix donne naissance à une cuvée plus aboutie, capable de vieillir tout en restant plaisante dans sa jeunesse.
Un rouge souple mais de caractère
Le nez s’ouvre sur des fruits rouges confiturés, relevés d’épices douces et d’une touche kirschée typique du Gamay bien mûr. Domaine Bélicard
Avec cette cuvée en appellation Beaujolais Villages, le Domaine Bélicard célèbre l’expression la plus pure et directe du Gamay. Issu de vignes conduites en agriculture biologique sur le terroir granitique de Lancié, ce vin rouge tranquille est une bombe de fruit, une ode à la fraîcheur et à la gourmandise, à déguster sans attendre.
Un vin nature qui va à l’essentiel
Les raisins, vendangés à la main, sont vinifiés en grappes entières dans le respect des pratiques naturelles : macération courte de quelques jours, fermentation spontanée grâce aux levures indigènes, aucun intrant œnologique. L’élevage bref (un mois) en cuve béton vise à préserver l’éclat aromatique et la tension naturelle du Gamay. Pas de maquillage, pas de lourdeur : juste du fruit et de la franchise.
Un rouge juteux et expressif
À l’ouverture, le nez s’impose sur une palette de fruits rouges croquants : cerise, framboise, grenade, avec une petite note de kirsch qui ajoute un accent gourmand. En bouche, la matière est fluide, glissante, d’une grande buvabilité. C’est un vin qui claque, avec une finale légèrement poivrée, fraîche et désaltérante.
