This négociant wine, a blend of Grenache Blanc and Sauvignon Blanc, comes from vines grown on Villafranchian limestone soils in Pézenas, in the Hérault Valley. The Grenache Blanc is pressed directly, and the whole bunches of Sauvignon Blanc are left to macerate in the must for forty days. Aging in vats lasts eleven months, giving it notes of pear, boxwood, and yellow peach. Its aging potential is ten years.
Into the Wine Red 2016
La Sorga
The Mourvèdres that make up this single-variety red wine come from the Saint-Chinian appellation. The destemmed grapes macerate in demi-muids (thick 500- to 650-liter barrels) for sixty days, virtually in an infusion, then the wine is aged for six months in amphorae. Notes of violet and black fruits: perfect for a tagine, borscht, or red cabbage velouté. Aging potential: twenty years.

This pure Nerello Mascalese comes from an ungrafted vine in the Zottorinoto contrada, growing on the Chiusa Spagnola plot, surrounded by lava rocks, somewhat hidden in an amphitheater-like landscape and at an altitude of 620 meters. This plot was planted in 1925 and produces a deep, tannic wine, somewhat reminiscent of Nebbiolo, with a slightly less intense color than the estate's other reds.

Macabeu Blanc 2015, Domaine le Temps Retrouvé
The macabeus grapes that make up this vintage are forty years old and grow in a complex mixture of clay, silica, mica-rich schist, quartz, and gneiss. Michaël Georget pollinates the vineyard by introducing bees. The grapes are pressed directly, and aged for one year in old 400-liter barrels.

Meyer Lemon Liqueur Spirit 50cl
With this Meyer Lemon Liqueur, Lemon Story highlights a unique, often overlooked citrus fruit, distinguished by its aromatic profile at the crossroads of lemon, orange, and pomelo. Sourced from their Mediterranean plantation, Meyer lemons are harvested at perfect ripeness and then processed immediately to preserve the full delicacy of their aromas.
True to the house's artisanal approach, each fruit is used precisely to express its full aromatic palette. The peels release delicate essential oils while the pulp provides natural sweetness and a rounder acidity than that of a classic lemon. Each batch thus reveals a unique personality, reflecting the living and the fruit.
To the eye, the color is adorned with a luminous hue with golden reflections, evoking the fruit's ripeness. The nose opens with candied citrus notes, blending sweet orange, lemon zest, and a hint of pomelo. Spicy and slightly herbaceous nuances enrich the whole, bringing complexity and elegance.
On the palate, the attack is supple, carried by a delicate and perfectly integrated acidity. The texture is round, almost caressing, supported by a persistent aromatic framework. Rubaiyat Red 2009
This wine is produced from Syrah vines planted at an altitude of approximately 1,290 meters, facing south on schist and clay soils. The destemmed harvest macerates in stainless steel vats, and is aged for sixteen months in old barrels. The Syrah, originally from Persia, inspired the name of the vintage: Rubaiyat is the title of a lyrical cycle by the Persian poet Omar Khayyam (11th century), a man of great wisdom, mathematician, astronomer... He wrote in particular about the joys that wine brings, among other pleasures of life.

Distillerie du Viaduc
With this Aquavit distilled in Paris, Distillerie du Viaduc pays homage to Scandinavian traditions while asserting a resolutely artisanal and local identity. Inspired by Nordic aquavits, this organic spirit is based on caraway, whose aromatic depth structures the whole. The botanicals used, caraway, dill, fenugreek, and orange peel, are all from organic French agriculture and undergo slow maceration before complete distillation in a traditional still.
Sugar-free, dye-free, and additive-free, this cuvée expresses remarkable purity. The nose is immediately warm, dominated by caraway, balanced by aniseed notes and zesty freshness. On the palate, the attack is round, almost gourmet, followed by a spicy, slightly smoky framework thanks to the fenugreek, and subtly softened by dill. The finish reveals a pleasant orange sweetness, long and refreshing, with a very elegant herbaceous return.
This new generation aquavit can be enjoyed neat or on ice, as a digestif, or as an aperitif, lengthened with a dry tonic or ginger beer. It also perfectly accompanies smoked fish, Nordic savory dishes, or plant-based cuisine with caramelized or earthy notes. At 42%, it remains accessible, fine, and well-balanced, reflecting the precise work of Distillerie du Viaduc.

The result of meticulous expertise deeply rooted in plants, Distillerie Awen Nature's Green Absinthe, based in Brittany, is a rare and vibrant spirit, at the crossroads of ancestral traditions and contemporary herbalism. Crafted from a rigorous selection of organic plants, including absinthe of course, but also hemp, mint, lemongrass, and hyssop, this cuvée proudly displays its 60% ABV, while maintaining astonishing finesse.
Here, there are no artificial colors or additives: the magnificent green hue comes exclusively from post-distillation plant maceration, according to methods respectful of tradition. The plants are distilled separately, then precisely blended to create a rich and balanced aromatic profile.
On the nose, it's an explosion of herbaceous and floral notes: you'll find the freshness of mint, the light citrus, and the depth of hyssop mingled with resinous touches of hemp. On the palate, the attack is bold yet silky, carried by a beautiful, elegant bitterness, without heaviness or excess.
