This blend of Carignan and Grenache comes from grapes grown on schist soils in the Faugères appellation. The Carignan macerates for eighty days in whole bunches, on top of which the hand-destemmed Grenache is placed. The wine is aged on lees for nine months. Notes of blueberry, spice, and hot stone make it perfect for meats and poultry marinated in spices and grilled (Korean barbecue, kofta, tandoori, braised chicken, or piri-piri). Aging potential: ten years.
