Rosso 2013 red, Le Coste
This generous Italian red is made from a blend composed mainly of Grechetto (a local variety related to Sangiovese), with the secondary grape varieties being Cannaiolo, Colorino, Ciliegiolo, and Vaiano, indigenous varieties planted in the vineyards on the volcanic soils of the Le Coste estate. Fermentation lasts about a month in French oak vats and chestnut vats. Rosso is then aged in Slovenian oak barrels. At first glance, a beautiful ruby color, a crisp and juicy palate, where we find notes of red and black fruits.

La Sorga
The Mourvèdres that make up this single-variety red wine come from the Saint-Chinian appellation. The destemmed grapes macerate in demi-muids (thick 500- to 650-liter barrels) for sixty days, virtually in an infusion, then the wine is aged for six months in amphorae. Notes of violet and black fruits: perfect for a tagine, borscht, or red cabbage velouté. Aging potential: twenty years.

100% Muscat grown on clay-limestone and ferruginous soils in Cessenon-sur-Orb (Saint-Chinian region). The grapes are pressed directly and then vinified. Aging is done 55% in vats and 45% in amphorae, for a total of one year. Its notes of frangipane and brined lemon make it the perfect wine to enjoy with a creamy dessert such as pannacotta or crème brûlée, or a dish with a sweet and sour sauce. This négociant wine has a 10-year aging potential.

Magnum SM Sumoll Red 2015, Partida Creus
This red sumoll, a very old Catalan red grape variety long neglected, is one of Partida Creus' favorites. Low-yielding, sumoll gives its best on poor soils, which gives it great concentration, beautiful balance, juicy black fruit, dense and generous, notes of spices and Mediterranean plants, and finally an earthy, animal and smoky character. The short maceration allows it to retain freshness and acidity. It will be excellent with red meats, roasts, duck, but the range of its pairings is actually very wide.

Subirat Parent, one of the oldest Catalan grape varieties and a close relative of Malvasia, remains rare even in its country of origin. The clay-limestone reinforces its freshness and integrity. The harvest is pressed after a three-day skin maceration. The must is settled and fermented with indigenous yeasts in stainless steel vats. It rests for three months in vats on fine lees before bottling. This wine is crisp and aromatic, with a nose of ripe white fruits, melon, and wildflowers. Agile on the palate, fresh and straightforward, lemony and slightly saline, with a long finish tinged with a delicate bitterness typical of the estate. It will pair wonderfully with all seafood, especially bouillabaisses, bourrides, and fish soups. It will also accompany sushi, sashimi, ceviche, fresh oysters...
